Il gusto della nostra corposa panna montata miscelata con l'aroma del caffè mentre "Moka" è dedicata chi non riesce a fare a meno del ciccolato a pezzettoni avvolti dalla crema di caffè.&lt;br /&gt;&lt;br /&gt;Il caffè è qualcosa di molto complesso, vi concorrono più di 1500 sostanze chimiche (circa 800 volatili e 700 solubili), mentre 13 variabili chimico-fisiche incidono sulla preparazione. La scienza del caffè è quindi una branca di studio altamente specialistica, che coinvolge molte discipline.&lt;br /&gt;&lt;br /&gt;Che il caffè facesse bene, gli uomini lo hanno sempre saputo. Tanto che fino al Settecento veniva prescritto come un medicinale e venduto in farmacia.&lt;br /&gt;&lt;br /&gt;Negli ultimi due secoli poche sostanze sono state tanto studiate dal punto di vista clinico quanto il caffè. Se nessuno studio ha dimostrato che faccia male, tante sono invece le ricerche che dimostrano invece gli effetti benefici del caffè e del suo principale composto attivo: la caffeina.&lt;br /&gt;&lt;br /&gt;Naturalmente, il caffè deve essere consumato nelle giuste quantità. Quantità che variano a seconda della miscela, del tipo di preparazione, e soprattutto delle abitudini, del metabolismo, dello stato di salute di ciascuno.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;La caffeina stimola il sistema nervoso, tiene desta l’attenzione e alto l’umore&lt;/strong&gt;.  Aiuta la respirazione e la digestione, attenua il senso di fame, ed è quindi un buon aiuto nelle diete. È spesso un ottimo rimedio contro il mal di testa e potenzia l’azione degli antidolorifici.&lt;br /&gt;&lt;br /&gt;Gli studi più recenti hanno anche sfatato alcune vecchie credenze: in dosi ragionevoli il caffè non disturba affatto il sonno, né fa male al cuore. Ha anzi un’azione preventiva rispetto ad alcune patologie, quali la cirrosi epatica ed il morbo di Parkinson.
