<p>Freekeh salad is a simple, healthy meal with many possible variations. You can expand the recipe and include whatever vegetables you have in the fridge. It can be used as a side-dish or even as a main, perhaps served with flatbread. This is our version. Serves 4-6.</p>
<p><strong>Ingredients</strong></p>
<ul>
<li>4 cups cooked Freekeh (whole or cracked grain)</li>
<li>6 medium tomatoes, diced</li>
<li>1 medium continental cucumber, diced</li>
<li>4 spring onions, finely sliced</li>
<li>1 small red capsicum, finely sliced</li>
<li>1 cup chopped parsley</li>
<li>1 1/4 cup chopped mint</li>
</ul>
<p><strong>Dressing</strong></p>
<ul>
<li>1/2 cup olive oil</li>
<li>juice of 1 lemon</li>
<li>1 tsp. French mustard</li>
<li>1 clove garlic, crushed</li>
<li>freshly ground pepper</li>
<li>salt to taste</li>
</ul>
<div><strong>Method </strong></div>
<div>In a large bowl, combine Freekeh, tomatoes, cucumber, spring onions, capsicum, parsley and mint. Whisk together the dressing ingredients and add to the salad. Mix thoroughly and let stand for 1-2 hours in the refrigerator to allow the flavors to integrate. Serve in a salad bowl as a side dish at a barbecue, with grilled fish or cold meats.</div>

			<content:encoded><![CDATA[<p>Freekeh (also Farīk, fireek) is the name given to any grain which is harvested while young and then roasted. It is a process rather than a variety of grain itself. The stage at which the grain is harvested is critical. The moment the leaves start to turn yellow and the seeds are still soft and creamy is the ideal moment. Today we produce Greenwheat Freekeh using our unique modern process, resulting in a product that is perfectly roasted every time and free of chaff and stones.</p>

<p>The history of Freekeh dates back to ancient Egypt and in Lebanon, Jordan and Syria.  The story goes that in 2300 B.C., a nation in the Eastern Mediterranean was anticipating an attack on their city.  Worried about losing their crops and starving, they picked the early green heads of wheat and stored them.  When the city came under fire the green wheat was burnt, however the people discovered that, when rubbed, the green grains inside were still fit to eat. Now we know that this process also confers many nutritional benefits.</p>
<p>A dish called <em>farīkiyya</em> is described in a Baghdad cookery book dating back to the 13th century. Meat is fried in oil and braised with water, salt, and cinnamon bark. Then dried coriander is stirred in with Freekeh and cooked. Finally, the meal is served with cumin, cinnamon, and fresh lamb tail fat.</p>
<p>Famous Middle Eastern or North African dishes made with Freekeh are ḥamām bi’l-farīk, a pigeon stuffed with green wheat from Egypt; firik pilavı, a green wheat pilaf from Turkey; shūrbat farīk bi’l-mukh, a green wheat and bone marrow soup from Tunisia seasoned with chillies, vegetables and chickpeas; farīkat laḥma, a green wheat pilaf dish with roasted lamb, spring peas, and pine nuts from Syria; and shūrba al-farīk, a Palestinian soup with green wheat and chicken.</p>

Whole-grain consumption is inversely related tohypertension, diabetes, and obesity when compared to refined grains, all of which are negative indicators in total cardiovascular health. Whole grains are rich in many components, including dietary ﬁbre, starch, fat, antioxidant nutrients, minerals, vitamin, lignans, and phenolic compounds that have been linked to the reduced risk of CHD, cancer, DM, obesity and other chronic diseases. These effects are well documented, and include a 30-36% reduction in stroke risk, 21-30% reduction in risk of type 2 diabetes and 25-28% reduction in risk of heart disease. Whole Grains also contribute to body weight management and gastrointestinal health.</p>

<p>Despite these many benefits, dietary intakes of whole grains fall short of current recommendations to eat at least three servings daily. A nutrition survey conducted between 1999 and 2000 found that only 8 percent of U.S. adults consumed three or more servings of whole grain per day, and 42 percent of adults ate no whole grains on a given day.</p>
