Home Food

I have been home with my family for a few weeks now and am enjoying every minute of it. I think I have missed the food the most. I had almost forgotten the amazing feasts that we Maltby's have. I have no poctures of food to share but I do hope my explanation can suffice for now.

A lot of people like to throw around the phrase "good home cooking," but do they really know what that means? I believe I do, and I will explain it here.

The first big meal was mesquite smoked baby back ribs with smoke chicken quarters. It took a good few hours and a few glasses of wine to cook through. Amazing.

Another night we had BBQ dove breast......

Then there was slow cooked chili with scratch sweet cornbread, yep.

Fried chicken, gravy, scratch biscuits, mashed potatoes, and gravy.

And Lamb stew and scratch biscuits.....

Nothing quite like home cooking that really makes me feel like I am home. Love it here.

It has been over a year since the I was teaching Knox about the nervous system. It would take too long for me to go over in detail the amount of things that has happened in the last year. I will attempt to hit the highlights and keep up with the happenings of what seems like a whirlwind of a life, but I do love it so.

So here’s the skinny;

Jennifer and I are now living with her mom and stepdad until September. We are finishing up the last few things of school and then headed back home to Blythe. We plan on living with my parents for a little while, at least until we get settled and find a home. We plan on working and learning from my dad.

The most exciting part of the last year has been the addition to our family. Abigail Louise Maltby was born May 6, 2014 at 10:07 am. She was 8lbs, 19.8 in long, with beautiful blue eyes that have only become more stunning in these first 3 months. She has blondish red hair that has yet to decide with a shade to stick with. She is our sweet bundle of joy who's personality seems to grow every minute of every day.

Knox is turning in to an intelligent curious little man, who will be starting school on August 18th. There is an amazing new school that has opened in Blythe and Knox was accepted. It is an all day Kindergarten with a maximum of 15 students. The daily schedule includes: English, Reading, Composition, Math, Science, Technology (they get Kindles to use in class), Engineering, Spanish, Art, PE, and Music, did I mention this is Kindergarten. It is an awesome school that I know he will love. My parents will take care of him until we move down at the end of September.

Life is a blur right now, and we seem to be surviving. We are constantly reminding ourselves to not focus too much on what lies beyond our school, but to embrace what we need to do now in order to make it to that place. The constant changes happening at our school are not helping us in any form, but we have taken these challenges and grown closer together, and stronger.

My plan is to update this more often. I have been putting everything aside for life and school this past year, but I am making strides to balance all the things I wish to do in my life.

Teaching Knox about the Nervous system

So today Knox had a question for me; "Dad, what kind of doctor are you and Jenn?" I told him we are Chiropractors, and we work with the nervous system. I soon realized this might be too much to try to explain, so I quickly added, "Nerve Doctors, that might be easier to understand right now, we are nerve doctors." The rest of the conversation went something like this:

Knox: What are nerves, daddy?
Me: Well, you know how you are breathing right now?

Knox: Oh yeah, I like breathing.
Me: Nerves are what control that, so when you sleep, and are playing or thinking of something else,
your nerves keep you breathing.

Knox: Can you cut them up and eat them?
Me: No, we don't eat them, they are inside us.

Knox: OOOOOOOOHHHHHH, what do they do?
Me: They control everything inside you.

(The following questions were asked while demonstrating the action)
Knox: Do they control me running fast?
Me: They do.

Knox: Do they control my walking?
Me: They do.

Knox: Do they help me be strong? (flexing)
Me: They do.

Know: Do they help me hug?
Me: They Do.

Knox: Do they help me kiss?
Me: They Do.

Knox: Do they help me love?
Me: They do.

After this question he yelled YES! at the top of his lungs, which was followed by a quick reminder to use his inside voice, and ran to play with his trucks. I love this kid.

The Next Chapter

I started this blog as an introduction to a new chapter in my life. Since then so much has changed and I have tried to share a much of it as I could here. I know there have been gaps, and there have been times of long silence, but I can think of not better way to write in this blog tonight than to share the next chapter that has been opened up to me, it is beautiful, sweet, funny, lovely......it is truly amazing.

I asked out Jennifer Emmons on January 17, 2012. She was sitting in the back of my class, and we had only met once before. Even though she did not know it then, but that was our first date, and I will never forget the lunch where this beautiful woman sat across from me and asked if she could touch my beard. I said yes, and she lean across the table stretching out her she arm grasped my beard, and smiled at me.

After that day, we were attached at the hip,

And on March 22nd, 2013, I married that woman.

Today we live in an awesome little house in Niles, California and are both full time students in graduate school. We are at school most of the day, and in the afternoon through the late evening we are in the clinic taking care of people. We both just started working there, and we love it so much its crazy.

I want to share my whole world with those who love me, and have been following my life as of late. Expect more from me here, the pages ahead of me are so exciting to think about I can not imagine not sharing it all to myself. I always end all of my post with the same phrase, please believe it.

The Last time

The last time I left anything on here, I was not married, I was not in clinic, I was not as happy as I am now.

In the past few months a lot has happened, but it is easier to put it simply. Now I am married to the love of my life, and I am in clinic, and am much happier. This is where I am, and I love not knowing fully where I am going, but I know I am going and will keep on going. Having Jennifer by my side will only help me go faster, stronger, harder, farther.

Pizza takes away the rage

This has been a week of rage for me. Everything that could go wrong went wrong, and at the end of each day, I still felt like I handled it all wrong. So, as I am alone for most of the weekend I decided to start if off at the pizza place down the street. Nothing like a slice to ease the crazies away.

I would like to apologize to everyone I seemed short with this week. I do not know why I could not put things into perspective, my head was not on straight at all.

School was killing me this week, and for some reason someone at seminar reminded me why I am going through it all. It's not about me. It is about those who need my help. It is about those who are stuck in the worst medical system on the planet, and are being lied to everyday. I want I could help them all.

This was a week that taught what not to do, and because of that, I now realize it was a great week.

Tuition

I found out the other day that my tuition will increase $800 a quarter starting in the fall. Although the simple idea of spending more money is not fun, I have been thinking of where my money exactly goes when I do pay every quarter. I understand that there are fees, salaries, bills and that such to pay. In thinking about this I have wondered if there was a way to direct my tuition money. Think about it for a minute, what if students guided where the money went and who received what percentage of money, after they took the classes of course. For example, I am sitting in a class right now called Fundamentals of Business, I have had this teacher for other classes before and every time I feel as if I am driving down the freeway throwing my money out the window. The only way I have been able to make it through is the idea that this money falls in the cars of teachers who deserve it.

This is just a vent. I think if students were given the power to control the money of the school, the school would close in a month. The experiment might prove fruitful for the school as well. A simple survey where the budget is laid out in front of the student in its basic elements, with percentage next to departments, classes, and facilities. At the end of the survey should be plenty of room for notes. I believe that most students will not leave any notes for two reasons. First, they are lazy and do not care. Second, they believe that whatever they put will not be considered. The first is difficult to fix, the second is possible to fix if the school makes an effort to acknowledge all comments made, and answer them. The students voice is valuable, but not the end all of how to fix any problems at the school, but should be considered in all aspects of how money is spent and why.

My school also has a health center, I believe this should be self sustaining and not a part of the survey.

I realize now that I could continue on about this subject with many more details, for a long time. I will not. I just felt I needed to write out some of my frustrations, mainly because I am sitting in a class titled "Fundamentals of Business" where the majority of the class is based on Tony Robins coaching and not business. I just had to print out a 60 page personality assessment from his website for this class, hence why I believe my money is being thrown away.

33 Days

In thirty three days, Jennifer and I will be married, and this quarter will be over. Both on the same day. Last night I spent the first night in my room in the new house. She moved in on the first of the year, and I moved in yesterday. We are so blessed and keep telling each other how lucky we feel with having found a nice little house to rent, in the exact neighborhood we have wanted to live in.

These past few months have been a blessing for us in many small ways, and we continue to grow in our knowledge of Him, and how he is working in our lives.

My Beautiful Son on Winter Break

Winter break was an eventful one. Knox was in full sprints and Jennifer and I seemed to be as well. We had three weeks of break from school and in that time we did a lot. The first week was spent in Blythe with my parents and we had Knox at that point. The second week, during Christmas, was spent with Jennifer's family in Ripon. Knox had a blast, playing with his future cousin Aaron, and the rest of the family. The third week started with all of us moving Jennifer out of her apartment into the new house we are renting (I will move in after the wedding). Knox and I stayed there in the spare room for a week and he got to sleep in his tent the whole time. The Saturday before school started Jennifer had her bridal shower, and my Mom, Grandma Linda, and Aunt Sandy drove up for it. Knox left with them. It was a wonderful break, and here are some of my favorite pictures we took.

On that way up north we stopped for a few hours at the Living Desert in Palm Desert, and what they had? Only one of the largest model train setups I had ever seen. We could have stayed all day just for this, it seemed like it went on forever. This photograph does not give it justice.

Up bright and early on Christmas morning. He was good and quite while everyone else slept in. He also helped me make the coffee.

In Niles Canyon, where we are renting our new house, they have an old train that runs from there to Sunol (about 45 min away) and back. This time of year it is in Christmas theme, they play music, have the cars all decorated, and serve coffee and hot chocolate. We had a blast, even if it was crazy cold.

Knox and the dogs (Watson and Lilly) became quick friends. They played catch and snuggled on the couch like old buddies.

The last day he was here we went to this big Oak tree grove and ran around the paths and up and down the hills. It was cold, but he loved it. I would put him on my shoulders and run through the trees and through trails until we both collapsed in the grass and just laughed while trying to catch our breath.

It was very hard to say goodbye this time. It still hurts to think about, I can not wait until I can hold him again.

Preservation

There is always something that will take me off my path, me. It never really is my path in the first place, but when I go off of it, there is a time when nothing seems possible and nothing seems visible. I never want these moments to happen, but when they do, they hit hard. These moments always have the same result, clarity. This clarity is so strong, so focused that I have never realized its benefits until now. I know where it comes from and realize that this is always here for me when I need it, even if I do not think I do.

Most things I can not control, but I will always try, and I fail. When I see my self slip back, I must remember what I have been seeking my whole life, and that I know it is always there if I just look and see.

This marks the beginning of a very busy, stressful time for me, but I am at ease and calm. I am content with my place, for it is where I am meant to be. I will still continue to move forward. I will still spend my life attempting to learn all I can.

An eventful game off the field

We went to our first football game today, and it was fun. It was a Raider's vs. Saints game in Oakland and the Raider's lost. It was all in all not that exciting of a game, but we had a good time watching and hanging out with some friends at school who also came.

I also was able to meet one of my dad's oldest friends, Dean Nelson (SAC D). He is one of the most dedicated Raider's fan around.

Here is a quick list of the little things I was able to witness at the game:

- Raider fan escorted out by police for hitting a Saint's fan

- Angry Raider fan throwing a french fry at another fan

- C-17 buzzed the stadium

- Two skydivers dropped in, and landed on the field

- A seagull drop a Churro from 30 feet on to a Cheerleader (this was awesome to see)

- Home team fans chanting how their QB sucks

- Many, many strange costumes

- A women pay $17 for a very small cocktail

- Rescued a cat

Nothing like a dinosaur to liven up the game.

Towards the end of the game we went down to where Dean was sitting to watch the end of the game. While sitting there, we were told there was a cat below us, hanging for dear life. We looked and yes, we saw it. The first picture here is what we first saw of it, the second was later.

After little discussion, Jennifer was determined to rescue this cat, so we laid my jacket on the ground, and she reached down for it. After a few seconds of struggling she drew the creature from its perch. At once it attacked with all its fury. Determined to get away it clawed and bit at her hands and arms, but it was no match for her resolution to save it from a certain death. Quickly she wrapped it in my jacket, we gathered our belongings and headed for the exit. The long walk to our car was plagued with drunks and people trying to sell us cheap goods. But we prevailed and made it, the drive home was uneventful as we planned our next move. When we arrived at the apartment we set up the small dog holder that had and placed the jacket hold the creature within it. We then opened a can of tuna, poured a saucer of water for it, and let it be. We knew we had it, but thought it best to let it rest for the night before attempting to move it any further.

I had a guest speaker in one of my classes the other day, and again realized how much people need to have someone to idolize or look up too. Sometimes i wonder if I am an idiot or simply not gullible. I usually like to sit in the front of the class and take notes. This particular guest speaker first admitted that they had a "teacher" that they called on for everything. They went on to explain that they could not figure out why they could not get started in their practice, so they called this "teacher" of theirs and the advice they were given was this:

"If you want a change in what you are doing, increase the frequency and duration of it."

In case that sounded familiar to you, here is another way to say the same thing.

"Insanity: doing the same thing over and over again and expecting different results."

I really wish I had a recording of it, because I feel that sometimes I have learned more from seeing what is wrong and avoiding it. I every time I feel that I can not make something work I would listen to this and remember, that should change my approach or method. The written word will do fine.

Cicatrix

My last post was about the wonderful time that I had with my family, and I did. But there was one other thing that happened, and I would like to share that now. I went to the dermatologist to get some (a lot) of moles checked out, since Melanoma runs in the family and I have all the classic risks associated with it. I was pretty nervous, I have not had anything checked out in awhile and there was one mole I have had for a long time that was starting to freak me out.

When I got to the Doc he was quick about everything and checked all of them out. Except the one that I did not like, he did not like it either. So, he took me in the back and cut it out. Now, I have never been under the knife before and I was not too excited to see him slicing on my chest. After working on cadavers for so long, I know exactly how sharp a scalpel is and how it can easily cut through, well, me. He cut a big chunk out (for a biopsy), burnt everything else (fun smells), and sent me on my way. A few hours later the local anesthesia had worn off and it started to hurt. It wasn't too bad, more uncomfortable than anything. The worst part was how bad it itched, and I could not do anything about it. Sleeping was awkward too, I had to sleep on my back. This is usually not a problem for me, except now when I must. I ended up setting pillows up around me so I would roll into them and not over onto my chest. If took a few days to get used to that, but I started sleeping again on back with no problems.

I went about everything else trying not to think about it and trying to not let it freak me out. That was the hardest part, for some reason I could not get it out of my head. I was freaked. I know I said earlier that I was sleeping fine on my back again, but all that meant was I was no longer waking myself up in pain from rolling over. I still had this going through my head and could not sleep.

I got the phone call on Monday the 15th, and he told me the biopsy was negative.

It took about two weeks to heal up, and now there is just a scar. I don't think I can say my life has been anything but interesting, and I am only 31. I can not wait to see what He has in store for me next, and even after that.

Fall Trip Home

This quarter was a stressful one. Classes seemed to pile up and at the end of all of it we had to take National Boards Part I. But, as soon as it was done we went home and had a good relaxing two weeks off, wish it had been more.

Home is by far the one of the most peaceful places I have ever known.

On top of is all I was with my boy, and he always rejuvenates me.

Off roading.

One of my favorite things to do with my boy is read with him. We got plenty of that in, and he would bring me books every chance he got.

This trip was also one of work, potty training. He was awesome. On the first day he only had one accident and it got better from there. We had a difficult times, but in all he did really good.

One of the many options he was given on the first couple of days, with a little reading material.

Day one was also naked day.

Spent time with Grandma at work, he even had his own little desk set up.

We went on plenty of walks down the canal.

And of course threw rocks and found shells.

Jennifer wanted to do a puzzle, had to pick out the hardest one in bunch. As you can see Knox was completely enthralled.

My boy has turned three. Since the last I saw him he grew 5 inches, and grew 3 shoe sizes(41" and 10).

We had a small party for him on Wednesday, which was train themed. He was so excited about his train cake that he started to ask about it the moment he awoke that morning. He kept asking throughout the day if you could have a piece of Thomas.

The morning started off with waffles, and then out to Mexican food for lunch. He took a small nap, went swimming, and then sat down to eat some Oscar's carne asada. He loved every minute of it, and this was the first year he let us sing happy birthday to him(he even tried to sing with us). After the carne we lit up the cake, ate it, and headed to presents.

Spark and Peg stopped by on friday and dropped off this personalized pillow for him. As you can see it is no leaving his side anytime soon.

This was a short two weeks with my boy, and I miss him already. He grows so much in so many ways every time I see him.

The Beard Year

As my obvious title suggest, I have been growing my beard out for over a year now (385 days to be exact, but who's counting). When I think about what has happened in the last year, I get a flood of more memories than I know what to do with. I started this blog about the same time I started the beard, and have pretty much chronicled the rest of my life here for all to see.

This is the closest picture I have of when I started to grow my beard, I know it was taken about the same time. Plus I love this kids smile!

And this picture was taken tonight. I did not realize how much it had grown until I started looking through beard pictures.

I want to thank everyone who has been here for me this past year. You are all beautiful to me.

The Beaches

After the long day at Disneyland, we all decided to hang out at the beach for a couple of days. First off we went down to Newport and walked around. Checked out the pier, walked around the houses, and stopped for a coffee. It was a nice relaxing morning.

After lunch, and a good nap back at the hotel we had a nice small dinner down at Wahoo's. As you can see from the pictures I was a little excited. This was also, Knox and Jennifer's first time, they also throughly enjoyed it.

On Saturday we went down to Huntington Beach. We met Mark, Amie and Mason there and had an absolute blast. Mason so so much fun to see and Knox had a great time with him.

Mark and I dug them a couple of big holes with a connecting trench for them to play in.

He was loving every second of it.

Back at the hotel, he was all tuckered out, and ready for bed.

Disneyland Part 3

After his nap he came over to Disneyland and went straight to the Jungle Cruise. He was so ready to be on all the rides and see everything he couldn't stop moving.

We then headed over to It's a Small World. This was actually my first time ever on this ride, and my last. Knox could not keep his eyes off of all the different little people.

After It's a Small World we went on Story Book Land, where Jennifer stole a flower.

We then went for dinner at the BBQ place behind Thunder Mountain. It was a 30 minute wait so Knox and I walked around a bit.

He loved the Cornbread.

This was his favorite ride. He enjoyed it so much he never stopped talking about Dumbo, and before we left he had to have a Dumbo.

Autopia was the last ride we went on. The whole time we were in line he was pointing out the cars, telling me what colors they were and type of car. He loves his cars of all kinds and could not wait to drive one.

After a long day Knox, Jennifer and I headed back to the hotel while Grandma and Grandpa stayed behind and hung out a few hours before heading back to the hotel.

Knox crashed immediately, and slept for a good eleven hours. Grandma and Grandpa snuck back in the room around 11:00 pm.

Disneyland Part 2

Grandma and Grandpa took Knox back to the hotel after lunch for a much needed nap. For the next three hours Jennifer and I were let loose to explore the park for ourselves. It was a lot of fun and being my first time here in at least 10+ years I had to hit up the favorites first.

Star Tours was first on the list and the wait was only 30 minutes long. This is the first time I had been on it since it had been revamped, and we loved it.

Next stop was Captain EO. It was exactly the same. Again we loved it.

We crossed the yellow line and survived!!!

Being goofy, the wait wasn't too bad.

As we left tomorrow land and headed to fantasy land we round the turn to the castle and see "Neuschwanstein Castle," which is what Jennifer yelled out. And then went on to describe to me how this castle was modeled after that on, which she had seen. So, here you go Neuschwanstein Castle.

We then headed directly to Mr. Toad's Wild Ride.

She was supra excited about Mr. Toad.

After Mr. Toad, we walked around. We shared a Chimichanga, had frozen lemonades and found a cotton candy vendor who accepted credit cards. Then after some more walking around we got a text from my Mom telling us that Knox was up and they were headed back our way. So, we stopped at a little espresso place just next to the train stop in New Orleans Square and waited for them there.

Disneyland Part 1

We all went to Disneyland (Grandma, Grandpa, Knox, Jennifer, and I) and here is the first of three blogs. We had such a good time and took so many pictures, I want to share all I can. Knox was super excited the whole time. It took him no time at all to get used to the idea of multiple rides, and not just riding the same ride over and over again, but going on to the next ride. This first set of pictures is of the morning. We went to California Adventure first, because that is where the new Cars land is. We also explored the rest of California Adventure before he went down for a nap.

Walking with Grandma to get the stroller, has yet to realize what he is in for.

Waited 20 mins in line for a picture with this guy, Knox was not smiling because I really needed to fix Lightning McQueen's flat tire.

After Lightning McQueen left to go get detailed, Mater showed up. The line was pretty long so we just tried to sneak a picture from the back. Knox was so excited to see him and could not take his eyes off of him to look a the camera. He wasn't upset, just too crazy excited to stand still (I can relate).

The first ride we went on was Mater's Junkyard Jamboree. It was the longest line we waited in and he did really well. He was so excited and it was a good learning experience on how to wait your turn.

While waiting in line I noticed they had all of these different characters and costumes for Mater, this one was my favorite, Heavy Metal Mater.

Waving at Grandma and Grandpa, he was so good at pointing them out while the ride was going.

This was the way out of Cars Land. The cars in the background are for the big ride in Cars Land, Radiator Springs Racers, Knox was not tall enough to get on this one yet (40" Knox is only 36"). The way this kid is sprouting I would not be surprised if he was tall enough in a few months.

Classic.

This is in Bugs land. The rides were not as fun, but he still loved every minute of it.

And Knox loved every second of it.

So we found this water fountain thing and everyone was just standing around watching it when we walked up. Knox thought watching it was a dumb idea, so he decided to run through it and get thoroughly soaked. Others followed, can it be said he led them to water....

After the water, he got in a dry set of clothes and we sat down for some lunch. Knox was serenaded by the "Mariachi Diva's" while he ate.

He wanted to ride the Sea Horse, and when it was over he wanted to ride everything else.

This was the last ride of the morning for Knox. He sat with Grandma and Grandpa and squealed the whole time.

Apparently Mickey's Fun Wheel can be too much fun for some people.

Underwater Adventures

So, Knox has been all about the pool, and has even convinced me to get in with him. I love swimming with him, and to see how much he progresses from each time he is in it is awesome. Will swim out (with a small inner tube) by him self, beyond the steps around the shallow end of the pool, and will let me take him all the way to the deep end of the pool with out any fuss.

I have one of those waterproof cameras so we had fun taking all kinds of pictures. I posted a lot of neat underwater ones, as well as some funny optical illusion pictures.

Did I mention how much I love this kid?

Gave Knox the camera and tried to show him how to use it. Did not think he took any pictures, yet after I loaded them to the computer, I saw that he had indeed hit the button a few times. This was his best picture.

A Day at the Park

We went to the local park today, and Knox had a blast. He loved the swings, slides, and monkey bars. He even got Dad to go on the slide with him a few times (hard to say no to that face). We only lasted about thirty minutes. It started to get hot and the water was running low at this point.

We then promptly went to go visit Great Aunt Kathy, eat mexican food, and visit Grandma at the office. After a good busy morning it was time for a nap.

Everyday he grows and changes, love this kid so much.
