Soup Soiree | 3 Cozy Fall Soup Recipes

Hi friend! Welcome to a fresh, new week! I’m feeling so good after ending my mini wedding cut and going on a diet break. I’ve indulged in some of my favorite ice cream (the one Elliott’s daughter introduced me to), and we also went out to brunch with friends (Elliott’s BFF that’s going to marry us in November), and celebrated my mom’s birthday at a Mexican restaurant.

It’s been nice to loosen the reins while still being mindful of what I’m eating. I plan to keep this going moving forward and will share all the details in next week’s vlog. I really appreciate you following along there!

And since it’s officially fall and almost October, I have comfort food on my mind. Today, I’m sharing three of my favorite soups – a classic noodle soup, a hearty lentil soup and a crock pot white chicken chili (not technically a soup, but you do eat it in a bowl;)

Easy Healing Noodle Soup

I love this soup whenever I want something warm and comforting. It’s especially handy during cold and flu season. It’s easy to make and the leftovers are delicious too.

Easy Healing Noodle Soup

Perfect for sore throats, under-the-weather days, or a cozy lunch.

Ingredients

8 cups chicken broth
2 celery stalks, chopped
1 yellow onion, diced
1 (12 oz) bag frozen peas & carrots
2 cups egg noodles
1 chicken bouillon cube
Salt & pepper to taste

Instructions

Heat cooking spray in a large pot over medium heat.
Add onion and celery and sauté for 5-7 minutes, until softened and fragrant.
Pour in chicken broth and add the chicken bouillon cube. Stir until dissolved and bring to a gentle simmer.
Add the frozen peas and carrots and cook for 5 minutes.
Stir in egg noodles and cook according to package directions (usually 6–8 minutes) until tender.
Season with salt and pepper to taste and serve warm.

Crock Pot Lentil Soup

I’ve been making this soup for so long that I previously featured it on my second blog – Honey We’re Healthy – many, many years ago. I don’t even have that blog anymore, but the soup is still great!

Lentils are an exceptionally healthy, nutrient-dense superfood that provide a rich mix of plant-based protein, fiber, and essential minerals. They’re complex carbohydrates, and low in fat and calories.

INGREDIENTS (from America’s Test Kitchen)

– 2 medium onions , minced
– 4 medium garlic cloves
– 2 TBS Extra-virgin olive oil (for serving, optional)
– 1TBS tomato paste
– 1/2 ounce dried porcini mushrooms, soaked, rinsed and minced
– 1 1/2 tsp minced fresh thyme leaves , or 1 teaspoon dried
– Salt and pepper to taste
– 4 cups vegetable broth
– 4 cups chicken broth
– 4 slices of bacon
– 3 carrots, chopped into 1/2 inch chunks
– 12 ounces portobello mushroom caps, gills removed, cut into 1/2-inch chunks (I used sliced bella mushrooms)
– 1 cup brown or green lentils (1 cup), rinsed and picked over
– 1 bay leaf (not pictured)
– 8 oz. Swiss chard leaves only (I used collard greens)

To maximize the flavor of the soup, I cooked the first few ingredients (onion, garlic, thyme, bacon, tomato sauce, porcini mushrooms) on the stove for about five minutes, but the recipe says you can have the same effect by microwaving those same ingredients for 5 minutes.

Lentils are a great source of protein with about 3 grams of protein per tablespoon.

Stir both broths, bacon mixture, carrots, fresh mushrooms, lentils and bay leaf into slow cooker. Cover and cook on low until the soup is thickened and the lentils are tender, 9 to 11 hours. (Alternatively, cover and cook on high for 5 to 7 hours.) I did the high heat.

When the soup has about 30 minutes left to cook, remove the bacon and bay leaf, and add in the chopped swiss chard (I used greens because my store was out of chard).

At the end, season to taste with salt and pepper and drizzle in a bit more olive oil. I served ours with toasted French bread, but a healthier option would be to skip it or use whole wheat.

EASY WHITE CHICKEN CHILI RECIPE

This is a simple slow cooker dish with a different spin on a traditional chili because it’s made with healthy chicken breast and white beans. Definitely garnish your chili with some of these toppings (avocado, sour cream, cheese, green onions, and/or a squeeze of lime) to take it to the next level!

The awesome thing about a slow cooker meal is the obvious. You just dump all the ingredients into the pot in the morning, and you have a delicious, piping hot meal ready to go by dinner time. There’s minimal clean up and you didn’t have to spend a lot of time slaving over a hot stove.

I have done this with both cooked and uncooked chicken. We had a rotisserie chicken on-hand this time around so we used that!

After 8 – 10 hours of being productive while your chili cooks, garnish with some of these toppings (avocado, sour cream, cheese, green onions, and/or a squeeze of lime) to take it to the next level!

Here’s the second horse top and I like it even more, it’s just so cute! I really love styles that aren’t too hot because it doesn’t get too cool in Houston until later in the year.

Okay I’m so into this peplum style polka dot top, so fun! The bandeau style is great for showing off necklaces and I’m wearing with my high waisted jeans.

Sticking with the polka dots and bandeau styles. This midi dress is darling, nice and flowy, comes in at the waist and comfortable smocked back.

It’s also staying up so comfortably, so I feel good in this without worrying about adjusting.

I’m smitten with this dress, I think it’s perfect for early fall. It’s nice and lightweight, and the florals are in these pretty darker colors so great for fall. It buttons up the front with a little polished color, and comes with a matching belt.

I ordered these two denim dresses with Round Top in mind, but didn’t get to share them with you. I like this so much more on, much cuter than I expected!

I really like the smocked waist that comes in to fit and flatter. I got the darker wash, but comes in so many more to choose from.

I also got this midi style, but almost maxi length on me. This material feels a little thinner and lighter weight than the other, but also a little bit looser. I think I would prefer a size down in this.

Mini Wedding Cut Complete!

Hi friend! I hope your week is going great! I just finished week 5 of my mini wedding cut and wanted to give you the update here in case you’ve been following along.

Mini Wedding Cut | Week 5

I had 5 weeks to lose a bit of body fat before my wedding dress fitting, which was Friday! I shared all the details in my latest vlog if you want to check it out.

I find it fascinating what we can do with our physiques with the right calories, macro ratios, cardio, training, hydration and sleep! It’s so cool to see the hard work (and it IS hard work) pay off! I share all the behind-the-scenes grind on my YouTube channel because I think it’s helpful to see how a regular mom prioritizes fitness.

We spend a lot of time giving to others, and I now look forward to my workout time as “me time” when I’m only responsible to myself. Yes, it’s hard to make the time, but we can do it if it’s important. My workouts are really challenging as I train with progressive overload, but I love seeing the progress. New muscle definition is exciting to me! Especially at over 50!

What’s Next?

Now that the mini cut is done, I’ll be taking a “diet break”, bringing up my calories and working on maintaining my shape until the wedding in just 44 days!

I’m not only getting excited for the wedding, I’m looking forward to the honeymoon! We decided to go to Cabo and we’re staying for a week! I can’t remember the last time I had a full week vacation!

Fall Bucket List

This & That | Wedding Update & More

Hi friend! Welcome to a fresh, new week! I hope you are refreshed from the weekend, ready to tackle the week ahead! I’ve been in a two-step alternating between wedding planning and working on my fitness app and so today I thought I could give you an update on more wedding details and a few random this and that’s with you!

Wedding Preparations

As y’all may know, I did a mini wedding cut getting ready for my wedding dress fitting last Friday and I’m so happy I did! I felt really confident in my wedding dress and can’t wait to get it back from the final fitting in about a month!

Our wedding will be somewhat non-traditional in that the vibe is we’re hosting a dinner party and getting married in the middle of it. So, Elliott and I will both greet and mingle with our guests as they arrive and have a cocktail hour with a quartet playing for about 45 minutes before the ceremony.

Elliott said he’d prefer to see me in my wedding gown for the first time as I walked down the aisle. So I ordered two dresses that I could wear before the ceremony and also change into for the after party.

Here are two options I was considering:

Long Sleeve Lace Dress

I love this first one with the gorgeous lace, long sleeves and deep view in the front. It’s also backless which I really like.

Of course it would require an alteration in the length and possibly the chest to keep everything up and in place, but I felt very comfortable in it bonus, it’s on sale under $100!

Halter Dress

I also really liked this halter style dress for showing off your shoulders. It has gorgeous, beaded detail, and a very pretty train.

Problem with this one is I could barely walk so if I decided to wear this style, I would actually have to exchange it for a size up and then get it tailored.

Then, Elliott and I also talked about me just wearing my actual wedding dress and having it bustled before the ceremony. Then I could duck out with Ali-Shaun and let the train out and put in my veil and maybe that would be enough of a “reveal” as I walk down the aisle.

I’m not sure. I like that second option just because then I don’t have to go through the expense of a second dress & alterations, plus the time to get it altered. Then again, I’m sure we can make two dresses work . . . Ali-Shaun said she liked the element of surprise and I do get that.

One thing I was really clueless about in buying a wedding dress was the cost of alterations. My budget for the dress was under $1,000 which I stuck to, but the alterations have cost nearly as much! I’m just mentioning that for any future brides out there. I was very surprised to realize that alterations were that high.

Throughout our entire wedding planning process, we’ve wanted to keep things very simple and budget friendly. It’s been challenging but we’re trying!

I was also wondering what my daughter would wear since she does not like dresses. I decided not to stress about it because it was more important to me that she be comfortable and enjoy the day, but she agreed to look at dresses online and there were tons of “no’s” but one she really liked in navy!

I ordered it and it should be here soon! Then the shoes . . . I’m absolutely fine with her wearing sneakers, so she chose a pair of Adidas – darker navy Spezial, but the sizing totally threw us off. Sadly, they will be sent back, and hopefully we get her size right this time. I guess they had unisex sizing??

I also helped my mom browse for dresses online and she chose two to try on from Amazon – this lace off shoulder dress and this one-shoulder dress. On the off-shoulder dress, after I ordered it, I got an email from the seller confirming the size I ordered and then double checking the measurements. I was able to write back with my mom’s exact measurements, so hopefully it fits perfectly!

Elliott has his navy suit, dark green tie, pocket square, shoes, socks and just needs a belt. He tried on his outfit for me over the weekend and he looked so handsome!!! He also took James suit shopping and they found one for him too. I can’t wait to see my guys all decked out on the actual day!

Wedding Hair & Jewlery

I did decide to hire the professionals for hair and makeup for me and Ali-Shaun. Our friend and makeup artist Mari will be perfect, she’s so talented with makeup and her friend is doing our hair.

I guess I need to decide the style – I’d like to have my hair at least partially up or to the side and I did buy some pretty combs.

But, I think it may need to be up more to show the back of the dress better??

Wedding Earrings (on sale under $10)

Wedding Flowers & Decor

Our wedding party is very small, so we only need two bouquets and 4 boutineers. Again, I’m trying to keep things very simple, and hired my friend’s sister to prepare the florals and also set up the decor for the tables. Erin is great and has made James’ homecoming mums and flowers several times.

Maybe a bouquet similar to this?

At first I considered making the boutonniere myself, but realized I don’t want to be responsible for those!

We ordered a few decorations and table decor items from Amazon too.

Our sign actually came in over the weekend and is adding onto our excitement! It came in just two days and was very well packaged. The candles and holders were securely packaged and good quality too.

Empties & Reorders

Now onto some tried and true faves that I’ve run out of and order on repeat.

Oribe Clarifying Shampoo • Hi-Def Brow Pencil

I’ve lost count of how many times I’ve ordered these! The clarifying shampoo works like no other to get my hair clean and shiny. I’m prone to being extra oily, especially at the back of my neck, but this shampoo solves that.

This is my brow pencil of choice that I use daily. I get the color soft brown.

Vitmin C Serum • Merit Tinted SPF • Tatcha Lip Mask

I like the Tatcha lip mask so much that I put it in my bachelorette party goodie bags. I apply it every night and keep it right on my nightstand.

Wedding Cut Update & Your Faves This Week

Hi friend! Yay for Friday and for the weekend! I couldn’t stay away -ha!

I have been hard at work this week, pouring so many hours into my fitness app and I’m so genuinely happy to be working on something I’m so passionate about. I’m very thankful for your encouragement and support along the way. It really lights me up to hear your thoughtful comments and messages and helps confirm I’m on the right path.

Today is exciting because I go for my wedding dress fitting! I spent the last four weeks in a mini cut getting ready for it and I shared all the details in my latest vlog.

This new YouTube vlog goes into detail about my calories and macros, what I’ve been eating, how I’ve been training, and my current back workout.

I’m officially down 3.2 pounds and really locking in on all the things! My fitness routine consists of:

Tracking my macros down to the gram
Drinking 100 oz of water
Hitting 10k steps a day
5 minute MISS cardio sessions 5x a week
4 weight workouts
1 day of pilates
Prioritizing sleep and rest
Meditation & prayer

I also went to a physical therapist to discuss my diastasis recti. After my pregnancies, my abs are still separated and I wanted to see if there was anything that I could do to help heal it this many years later.

I know there are exercises you can do at home, but I wanted to make sure I was doing them correctly since those techniques are new to me. Our session was very informative and the PT gave me some good exercises and breathing techniques that I’ve been doing at home. I talked about it in the vlog, but I plan to share more in the next one. I signed up for four sessions with the therapist, so fingers crossed I learn from her.

I’m so thankful I started this fitness journey and got dedicated when I did over a year and a half ago. My hard work has really paid off in how I look and more importantly, feel.

Something Special is Coming!

Hi friend! Welcome to a fresh, new week! I hope you had a restful weekend and are starting the week strong!

I’m starting something special and I wanted y’all to be the first to hear!

I’m creating a fitness app!

I’ve been wanting to create my own fitness app for a long time, but have also been very intimidated to actually start.

Last month, I passed my certified personal trainer exam, which gave me more confidence to just go for it. I feel confident about what I want to offer, but the complexity of getting it out in the world has had me paralyzed. I’m sure I’ve been overthinking the whole thing which has led to self doubt and procrastination.

It feels scary to step away from what’s been familiar to venture out into something new. I don’t know how it will be received or if will be something I pour my heart into and no one is interested! When I type those words, I think . . . those are exactly the kind of self sabotaging thoughts that keep us stuck!

When I truly dig deep and consider what is important to me and what aligns with my soul, being healthy and strong and self compassionate later in life always bubbles to the surface. And I want to spread that message. I want women to know that they can change their bodies and their life and self confidence with the right tools, habits and dedication.

When I committed to getting strong and fit at age 50, it opened up my eyes to what was possible. Getting stronger, learning how to eat to support my goals and becoming more intentional about my health has changed so much more than just how my body looks. It’s given me a new confidence and I’m finding true joy in the process.

My YouTube channel has helped me to start sharing that message because with longer form content I can go into more detail about the day to day – as opposed to 15 second instagram snippets of life that can never capture the full story.

Latest Vlog

I want to create a place where I can share workouts, programs, guidance and resources to help women get stronger, feel confident in the gym- or at home – and create a healthy lifestyle that actually feels sustainable.

I could probably spend another six months researching, planning and trying to make every decision perfect before I ever actually put anything out into the world. But I finally realized that at some point, I just have to start!

“ACTION PRECEDES MOTIVATION”

That’s what I know for sure and I lean on that phrase in many areas of my life to help get me going. If you feel stuck and are lacking the inertia to get going, get moving first. That changes the momentum.

So that’s what I’m doing here – taking action.

And that’s why I cleared my blog schedule this week, so that it doesn’t detract from my time focusing on building our fitness community.

Starting Small

Instead of trying to build everything at once, I’m starting with something simple: workouts you can do with dumbbells at home. From there, I’d love to add gym workouts, different training programs, educational content and other resources.

I want to hear from YOU.

Denim on denim is an outfit formula for fall. This is actually a denim top, but feels a bit substantial, more like a shacket or light jacket.

I think it would also look cute worn open like a cardigan, or a different wash jeans for more contrast. Love this piece, it’s definitely an easy mix and match style.

Another good jean find! These are the Rivete straight leg jeans and I adore that cuffing detail, and washed black that’s not too harsh.

I shared this top the other day in an OOTD in a neutral tan, but I’m loving the blue. I always stick to my neutrals, but this blue makes me want to add some more color.

Y’all, when I unboxed this top I thought it was a mini skirt! I remembered it was a strapless bandeau top and gosh I’m smitten. It’s a thick knit material, but stretchy and so flirty.

New Anthro Styles & What I Wore in Round Top

Today I have some new styles to share from Anthropologie and also what I wore while we were in Round Top. I didn’t overpack, but had fun wearing some different things while we were there.

I got a few new Anthro styles that are so cute! I’m always gravitating toward henley styles and this v-neck tee is a soft heathered cotton that comes in the prettiest colors for fall. I like how this is as comfy as your favorite tee, but looks like you put more effort in since it has those pleated shoulders and button front.

I’m wearing with my cropped Colette jeans I’ve had for years now. Seriously so good, everyone deserves to have a pair in their closet. They’re a comfy high waist and just so flattering on – they come in crop and full length styles.

This top is exactly what I turn to when I’m ready for sweaters, but Houston weather isn’t quite there yet. The brown is so pretty for fall and gives me that sweater weather vibe.

It’s comfortable to wear now and has a little bit of stretch to it. It’s a little bit shorter length so you don’t have to do a front tuck, but you can if you want.

I got a couple new things from Rails and am really loving them so far. This top is even better in person! It’s a super lightweight stretchy material, comfortable on, the mock neck isn’t constricting at all.

The ruching is so pretty and easy to dress up especially in this brown. I’m wearing with these jeans that are a comfortable high waist and hit right at my ankle. I appreciate that so I can easily wear with flats.

This hoodie is so soft and cozy, it will definitely keep you warm with the fleece lining. I cannot wait for the temperature to drop because I will get so much use out of this.

It has a subtle texture to it, it looks like great quality and is different than your typical plain hoodie.

Labor Day Sales & Fall Outfit Inspo

Hi friend! Welcome to a fresh, new week and hopefully a day off! Elliott and I are back from our trip to Round Top and it was so fun! I love those weekends away with him and they always give back so much. We ate (too much!), drank, shopped and slept! It was very needed and I’m thankful for the rest.

I’ve also started experimenting with lashes and really like this set that looks more natural. I like how they give your lashes a boost and I’ve been able to rewear the same lashes many times.
