Ina’s Vegetable Soup

Here is the recipe for the vegetable soup that we can, I have gotten some requests for it. My Mom used to make a lot of it, and it’s really good.

The recipe made absolutely no sense to me, so I re-wrote it with the help of my Mom. Women seemed to have no problem making sense of it, but it was way to vague for me. It was basically “cut up some vegetables, boil, and can.” I need more specifics than that. Anyway, here it is.

Ina’s Vegetable Soup

10 lbs hamburger
1 1/2 gal. beef broth
3 qt. diced potatoes
4 large onions diced
2 lbs 10 oz lima beans
2 lbs barley
1 1/2 gal. tomato juice
1 gal. diced carrots
1 1/2 bunches celery
2 lbs peas
1 qt green beans, cut up
2 lbs alphabet macaroni
2 qt corn

Cook hamburger with seasoning, drain. Parboil each vegetable separately, with salt. Drain vegetables and mix together all ingredients in a giant cauldron (alphabet macaroni can be added uncooked). Add more seasoning if desired (salt, onion salt, celery salt, bouillon, pepper, etc.).

Ladle into canning jars and process in pressure cooker at 10 lbs for 90 minutes (quart jars). It could be frozen instead if you prefer.

To serve, add 1 quart of either tomato soup, tomato juice, or beef/chicken broth to 1 quart of soup. Add more seasoning if needed.

Makes approximately 35 quarts.

Note: If you don’t have a giant cauldron, sterilize a big plastic tote and use that.

My cousin Heath came up from Arkansas (pronounced “R-Kansas”) to visit us in Hoosierville this weekend.

He made apple crisp, it was excellent.

Tomato Soup

I like almost all soup, but tomato soup is generally inedible. However, this homemade tomato soup is excellent. We eat gallons of it. Not in one sitting though.

I ranted before about this when I discussed the long-overdue Auto Advance Lab. I can’t believe it took this long, but finally pretty much all significant drawbacks to using Gmail have been removed.

Mandy and Alli were at the table with pens and paper writing and drawing. Mandy passed her pad of paper over to Alli, and I asked what she was doing.

“Alli is going to draw a bed for me,” she said. Alli took her pen and slowly started drawing a circle. She kept looping and looping until she had a giant scribble:
