Each bun has a cross on top to signify the crucifixion. In England, they were once sold by street vendors who advertised their goodies with cries of "&lt;span style="font-weight:bold;"&gt;Hot Cross Buns! "Hot Cross Buns&lt;/span&gt;!"&lt;br /&gt;&lt;br /&gt;Their street cries became a nursery rhyme....&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Hot cross buns!&lt;br /&gt;Hot cross buns!&lt;br /&gt;One a penny, two a penny,&lt;br /&gt;Hot cross buns! If ye have no daughters,&lt;br /&gt;Give them to your sons.&lt;br /&gt;One a penny, two a penny,&lt;br /&gt;Hot cross buns&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Here's a recipe to make your own Hot Cross Buns for Good Friday and Easter.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt; 4 cups all-purpose flour&lt;br /&gt; 1 package active dry yeast&lt;br /&gt; 1 teaspoon ground cinnamon&lt;br /&gt; 1/2 teaspoon nutmeg&lt;br /&gt; 3/4 cup milk&lt;br /&gt; 1/3 cup margarine&lt;br /&gt; 1/3 cup granulated sugar&lt;br /&gt; 1/2 teaspoon salt&lt;br /&gt; 3 eggs&lt;br /&gt; 2/3 cup currants or raisins&lt;br /&gt; 1/4 teaspoon vanilla&lt;br /&gt; 1 egg white&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Glaze&lt;br /&gt;&lt;br /&gt; 2 tablespoon sugar&lt;br /&gt; 2 tablespoon water&lt;br /&gt;&lt;br /&gt;Icing&lt;br /&gt; 1/2 cup Confectioners' sugar&lt;br /&gt; 2 teaspoon water&lt;br /&gt; &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Warm a little milk and sprinkle yeast over.  Mix to dissolve and let sit for 5 minutes.&lt;br /&gt;&lt;br /&gt;Stirring constantly, add sugar, salt, butter, cinnamon, nutmeg and eggs, currants or raisins Gradually mix in flour, dough will be wet and sticky.  Continue kneading until smooth, about 5 minutes.  Cover bowl with plastic wrap and let the dough "rest" for 30-45 minutes.  &lt;br /&gt;&lt;br /&gt;Grease a large baking pan, take pieces of dough and shape each portion into a ball and place on baking sheet, about 1/2 inch apart.  Cover with a clean kitchen towel and let rise in a warm, draft-free place until doubled in size. &lt;br /&gt;&lt;br /&gt;In the meantime, pre-heat oven to 400° F. &lt;br /&gt;&lt;br /&gt;When buns have risen, take a sharp or serrated knife and carefully slash buns with a cross. Brush them with egg white and place in oven. Bake for 10 minutes, then reduce heat to 350° F, then bake until golden brown, about 15 minutes more. Transfer to a wire rack. Store in a covered container in refrigerator.&lt;br /&gt; &lt;br /&gt; &lt;br /&gt;&lt;br /&gt;&lt;br /&gt; &lt;br /&gt;ROASTING SPICE MIX&lt;br /&gt;For grilling and roasting&lt;br /&gt; &lt;br /&gt;&lt;br /&gt;8 cloves&lt;br /&gt;2 tablespoons blackpepper seed&lt;br /&gt;1 teaspoon coriander seeds&lt;br /&gt;1 teaspoon dried oregano&lt;br /&gt;1 teaspoon cumin seeds&lt;br /&gt;1/4 teaspoon salt&lt;br /&gt; &lt;br /&gt; &lt;br /&gt;In a pan  heat the cloves, blackpepper, cumin seeds and  coriander until you begin to smell the spices. Add oregano and salt . Fold in the flour and salt.&lt;br /&gt;Add vanilla essence and a little milk to make a soft dropping consistency&lt;br /&gt; &lt;br /&gt;Place spoonfuls in cake cases on a baking tray to about two thirds full. Bake in hot oven for about 10 minutes, remove and place a marshmallow on top of each one and put back in the oven for about 5 minutes.&lt;br /&gt; &lt;br /&gt; &lt;br /&gt; &lt;br /&gt; &lt;br /&gt;CHOCOLATE CHIP CUP CAKES&lt;br /&gt; &lt;br /&gt;Using the same method above, remove cup cakes  from oven and place chocolate chips on top instead of the marshmallow.&lt;br /&gt; &lt;br /&gt; &lt;br /&gt; &lt;br /&gt;COFFEE CUP CAKE&lt;br /&gt; &lt;br /&gt;&lt;br /&gt;1 1/2 cups flour&lt;br /&gt;&lt;br /&gt;3/4 cup sugar&lt;br /&gt;&lt;br /&gt;1 egg&lt;br /&gt;&lt;br /&gt;1/2 cup margarine&lt;br /&gt;&lt;br /&gt;2 teaspoon baking powder&lt;br /&gt;&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;&lt;br /&gt;1/2 cup milk&lt;br /&gt;&lt;br /&gt;2 teaspoon coffee essence&lt;br /&gt; &lt;br /&gt; &lt;br /&gt;Mix margarine and sugar until creamy,mix flour baking powder and salt and add to margarine mixture. Add egg and milk and mix well.&lt;br /&gt;Finally add coffee essence and mix thoroughly and pour into Cup cake pan. Bake for 30-35 minutes &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;FUDGY CUP CAKES&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;2 1/4 cups flour&lt;br /&gt;&lt;br /&gt;1 1/2 cups sugar&lt;br /&gt;&lt;br /&gt;1/2 cup unsweetened cocoa&lt;br /&gt;&lt;br /&gt;1/2 cup margarine&lt;br /&gt;&lt;br /&gt;2 eggs&lt;br /&gt;&lt;br /&gt;1/3 cup hot water&lt;br /&gt;&lt;br /&gt;1 teaspoon baking powder&lt;br /&gt;&lt;br /&gt;1 teaspoon baking soda&lt;br /&gt;&lt;br /&gt;1 teaspoon salt&lt;br /&gt;&lt;br /&gt;1 teaspoon vanilla&lt;br /&gt;&lt;br /&gt;1 cup buttermilk&lt;br /&gt;&lt;br /&gt;Combine hot water and cocoa, beat together margarine, sugar and vanilla in large bowl until light and fluffy and add beaten eggs.&lt;br /&gt;Mix together flour, baking powder, baking soda,and salt and add to margarine mixture along with buttermilk.&lt;br /&gt;&lt;br /&gt;Stir cocoa mixture into batter, Beat a few minutes. It also increases the rate of absorption into the body of essential substances in food and is also used to transport all substances inside the body.
