INGREDIENTS

CRUST:
20 Oreo Cookies crushed with filling
4 tablespoons Challenge unsalted butter melted

FILLING:
8 ounces Challenge Cream Cheese room temperature
1 cup powdered sugar
8 ounces Cool Whip 1 container
1 teaspoon vanilla extract

TOPPING:
1 (20 ounce) can Cherry Pie Filling

INSTRUCTIONS
Stir cookies and melted butter in small bowl with a fork until all cookies are moistened with butter. Press into the bottom of an 8x8-inch pan. Chill until filling is ready.
Use a hand mixer to mix powdered sugar into cream cheese until combined. Mix in vanilla and fold in whipped topping.
Spread filling on top of chilled crust. Top with cherry pie filling.
Chill until set, at least one hour, before serving.

Oreo Cheesecake Truffles

Ingredients:

200 grams plain Oreo Biscuits
100 grams full flat cream cheese, room temperature
250 grams milk or dark chocolate

Instructions
Line two baking trays with baking paper and set aside.
Grab your food processor and add all the Oreo Cookies (cream filling and all).
Whiz until they resemble fine crumbs.

Add cream cheese and whiz again. Roll the mixture into small balls using your hands and place onto one of your prepared trays. Pop in the fridge for 30 minutes.

Add chocolate and microwave- safe bowl and heat in the microwave, stirring every 20 seconds, until melted and smooth.

Grab your truffles from the fridge.
Use a fork/stick to dip each truffle in melted chocolate. Gently place onto the prepared tray.
Continue with the remaining truffles, then place in the fridge for 15 minutes. Decorate however you wish

We, Filipinos all love 'pandesal' and what's good combination is a creamy and yummy spread. Peanut butter has been one of the favorite. But now let me introduce you the 'Yema Spread'. Our all time favorite yema can be spread on our pandesal.

Here's what you need to make creamy and yummy Yema Spread.

INGREDIENTS

1 250 ml pack condensed milk
4 egg yolks
1/2 teaspoon vanilla flavor
3 teaspoons lemon juice
1/4 cup plus 2 tablespoons butter
2 to 3 tablespoons instant coffee, Optional

COOKING PROCEDURE

Prepare a pot of hot simmering water for your bain marie or double boiler.
Combine condensed milk, egg yolks, vanilla, and lemon juice in a heatproof bowl. Whisk until well incorporated. Place this bowl on top of your pot of water (make sure it doesn't touch the water) and continue to whisk for 15-20 minutes or until mixture thickens.
Add butter and continue to mix until butter is well incorporated. Transfer to a jar or container and allow to cool. Spread on toast.

Shelf life: 1 month if refrigerated & 1 week if not refrigerated

➢ SITE SELECTION – Select a good site for the free-range chicken farm.
➢ Flat area or at least not so stiff /rough terrain
➢ Shaded with trees
➢ Grassy for forage purposes
➢ Easy Water & Electricity source
➢ Far from road with heavy traffic circulation
➢ Easy access for caretaker

➢ RANGING AREA – Free-range chicken requires a ranging area.
➢ Minimum 1 square meter per bird (bigger is better)
➢ Fence with net or other fencing materials
➢ Easy Water source distribution
➢ Easy access for caretaker
➢ Not treated with chemical fertilizers or any harmful chemical agents

➢ CHICKEN HOUSE – A chicken house is necessary for the free-range chickens.

1) Gas brooder = 1 for every 500 chicks; or
2) Improvised Charcoal brooder = 1 can for every 100 chicks; or
3) Incandescent bulb brooder = 1 set of 100watts for every 50 chicks

➢ FEEDING MATERIALS – The chickens must be fed daily with a program or time schedule. Among feeding materials that necessary for free-range chicken farming are the following:
1) FOR DAY OLD TO 21 DAYS OLD (BROODING STAGE)
• Chick Feeder Troughs (1-meter) = 1 for every 25 chicks; or
• Chick Feeder Plate (32 cm diameter) = 1 for every 25 chicks
2) FOR RANGING STAGE TO HARVEST (22 DAYS ONWARDS)
• Bucket Feeder (8 kg capacity) = 1 for every 20 chickens
• Plastic drum container = 50 kilos capacity for feeds storage

➢ WATERER/DRINKING MATERIALS – Free-range chickens are also given drinking water, without water they may suffer dehydration. Among drinking materials necessary to use are the following:
1) FOR DAY OLD TO 21 DAYS OLD (BROODING STAGE)
• ½ Gallon container (2 liters) = 1 unit for 10 birds
2) FOR RANGING STAGE TO HARVEST (22 DAYS ONWARDS)
• 1 Gallon container (4 liters) = 1 unit for every 10 chickens
• Basin w/ plastic guard – 1 set for every 15-20 chickens
• Water drum (200 liters capacity) or Water line for distribution

➢ CLEANING & DISINFECTION MATERIALS – Cleaning and disinfection of every area is important to maintain the bio-security of the farm.
• Foot-bath – at least 4 inches deep to properly soak foot ware for disinfection
• Cleaning materials – Broom, Dust fan, Web broom, Pale, Brush
• Detergents & Disinfecting agents (ex. Powder soap & Chlorine)

➢ BEDDING/LITTER – Beddings or litters are use inside the chicken house especially at brooding stage to control and balance the chicken manure formation. Be sure to have fresh and clean bedding/litter at all times. Bedding/Litter should also be disinfected prior to loading of your free-range chicken. Among litters that can be use are:
1) Rice hull (preferably carbonized)
2) Rice Straw
3) Sawdust

➢ SUPPLIES – It is very important that we know very well our suppliers for our farm needs. The following are the supplies needed for your free-range chicken farming:
➢ DAY OLD CHICKS – Day Old Chicks (DOC) from free-range breed.
➢ FEEDS – The feed formulation for free-range chicken requires at least 70% cereals, 26% protein nutrient from plant base, and 4% vitamins and minerals. Although we can use commercial feeds, until we could mix our own feeds, be sure to buy fresh and safe feeds from your supplier. Supplement it with more grass and natural feeds from the ranging area.
➢ WATER – Clean potable water supply is very important. Be sure to have a source of water near or within your farm vicinity. Water is needed at all times.
➢ VACCINES – Vaccination is allowed and required for free-range chicken. Vaccination may vary due to weather condition, location and present disease/virus’ in your area. Seek your municipal/provincial veterinary assistance for vaccination program adaptable to your area and vaccine supplies.
➢ PREVENTIVE MEDICINES – Aside from the herbal medicine garden and depending on the stage or level of disease in your flock, a preventive medication can be use respectively to the free-range chicken. A veterinary assistance is necessary for this matter. Don’t just buy medicines and use in your flock without consulting your veterinarian. Preventive is always better than cure.
➢ MANPOWER – The most important key factor for free-range chicken farming is your manpower or your poultry caretaker. A caretaker should at least attend a seminar to learn and know the basic principles of free-range chicken farming. Every livestock farming’s success depends on the caretaker too. He/she should be dedicated and interested in what they do, if not, they will never learn.

Siomai, the best Chinese style snack of all time. For some people like me every bite of siomai is like heaven on earth. Especially when it comes with the garlic on top and a deep of soy sauce with calamansi and don’t forget the chili please. This snack is very common on malls, road side and supermarkets where people are very visible.

But guess what? You can actually do this delicious snack at home. Very far from buying on a food cart, when you make this at home you will never worry on how many pieces you have eaten already and how much are you going to pay for it. And on the brighter side except from not worrying on how much you will pay for it, you can earn money out of it.

I have here the recipe and ingredients to make your own Perfect Siomai:

Ingredients

1 kg ground pork (chicken and beef)
1/3 cup chopped turnips (singkamas)
3/4 cup chopped carrots
2 tbsp. or 4 cloves minced garlic
2 medium or 1 large minced onion(s)
bunch of spring onions or leeks
1 egg
5 tablespoons sesame oil
1 teaspoon freshly ground pepper
1 teaspoon salt
5 g seasonings
50 pcs. large or 100 pcs. small wanton or siomai wrapper
Soy sauce, calamansi (lemon or kumquats), sesame oil and chilli paste (for the sauce)

Siomai Cooking Instructions:

Mix all the ingredients in a bowl.
Arrange 10 wrappers in a tray, and weigh 100 g of siomai mixture. Place 2 tsp of meat in each wrapper until nothing is left unfilled. Each wrapper will have 10 grams of siomai.
To enclose, gather up the edges of the wrapper and gently fold it so that it forms a basket shape, with the top of the filling exposed. Press lightly as you pleat each side. Or, if you don’t want to expose the filling, use a bigger wrapper. Do the same on the remaining mixture left.
After the wrapping, boil water and brush steamer with oil.
Keep the water boiling for 2-3 minutes, arrange the siomai in the steamer and let stand for 15-20 minutes or longer for larger pieces.
Serve with soy sauce, calamansi and sesame oil. Chilli paste is optional.

Chili Sauce for Siomai:

1/8 kilo Chillies (Siling Labuyo)
3 tablespoons cooking oil
2 cloves garlic, peeled and minced
dried shrimp or meat finely chopped or grind (optional)

Siomai Chili Sauce Cooking Instruction:
Combine chopped chillies, dried shrimp or meat and minced garlic then simmer for around 20 minutes or till most of the water has evaporated. Add oil, simmer and stir well.

There you have it, your very own Special Siomai. When you have plans on selling your product be sure to have a good presentation. A good packaging attracts more customers. You can start selling on your neighborhood, schools and offices.
