The rains have been coming down all day and the temperature has been dipping so I decided to put together a simple chicken corn chowder. &amp;nbsp;Turned out pretty great. &amp;nbsp;Here is the recipe.&lt;/div&gt;

4 or 5 ears of corn&lt;/div&gt;

4 thick strips of bacon&lt;/div&gt;

1 large onion&lt;/div&gt;
&lt;div&gt;
1 T butter&lt;/div&gt;
&lt;/div&gt;
&lt;div&gt;
4 cups of water&lt;/div&gt;
&lt;div&gt;
4 cups of chicken stock&lt;/div&gt;
&lt;div&gt;
4 - 6 medium potatoes, cubed&lt;/div&gt;
&lt;div&gt;
2 chicken breasts, cooked and shredded or 2-4 cups left over chicken&lt;/div&gt;
&lt;div&gt;
cayenne pepper&lt;/div&gt;
&lt;div&gt;
1 block of cream cheese&lt;/div&gt;
&lt;div&gt;
salt&lt;/div&gt;
&lt;div&gt;
pepper&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Cook the corn until done 4-8 minutes. &amp;nbsp;Run under cold water until you can handle the ear. &amp;nbsp;Cut the corn off the ears and scrape down ears. Put the corn kernels and stripped ears aside.&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Render the bacon. &amp;nbsp;Put aside 2 tablespoons of bacon fat. &amp;nbsp;Cut up the cooked bacon and put aside.&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Dice onion. &amp;nbsp;Saute in 2 T of bacon fat and 1 T of butter in a soup pot.&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Pour 4 cups of water and four cups of chicken stock into the onions.&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Put stripped corn cobs into the pot and boil gently for about 1 half hour.&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Add the potatoes and cook until just soft to a fork. &amp;nbsp;Take out about a cup of potatoes and mash with a fork. Add back into the pot and continue to cook gently. &amp;nbsp;Add chicken, corn kernels and bacon, a pinch or so of cayenne. &amp;nbsp;Cook for about a half hour.&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Add the block of cream cheese and mix it into the soup until it is completely incorporated.&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Season with salt and pepper to taste.&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Very tasty. &amp;nbsp;Even better the second day.&lt;/div&gt;

I sometimes cook for the church where I am one of the pastors.&amp;nbsp; Some of our members are on gluten and dairy restricted diet and I wanted to make a simple supper for a crowd that would be enjoyed by most and not a problem for anyone to eat.&amp;nbsp; I also am pretty busy with my various responsibilities as a pastor, as a chaplain, with my family and in my community involvements.&amp;nbsp; This morning I went to the store to figure out a quick, hearty soup to make for a meeting tonight. I don&#39;t usually use frozen vegetables, but since I was in such a hurry, they were great in a pinch.&amp;nbsp; Here is the result.&amp;nbsp; I think it came out pretty good.&amp;nbsp; It has a bit of a southwestern taste.&amp;nbsp; If you wanted to thicken it up you could blend a couple of ladles with a corn tortilla until smooth, pour it back in and bring it to simmer for a bit, but I like it just the way it is.&lt;br /&gt;
&lt;h3&gt;
Super Easy Hearty Gluten Free Chicken Soup&lt;/h3&gt;
2 T olive olive&lt;br /&gt;
4 chicken thighs with skin on&lt;br /&gt;
4 chicken breasts with skin on&lt;br /&gt;
2 cloves of garlic minced &lt;br /&gt;
4 stalks of celery, chopped&lt;br /&gt;
1 bag of frozen chopped onions&lt;br /&gt;
4 boxes of low sodium, gluten free chicken stock&lt;br /&gt;
2 bay leaves&lt;br /&gt;
2 medium red peppers, chopped &lt;br /&gt;
1 bag of frozen corn&lt;br /&gt;
1 bag of frozen Lima beans&lt;br /&gt;
1 bag of frozen hash browns (cubes, not shredded)&lt;br /&gt;
1 t. cumin&lt;br /&gt;
a pinch or two of cayenne pepper&lt;br /&gt;
salt and pepper to tase&lt;br /&gt;
&lt;br /&gt;
Brown the chicken very well in the olive oil in a large soup pot.&amp;nbsp; Remove chicken and set aside.&amp;nbsp; There should be a good fond in the pan.&amp;nbsp; Sweat celery and garlic in the fat remaining and when somewhat cooked add the frozen onions, salt, pepper and cook together until veggies are soft.&amp;nbsp; Add the chicken stock , the bay leaves and put chicken back in the pot.&amp;nbsp; Simmer for about and hour. Remove chicken, set aside and let it get cool enough to handle.&amp;nbsp; Remove any skin or other bits remaining in the pot.&amp;nbsp; Add the peppers, the frozen corn, the Lima beans, the hash browns, the cumin and cayenne pepper. Cook until veggies are soft, about 30 minutes or so. Take the chicken meat off the bone and add it back into the pot.&amp;nbsp; Adjust salt and pepper as needed.&lt;br /&gt;

It was pretty impressed with the shuckers. &amp;nbsp;The guy who was preparing my plate told me that he shucks about 2000 briny packets a day.&lt;br /&gt;

If you plan to attend the Belmar Seafood Festival next year, I would give you two hints. &amp;nbsp;Try to go on Friday night. &amp;nbsp;The attendance is a little lighter and according to one of the worker, this years festival had the largest attendance in it&#39;s history, so on the last day, crowds were definitely&amp;nbsp;bordering&amp;nbsp;on&amp;nbsp;intolerable. I would probably use corn tortillas next time, and crumbled a bit of feta cheese on top toward the end of cooking. This past Sunday was a beautiful beach day though and Christine and I headed up there after church.  The weather was beautiful, but the water was not great. That is kind of unusual for the Jersey Shore, because contrary to popular belief, excellent coastal &lt;a href=&quot;http://www.nj.gov/dep/beaches/&quot;&gt;water quality&lt;/a&gt; is one of the high priorities for our state.  However, the result of all the rain was healthy vegetation in waters and the same has been true of the my garden.&lt;br /&gt;&lt;br /&gt;We put lots of sweat equity into the garden this year and lots of compost, and it already starting to pay off. The restaurant is a quirky little place.  The theme is Mom&#39;s cluttered kitchen table--a decorating style that might be called &quot;tacky chic&quot; There is a diner counter that folk eat at, as well an eclectically furnished dining room.  Nearly every inch of the wall are with pictures, photos, plaques, etc.  The tables are set with mismatched thrift store mugs,  dishes and salt and pepper shakers. I had two eggs over easy, hash browns, rye toast and coffee with a side of corn beef hash.  The coffee was fresh, hot and full of flavor.  The eggs were cooked just the way I like them.  The hash browns were crunchy with a bit of a peppery kick.  The star for me of my meal was the corn beef hash.  It was homemade, with big chunks of corn beef, green peppers, potatoes and onions.  Yum.  Christien had the silver dollar with a side of bacon special.  The bacon was nothing special, but the silver dollar pancakes were light and tender.  What really impressed me about her meal was the the pancakes were served with a bottle of real maple syrup.  Now that is something to write home about.  What was especially exciting about breakfast at &quot;Shut Up and Eat&quot; was the bill.  We got out of there for under $10. Remove clams from pot, when cool remove clam meat from shells, chop and set aside. Strain cooking liquid through paper towel or coffee filter in order to remove sand.  Set aside.&lt;br /&gt;&lt;br /&gt;4 strips of bacon, diced&lt;br /&gt;1 medium onion&lt;br /&gt;2 stalks celery&lt;br /&gt;4 carrots&lt;br /&gt;2 bell peppers&lt;br /&gt;Salt&lt;br /&gt;&lt;br /&gt;Cook bacon in bottom of pot until rendered.  Drain off fat and return bacon and 2 T of bacon drippings to pot.  Chop vegetables into about a 1/2 inch dice.  Season with salt. Sweat veggies in bacon drippings over medium heat until onions are clear.&lt;br /&gt;&lt;br /&gt;Clam steaming liquid plus enough bottled clam juice to make six cups.&lt;br /&gt;2 12 oz cans of diced tomatoes&lt;br /&gt;2 bay leaves&lt;br /&gt;1 1/2 t. thyme&lt;br /&gt;freshly ground pepper to taste&lt;br /&gt;3 medium potatoes, peeled and diced.&lt;br /&gt;chopped clams&lt;br /&gt;salt, pepper&lt;br /&gt;fresh flat leaf parsley, chopped&lt;br /&gt;oyster crackers&lt;br /&gt;&lt;br /&gt;Add the clam broth and clam juice to the vegetables.  Add the tomatoes, by leaves, thyme and pepper.  Simmer for about an hour or so. Add the potatoes and cook until they are soft but not mushy and soup has begun to thicken (20 or 30 minutes). Add clams.  Cook for another 10 minutes or so. Not the powdered stuff or the stuff made from chocolate syrup.  It&#39;s simple.&lt;br /&gt;&lt;br /&gt;Real Hot Cocoa&lt;br /&gt;&lt;br /&gt;1 mug full of milk&lt;br /&gt;3 rounded teaspoons of cocoa&lt;br /&gt;3 rounded teaspoons of sugar&lt;br /&gt;dash of salt&lt;br /&gt;&lt;br /&gt;Heat the milk in a pan or in the microwave.  In the bottom of the mug, mix together cocoa, sugar and salt.  Pour a tiny bit of milk into the mug.  Mix to form a paste.  Pour in the rest of the hot milk. We make all kinds of delicious, sweet, spicy, and nutty carbohydrate concoctions.  These items come from the recipe box of Christine&#39;s and my ethnic backgrounds.  Christine&#39;s Norwegian heritage has the most food based holiday traditions of the two of us, but my Dutch and Irish heritage contribute a bit to the mix.  Tonight the girls are heading up to North Jersey to gather with the aunts and female cousins of my wife&#39;s clan to make all sorts of Norwegian cookies.  I will share some of the recipes and pictures of the tasty treats over the next few days.  Last night however, the girls launched the baking extravaganza by making a cookie tin full of Holland Butter Cookies.&lt;br /&gt;&lt;br /&gt;I have no idea where this recipe came from. It is has been in my family a long time.  The cookies are very simple. The main flavoring comes from brown sugar and almond extract.  It is essential that you stick to the proportions of butter and margarine.  I am not a margarine fan, but the proportions in this recipe yield a thin and crispy cookie.  Even though the recipe seems so simple, please give it a try.  Once you do they just might become one your favorite cookies.&lt;br /&gt;&lt;br /&gt;&lt;span style=&quot;font-weight: bold;&quot;&gt;Holland Butter Cookies&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1 stick butter&lt;br /&gt;2 sticks margarine&lt;br /&gt;1 t vanilla&lt;br /&gt;1 t almond extract3 &amp;amp; 1/2 c. all purpose flour&lt;br /&gt;1 &amp;amp; 1/4 t. baking soda&lt;br /&gt;1/4 t. baking powder&lt;br /&gt;2/3 c. brown sugar&lt;br /&gt;2/3 c. white sugar&lt;br /&gt;&lt;br /&gt;Preheat oven to 300 degrees. Cream butter, sugar &amp;amp; extracts together. Add dry ingredients.  Mix well. Press through a cookie press or roll cookies into small balls and press flat with the tines of a fork or a cookie stamp.
