When I build the recipe in BrewFather it lists my PH as 4.96 before any adjustments. This is using my tap water which is usually very good for brewing and is always higher ph before water treatment. Is this the smoked malt causing it? I set the water profile as Marzen thinking that'd be a good base. Problem is I can't get the PH above 5 without raising the sodium or calcium too high. I originally had a Marey brand that worked perfectly. It would churn out 7 gallons at about 175° on the warmest setting, which would put me almost perfectly on my desired mash temperature.. That one gave up on life about a year ago and I replaced it with a higher capacity Chinese made Amazon unit. The problem I have with the newer unit is that it only cranks out about 2 gallons of water...
In just the last 2 days I've seen 4 separate posts (and I don't read every thread, so there's probably more I missed) from people talking about how when opening a fermenter, there exists some sort of 'CO2 blanket' that protects your brew.

I'm sorry, but gas doesn't work that way. Convection and molecular diffusion of gasses between different concentration levels takes place almost instantly.
If CO2 somehow sinks to the bottom then we'd all be dead thanks...

I back sweetened and bottled a small batch of cider last night. My intention is to pasteurize it so that I can have a sweet, carbonated cider without any artificial sweeteners. Anyways, my question is about carbonation speed. When I have used the kits, (and from what I've read on here), carbonation takes a week or two...
