Kedua, tujuan dari penambahan air kelapa adalah agar ragi yang di tambahkan memakan air kelapa tersebut, karena air kelapa mengandung gula, sehingga terjadilah proses fermentasi, sehingga di akhir proses di daptkan tai minyak yang pahit dan pada saat proses fermentasi di lakukan secara anaerob yaitu tanpa udara dari luar, akan tetapi pada saat fermentasi di alirkan selang kedalam air yang bertujuan agar apabila pada proses fermentasi terjadi gelembung yang besar, maka tidak terjadi ledakan. Selanjutnya adapun kelebihan dari proses fermentasi ini adalah tahan lama, tidak mudah tengik dan hampir tanpa kandungan kolesterol. Fermikel mengandung lebih dari 95% trigliserida (trigliserol) serta beberapa jenis asam lemak jenuh dan tidak jenuh. Secara biologi, fermikel lebih aman dan menguntungkan dibanding-kan&amp;nbsp; minyak tradisonal yang diproduksi dari kopra, karena dapat mencegah terjadinya infeksi oleh serangga dan jamur penghasil aflatoksin yang berpotensi menimbulkan keracunan.&lt;br /&gt;

Pada cara fermentasi, santan didiamkan untuk memisahkan skim dari krim. Selanjutnya krim difermentasi untuk memudahkan penggumpalan bagian bukan minyak (terutama protein) dari minyak pada waktu pemanasan. Mikroba yang berkembang selama fermentasi, terutama mikroba penghasil asam. Asam yang dihasilkan menyebabkan protein santan mengalami penggumpalan dan mudah dipisahkan pada saat pemanasan.&lt;br /&gt;

Aslinya dari Filipina, tapi sudah dikembangkan juga di Malaysia, Madagaskar, Paraguay, Brasil, dan Indonesia. Gara-gara banyak ditanam di Aceh, lantas juga dijuluki nilam aceh. Varietas ini banyak dibudidayakan secara komersial.&lt;br /&gt;
Sampai saat ini Daerah Istimewa Aceh, terutama Aceh Selatan dan Tenggara, masih menjadi sentra tanaman nilam terluas di Indonesia (Ditjen Perkebunan, 1997). Disusul Sumatra Utara (Nias, Tapanuli Selatan), Sumatra Barat, Bengkulu, Lampung, Jawa Tengah (Banyumas, Banjarnegara), dan Jawa Timur (Tulungagung). Umumnya, masih didominasi perkebunan rakyat berskala kecil. Potensi daerah inilah yang nantinya dapat dijadikan peluang bisnis yang menjanjikan. Karena permintaan minyak atsiri diberbagai pasar luar negeri cukup banyak. Kontribusi ekspor minyak atsiri relatif kecil terhadap nilai devisa total Indonesia. Namun, ternyata terjadi kenaikan permintaan setiap tahun. Bahkan peningkatannya cukup tajam. Selain itu bahan lainnya adalah sari nanas (nata de pina), kedelai (nata de soya) atau buah lain yang mengandung glukosa. Mikroba yang aktif dalam pembuatan nata adalah bakteri pembentuk asam asetat yaitu Acetobacter xylinum. Mikroba ini dapat merubah gula menjadi selulosa. Jalinan selulosa inilah yang membuat nata terlihat putih.&lt;br /&gt;

Setelah pemeraman selesai, nata dipanen, dicuci, dihilangkan asamnya dengan perebusan atau perendaman dalam air selama tiga kali (air &amp;nbsp;diganti tiap hari). Nata kemudian dipotong-potong dan direbus kembali, ditiriskan. Perebusan selanjutnya dalam larutan gula 40% selama 30-45 menit. Dibiarkan semalam dalam larutan gula. 3.Masukan kaolin kedalamnya sampai seluruhnya berccampur dengan rata. Lalu masukan pigmen colour. Pigmen color ada bermacam-macam sesuai selera dan permintaan.&lt;br /&gt;

1.Na2SO4  dilarutkan dalam  gula/Geserin sambil diaduk perlahan-lahan sampai merata.&lt;br /&gt;
2.MgCO3  dan CaCO3 dicampur jadi satu. &lt;br /&gt;
3.Selanjutanya adonan 2 sedikit demi sedikit dilarutkan dalam adonan 1 sambil terus diaduk sampai semuanya rata&lt;br /&gt;
4.Bila adonan sudah mengental dan halus masukan minyak permint dan minyak pisang ambon secara bergantian sambil diaduk ratasampai adonan menjadi halus dan pulen.&lt;br /&gt;
5.Adonan siap dikemas dalam wadah yang bagus.&lt;br /&gt;

3. Masukan NaOH ke dalam larutan 2 lalu aduk perlahan-lahan sampai bercampur&lt;br /&gt;
4. Diamkan beberapa saat agar dingin. Setelah dingin pindahkan ke dalam botol lalu tutup rapat. Pembersih siap digunakan.&lt;br /&gt;
&lt;br /&gt;
