We like to eat fresh berries, but during the off season fresh berries don&#39;t always taste great and they are expensive, so I buy frozen fruit. Thawed frozen fruit is soggy, so I like it better when it&#39;s heated up or cooked into a dish. This recipe is a good, quick and easy way to use frozen fruit. Baking with fruit provides sweetness and helps cut down on the sugar in a recipe.&lt;br&gt;&lt;br&gt;


2 tbs ghee&lt;br&gt;
2 tbs avocado oil&lt;br&gt;
1/4 cup applesauce&lt;br&gt;
3 tbs coconut sugar&lt;br&gt;
2 tbs maple syrup&lt;br&gt;
1 egg&lt;br&gt;
3/4 cup coconut milk&lt;br&gt;
1 tsp vanilla extract&lt;br&gt;
3/4 cup gluten free all purpose flour&lt;br&gt;
1/4 cup buckwheat flour&lt;br&gt;
1/4 cup ground flaxseed&lt;br&gt;
1 tsp baking powder&lt;br&gt;
1/2 tsp cinnamon&lt;br&gt;
1/4 tsp salt&lt;br&gt;
1 1/4 cup mixed berries - I use frozen berries
cinnamon sugar&lt;br&gt;&lt;br&gt;&lt;br&gt;



Preheat the oven to 350 F.&lt;br&gt;
Line an 8 x 8 baking dish with parchment paper or spray with non-stick cooking spray, like avocado oil.&lt;br&gt;
In a large bowl, mix together the ghee, coconut oil, applesauce, coconut sugar and maple syrup. Add the egg, coconut milk, vanilla extract.&lt;br&gt;
In a separate bowl, combine the gluten free all purpose flour, buckwheat flour, ground flaxseed, baking powder, cinnamon and salt. Add to the liquid mixture.&lt;br&gt;
Stir in the berries and pour into the pan. Sprinkle the cinnamon sugar over the top.&lt;br&gt;&lt;br&gt;

Bake for 40 minutes.&lt;br&gt;&lt;br&gt;&lt;br&gt;

1/8 teaspoon baking soda&lt;br&gt;
1/8 teaspoon nutmeg&lt;br&gt;

Eat them as is, frosten or add a glaze of choice.&lt;br&gt;

This is my new go to chicken soup recipe. It&#39;s a nice break from the bean and lentil soups I usually make. It&#39;s also higher in protein than those.&lt;br&gt;&lt;br&gt;


2 medium chicken breast, diced&lt;br&gt;
1/2 onion, chopped&lt;br&gt;
2 carrots, chopped&lt;br&gt;
2 celery stalks, chopped&lt;br&gt;
4 oz mushrooms&lt;br&gt;

2 cups chicken bone broth&lt;br&gt;
1 tsp curry powder&lt;br&gt;
1/2 tsp turmeric&lt;br&gt;
1 tbsp Italian seasoning&lt;br&gt;
1 tsp dried parsley&lt;br&gt;
3/4 tsp black pepper&lt;br&gt;
1/4 tsp pink Himalayan salt&lt;br&gt;&lt;br&gt;

Add all ingredients to a slow cooker. Cook for 6 - 7 hours on low.&lt;br&gt;

Cook for a few minutes until the batter starts to set. Flip and cook another few minutes until browned.&lt;br&gt;
I like to serve this with butter spread on top, maple syrup, additional blueberries and an egg on the side.&lt;br&gt;&lt;br&gt; &lt;br&gt;

THese are pretty good. They don&#39;t come out quite as crispy as when fried, but are healthier and a good alternative.&lt;br&gt;&lt;br&gt;&lt;br&gt;

2 tbs maple syrup&lt;br&gt;
1 egg&lt;br&gt;
1/3 cup + 1 tbs apple cider, milk of choice or water&lt;br&gt;
1 tsp vanilla extract&lt;br&gt;
1/2 cup gluten free flour&lt;br&gt;
1/4 cup ground flaxseed&lt;br&gt;
1/4 cup buckwheat flour&lt;br&gt;
1/2 tsp cinnamon&lt;br&gt;
1/8 tsp nutmeg&lt;br&gt;
1/2 tsp baking soda&lt;br&gt;
1 apple, peeled and diced&lt;br&gt;
1/4 cup powdered sugar&lt;br&gt;&lt;br&gt;&lt;br&gt;


Preheat air fryer to 400 for 5 minutes. Spray with cooking oil. I use avocado oil.&lt;br&gt;
In a large bowl combine the maple syrup, egg, 1/3 apple cider, milk or water and vanilla extract.&lt;br&gt;
Mix together the gluten free flour, buckwheat flour, flaxseed, cinnamon, nutmeg and baking soda and add to the egg mixture.&lt;br&gt;
Fold in the apples. Drop by tablespoon onto the air fryer pan or basket.&lt;br&gt;
Spray with cooking spray and air fry for 8 minutes or until golden brown.&lt;br&gt;
Mix together the rest of the apple cider, milk or water and powdered sugar. Drizzle over the fritters.&lt;br&gt;&lt;br&gt;&lt;br&gt;

This is a good bundt cake option using pumpkin. &lt;br&gt;&lt;br&gt;&lt;br&gt;


2 tbs butter or ghee&lt;br&gt;
1/4 cup coconut sugar&lt;br&gt;
1/4 cup applesauce&lt;br&gt;
2 tsp vanilla extract&lt;br&gt;
1 egg&lt;br&gt;
1/4 cup coconut milk&lt;br&gt;
1 cup can pumpkin&lt;br&gt;
1 cup gluten free all purpose flour&lt;br&gt;
1/4 cup ground flaxseed&lt;br&gt;
1/4 cup buckwheat flour&lt;br&gt;
1 tsp baking powder&lt;br&gt;
1/2 tsp baking soda&lt;br&gt;
1/4 tsp salt&lt;br&gt;
2 tsp pumpkin pie spice or&lt;br&gt;
1 tsp ground cinnamon + 1/4 tsp ground nutmeg + 1/4 tsp ground ginger + 1/8 tsp ground cloves&lt;br&gt;&lt;br&gt;

Glaze:&lt;br&gt;
1/4 cup powdered sugar&lt;br&gt;
1/2 - 1 tbs milk of choice&lt;br&gt;
1/4 tsp vanilla extract&lt;br&gt;&lt;br&gt;&lt;br&gt;



Preheat oven to 350. Spray a bundt pan with non-stick spray.&lt;br&gt;&lt;br&gt;

Mix together the butter, coconut sugar and applesauce. Add the vanilla, egg, coconut milk and pumpkin.&lt;br&gt;
In a separate bowl, combine the flour, flaxseed, buckwheat flour, baking powder, baking soda, salt and spices.&lt;br&gt;
Add to the butter mixture.&lt;br&gt;&lt;br&gt;

Pour in the bundt pan.&lt;br&gt;&lt;br&gt;

Bake for 25 - 30 minutes. Cool in pan 10 minutes. Remove from pan and cool completely.&lt;br&gt;
Drizzle with glaze.&lt;br&gt;&lt;br&gt;&lt;br&gt;

This is a new recipe I made this year. They are a basic shortbread cookie with melted chocolate on top. They&#39;re pretty good.&lt;br&gt;&lt;br&gt;&lt;br&gt;
  
  
4 tbs unsalted butter, at room temperature &lt;br&gt;
2 tbs coconut oil &lt;br&gt;
1/4 cup coconut sugar, plus extra for sprinkling &lt;br&gt;
1/2 teaspoon pure vanilla extract &lt;br&gt;
1 tbs water &lt;br&gt;
3/4 cups gluten free all-purpose flour &lt;br&gt;
1/4 cup buckwheat flour &lt;br&gt;
1/4 cup ground flaxseed &lt;br&gt;
1/4 tsp cinnamon &lt;br&gt;
1/8 teaspoon salt &lt;br&gt; &lt;br&gt;

1 tsp coconut oil &lt;br&gt;
1/2 cup dark chocolate chunks or chips&lt;br&gt; &lt;br&gt; &lt;br&gt;


Preheat oven to 350. &lt;br&gt; &lt;br&gt;

Mix together the butter, coconut oil, coconut sugar, vanilla and water. &lt;br&gt;
Add the flour, buckwheat flour, flaxseed, cinnamon and salt and combine. &lt;br&gt; &lt;br&gt;

Roll dough into a log shape about 12 inches long on a floured piece of wax paper. &lt;br&gt;
Cut into 1/4 inch thick slices and put on the baking sheet. &lt;br&gt; &lt;br&gt;

Bake for 8 - 10 minutes. &lt;br&gt; &lt;br&gt;

When cooled, melt the 1 tsp coconut oil and dark chocolate. Spread chocolate over each cookie. &lt;br&gt;&lt;br&gt;

Made about 30 small cookies.&lt;br&gt;&lt;br&gt;&lt;br&gt;

I gave up one of my favorites, lasagna, when I gave up dairy. After giving goat cheese a try, I came up with this recipe. It&#39;s a really good substitute for regular lasagna. The goat cheese stands well on it&#39;s own in the place of the mixture of cheeses I used in regular lasagna. &lt;br&gt;&lt;br&gt;&lt;br&gt;


1 lb ground beef or 1/2 lb ground beef + 1/2 pound ground turkey&lt;br&gt;
1 cup diced pepperoni&lt;br&gt;
1/2 jar tomato sauce of your choice&lt;br&gt;
1/2 can crushed tomatoes&lt;br&gt;
2 garlic cloves, minced&lt;br&gt;
1 tsp oregano&lt;br&gt;
1 tsp italian seasoning&lt;br&gt;
1/2 tsp black pepper&lt;br&gt;
8 oz goat cheese&lt;br&gt;
3 TBS nutritional yeast&lt;br&gt;
1 small can mushrooms or 1/2 package of fresh mushrooms, sliced&lt;br&gt;
1 medium zucchini sliced into thin strips&lt;br&gt;&lt;br&gt;

For sprinkling:&lt;br&gt;
oregano&lt;br&gt;
parsley&lt;br&gt;
black pepper&lt;br&gt;&lt;br&gt;&lt;br&gt;


In a small slow cooker, add the ground beef/turkey, pepperoni, tomato sauce, crushed tomatoes, garlic, oregano, italian seasoning and black pepper.&lt;br&gt;
Cook on low about 6 hours.&lt;br&gt;
When ready to eat, preheat the oven to 375.&lt;br&gt;
Slice the zucchini into strips.&lt;br&gt;
In a 9x9 square baking pan or casserole dish, spread a small scoop of the meat mixture on the bottom. Lay 1/2 of the zucchini strips. Spread most of the meat mixture, about 2/3,  over the zucchini. Sprinkle 2/3 of the goat cheese over the meat mixture. Sprinkle 2 TBS of the nutritional yeast over the top. Lay the rest of the zucchini on top of the cheese. Then add the rest of the meat mixture, goat cheese and nutritional yeast. Lightly sprinkle oregano, parsely and black pepper to taste over the top. &lt;br&gt;
Bake covered for 30 minutes. Uncover and bake an additional 10 - 15 minutes until browned and bubbly.&lt;br&gt;&lt;br&gt;&lt;br&gt;

This was a good way to use up a few bananas instead of making bread or muffins. I put a simple glaze on it to make it more cake like, but it would be good with just butter or cinnamon sugar.&lt;br&gt;&lt;br&gt;


4 tablespoons unsalted butter, softened or ghee&lt;br&gt;
1/4 cup applesauce&lt;br&gt;
1/4 cup coconut sugar&lt;br&gt;
2 large eggs, at room temperature&lt;br&gt;
2 mashed banana&lt;br&gt;
3/4 cup of milk or coconut milk + 3/4 tbs white vinegar&lt;br&gt;
1 teaspoon vanilla extract&lt;br&gt;
1 1/2 cups King Arthur Unbleached All-Purpose Flour&lt;br&gt;
1/4 cup buckwheat flour&lt;br&gt;
1/4 cup ground flaxseed&lt;br&gt;
1/4 cup oatmeal&lt;br&gt;
1 teaspoon baking powder&lt;br&gt;
1 teaspoon baking soda&lt;br&gt;
1 teaspoons cinnamon&lt;br&gt;
1/2 teaspoon salt&lt;br&gt;&lt;br&gt;


Preheat the oven to 350. Spray a bundt cake pan with non-stick cooking spray.&lt;br&gt;
In a large bowl, combine the butter or ghee, applesauce and coconut sugar. Add the eggs and stir. Add the bananas, milk, sour cream or yogurt and vanilla.&lt;br&gt;
In a separate bowl, combine the flours, flaxseed, oatmeal, baking powder, baking soda, cinnamon and salt.&lt;br&gt; 
Add to the butter mixture and mix.&lt;br&gt;
Add to the bundt pan and bake for 45 - 50 minutes. Let cool.&lt;br&gt;&lt;br&gt;

Glaze:&lt;br&gt;&lt;br&gt;

1/2 cup powdered sugar, sifted&lt;br&gt;
1 tablespoons butter, melted&lt;br&gt;
1 tablespoon milk of choice&lt;br&gt;
1/4 teaspoon vanilla extract&lt;br&gt;&lt;br&gt;


Combine all ingredients in a bowl and drizzle over the cooled cake.&lt;br&gt;&lt;br&gt;&lt;br&gt;

Cover a baking sheet with parchment paper or non-stick cooking spray.&lt;br&gt;&lt;br&gt;

Combine the flaxseed, italian seasoning, garlic powder, onion powder, parsley, salt and pepper.&lt;br&gt;
Drizzle the olive oil over the meat.&lt;br&gt;
Add the seasonings to the ground meat and mix well.&lt;br&gt;
Roll into balls or use a scooper and put onto the baking sheet.&lt;br&gt;
Bake for 15 minutes. Broil for 2 - 3 minutes. Add to sauce of choice and heat an additional few minutes.&lt;br&gt;&lt;br&gt;

Makes about 25 meatballs.&lt;br&gt;&lt;br&gt;&lt;br&gt;

1/2 teaspoon baking soda&lt;br&gt;
1/4 tsp cinnamon&lt;br&gt;
3/4 cup jam or preserves of choice&lt;br&gt;&lt;br&gt;&lt;br&gt;



Preheat oven to 350°F. Spray with non stick spray or line an 8×8 pan with parchment paper.&lt;br&gt;
In a large bowl, mix butter, applesauce, coconut sugar and vanilla until well combined. Add dry ingredients and stir until well combined.&lt;br&gt;
Add the flours, flaxseed, oats, salt, baking soda and cinnamon.&lt;br&gt;
Pull out about 3/4 cup (a little less than half) of the cookie dough and refrigerate. Dump the remaining dough into the prepared pan and press it down into a flat even layer. &lt;br&gt;
Bake for 10 minutes. &lt;br&gt;
Remove from the oven and carefully spread the jam on top of the cookie base. Take the reserved cookie dough from the fridge and crumble it over the top of the jam layer. Return to the oven and bake for 15-18 more minutes, until the topping is light golden brown. &lt;br&gt;
Cool completely. &lt;br&gt;&lt;br&gt;&lt;br&gt;

This is a great, easy recipe to use up a bag of cranberries. Cranberries have a short season, so grab them when you see them. They freeze very well, so put them in the freezer if you won&#39;t be using them right away. I&#39;ve even made this as my birthday cake by adding some frosting on top.

These were a new Christmas cookie that I made this year. They were super good! I modified the original recipe from using pecans to using M &amp; M&#39;s. &lt;br&gt;&lt;br&gt;&lt;br&gt;


5 tbs butter, softened&lt;br&gt;
1/4 cup coconut sugar&lt;br&gt;
1/4 teaspoon salt&lt;br&gt;
1 large egg, room temperature&lt;br&gt;
2 teaspoon vanilla extract&lt;br&gt;
1 cups all-purpose flour&lt;br&gt;
1/4 tsp cinnamon&lt;br&gt;
1/2 cup M &amp; M&#39;s&lt;br&gt;
1/2 cup (6 ounces) chocolate chips&lt;br&gt;&lt;br&gt;

1/4 - 1/2 cup confectioner sugar&lt;br&gt;&lt;br&gt;&lt;br&gt;


Preheat oven to 350.  &lt;br&gt;&lt;br&gt;

In a large bowl, cream the butter, sugar and salt until light and fluffy, 5-7 minutes. Beat in egg and vanilla. Gradually beat in flour. Stir in M &amp; M&#39;s and chocolate chips.&lt;br&gt;&lt;br&gt;

Form dough into tablespoon sized balls and roll into confectioner sugar.&lt;br&gt;&lt;br&gt;

Drop onto a greased or parchment paper covered baking sheet.&lt;br&gt;&lt;br&gt;

Bake 15 - 20 minutes.&lt;br&gt;&lt;br&gt;

Let cool for a few minutes and re-roll each cookie in confectioner sugar.&lt;br&gt;&lt;br&gt;

Makes about 32 cookies.&lt;br&gt;&lt;br&gt;&lt;br&gt;

1/2 - 3/4 pound ground turkey  &lt;br&gt;

1/2 - 3/4 pound ground beef or ground turkey &lt;br&gt;

1 (28 ounce) can crushed tomatoes or 1/2 jar sauce &lt;br&gt;

1 (16 ounce) can pinto and/or kidney beans &lt;br&gt;

2 garlic cloves, minced &lt;br&gt;

1 1/2 tablespoons chili powder &lt;br&gt;

1/4 tsp onion powder &lt;br&gt;

1/4 tsp garlic powder &lt;br&gt;

1/4 teaspoon paprika &lt;br&gt;

Add the oil to a Dutch oven and heat on medium for a few minutes. Add the ground turkey and ground beef and brown. &lt;br&gt;

I also made this in the slow cooker. I browned the meat for about 6 - 7 minutes. Added it and the fat to a slow cooker. Then added all of the other ingredients and cooked on low for 7 - 8 hours. &lt;br&gt; &lt;br&gt; &lt;br&gt;

5 lbs red potatoes
5 tbs butter
2 1/2 tsp dried parsley
1/4 tsp onion powder
1/4 tsp garlic powder

1 1/4 tsp black pepper


Cut potatoes into chunks. Cover with cold water. Bring to a boil and cook for 10 - 15 minutes until tender.
Drain and add to a pan with the butter.
Mix together the parsley, salt and pepper. Sprinkle and combine with the potatoes.

1 tsp honey, optional&lt;br&gt;
1 tbsp mustard, avocado oil mayonnaise, coconut milk, sour cream or plain unsweetened greek yogurt&lt;br&gt;

1/4 tsp salt&lt;br&gt;

In a bowl, mix together the vinegar, olive oil, honey, mustard(mayonnaise, sour cream, or yogurt), celery seed, salt and pepper.&lt;br&gt;
In a large bowl, add the package of coleslaw. Pour the dressing over the coleslaw and mix well. &lt;br&gt;
