I always make it for people when they are in the hospital or have family members in the hospital or are just having a bad time. They all kid me that the only way they can get my cooking is if someone gets sick! ...
Prep:35m Cook:60m Servings:12

Ingredients
1 lb ground beef
2 links favorite italian sausage
1 jar favorite spaghetti sauce (I always use Ragu Super Vegetable Primavera, it has chunks of zucchini, carrots and tomatoes)
1 1/2 c water
1 small can chopped mushrooms (optional)
15 oz container ricotta cheese
1/4 c parmesan cheese
3 c shredded mozzarella cheese (plus a little to sprinkle on top)
2 eggs
pepper and dried parsley
1 box uncooked lasagne noodles (any kind)

Directions
Preheat oven to 350
brown ground beef and italian sausage together in a large skillet or dutch oven. drain well
Mix in spaghetti sauce, mushrooms and water (I drain the mushroom can into the measuring cup with water to equal 1 1/2 cups then pour into spaghetti sauce jar to get every last bit of flavor possible before adding to meat mixture)
remove from heat and prepare cheese mixture
In a large bowl, mix all cheeses with both eggs, pepper to taste and parsley for color.
In a 13 x 9 baking dish, layer ingredients as follows:
1 c meat sauce mixture (or enough to cover bottom of dish)
layer of lasagna noodles (side-by-side, not overlapping)
1 c meat sauce mixture (or enough to cover)
1/2 cheese mixture, spread as evenly as possible
layer of noodles
1 c meat sauce mixture (or enough to cover)
rest of cheese mixture, spread evenly
layer of noodles
rest of meat mixture
top with remaining shredded mozzarella
cover entire pan with aluminum foil
bake for 45 minutes, remove foil and bake additional 15 mins
let lasagna sit for about 10-15 mins before slicing
DELISH!

Lydia has been making this family favorite for over 50 years!
Prep:20m Cook:165m Servings:8

Ingredients
1 lb box of wide lasagna noodles - fresh if you prefer
1 lb italian sausage - hot is preferred - if you can get the loose type it's easier - otherwise you have to take the skins off...
1 lb lean ground beef
1 1/2 medium onion, chopped
2 - 4 large cloves garlic, minced
1 x 2 1/2 lb can tomato puree
1 small can tomato paste
2 x 14 oz cans tomato sauce
1 tsp sugar
2 cups Ricotta - or more!
1/2 - 1 cup Parmesan cheese
1 tblsp salt
1/2 tsp pepper
2 tsp crushed chile
1 - 2 bay leaves
2 tblsp olive oil
1 - 2 tsp Italian Mixed Spices
1/2 cup red wine - if you wouldn't drink it...don't use it!
1 lb mozzarella cheese, grated - or more!
Water

Directions
Sauce: Brown sausage, ground beef in olive oil until almost done, add onions and garlic and finish browning.
Add puree, paste, sauce, salt, pepper, crushed chile, bay leaves, Italian spices, sugar (to blend flavors) and wine.
Let simmer for approx 2 hrs - add a little water to keep from thickening too much while simmering.
Cook noodles according to package instructions. When cooked place in a pan with cool water so they don't stick together.
Preheat oven to 375F
Spray 13 x 9 x 2 baking pan and start layering: first layer sauce, then noodles, then sauce again, then spoon dollups of ricotta evenly, then sprinkle with shredded mozzarella and parmesan cheese. Continue layers (usually 2 -3) in this way and end with sauce and parmesan on top.
Cover with foil and bake for 1/2 hour. Uncover and continue baking for 15 minutes.
Serve with green salad and vinagrette dressing and crusty garlic bread. Delicioso!

The white sauce and ham keep it different from the ordinary lasagna. Enjoy
Prep:10m Cook:30m Servings:16

Ingredients
2 tablespoons butter
3 tablespoons all purpose flour
1 cup milk
1/4 teaspoon nutmeg
1 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons vegetable oil
1 small white onion chopped
1 clove garlic crushed
1/2 pound ground beef
1 pound ripe tomatoes
1 pound uncooked lasagna noodles
1/2 pound sliced mozzarella cheese
1/2 pound thinly sliced ham
2 ounces grated parmesan cheese
2 teaspoons oregano
2 teaspoons salt

Directions
Melt butter with flour in saucepan over medium heat. Add nutmeg, salt and pepper. Add milk slowly while stirring mixture with a wooden spoon. Bring sauce to boil and cook 10 minutes. Set white sauce aside to assemble the lasagna. Peel tomatoes then remove seeds and chop. Brown ground beef in a large sauce pan over high heat with vegetable oil, onion and garlic. Add prepared tomatoes and water just enough to cook a thick meat sauce. Set meat sauce aside to assemble lasagna. Lightly spray two square glass baking dishes. Preheat oven to 350. Bring to quarts of water to a boil. Stir in salt then add noodles four at a time and cook uncovered until tender but firm. Use a large fork or slotted spoon to remove cooked noodles directly to the baking dish. Spoon meat sauce into baking dish. Make four layers of noodles and put first layer of noodles on top of meat sauce. Then alternate each layer with meat sauce mozzarella and ham. In one of the layers put only white sauce with ham. Cover lasagna with sauce, grated parmesan and a sprinkle of oregano. Bake lasagna for 20 minutes. Cover lasagna with foil during baking to avoid cheese from burning.

Everyone deserves a break every now and then!
Prep:25m Cook:45m Servings:7

Ingredients
1/2 lb rinsed and chopped spinach
1 lb shredded mozzarella cheese
1 lb grated Parmesan cheese
2 pounds ricotta cheese
1 lb pork or beef sausage
1 package of lasagna noodles
3 (26 ounce) jars spaghetti sauce

Directions
Bring a pot of lightly salted water to boil. Then add pasta and cook for about 8 to 10 minutes. Then drain and place noodles on a paper towel.
Heat a large skillet over medium heat, cook sausage until no all pink is gone and set aside.
Use a large bowl to mix ricotta and spaghetti sauce. In a different bowl, mix the Parmesan and mozzarella cheeses.
Next, stir all but one cup of the cheese mixture into the ricotta mixture; slowly stir in sausage and chopped spinach.
Preheat oven to 425 degree and while oven is heating, coat the bottom of a 9x13 inch baking dish with a light layer of spaghetti sauce. Lay 3 to 4 noodles lengthwise and side by side; then lay 3 to 4 noodles overlapping creating a staggered pattern on top.
Add a layer of the sausage/cheese and repeat these layers twice until they have reached 1/2 inch from the top of the baking dish. Next, layer noodles on top of the lasagna and coat in more spaghetti sauce. Top off with the last cup of cheese mixture and bake for 45 minutes or until a light brown.

It puts a delicious twist on a classic recipe. My family loves it!
Prep:5m Cook:65m Servings:8

Ingredients
5 c. mozzarella cheese, shredded
1 c. freshly grated Parmesan cheese
3 c. milk
3 tbls. all-purpose flour
3 tbls. butter
1 lb. fresh crab meat
1 lb. cooked salad shrimp
16-oz. package of lasagna noodles

Directions
Preheat oven to 350 degrees F (175 degrees C).
Cook lasagna noodles according to package directions. Drain well.
In a medium-sized size saucepan melt butter or margarine over medium heat. Then stir in flour and let it brown slightly. Add the milk slowly, stirring constantly until the sauce thickens. Stir in the parmesan cheese and mix well.
Spread a thin layer of the white sauce into a 9x13 baking dish, followed by a layer of the cooked lasagna noodles. Now put a 1/4 of the shrimp, 1/4 of the crabmeat and 1 cup of the grated mozzarella on top of the lasagna noodles. Repeat this process, until you have four layers of the lasagna. Add sauce to the final layer and top with mozzarella cheese. Bake until dish is heated thoroughly

The 5 different cheeses make it irresistable and a family favorite.
Prep:30m Cook:25m Servings:10

Ingredients
1/4 cup Parmesan cheese, grated
8 oz. small curd cottage cheese
8 oz. shredded mild Cheddar cheese
6 slices packaged American cheese
8 oz. shredded mozzarella cheese
16-oz. package lasagna noodles
16-oz. jar pre-cooked spaghetti sauce with meat

Directions
Heat oven to 350 degrees.
Lightly salt a large pot of water and bring to boil. Add the lasagna noodles and cook for 8 to 10 minutes, until the pasta is “al dente”. Drain the pasta and rinse with cold water.
Place cooked lasagna noodles on the bottom of a 9x13 inch casserole dish, then spread ¼ cup of the spaghetti sauce on top. Then add another layer of noodles and top with cottage cheese and ¼ cup spaghetti sauce. Keep adding layers, alternating cheese with each layer, but make sure you have enough spaghetti sauce to cover the top of the lasagna (this will prevent hardening of the pasta). Top dish with grated parmesan cheese.
Bake in the preheated oven until cheese is thoroughly melted and filling is heated through (approximately 20-25 minutes). Eat and enjoy!
