Irem benden kabakli kek tarifi isteyince kiyamadim hemen yaptim. Aslinda önümde bekleyen uzun bir istekler listesi var. Hicbirini unutmus degilim, sirayla yapmaya calisacagim. Kabakli kekimde yine süt ve yumurta yok. Buna ragmen güzel pisti, yumusacik oldu, dagilmadi. Ölcüyü az tuttugum icin az malzemeyle yemyesil nefis bir tuzlu kek oldu. Cayin yanina servis edilebilecek saglikli ve nefis bir alternatif tarif. Kis sebzelerinden yapilan zeytinyaglilardan bir &lt;a href="http://www.hafifmutfak.blogspot.com/2011/03/zeytinyagli-eksili-pirasa.html"&gt;eksili pirsayi&lt;/a&gt; bir de&lt;a href="http://www.hafifmutfak.blogspot.com/2011/02/portakalli-zeytinyagli-kereviz.html"&gt; portakalli kerevizi&lt;/a&gt; bilirdim. Oysaki ispanakdan yapilan borani de cok güzelmis. Mevsimi gecmeden ispanagi her tür yemegiyle degerlendirmeli. Yine tembellik edip buzluktan ispanak kullandim. Buna ragmen cok lezzetli bir yemek oldu.&lt;br /&gt;

Yarim su bardagi sicak su ekleyip 20 dakika civarinda kisik ateste kapagi kapali olarak pismeye birakin. Ocaktan alin.&lt;/li&gt;
&lt;li&gt;Sarimsagi soyup ezin, yogurda ekleyin.&lt;/li&gt;
&lt;li&gt;Soguyunca servis tabagina alin. Üzerine sarimsakli yogurt ekleyip pul biber serpin.&lt;/li&gt;

Sütsüz-yumurtasiz ve de genelde gida alerjisi olanlara yönelik alternatif tariflerim her zaman icin devam edecek. Ama evde böyle güzel mevsim yemekleri pisince atlamak istemedim. Pirasa dolmasini her zaman yapmam hatta daha dogrusu ilk defa yaptim. Aksam dolma yapiyordum ve ici fazla gelince daha neyi doldurabilirim diye buzdolabini karistirirken elime pirasa gecti. Bir dal pirasayi sebzeli börek yapmak icin almistim. Beyazini kesip ikiye böldüm. Parcalarin dar kismindan genis tarafina dogru iclerini parmagimla ittirip cikardim. Karsilikli iki ucu ortaya kadar birer kere katlayip katlari üstüste getirin. Katlanmis halde keskin bir bicakla bir parmak eninde dilimleyin. Dilimleri tepsiye dizin. Diger milföy dilimleri icin ayni islemleri tekrarlayin. Önceden isitilmis firinda 15 dakika cvarinda hafifce kizarana kadar pisirin.&lt;/li&gt;

Aslinda kiyma icli cig börek yapmayi düsünmüstüm. Ama cig börek hamurunda da 1 yumurta varmis. Koymasam ne olurdu? Cok farkeder miydi? Bir denemek lazim, ama o zaman belki cigbörek olmaz. Klasik tariflerle oynamamak gerek. Ben bir yandan böyle düsünürken kizkardesimin bana ismarladigi Lezzet dergisini karistiriyordum ve bu tarifi buldum. Kreuzberg`de bir kitabevinden ücretini önceden ödemek sartiyla Türkiye`den aktüel dergi ve kitaplari ismarlayabiliyoruz. Ilgilenen olursa adresini iletebilirim. Tarifteki böregin ici kiymali ve pirincli idi. Bir deneyip tadi hakkinda fikrim olsun istedim. Kiyma ve pirinc ici ile oldukca doyurucu bir börek oldu. Yalniz benim gibi bir yandan börekleri doldurup bir yandan kizartmaya kalkmayin, iki ayaginiz bir pabuca girer. En iyisi börekleri önce hazirlayip sonra kizgin yagda kizartmak. O sabah neredeyse kendilerini bildikleri yastan beri Harry Potter hayrani olan cocuklarim benden recelli kurabiye istediler. Bu kurabiyeler Harry Potter`i film serisinde canlandiran Daniel Radcliff`in en sevdigi kurabiyelermis. Ögleden sonra yarisini kalp seklinde kestigim hamurun kalan yarisini kurabiyeler firinda piserken buzdolabina koydum. Recelli kurabiye yapmanin püf noktasi hamurun buzdolabinda bekletilmis olmasi. Oda sicakligindaki hamur piserken yayilacagindan recelde akip gidecektir haliyle. Soguk hatta biraz donmus hamur sicak firinda hemen kendini birakmaz. Bu sekilde hamurun gercekten temel bir tarif oldugunu da test etmis oldum. Kurabiyeler nefis oldu.&lt;br /&gt;

Aslinda uzun zamandir sütsüz ve yumurtasiz kurabiye tarifi ariyordum. Kurabiye nasil yapilir? Bir yumurta, biraz yag, biraz un, biraz seker, biraz da üzümdü findikti ne isterseniz. Ama her tarifte ille de yumurta. Olmazsa olmaz sanirdik simdiye kadar. Hayir, yumurtasiz da oluyor!&lt;br /&gt;
Ben böyle her karistirdigim yemek kitabinda her okudugum tarifte gida alerjisi olanlara yönelik bir tarif ararken aradigimi hic ummadigim bir yerde buldum. Bir süpermarketin aylik tanitim dergisinde ürünler tanitilirken arada yemek meraklilarina yönelik pratik bilgiler de veriliyor. Kücücük bir yazida sütsüz ve yumurtasiz kurabiye yapmak isterseniz margarin olarak bitkisel olani tercih edin ve yumurta yerine biraz zeytinyagi ekleyin deniyordu. Bu pratik cözüm beni sasirtti. Birgün mutlaka deneyip sizlerle paylasacaktim. &lt;a href="http://www.hafifmutfak.blogspot.com/2012/01/tahinli-susamli-grissini-sutsuz.html"&gt;Irem`den&lt;/a&gt; gelen E-Mail üzerine artik bu tarifi bekletmemeli, önce bizzat kendim denemeli ve gönül rahatligiyla sizlerle paylasabilmeliydim.&lt;br /&gt;
Kurabiyelerimin lezzet bakimindan eksigi yok fazlasi var. Unu ölcülü ekledim ve hamuru yumusak biraktim. Dikkatlice acip kaliplarla kestim. Firindan cikarinca da bir kac dakika tepside bekletip dikkatlice izgara üzerine alip soguttum. Sonuctan ben memnun kaldim. Kurabiyelerimin piserken biraz genislemesi beni rahatsiz etmedi. Bir dahakine tepsiye biraz daha aralikli dizecegim. Denemek isterseniz siz de öyle yapin. Ölcüden iki tepsilik kurabiye elde ediliyor.&lt;br /&gt;

&lt;li&gt;Hamurdan parcalar koparip hafifce unladiginiz tezgahta merdaneyle acarak arzu ettiginiz kaliplarla kesin. Tepsiye dizin. Önceden isitilmis firinda 15-18 dakika civari kenarlari ve altlari haifce pembelesinceye kadar pisirin.&lt;/li&gt;

Bu ara dogum günlerimiz üstsüte geldigi icin pasta kek söleni olacak buralarda. Aradaki zamanlarda sütsüz yumurtasiz ikramliklar sunmaya calisacagim size. Bir etkinlik sayesinde dikkatimi ceken gida alerjisi ile ilgili, bu konuda zorluk yasayanlara yönelik tariflerime arada bir rastliyorsunuz. Degerli okuyucum Irem`in minik oglunun da böyle bir sorunu var. Ailede bir kisinin alerjisi varsa bütün aile fertlerinin de neredeyse ayni diyeti uygulamasi gerekiyor. Kek yapip "oglum sen yiyemezsin, bu bizim icin" diyemezsiniz degil mi? Irem`in oglunun dogum günü yaklasiyor ve ben de ona sütsüz yumurtasiz ikramliklar sunabilecegi bir menü hazirlamasina yardimci olacagima dair söz verdim. Nihayetinde ortaya ne kadar tarif cikarabilecegim bilemiyorum. Önerilere bir kaynak olusturabilmek acisindan her zaman acigim.&lt;br /&gt;
Bugün benim bayildigim grissinilerim var. Hamuru ikiye bölüp yarisini ceviz ici parcalarina bulayip sardim, kalan yarisi ise iste böyle birsey oldu.&lt;br /&gt;

Hamuru en son kabin icerisine döktügünüz 1 yemek kasigi zeytinyaginda yuvarlayip üzerini nemli bir bezle örtün. Ilik bir yerde iki katina gelinceye kadar mayalandirin.&lt;/li&gt;

&lt;li&gt;Kabarmis hamuru tekrar bir yogurup ikiye bölün. Yarisini tezgahin üzerinde dört köse ve ince olacak sekilde acin. Tahini kasikla sürerek dagitin, üzerine susamlari serpin. Hamuru bir bicak yardimiyla eninden birer parmak genisliginde parcalara bölün. Parcalari ikiye katlayip elinizde hafifce rulo yapin, tepsiye aralikli olarak dizin. Önceden isitilmis firinda yaklasik 15 dakika pisirin.&lt;/li&gt;

Tarifi bir öglen vakti firsat bulup televizyon keyfi yaptigimda Martha Stewart`in programindan aldim. Noel dönemine ait bir programdi. Biliyorsunuz o dönemlerde evde kurabiye yapip güzel paketler icerisinde hediye etmeyi, ya da yakinlarini ev kurabiyeli kahve sohbetlerine davet etmeyi seviyorlar. Bir izleyicisinin uzaktaki yakinlarina postayla yollayabilecegi dayanikli ve lezzetli bir kurabiye tarifi istemesi üzerine yayinda bu kurabiyeleri hazirladi. Özellikle yumurtasiz bir tarif oldugunu belirtmesi aklimda kalmisti. Ben de tarife ek olarak tereyagini cikarip bitkisel margarin kullandim. Bu sekilde &lt;b&gt;süt ve yumurtaya karsi &lt;/b&gt;gida alerjisi olanlara tavsiye edebilecegim bir tarif oldu&amp;nbsp;&amp;nbsp;Genelde amerikan kurabiyelerini severim. Bizim tariflerimizde unun ölcüsü yoktur, aldigi kadar un deriz. Onlarin tariflerinde ölcü var. Firinda cok pisirmiyorlar. Tepsiyi firindan aldiginiz vakit kurabiyeler sanki pismemis gibi duruyor. 10 dakika civarinda tepsinin icinde bekletince kendilerini toplayip sertlesiyorlar. Kurabiyeler uzun zaman gevrekliklerini ve lezzetlerini kaybetmiyor. Gerci benim böyle bir endisem yok, bizim evde iki günden fazla beklemez.&lt;br /&gt;

Firinda 12-14 dakika civarinda hafifce kizarana kadar pisirin.&lt;/li&gt;
&lt;li&gt;Tepsiyi firindan alip 10 dakika kurabiyelere ellemeden bekletin. Uzun zaman tazeliklerini kaybetmemeleri icin hava almayacak kaplarda saklayin.&lt;/li&gt;

Bloglarimiz sayesinde birbirimizden haberdar olsak da ayni sehirde yasadigimiz halde biraraya gelmek her zaman mümkün olmuyor. Sükran`in evsahipliginde &lt;a href="http://www.birdilimbirtutam.blogspot.com/"&gt;Serap abla&lt;/a&gt;, &lt;a href="http://www.perilersofrasi.com/"&gt;Peri abla&lt;/a&gt;, &lt;a href="http://www.nurselpastaevi.blogspot.com/"&gt;Nursel&lt;/a&gt; ve&lt;a href="http://www.pastasarayim.blogspot.com/"&gt; Fatma abla&lt;/a&gt; ile birlikte hos bir kac saat gecirdik. Ilgi alanlari ayni olunca konusacak cok sey buluyor insan. Ve tabii ki karsilikli ögrenilecek ve paylasilacak cok sey var. Dün ayni zamanda Sükran bize cok hos bir sürpriz yapip seker hamurundan minik ayakkabilar hediye etti. Kendisine sadece hediyesi icin degil, bizi biraraya getirmesi, sicakligi ve misafirperverligi icin ve diger arkadaslarima da tüm samimiyetleri ile orada olduklari icin tesekkür ederim. Onlarin dostlugu benim icin cok önemli.&lt;br /&gt;

Ben her zamanki isi basindan askin halimle bulusmaya gec gidip erken döndüm. Aksam üstü Ömer`e söz verdigim fincankekleri hazirladim. Gerci o okulda karne eglencesi icin pasta getirecegini söylemis ama ben ögretmeni pasta kesme, dilimleme, tabak catal servisi ve ardindan cikacak bulasik ve karmasadan kurtarmak icin &lt;a href="http://www.hafifmutfak.blogspot.com/2010/09/dogumgunu-cupcakeleri.html"&gt;cupcakes&lt;/a&gt; yapmak istedim. Tarif her zamanki gibi, yalniz bu sefer buttercreme yari ölcüde kullanip gida boyasi ile renklendirdim. Buttercreme ince bir kat sürüldügü vakit cok lezzetli oluyor. Üzerlerini seker hamurundan renkli ciceklerle süsledim.&lt;br /&gt;

&lt;li&gt;Mantarlarin kök kisimlarini kesip bol suda yikayin, ince dograyin. Tavada 1 yemek kasigi siviyaginda orta ateste 4-5 dakika soteleyin. Corbaya ilave edin. Tuz ve karabiberini ekleyin. Bir tasim daha kaynatip ocaktan alin.&amp;nbsp;&lt;/li&gt;

Cirpmadan yavasca bir yemek kasigi yardimiyla alt üst edin. Bütün malzeme islaninca badem ezmesini ekleyip son bir kere karistirin ve karisimi kalibin gözlerine paylastirin. Önceden isitilmis firinda 20 dakika pisirip firini kapatin. Bes dakika firinda birakip cikarin. Bes dakika daha mufinleri kendi kalibinda dinlendirip servis edin.&lt;/li&gt;

Tesadüfen ortaya cikan bu karisimi ekmegin üzerinde cok sevdim. Aslinda hafta sonu bir tart hamurunun üzerini sade krem peynirle kaplayip nar serpecektim. Ama tart firinda biraz fazla kalinca gevrek oldu. Catalla artik hamuru karistirmaya zorlandiginizda cok az ilave edip elinizle hafifce unladiginiz tezgahinizin üzerinde yogurun. Hamur yumusak ve ele yapismayacak sekilde olmali, fazla un ekleyip katilastirmayin. Üzerini temiz bir bezle örtün, ilik bir yerde iki katina gelinceye kadar mayalandirin.&lt;/li&gt;
&lt;li&gt;Firininizi 200 derecede isitin. Firin tepsinize yagli kagit serin.&lt;/li&gt;
&lt;li&gt;Sosisleri üce dörde bölün.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Hamurdan kücük parcalar koparip avucunuzun icinde acin. Birer yemek kasigi kasar peyniri ve birer parca sosis yerlestirip kapayin. Birlestirdiginiz kisim alta gelecek sekilde tepsiye aralikli olarak dizin. Üzerlerine yumurta sarisi sürüp kizarana kadar önceden isitilmis firinda pisirin.&lt;/li&gt;

&lt;li&gt;Tereyagini ekleyin, yag eriyene kadar sürekli karistirin.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Ince dilimlediginiz erikleri, tuz ve baharatlari ekleyip karistirin. 6-7 dakika birlikte kavurun.&lt;/li&gt;
&lt;li&gt;Sicak suyu ekleyip kisik ateste pilav tüm suyu cekinceye kadar pisirin. Bir süre tenceresinde dinlendirip servis edin.&lt;/li&gt;

Gecende sarmasini hazirlarken artan lahana yapraklarindan corbasini yapmak istedim. Bildigim bir corba tarifi yoktu. Arama motoruna lahana corbasi diye yazdim ama lütfen diyet corba olmasin diye de yanina ekledim. Diyet lahana corbasini yillar önce iki günde iki kilo vermek hayaliyle denemis, hüsrana ugramistim. Önerildigi gibi tam malzemesiyle corbayi hazirladim. Iki günde bes ögün olmak üzere sadece o corbadan birer tabak icebilecektim. Ilk günün ögleden sonrasina kadar ancak dayanabildim. Sanirim yanisira bol su icmek gerekiyordu. Bu kötü tecrübeden sonra tekrar denemeye cesaret edemedim. $u bir tabak corbayi hicbir seye degismem. &lt;li&gt;Büyükce bir tencerede sogani erittiginiz tereyaginda kavurun. Sebzeleri ilave edip karistirin.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Et suyu ya da suyu ekleyip kaynamaya getirin. Ocagin ayarini düsürüp 15-20 dakika civarinda sebzeler yumusayincaya kadar pisirin. Tuz ve karabiber ilave edin.&lt;/li&gt;
&lt;li&gt;Bir kasede süt ve yumurta sarilarini &amp;nbsp;iyice cirpin. Bir kepce corbadan ilave edip ilitin. Karisimi bir yandan corbayi karistirarak ilave edin. Bir tasim kaynatip ocaktan alin.&lt;/li&gt;

Seker hamurlu her pasta veya kurabiyeye gelen yorumlarda ne sirin bunlar insan yemeye kiyamaz denildigi icin son günlerde miknatisla birlestirip kalici bir ürün ortaya cikarabilir miyim diye düsünmeye basladim. Dün biraz bunlarla ugrastim. Bir iyi yani yaptikca yemek zorunda degiliz. Ama bu da cocuklarin hosuna gitmedi. Biz niye bunlari yiyemeyiz diye sordular. Ilk etapta en sevdigim silikon gül ve yaprak kaliplarimla güllü olanlari biraz el becerisiyle de nazar boncuklu olanlarini yaptim. Kurutup arkalarina birer parca miknatis yapistirdim.&lt;br /&gt;
