			<content:encoded><![CDATA[<div>If I would have simply re-arranged a few trivial thing last Sunday (like watching the game in my garage instead of a friend's house), I could have had a brew day. But I had already planned on brewing this Saturday. Sunday it was 59° and sunny in Knoxpatch. This Saturday, it's supposed to be sunny and 40° with moderate winds to bring the wind chill down into the low 30s. <br />
<br />
Lesson learned. :(<br />

At least I'll have a nice steaming pot of wort to warm up around!</div>

			<content:encoded><![CDATA[<div>As promised, I wanted to report my experience with my Spike Brewing kettle.  I got the 15 gallon w/ 1 welded port (SS ball valve).  It arrived late last week and I finally got around to brewing with it after work today.  My boil is currently about 35 minutes in and so far everything has worked just fine.<br />
<br />
The weld seems strong on the port.  I attached the valve and nipple with teflon on the threads, no leaks so far.  I'm doing a 5.5 gallon batch on the stove-top and it's producing a way more even boil than my old 8 gallon canning pot ever did.  I'm able to stir the wort without losing a boil momentarily.<br />
<br />
Overall I'm very happy with the pot.  There's not really much else I can say.  It works as advertised and as far as I can tell you can't beat the price for a SS welded pot.<br />

You can use these on the end of your hoses that connect to 1/2&quot; NPT threads anywhere in your system.  They have a swivel like a garden hose connector to make it easy to put on and off.  I bought them specifically for the water side of my plate chiller.  I have camlocks on the wort side, but I saw no reason to spend that much money for the water side.  These are way easier to work with than the standard non-swivel barbs I had before.<br />

			<content:encoded><![CDATA[<div>SO... Last Friday (5 days ago), we ordered to go from a local pizza joint - the deal came with a gallon of sweet tea. From past experiences with this restaurant's tea, I know it tends to be quite sweet (we actually cut it with tap water).<br />

Well, we sat it on the counter and promptly forgot about it. Until tonight, when I noticed it was fermenting. Fairly vigorously.<br />
<br />
It has one of those 'pull tab' lids that's still sealed, so I'm not worried about it being contaminated with anything <i>else </i>besides what is clearly living in it.<br />
<br />
So, here's my solicitation for people's thoughts on:<br />
<br />
-what will this produce? - Is this kambucha?<br />
-the safety of whatever this produces<br />
-culturing this 'wild' yeast?<br />
-bottling/storage? (to carb or not to carb?)<br />
<br />
and any other input people may have...<br />
