Tarifi bir öglen vakti firsat bulup televizyon keyfi yaptigimda Martha Stewart`in programindan aldim. Noel dönemine ait bir programdi. Biliyorsunuz o dönemlerde evde kurabiye yapip güzel paketler icerisinde hediye etmeyi, ya da yakinlarini ev kurabiyeli kahve sohbetlerine davet etmeyi seviyorlar. Bir izleyicisinin uzaktaki yakinlarina postayla yollayabilecegi dayanikli ve lezzetli bir kurabiye tarifi istemesi üzerine yayinda bu kurabiyeleri hazirladi. Özellikle yumurtasiz bir tarif oldugunu belirtmesi aklimda kalmisti. Ben de tarife ek olarak tereyagini cikarip bitkisel margarin kullandim. Bu sekilde &lt;b&gt;süt ve yumurtaya karsi &lt;/b&gt;gida alerjisi olanlara tavsiye edebilecegim bir tarif oldu&amp;nbsp;&amp;nbsp;Genelde amerikan kurabiyelerini severim. Bizim tariflerimizde unun ölcüsü yoktur, aldigi kadar un deriz. Onlarin tariflerinde ölcü var. Firinda cok pisirmiyorlar. Tepsiyi firindan aldiginiz vakit kurabiyeler sanki pismemis gibi duruyor. 10 dakika civarinda tepsinin icinde bekletince kendilerini toplayip sertlesiyorlar. Kurabiyeler uzun zaman gevrekliklerini ve lezzetlerini kaybetmiyor. Gerci benim böyle bir endisem yok, bizim evde iki günden fazla beklemez.&lt;br /&gt;

&lt;li&gt;Firininizi 170 derecede isitin. Firin tepsinize yagli kagit serin.&lt;/li&gt;
&lt;li&gt;Bir kabin icerisinde ögütülmüs findik, un, vanilyali seker ve kabartma tozunu karistirin. Margarini ekleyip yogurun. Kurabiyelerin ayni büyüklükte olmalari icin bir dondurma kasigi ile top halinde tepsiye aralikli olarak birakin. Bir bardagin tabani ile hafifce bastirip kurabiyeleri düzleyin. Firinda 12-14 dakika civarinda hafifce kizarana kadar pisirin.&lt;/li&gt;
&lt;li&gt;Tepsiyi firindan alip 10 dakika kurabiyelere ellemeden bekletin. Uzun zaman tazeliklerini kaybetmemeleri icin hava almayacak kaplarda saklayin.&lt;/li&gt;

Arkadasliklar güzel, ayni hobileri paylastiginiz bir arkadas grubuna sahip olmak daha da güzel. Dün ayni sehirde yasadigimiz blogcu arkadaslarimizla bulustuk. Bloglarimiz sayesinde birbirimizden haberdar olsak da ayni sehirde yasadigimiz halde biraraya gelmek her zaman mümkün olmuyor. Sagolsun &lt;a href="http://www.lezizdusler.blogspot.com/"&gt;Sükrancigim&lt;/a&gt; duruma el koyup hepimizi biraraya topladi. Sükran`in evsahipliginde &lt;a href="http://www.birdilimbirtutam.blogspot.com/"&gt;Serap abla&lt;/a&gt;, &lt;a href="http://www.perilersofrasi.com/"&gt;Peri abla&lt;/a&gt;, &lt;a href="http://www.nurselpastaevi.blogspot.com/"&gt;Nursel&lt;/a&gt; ve&lt;a href="http://www.pastasarayim.blogspot.com/"&gt; Fatma abla&lt;/a&gt; ile birlikte hos bir kac saat gecirdik. Ilgi alanlari ayni olunca konusacak cok sey buluyor insan. Ve tabii ki karsilikli ögrenilecek ve paylasilacak cok sey var. Dün ayni zamanda Sükran bize cok hos bir sürpriz yapip seker hamurundan minik ayakkabilar hediye etti. Kendisine sadece hediyesi icin degil, bizi biraraya getirmesi, sicakligi ve misafirperverligi icin ve diger arkadaslarima da tüm samimiyetleri ile orada olduklari icin tesekkür ederim. Onlarin dostlugu benim icin cok önemli.&lt;br /&gt;

Ben her zamanki isi basindan askin halimle bulusmaya gec gidip erken döndüm. Aksam üstü Ömer`e söz verdigim fincankekleri hazirladim. Gerci o okulda karne eglencesi icin pasta getirecegini söylemis ama ben ögretmeni pasta kesme, dilimleme, tabak catal servisi ve ardindan cikacak bulasik ve karmasadan kurtarmak icin &lt;a href="http://www.hafifmutfak.blogspot.com/2010/09/dogumgunu-cupcakeleri.html"&gt;cupcakes&lt;/a&gt; yapmak istedim. Tarif her zamanki gibi, yalniz bu sefer buttercreme yari ölcüde kullanip gida boyasi ile renklendirdim. Buttercreme ince bir kat sürüldügü vakit cok lezzetli oluyor. Üzerlerini seker hamurundan renkli ciceklerle süsledim.&lt;br /&gt;

&lt;li&gt;Ölcü 18 &amp;nbsp;adet cupcakes icindir. Ince bir kat olarak sürecekseniz yaklasik 30 adet cupcakes icin yeterli gelir.&lt;/li&gt;
&lt;li&gt;Süt yerine 1 limonun suyu+kabugunun incecik rendesini ilave edebilirsiniz.&lt;/li&gt;
&lt;li&gt;Arta kalan kremanizi kapakli bir kapta buzdolabinda uzun bir süre saklayabilir, tekrar buzdolabindan cikarip oda sicakligina getirip kullanabilirsiniz.&lt;/li&gt;

Tesadüfen ortaya cikan bu karisimi ekmegin üzerinde cok sevdim. Aslinda hafta sonu bir tart hamurunun üzerini sade krem peynirle kaplayip nar serpecektim. Ama tart firinda biraz fazla kalinca gevrek oldu. Her zaman evde sosis bulunmadigindan olsa gerek, cocuklar bu börekleri sevdiler. Iki gün üst üste evde ayni börekten yaptim. Hamur ilk gün bitmeyince kalanini hava almayacak sekilde sarip buzdolabina yerlestirdim. Ikinci gün ayni tazelikte böreklerimiz oldu. Hamur size de fazla gelirse yari ölcüde de hazirlayabilirsiniz. Bunun icin diger malzemeleri degistirmeden ekleyeceginiz su miktarini 1 bardaga düsürün.&lt;br /&gt;

Catalla artik hamuru karistirmaya zorlandiginizda cok az ilave edip elinizle hafifce unladiginiz tezgahinizin üzerinde yogurun. Hamur yumusak ve ele yapismayacak sekilde olmali, fazla un ekleyip katilastirmayin. Üzerini temiz bir bezle örtün, ilik bir yerde iki katina gelinceye kadar mayalandirin.&lt;/li&gt;
&lt;li&gt;Firininizi 200 derecede isitin. Firin tepsinize yagli kagit serin.&lt;/li&gt;
&lt;li&gt;Sosisleri üce dörde bölün.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Hamurdan kücük parcalar koparip avucunuzun icinde acin. Birer yemek kasigi kasar peyniri ve birer parca sosis yerlestirip kapayin. Birlestirdiginiz kisim alta gelecek sekilde tepsiye aralikli olarak dizin. Üzerlerine yumurta sarisi sürüp kizarana kadar önceden isitilmis firinda pisirin.&lt;/li&gt;

Gecende sarmasini hazirlarken artan lahana yapraklarindan corbasini yapmak istedim. Bildigim bir corba tarifi yoktu. Arama motoruna lahana corbasi diye yazdim ama lütfen diyet corba olmasin diye de yanina ekledim. Diyet lahana corbasini yillar önce iki günde iki kilo vermek hayaliyle denemis, hüsrana ugramistim. Önerildigi gibi tam malzemesiyle corbayi hazirladim. Iki günde bes ögün olmak üzere sadece o corbadan birer tabak icebilecektim. Ilk günün ögleden sonrasina kadar ancak dayanabildim. Sanirim yanisira bol su icmek gerekiyordu. Bu kötü tecrübeden sonra tekrar denemeye cesaret edemedim. $u bir tabak corbayi hicbir seye degismem. Seker hamurlu her pasta veya kurabiyeye gelen yorumlarda ne sirin bunlar insan yemeye kiyamaz denildigi icin son günlerde miknatisla birlestirip kalici bir ürün ortaya cikarabilir miyim diye düsünmeye basladim. Dün biraz bunlarla ugrastim. Bir iyi yani yaptikca yemek zorunda degiliz. Ama bu da cocuklarin hosuna gitmedi. Biz niye bunlari yiyemeyiz diye sordular. Ilk etapta en sevdigim silikon gül ve yaprak kaliplarimla güllü olanlari biraz el becerisiyle de nazar boncuklu olanlarini yaptim. Kurutup arkalarina birer parca miknatis yapistirdim.&lt;br /&gt;

Kuymak genelde Karadeniz mutfagina ait olarak bilinir ve daha yagli ve peynir ilaveli daha farkli bir görünümü ve lezzeti vardir. Bu Kars usulü kuymak ise kahvaltiya, günün diger saatlerinde cayin hatta kahvenin yanina cok yakisacak cok lezzetli ve hafif bir tür hamur isi. Gamze oldukca az yag kullandi. Ben cok sevdim ve arada bir cocuklara da hazirlamaya karar verdim. &lt;li&gt;Ayri bir kapta tereyagini sekerle birlikte mikserle kremsi hale gelinceye kadar cirpin. Bir yandan cirpmaya devam ederken yumurtalari teker teker ekleyin. Unlu karisimi ve sütü ilave edip yavasca alt üst edin. Kestane püresini ekleyip tekrar bir karistirin. Kaliba döküp 50 dakika civarinda pisirin.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Ilidiktan sonra cikolatali sosu hazirlayip üzerine gezdirin.&lt;/li&gt;

Bu nefis cayi dün Gamze`de ictim. Evine girdigimde her yani özellikle de mutfagi zencefil ve tarcin kokusu sarmisti. Ocakta kaynayan caydanliktan geliyordu bu büyüleyici koku. Gamze memleketinin aci cayini ikram etti bize. Cocuklugunun gectigi yerlerde girdigi her evde yanan sobalarin üzerinde fokur fokur kaynayan caydanliklarda aci cay yapilir, misafirlere ikram edilirmis. Kök zencefil ve cubuk tarcindan haric bir de aci kök var cayin icinde. En cok hamileler icin yapilir, kisin sevilerek tüketilirmis. &amp;nbsp;Caydanliga bolca su konulup gün boyunca kaynatilir. Ilk gün cayi gercekten aci olur. O kökler atilmaz, ertesi gün ve daha sonraki günler hep su ilave edilerek icilmeye devam edilirmis. Nihayet cay tatlilasir ve kirmizi bir renk alirmis. Memleketten her yil ona annesi aci cayin karisimi olan kökleri, pilav yapabilecegi kurutulmus kayisi ve sarmalarda yemeklerde kullanabilecegi kuru erikleri yollarmis. Ve tarcinli sekerler. Onlarla Kars yöresine özel kuymak yaparlarmis. Gamze bana önümüzdeki günlerde gelip kendi elleriyle kuymak yapacagina dair söz verdi.&lt;br /&gt;

Evet, herkes gibi benim de ilk ögrendigim ve uzun zaman severek tükettigim bir pasta. Neden sonra unutuverdim ve son zamanlarda yeniden yapmaya basladim. Ne hikmetse bizim evde muzlar gereginden fazla alinip cabuk karardigi icin de son iki defasinda muzlu yaptim. Muz ama gercekten disi kararmis, ici tam olgunlasip aromasini birakmis haliyle cok güzel lezzet veriyor. Pratik tatlilari seviyor ya da evdekilere tatli bir sürpriz yapmak istiyorsaniz piramit pastadan vazgecmeyin. Yeri dolmayacak tariflerden biri.&lt;br /&gt;

&lt;li&gt;Karisimi buzluga girecek silikon bir kaliba dökün. Yoksa herhangi bir kaba strec folye yerlestirip üzerine bosaltin. Buzluga yerlestirin. Mamelikayi &lt;a href="http://www.hafifmutfak.blogspot.com/2012/01/yufkali-pizza.html"&gt;dün&lt;/a&gt;&amp;nbsp;tatli olarak hazirlamistim. Aslinda sütlü irmikli bir tatli ama böyle kendine has bir adi olmasi bosuna degil. Yapilagelenin aksine daha az irmikle hazirlandigi icin cok hafif hatta icinde irmik bile yokmuscasina özel bir kivami var. Ara katindaki findik ilavesi cok özel bir tat katiyor. Bu ara ögütülmüs findigi bolca kullandigim icin evde bittigini farketmemisim, badem kullandim. Fakat böyle de güzel oldu. Püf noktasi tatliyi hazirladiktan sonra buzdolabinda 2-3 saat dinlendirmek.&lt;br /&gt;

Iste esimi hayretler icerisinde birakan tarif. Bugün öglene dogru misafir bekliyordum. Bu yüzden esim mutfakta kahvalti yaparken ben de bir seyler hazirlamaya calisiyordum. Önce börekten baslamayi düsündüm. Yufkayi ufalayip hazirladigim karisima buladim ve firina sürdüm. Üzerine sosunu ve ekleyecegim malzemeleri hazirlamaya basladim. Bu arada esimin beni takip ettiginin farkinda degilim tabii. Tepsiyi firindan cikarip eklemeleri yapip tekrar firina sürdügümde hayretini saklayamadi. Evet bu da türk isi pizza. Cocuklar icin tarifler derken umuyorum ki sadece saglikli tarifler beklemezsiniz benden. Böyle cilgin bir tarif görüp üstelik de cocuklara da gösterince denememek olmazdi. (Cok un katip hamuru sertlestirmeyin). Yarim saat civarinda ilik bir yerde kabarmasi icin bekletin.&lt;/li&gt;
&lt;li&gt;Firininizi 200 derecede isitin. Firin tepsisine yagli kagit serin. Hamurdan kücük parcalar koparip elinizde ya da tezgahin üzerinde cay tabagi kadar düz acin. Tepsiye birbirine degmeyecek sekilde yerlestirin. Üzerine birer yemek kasigi&lt;b&gt; ketcap&lt;/b&gt; döküp yayin. Birer tutam rendelenmis &lt;b&gt;kasar peyniri&lt;/b&gt; ve en üste birer tutam&lt;b&gt; konserve ton baligi&lt;/b&gt; serpin. Önceden isitilmis firinda 15 dakika civarinda kurutmadan pisirin.&lt;/li&gt;

Puding kivamina gelince &lt;b&gt;100 g sütlü cikolatayi &lt;/b&gt;&amp;nbsp;iri parcalar halinde ekleyip iyice karistirarak eritin. Ilimasi icin suyla islatilmis genis bir borcama döküp dinlendirin.&lt;/li&gt;

Bizim ailede ilk mufin yapan benim ama mufin kalibinda kadayif tatlisi yapan ilk bizimkilerdir. Bu yilbasinda ben de onlara bu sekilde hazirladim. Bir paket kadayiftan 24 porsiyonluk iki mufin kalibi icin tatli cikiyor. Tatli serbetini cok güzel cekiyor ve sunumu da ayni zamanda hos.
