width="320" />Ingredients:

1 825g can apricot halves, in natural fruit juice
    1 orange
25mls (5 tsp) Grand Marnier liqueur (optional)
    18 savoiardi (sponge finger) biscuits
    500mls (2 cups) thickened cream
    2 tsp caster sugar

Directions:

Drain the apricots in a colander and reserve the juice for later use.

Use a vegetable peeler to peel the rind from the orange.

Remove the white pith from the rind and cut the rind into very thin strips.

Reserve the orange find. Juice the orange. Combine the reserved apricot juice, orange juice and the liqueur (if using) in a shallow bowl.

Dip half the savoiardi biscuits quickly into the juice mixture and then arrange over the base of a 1.5 litre (6 cup) serving dish.

Use electric beaters or a whisk to whisk the cream and caster sugar in a medium mixing bowl until soft peaks form.

Spread half the cream mixture evenly over the biscuits then arrange half the apricots on top.

Dip the remaining savoiardi biscuits quickly into the juice mixture and arrange over the apricots.

Reserve any remaining juice mixture.

Finish with a layer of the remaining cream mixture and remaining apricots.

Cover with plastic wrap and refrigerate for 30 minutes. Spoon into individual serving bowls and pour over some of the remaining juice mixture.

Serve immediately, decorated with the orange rind strips.

Ingredients:

    4 cups peeled, sliced peaches
    2 cups sugar, divided
    1/2 cup water
    8 tablespoons butter
    1 1/2 cups self-rising flour
    1 1/2 cups milk
    Ground cinnamon, optional

Directions:

Preheat oven to 350 degrees F.

Combine the peaches, 1 cup sugar, and water in a saucepan and mix well.

Bring to a boil and simmer for 10 minutes.

Remove from the heat.

Put the butter in a 3-quart baking dish and place in oven to melt.

Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir.

Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, if using. Batter will rise to top during baking.

Bake for 30 to 45 minutes.

To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream.

Ingredients:
    60g butter
    185ml (3/4 cup) water
115g (3/4 cup) plain flour, sifted
    3 eggs, lightly whisked
    200g dark chocolate, melted
    500ml (2 cups) thickened cream
    2 tbs pure icing sugar
    2 tsp instant coffee granules
    2 tsp boiling water
1 tbs Baileys Coffee Irish Cream liqueur

Directions:

Preheat oven to 200°C.

Line 2 baking trays with non-stick baking paper.

Stir butter and water in a saucepan over medium heat until butter melts and the mixture just comes to the boil. Remove from heat.

Add the flour. Beat with a wooden spoon.

Place pan over medium heat.

Stir until mixture comes away from the side of the pan. Set aside to cool.

Transfer mixture to a small bowl.

Use an electric beater to beat in 1 tablespoon of egg at a time, beating well after each addition, until mixture is thick and glossy.

Spoon the mixture into a piping bag fitted with a 1.5cm-wide plain nozzle.

Pipe mixture into 11cm logs onto prepared trays, allowing room for spreading.

Lightly sprinkle the trays with water.

Bake for 20 minutes. Reduce oven temperature to 160°C.

Bake for a further 30 minutes or until puffed and golden. Turn oven off and leave eclairs in oven, with the door slightly ajar, to dry out.

Remove from oven and set aside to cool completely.

Spread the top of the eclairs with the melted chocolate. Set aside to set.

Meanwhile, beat the cream and icing sugar in a bowl until firm peaks form.

Stir the coffee granules and boiling water in a bowl until the coffee dissolves.

Fold the coffee mixture and Baileys into the cream mixture until combined. Spoon into a piping bag.

Cut eclairs in half horizontally (don't cut all the way through). Fill with coffee cream.

    2 1/2 teaspoons cornstarch
    1/2 teaspoon vanilla extract
12 Sweet Cream Cheese Dough circles
1/4 cup white chocolate baking chips

Directions:

Combine the first 5 ingredients in a medium saucepan; cook over medium heat 7 minutes or until liquid almost evaporates. Remove from heat. Add butter, stirring until butter melts. Stir in cornstarch and vanilla. Cool slightly.

Working with 1 Sweet Cream Cheese Dough circle at a time, remove plastic wrap from dough. Place dough on a lightly floured surface. Spoon about 2 tablespoons cherry mixture into center of circle. Fold dough over filling; press edges together with a fork or fingers to seal. Place pie on a large baking sheet covered with parchment paper. Repeat procedure with remaining Sweet Cream Cheese Dough circles and remaining cherry mixture. Freeze 30 minutes.

Preheat oven to 425°.

Remove pies from freezer. Pierce top of each pie once with a fork. Place baking sheet on bottom rack in oven. Bake at 425° for 19 minutes or until edges are lightly browned and filling is bubbly. Cool completely on a wire rack.

Ingredients:
    1 tablespoon vegetable oil
    500g beef mince
    2 garlic cloves, crushed
1cm piece ginger, peeled, finely grated
2 small red chillies, finely chopped
    1 tablespoon soy sauce
    1 tablespoon oyster sauce
    275g packet dumpling wrappers
5 green onions, cut into 8cm lengths
    30g butter
    1 tablespoon sesame oil

Directions:

Bring a large saucepan of water to the boil over medium-high heat. Meanwhile, heat vegetable oil in a wok over medium-high heat.

Add mince, garlic, ginger and half the chilli.

Stir-fry for 5 minutes or until just cooked.

Stir in soy sauce and oyster sauce. Allow to cool slightly.

Spoon 1 teaspoon mince mixture into centre of 1 wrapper.

Brush edge with water. Fold pastry over to enclose filling. Press edges to seal.

Repeat with remaining mince mixture and wrappers (reserve leftover mince mixture and cover to keep warm).

Place dumplings, 8 at a time, in boiling water. Cook for 30 seconds or until dumplings float to the surface.

Remove with a slotted spoon to a serving platter.

Cover to keep warm while cooking remaining dumplings.

Shred onions.

Heat butter and sesame oil in a frying pan over medium-low heat.

Add onions and remaining chilli.

Cook, stirring, for 1 minute or until tender.

Divide dumplings between serving plates.

Spoon 1/2 cup remaining mince mixture over each plate.

Dissolve yeast in 1/2 cup of warm water. Add sugar and stir until dissolved. Let sit for 10-15 minutes until water is frothy.

Combine flour and salt in large bowl. Make a small depression in the middle of flour and pour yeast water in depression.

Slowly add 1 cup of warm water, and stir with wooden spoon or rubber spatula until elastic. Place dough on floured surface and knead for 10-15 minutes. When the dough is no longer sticky and is smooth and elastic, it has been successfully kneaded. Coat large bowl with vegetable oil and place dough in bowl. Turn dough upside down so all of the dough is coated.

Allow to sit in a warm place for about 3 hours, or until it has doubled in size.

Once doubled, roll out in a rope, and pinch off 10-12 small pieces. Place balls on floured surface. Let sit covered for 10 minutes. Preheat oven to 500° F (260° C) and make sure rack is at the very bottom of oven. Be sure to also preheat your baking sheet.

Roll out each ball of dough with a rolling pin into circles. Each should be about 5-6 inches across and 1/4 inch thick.

Bake each circle for 4 minutes until the bread puffs up. Turn over and bake for 2 minutes. Remove each pita with a spatula from the baking sheet and add additional pitas for baking.

Take spatula and gently push down puff. Immediately place in storage bags. Pita bread can be stored for up to a week in a pantry or bread box, and up to a month in the freezer. Be sure to use freezer bags when storing in the freezer.

Simmer for 10 minutes, then remove from heat to cool for 15 minutes.
Place a sieve over a bowl.

Push the berries through the sieve to capture the concentrated syrup below.

Use the back of a spoon or a rubber spatula to help press the berries against the side of the sieve.

Discard the berries in the sieve, save the syrup.

Stir the yogurt and cream into the berry syrup.

Cover with plastic wrap and chill for several hours.

Right before processing in your ice cream maker, add the brandy if using.

Process in your ice cream maker according to the maker's instructions.

Then either eat while still rather soft, or scoop into a container and freeze for several hours until firm.

Add more Tabasco and salt or lemon juice to taste.

Add water to the point of desired consistency.

Cut eggplants lengthwise into 1/4 inch slices. Arrange one layer in the bottom of a large colander and sprinkle evenly with salt. Repeat with remaining eggplant, salting, until all eggplant is in the colander. Weigh down the slices with a couple of plates and let drain for 2 hours. The purpose of this step is to have the eggplant release some of its moisture before cooking.

While the eggplant is draining, prepare tomato sauce. Combine tomatoes, garlic and 1/3 cup olive oil in a food processor. Season with salt and pepper to tasted and set aside.

When eggplant has drained, press down on it to remove excess water, wipe off the excess salt, and lay the slices out on paper towels to remove all the moisture.

In a wide, shallow bowl, combine flour and breadcrumbs. Mix well. Pour beaten eggs into another wide shallow bowl. Place a large, deep skillet over medium heat, and pour in a a half inch of olive oil. When oil is shimmering, dredge the eggplant slices first in the flour mixture, then in the beaten egg. Working in batches, slide coated eggplant into hot oil and fry until golden brown on both sides, turning once. Drain on paper towels.

Preheat the oven to 350°F. In the bottom of a 10x15 inch glass baking dish, spread 1 cup of tomato sauce. Top with one third of the eggplant slices. Top eggplant with half of the mozzarella slices. Sprinkle with one third of the Parmesan and half of the basil leaves.

Make a second layer of eggplant slices, topped by 1 cup of sauce, remaining mozzarella, half the remaining Parmesan, and all of the remaining basil. Add remaining eggplant, and top with the remaining tomato sauce and Parmesan.
