Lama saya menyepi. Lama menunggu hari due. Tak sabar melihat si kecil yang bakal lahir. Dah banyak cuba resepi2 dari internet tetapi malas nak buat karangan posting. So, tangguhkan dulu projek karang mengarang. Hari ni saya nak kongsi lagi satu cara untuk mendapat pendapatan sampingan melalui blog. Red Velvet Cupcake&lt;br /&gt;

2 1/2 cups sifted &lt;span class="ilad"&gt;cake flour&lt;/span&gt;&lt;br /&gt;
1 teaspoon baking powder&lt;br /&gt;
1 teaspoon salt&lt;br /&gt;
2 tablespoons unsweetened cocoa powder&lt;br /&gt;
2 oz. red food coloring (two bottles) or 4 oz beet juice (if you use
unprocessed light cocoa you can leave out the food dyes and you'll get a warm
red/brown color)&lt;br /&gt;
1/2 cup unsalted butter, softened&lt;br /&gt;
1 1/2 cups sugar&lt;br /&gt;
2 eggs, at room &lt;span class="ilad"&gt;temperature&lt;/span&gt;&lt;br /&gt;
1 teaspoon vanilla extract&lt;br /&gt;
1 cup &lt;span class="ilad"&gt;buttermilk&lt;/span&gt;, at room temperature&lt;br /&gt;
1 teaspoon white vinegar&lt;br /&gt;
1 teaspoon baking soda&lt;/div&gt;

Method :&lt;/div&gt;

oven to 350 degrees. Line two 12-cup muffin tins or silicone pans with &lt;/span&gt;&lt;span style="font-family: &amp;quot;Calibri&amp;quot;,&amp;quot;sans-serif&amp;quot;;"&gt;cupcake liner. &lt;/span&gt;&lt;u&gt;&lt;span style="font-family: &amp;quot;Calibri&amp;quot;,&amp;quot;sans-serif&amp;quot;;"&gt;&lt;/span&gt;&lt;/u&gt;&lt;br /&gt;
&lt;span style="font-family: &amp;quot;Calibri&amp;quot;,&amp;quot;sans-serif&amp;quot;;"&gt;2. Sift
together the cake flour, baking powder, and salt into a medium &lt;span class="ilad"&gt;bowl&lt;/span&gt; and set aside. In a smaller bowl, mix food coloring and cocoa
powder to form a thin paste without lumps and set aside.&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: &amp;quot;Calibri&amp;quot;,&amp;quot;sans-serif&amp;quot;;"&gt;3. In a large
bowl, using a hand mixer or &lt;span class="ilad"&gt;stand mixer&lt;/span&gt;, beat butter
and sugar together until light and fluffy, about three minutes. Beat in eggs,
one at a time, then beat in vanilla and the red cocoa paste, scraping down the
bowl with a spatula as you go. &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: &amp;quot;Calibri&amp;quot;,&amp;quot;sans-serif&amp;quot;; font-size: 11pt; line-height: 115%;"&gt;4.
Add one third of the flour mixture to the butter mixture, beat well, then beat
in half of the buttermilk. Beat in another third of flour mixture, then second
half of buttermilk. End with the last third of the flour mixture, beat until
well &lt;/span&gt;&lt;span style="font-family: &amp;quot;Calibri&amp;quot;,&amp;quot;sans-serif&amp;quot;;"&gt;combined,
making sure to scrape down the bowl with a spatula.&lt;/span&gt;

&lt;span style="font-family: &amp;quot;Calibri&amp;quot;,&amp;quot;sans-serif&amp;quot;;"&gt;5. In a small
bowl, mix vinegar and baking soda. Be careful as it will fizz so don't do it in
a shallow bowl. Add vinegar mixture to the &lt;span class="ilad"&gt;cake&lt;/span&gt; batter
and stir well to combine. &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: &amp;quot;Calibri&amp;quot;,&amp;quot;sans-serif&amp;quot;;"&gt;6. Fill
cupcake cups with cake batter until they are a little under 3/4 full. I ended
up with 20 cupcakes. Place muffin tins in your preheated oven. Bake for
approximately 20, rotating pans halfway through. The cupcakes are done when you
are able to pat the tops and the cake springs back up. If it sinks down they
are not yet complete. Or you can insert a toothpick into the center of a
cupcake in the center of the tin and if it comes out clean they are done!&lt;/span&gt;&lt;br /&gt;

cupcakes in their tins on a wire rack for 10 minutes then remove and allow to
cool completely before frosting. &lt;/span&gt;&lt;br /&gt;

When making red velvet,&amp;nbsp; always mix the cocoa powder and liquid red
food coloring together to form a paste.&amp;nbsp; Doing this seems to evenly
disperse the red color when it gets mixed into the batter.&amp;nbsp; If your cocoa
is lumpy, mash it into the food coloring with a fork. &lt;/div&gt;

Dah lama saya berhajat nak masukkan gambar2 hamper raya aidilfitri yang lalu, yang sempat kami rakam sebelum dihantar kepada pelanggan. Pun begitu,&amp;nbsp; banyak jugak yang tak sempat kami snap dek kerana mengejar masa supaya semua tempahan selamat tiba mengikut tarikh seperti yang diminta pelanggan. Bila siap pack..terus masuk kereta...&lt;br /&gt;

This order is the biggest order/project that we ever got so far(almaklum laa...company kami nie kecik jer..hehe) ..Tetapi, syukur yang tidak terhingga kepada Allah kerana memberi rezeki ini kepada kami. This hamper worth RM100. Semua items nya adalah dari Mark &amp;amp; Spencer...senang citer...permintaan khas dari pelanggan kami...ahaa...custome design gituuu. Berhempas pulas jugak le kami menyiapkan projek ni... 450 hamper! tetapi alhamdulillah...dengan izinnya, berjaya dihantar kepada pelanggan seperti yang dijanjikan...(harap2..ada le rezki lagi tahun depan yek...)&lt;br /&gt;

Agak lama mendiamkan diri dek sibuk melayan hamper raya. Kali ni, saya kembali ke blog yang dah bersawang ni. Kita cerita pasal makan2 la pulak ye.&lt;br /&gt;

Sebelum bulan puasa yang lepas, kami sekeluarga sempat merehatkan diri kat pantai port dickson. Dah alang2 kat sini, kami cari le restoran ikan bakar. Agak jauh juga JJCM ni sampai ke melaka. Kata suami, dulu dia pernah makan sup ketam yang sedap kat restoran situ (dah lupa nama restoran tu). Aiseh...kalau dia kata sedap tuh..kena la cuba rasa pulak..ye dak.&lt;br /&gt;
&lt;br /&gt;
Oleh kerana suami ambo suka makan sup ketam dan dia beli ketam segar plak...dan-dan tu la ambo selak gerobok pakcik-makcik google untuk resepi sup ketam. Walaupun orang kata pejam mata pun boleh buat sup ni, tapi saja je ambo intai2 resepi2 chef blogger untuk mencari kelainan. Hasilnya jumpa la resepi dari blog Cikmin yang buat hati terpaut. Dah inilah hasilnya...anak2 n somi cakap..sodapppp. Tq cikmin kerana kongsi resepi....&lt;br /&gt;

Resepi Sup Ketam Ala Cikmin&lt;br /&gt;

Bahan2 :&lt;br /&gt;
4 ekor ketam – dibukak cengkerang atas dibersihkan dan potong 2&lt;br /&gt;
(bahagian jejari ketam tu kita boleh ketuk2 dengan lesung, senang nak makan nanti)&lt;br /&gt;
3cm halia – hiris halus&lt;br /&gt;
4 ulas bawang putih – ditumbuk halus&lt;br /&gt;
5 ulas bawang merah – ditumbuk halus&lt;br /&gt;
1 sudu teh lada hitam – ditumbuk halus&lt;br /&gt;
Rempah tumis 4 beradik (kulit kayu manis + bunga lawang + cengkih + buah pelaga)&lt;br /&gt;
Karet – potong ikut suka&lt;br /&gt;
Batang Celery – dihiris menyerong&lt;br /&gt;
Cendawan Shitake – direndam seketika, bersih dan hiriskan&lt;br /&gt;
Serbuk Knor Pasti Sedap&lt;br /&gt;
Garam secukup rasa&lt;br /&gt;
Air – untuk kuah sup&lt;br /&gt;
Hirisan daun bawang&lt;br /&gt;
Minyak untuk menumis&lt;br /&gt;
&lt;br /&gt;
Cara-caranya:&lt;br /&gt;
1. Panaskan minyak dalam periuk, tumiskan rempah 4 beradik bersama 
bawang putih, bawang merah dan halia sehingga naik bau dan 
kekuningan.&lt;br /&gt;
2. Masukkan air ikut banyak mana yang kita mahu.&lt;br /&gt;
3. Setelah air mendidih, masukkan batang celery,karet atau boleh tambah

Bahan2:&lt;br /&gt;
&lt;ul&gt;&lt;li&gt;2&amp;nbsp; 3/4 All purpose flour (saya guna tepung naik sendiri)&lt;/li&gt;
&lt;li&gt;2&amp;nbsp; 1/2 tspn baking powder&lt;/li&gt;
&lt;li&gt;1/2 tspn salt&lt;/li&gt;
&lt;li&gt;2/3 cup butter (softened)&lt;/li&gt;
&lt;li&gt;1lb light brown sugar (453gm, tapi saya guna hanya 300gm aje - ikut selera la senang citer)&lt;/li&gt;
&lt;li&gt;3 eggs&lt;/li&gt;
&lt;li&gt;1 tspn vanilla&lt;/li&gt;
&lt;li&gt;11.5 ounce milk chocolate chips ( lebih kurang 326 gm)&lt;/li&gt;
&lt;li&gt;1 cup chopped pecan (pilihan saya ialah walnut)&lt;/li&gt;
&lt;/ul&gt;Cara masak(sorry ambo copy paste je dari blog arah sebab malas nak type kat sini)&lt;br /&gt;
&lt;br /&gt;
&lt;div style="text-align: left;"&gt;&lt;b&gt;By mixer:&lt;/b&gt;&lt;br /&gt;
Sift flour, baking powder and salt in a large bowl. Set aside.&lt;br /&gt;
Combine butter and sugar using a mixer until blended.&lt;br /&gt;
Add eggs, one at a time to sugar mixture, mixing on low in between each addition.&lt;br /&gt;
Add vanilla and mix.&lt;br /&gt;
Add flour and mix until combined.&lt;br /&gt;
Stir in chips and then pecans.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;By hand:&lt;/b&gt;&lt;br /&gt;
Sift flour, baking powder and salt into a large bowl. Set aside.&lt;br /&gt;
Stir  brown sugar into softened (not melted) butter in another large bowl  until butter disappears. You can use the back of your spoon to help  incorporate the two together.&lt;br /&gt;
Add eggs one at a time to butter mixture and stir well after each egg.&lt;br /&gt;
Add vanilla, chocolate chips and nuts. Mix well.&lt;br /&gt;
Add dry flour mixture and stir until well combined.&lt;br /&gt;
&lt;br /&gt;
Coat a 13 X 9 pan with non-stick spray and spread batter evenly into dish.&lt;br /&gt;
Bake at 170 degree for 30 minutes or until top is golden brown. Make sure you don’t over bake.&lt;br /&gt;

Actually, customer tu yang sediakan semua bahan2 kecuali botol ( saya supply botol as wedding favor). Pemilihan tema warna untuk reben dan juga sticker comel tu, semua nya pilihan dia. Saya cuma work out the wrapping design dan packaging. Tergeliat tangan ambo buat reben 1500 keping.&lt;br /&gt;

Pergh..dapat jugak merasa kek pophular ni. Ternampak kek ni masa nak beli ice blended kat coffee bean (layan selera anak tino/anak pompuan), terus beli sebab excited nak tahu apa rasanya. Satu slice RM8.90!!! tu diaa...tapi tak pa la kan..nak jamu tekak nyer pasal...tak rugi beli sebab memang sedap. 2. Tip mengilatkan sudu garpu&lt;br /&gt;
Rendamkan sudu garpu dalam air asam jawa selama satu jam kemudian keringkan dengan menggunakan kain lembut. Bila dah kering, sapukan sedikit minyak masak dan jemur seketika. Selepas itu laplah sudu garpu anda dengan kain kering.&lt;br /&gt;

3. Cara Membersihkan perut lembu.&lt;br /&gt;
Untuk penggemar kerabu perut lembu, ini adalah berita baik. Susah juga nak cuci perut lembu ni..lebih-lebih lagi tang baunya super duper busuk tuuu.&amp;nbsp; Caranya masukkan sedikit larutan air kapur(kapur sirih) ke dalam&amp;nbsp; bekas basuhan perut lembu. Biar sekejap..pastikan kapur itu betul-betul larut. Selepas itu boleh di cuci bersih dan bilas dengan air putih bersih. &lt;br /&gt;

4. Memilih ikan yang segar&lt;br /&gt;
Bagi memastikan ikan yang dibeli segar, pastikan insang ikan masih merah atau mata ikan kelihatan jernih. Selain itu tekan sedikit daging ikan dengan jari. Ikan segar tidak akan meninggalkan bekas di tempat yang ditekan.&lt;br /&gt;

Dan dia suka giling cili kering sendiri untuk buat sambal nasi lemak. Biasanya dia akan potong/gunting cili kering kecil2/halus2 kemudian rebus sekejap. Oleh kerana kekadang terbeli cili kering yang keringting halus, memang jenis yang pedas punya, mek saya akan masukkan sesudu atau 2 sudu &lt;b&gt;&lt;span style="color: red;"&gt;CUKA MAKAN&lt;/span&gt;&lt;/b&gt;&amp;nbsp; untuk kurangkan tahap kepedasan cili itu. Tart Shell&lt;br /&gt;
550 gm tepung gandum&lt;br /&gt;
250 gm mentega&lt;br /&gt;
50 gm pastry margarine&lt;br /&gt;
1 biji telur&lt;br /&gt;
100 gm gula icing&lt;br /&gt;
secubit garam&lt;br /&gt;
&lt;br /&gt;
Cara&lt;br /&gt;
1. Mentega,  margarine dan gula icing di pukul sebentar hingga rata. Masukkan telur  &amp;amp; esen vanilla, dikacau rata lalu dimasukkan tepung gandum. Uli  hingga sebati.&lt;br /&gt;
2. Sejukkan adunan di dalam peti ais kira-kira 30 minit atau  1 jam sebelum menerapnya. Canai adunan dan terap, lalu diisikan ke  dalam acuan tartlett.&lt;br /&gt;
3. Cucukkan dasar adunan ini dgn garpu sebelum  membakarnya dgn sudu 180 darjah selama kira-kira 25-30 minit. Sesudah  masak, keluarkan dari ketuhar dan biarkan sejuk dahulu sebelum disapu  dgn cokelat yg sudah dicairkan tadi.&lt;br /&gt;
&lt;br /&gt;
Untuk Alas Tartlet&lt;br /&gt;
secukup chocolate block (for coating)- cairkan dgn kaedah 'double-boiling'&lt;br /&gt;
&lt;br /&gt;
Krim Kastad&lt;br /&gt;
Bahan A&lt;br /&gt;
250 ml susu plain&lt;br /&gt;
50 gm gula&lt;br /&gt;
100 gm mentega&lt;br /&gt;
(Masak Bahan-bahan A ini hingga mendidih)&lt;br /&gt;
&lt;br /&gt;
Bahan B&lt;br /&gt;
250 ml susu plain&lt;br /&gt;
40 gm tepung kastad&lt;br /&gt;
1 sudu makan tepung jagung&lt;br /&gt;
1 biji telur&lt;br /&gt;
sedikit esen vanilla&lt;br /&gt;
secubit garam&lt;br /&gt;

Cara Membuat Krim Kastad&lt;br /&gt;
Bahan-Bahan  B ini dikacau rata dan tapis lalu masukkan ke dalam Bahan-Bahan A yg  telah mendidih tadi. Didihkan lagi hingga masak.&lt;br /&gt;

Cara Menyediakan Fruit Tartlet&lt;br /&gt;
Ambil  pastry tartlet yg telah disapu cokelat dan bubuh sedikit krim kastad.  Susunkan dgn buah-buahan pilihan anda dan akhir sekali sapukan gel di  atas buah-buahan tadi.&lt;br /&gt;
&lt;br /&gt;
Buah-Buahan Hiasan&lt;br /&gt;
Buah kiwi, peach, strawberry, blueberry, raspberry, etc.(sy hentam apa yg ada dlm peti aje hehehe)&lt;br /&gt;
&lt;br /&gt;
Gel/Jelly Glaze&lt;br /&gt;
1) Masak sedikit apricot gel dengan sedikit air lalu sapukan ke atas buah-buahan... &lt;br /&gt;
atau &lt;br /&gt;
2) Masak 1 sudu makan instant jelly dengan 100 gm air hingga mendidih. Sejukkan sebentar sebelum digunakan.&lt;br /&gt;

My SIL kata harga sebekas kecil tu (size bekas transparent 4 segi biassa kat kedai makan) ialah RM25.00. Oooh boleh tahan mahal jugak kek ni, mana tidak nya pakai creame cheese dan whipping cream. &lt;ul&gt;&lt;li&gt;2 bungkus biskut tiramisu (nama omputih nya ..lady finger)... @ 1 bj kek span - apa2 kek pun boleh,&amp;nbsp; &lt;/li&gt;
&lt;li&gt;250 gm cream cheese (biar pada suhu bilik)&lt;/li&gt;
&lt;li&gt;200 gm whipping cream&lt;/li&gt;
&lt;li&gt;1/2 sudu kecil esen vanilla (saya tambah sendiri sbb suka perasa ini) &lt;/li&gt;
&lt;li&gt;150 gm gula halus (lbh kurang 1/2 cwn)&lt;/li&gt;
&lt;li&gt;1 sudu nescafe&lt;/li&gt;
&lt;li&gt;1 cawan air panas&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Serbuk koko/coklat untuk hiasan&lt;/li&gt;
&lt;/ul&gt;Ini rupa lady fingers. ada jual kat kedai bakery.&lt;br /&gt;

Cara Masak&lt;br /&gt;
&lt;ol&gt;&lt;li&gt; Pukul creame cheese till kembang dan masukkan whipping cream dan gula halus.&lt;/li&gt;
&lt;li&gt;Pukul lagi sampai gebu dan tiada sebarang ketulan pada adunan. Ketepikan.&lt;/li&gt;
&lt;li&gt;Bancuh nescafe dengan air panas.&lt;/li&gt;
&lt;li&gt; Celup biskut lady fingers ni ke dalam bancuhan nescafe tadi secara cepat. Jangan rendam sebab biskut ni snagat cepat meresap bancuhan necafe tadi. Boleh jadi lembik dan patah sebelum sempat masuk bekas/mangkuk. Boleh pakai mangkuk yang agak2 muat untuk isi 2 pack lady fingers.&lt;/li&gt;
&lt;li&gt;Susun biskut lady fingers menjadi satu lapisan.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Tuang sebahagian bancuhan cheese dan ratakan sampai menutupi lapisan lady fingers.&lt;/li&gt;
&lt;li&gt;Kemudian celup lagi biskut lady fingers dan susun sebagai lapisan ke dua. Kalau boleh dalam posisi/orientasi berlawan dari lapisan pertama. Maksudnya, kalau 1st layer di susun menegak, maka 2nd layer...susun melintang la pulak.&lt;/li&gt;
&lt;li&gt;Then, ulangi proses 6 sampai habis kesemua adunan dan biskut lady fingers.&lt;/li&gt;
&lt;li&gt;Jangan lupa...bahagian paling atas (top layer) mesti le di tutupi dengan bancuhan/adunan cheese.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Akhirnya, taburkan serbuk koko sebagai hiasan, tapi awas ye..biasanya serbuk koko ni pahit sikit. Boleh ganti serbuk coklat kalau suka.&lt;/li&gt;
&lt;li&gt;Sejukkan dalam peti sejuk selama sekurang2 nya 6 jam. Barulah best makan sejuk2.&amp;nbsp;&lt;/li&gt;

Ahad lepas, adik bongsu saya buat majlis hari jadi untuk anak sulung dia yg berumur 6 thn. Hmm..weekend yang penat for me. Saya rasa satu malaya dah kenal cikgu yang ini sorang kan?...video2 dia dari youtube bikin gempak ramai orang. Ramai juga yang kutuk hasil seni cikgu nie dan tak kurang juga yang memuji kreativiti dia.&amp;nbsp; Oleh kerana populariti yang tinggi tu, dia dah banyak kali di jemput masuk tv. Antaranya program bersama FBI..Faizal Ismail&amp;nbsp; kat TV9 dan paling best saya rasa dia di keluar/di jemput masuk program bersama Siti kat Astro. Hah!..ingat senang ke nak masuk program2 tu...&lt;br /&gt;

Tapi saya tak kesah langsung dengan kutukan orang kat makcik nie kerana pada saya semua orang bebas buat sahaja asalkan tidak melanggar batas susila sebagai orang islam. Dia masih menutup aurat ketika menghasilkan video tersebut, betul dak?..alaaahh kalau setakat nak kutuk tuuu..rasanya banyak lagi benda lain yan g lebih melampau dari aksi2 miming cikgu kita yang sorang nie. Harap2 cikgu shida dpt memperpanjangkan lagi kreativiti beliau untuk kemajuan anak2 bangsa melalui pendidikan di sekolah.&lt;br /&gt;

Betul la kata orang, kalau jaga anak sendiri di rumah, boleh lihat perkembangan anak a-z. Even sedikit perubahan walau sebesar zarah pun, pasti nampak di mata si ibu. Dan ini tentunya sesuatu yang sangat indah buat saya sejak berhenti keje dan mengasuh anak sendiri.&lt;br /&gt;
&lt;br /&gt;
Saja nak berkongsi kegembiraan. Semalam my baby Amili buat satu lagi kejutan yang saya sungguh tak sangka. Dia tertumpahkan air milo ke lantai. Cepat2 dia panggil nama mama..(nak cover line takut kena marah kut..hehe)...then i told her..it's ok, nanti mama lap ye sayang ( sebab i tengah cuci pinggan kat sinki). Tetapi tak semena-mena...dia jalan terus ke dapur menuju ke laci drawer yang ada kain lap and terus pergi ke tempat air yang tumpah tadi dan lap. mak aiii...i terkejut sebab tak sangka dia boleh ambil tindakan yang pada i "tepat". She is just 1 year 7 mths old...and oh my god mybe i je yg terperasan bagus kut. Anak/baby org lain pun maybe buat benda yg sama jugak kan...hehehe&lt;br /&gt;
&lt;br /&gt;
Few things yg buat i begitu happy :&lt;br /&gt;
1. Dia bukak laci yg betul yg ada kain lap. Maknanya, dia memang tahu itu laci yg ada kain lap.&lt;br /&gt;
2. Dia tak amik mudah...dia amik kain dlm drawer...eventhough kat situ di luar drawer ada kain lain kat lantai, tapi dia bukak drawer amik kain lap baru&lt;br /&gt;
3. Buat secara spontan..tanpa di suruh&lt;br /&gt;
4. Terus pergi lap kat tempat air tumpah tanpa di ajar&lt;br /&gt;
&lt;br /&gt;
mak aaiii...i seronok giler bercerita kat papa dia. Rasa syukur sangat sbb she actually a good observer and cepat belajar. Budak2 sekarang ni memang advance kan, tak macam zaman kita dulu-dulu.&lt;br /&gt;

Yang ni pulak...musim gila baca buku...tiap2 hari dia akan lepak kat sini..and amik aman2 buku yang menarik perhatian dia. Sampai penat i kena kemas n susun semula buku2 tu..tapi tak pe lah, tahan aje sbb tak mo rosakkan mood dia kan.&lt;br /&gt;

Ni dia hasil usaha penat lelah selepas 4 kali cuba. Maklum lah, dah nama nya bukan cookies melayu, memang sangat thrill nak buat cookies ni. Nama global dia FRENCH MACAROON. Oleh kerana sangat suka kan bentuk dan warna nya yg cantik2 tu, saya terus google serata alam mencari resepi dan teknik. Percubaan pertama sangat mengecewakan. Hasil tak cantik sebab kaki kuih tak mau keluar. Begitu juga percubaan kali kedua dan ketiga. Tapi untuk kali yang seterusnya, cari gali lagi dari blog2 macaroon expert. Macam2 cara&amp;nbsp; seperti yang di baca, saya cuba..akhirnya dapat lah setakat ini sahaja....ini lah cookies plg susah pernah saya buat.&lt;br /&gt;
&lt;br /&gt;
Saya juga mencari kut-kut ada orang kat KL yang buat kelas macaroon, tapi saya dapati harga/yuran kelas nya sangat mahal. Justeru itu, saya buat keputusan untuk belajar secara try &amp;amp; error sahaja. Walaupun tak banyak bahan-bahan yang di gunakan, 4 bahan sahaja, banyak pendapat mengatakan, sukatan bahan2 harus tepat iaitu kombinasi sukatan harus saling melengkapi untuk setiap bahan. Kemudian...teknik..teknik..dan teknik.&lt;br /&gt;
&lt;br /&gt;
Resepi macaroon di bawah adalah di adaptasi dari blog Bakerella. She even share step by step (teknik) nak buat cookies ini (actually byk site pun ada kongsi cara nak buat ni). U all boleh cari di youtube pun. 1st tengok2 cara dia..then collect resepi. &lt;br /&gt;
&lt;br /&gt;
Ok, ini resepi versi &lt;a href="http://www.bakerella.com/macarons/"&gt;Bakerella&lt;/a&gt;.&lt;br /&gt;
90gm putih telur (di biarkan semalam pada suhu bilik)..lg lama lagi bagus&lt;br /&gt;
2 sudu besar granulated sugar&lt;br /&gt;
110 gm ground almond/serbuk badam&lt;br /&gt;
200 gm gula halus/powdered sugar&lt;br /&gt;
&lt;br /&gt;
Filling Ganache cream &lt;br /&gt;
120 gm dark choccolate&lt;br /&gt;
80 gm butter&lt;br /&gt;
30 gm heavy cream&lt;br /&gt;
* boleh sisi apa je sebagai filling, buttercream pun boleh!&lt;br /&gt;
&lt;br /&gt;
Lain2 keperluan :&lt;br /&gt;
&lt;ul&gt;&lt;li&gt;Spatula&lt;/li&gt;
&lt;li&gt;Tip bulat&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Pewarna&lt;/li&gt;
&lt;li&gt;Piping bag&lt;/li&gt;
&lt;li&gt;Parchment paper&lt;/li&gt;
&lt;/ul&gt;Sehari sebelum :&lt;br /&gt;
1. Sediakan putih telur. Asingkan putih telur dan isi dalam bekas bersih dan bertutup. Simpan dlm peti sejuk&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; pun boleh tapi kena keluarkan ke suhu bilik sebelum guna.&lt;br /&gt;
&lt;br /&gt;
2. Sediakan Coklat ganache&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; Guna teknik double boiler, cairkan coklat bersama butter dan cream. Kacau sebati dan angkat. Biar sejuk&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; sebelum digunakan.&lt;br /&gt;
&lt;br /&gt;
&amp;nbsp;Cara-cara penyediaan :&lt;br /&gt;
&lt;ol&gt;&lt;li&gt;Panggang serbuk almond dalam oven for 5 mins. Untuk mengurangkan kelembapan serbuk badam.&lt;/li&gt;
&lt;li&gt;Sesudah serbuk almond sejuk, campurkan dengan gula halus dan ayak/seive. Ketepikan. Kalau boleh guna mangkuk stainless steel.&lt;/li&gt;
&lt;li&gt;Pukul putih telur sehingga naik dan tambahkan 2 sudu besar gula. pukul lagi sampai nampak glossy. Berhenti beat setelah nampak macam "peak" terbentuk atau putih telur nampak creamy dan tiada buble lagi.&lt;/li&gt;
&lt;li&gt;Campurkan sedikit demi sedikit campuran almond + gula tadi kedalam putih telur. Caranya, gunakan spatula, slide dengan perlahan dan lembut. Jangan lupa, untuk kaup balik di bahagian dasar bekas adunan juga ( kadang2 ada baki kat dasar mangkuk).&lt;/li&gt;
&lt;li&gt;Boleh letak apa-apa pewarna kegemaran&lt;/li&gt;
&lt;li&gt;Pastikan adunan betul2 rata. Masukkan adunan ke dalam piping bag yang berisi tip dengan muncung bulat. Kalau nak senang masukkan adunan ke dalam piping bag, masukkan dan dirikan piping bag ke dalam measurement cup, buka luas-luas mulut piping bag tu dan masukkan adunan.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Pipekan adunan sebesar syiling 20 sen atau 1-1.5 inci. Atau actually boleh ikut suka hati pun sebab macaroon tidak akan mengembang semasa baking process. Pastikan saiz macaroon sekata dan ada jarak di antara susunan cookies ye.&lt;/li&gt;
&lt;li&gt;Setelah siap piping adunan, biarkan cookies rehat pada suhu bilik sekurang-kurangnya 20-30 minit. Tujuannya adalah untuk memastikan bentuk cookies betul2 firm/keras. Sementara itu boleh le panaskan oven. 150 darjah.&lt;/li&gt;
&lt;li&gt; Bake&amp;nbsp; for 18-20 minit. Maybe berbeza mengikut jenis oven. Macaroon masak sekiranya nampak kering dan agak keras di bahagian topi/kepala dan sedikit lekang jika kita tolak bahagian bawah/kaki.&lt;/li&gt;
&lt;li&gt;Biarkan sejuk seketika kemudian baru keluarkan dari parchment paper tu.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Whip cream ganache untuk intinya.&lt;/li&gt;
&lt;li&gt;Cari saiz macaron bersesuaian untuk di padankan bersama inti.&lt;/li&gt;
&lt;li&gt;Kalau nak kekalkan tahap kerangupannya, simpan dalam bekas kedap udara, di dalam peti sejuk selama 24 jam. Hmmm..tang ni kurang kesabaran skit...tapi berbaloi tunggu.hehehe&lt;/li&gt;
&lt;li&gt;Siap..makan la..apa tunggu lagi, tapi untuk bukan peminat manis...this one may not for you. but, for me..i likeeee it so much. hehehe.&lt;/li&gt;

&lt;li&gt; &lt;div&gt;&lt;span style="font-size: small;"&gt;Masukkan air dalam periuk dan  masukkan agar-agar. Masak sehingga agar-agar hancur dan sebati. Pastikan  agar-agar benar-benar hancur.&lt;/span&gt;&lt;/div&gt;&lt;/li&gt;
&lt;li&gt; &lt;div&gt;&lt;span style="font-size: small;"&gt;Masukkan gula batu dan gula. Kacau rata&lt;/span&gt;&lt;/div&gt;&lt;/li&gt;
&lt;li&gt; &lt;div&gt;&lt;span style="font-size: small;"&gt;Masak sehingga gula batu hancur.  Anda boleh ketuk dahulu gula batu bagi ia menjadi ketulan kecil supaya  ia cepat hancur baru masukkan dalam periuk.&lt;/span&gt;&lt;/div&gt;&lt;/li&gt;
&lt;li&gt; &lt;div&gt;&lt;span style="font-size: small;"&gt;Angkat dan bahagiakan mengikut warna pilihan anda&lt;/span&gt;&lt;/div&gt;&lt;/li&gt;
&lt;li&gt; &lt;div&gt;&lt;span style="font-size: small;"&gt;Sejuk dan dan biarkan ia keras baru  potong ikut bentuk pilihan anda. Anda boleh guna acuan untuk mendapatkan  bentuk2 yang menarik.&lt;/span&gt;&lt;/div&gt;&lt;/li&gt;
&lt;li&gt; &lt;div&gt;&lt;span style="font-size: small;"&gt;Jemur ditempat yang panas sehingga ia benar-benar kering dan bergula. Balik-balik sentiasa supaya ia kering sekata.&lt;/span&gt;&lt;/div&gt;&lt;/li&gt;

Saya juga sedang perhatikan...berapa lama agar2 ni boleh tahan, kalau ok,&amp;nbsp; boleh le saya jadikan agar2 kering ni sebagai salah satu item untuk hamper raya nanti. Entry Resepi lagi. Itu je lah keje nya..masak..masak..dan masak kalau musim cuti sekolah. Resepi ini pon ambo dapat dari kakak ambo jugak. Dia memang suka sejak dari zaman anak dara sampai sekarang. Sekarang ni apam dot dot sangat popular. Saiznya yang kecil ngam-ngam unutk sekali ngap di tambah pula dengan rupa berwarna warni, amat-amat menarik hati dan tekak. Pertama kali buat kuih ini, anak bawak sebagai bekal ke sekolah. Hati berbunga riang bila anak bilang kawan2 dia puji sedap. Memang la sedap, kalau benda free ..ye dak?...heheh.&lt;br /&gt;

2 biji telur &lt;br /&gt;
1 cawan gula &lt;br /&gt;
1 sudu kecil ovallete &lt;br /&gt;
2 sudu esen vanilla &lt;br /&gt;
1 cawan susu segar &lt;br /&gt;
2 cawan self raising flour ayak terlebih dahulu&lt;br /&gt;
Pewarna yg disukai.&amp;nbsp; &lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Inti kelapa&lt;br /&gt;
Masak kelapa parut&amp;nbsp; dgn gula melaka,&amp;nbsp; daun pandan &amp;amp; sesudu tepung jagung.&lt;br /&gt;
&lt;br /&gt;
Cara masak :&lt;br /&gt;
1. Panaskan pengukus &lt;br /&gt;
2. Pukul telur, gula, esen vanilla dan ovallete hingga kembang dan bewarna putih. &lt;br /&gt;
3. Masukkan susu segar, gaul sebati &lt;br /&gt;
4. Masukkan tepung, sebatikan &lt;br /&gt;
5. Bahagikan adunan kpd 3 bahagian mengikut warna yg disukai &lt;br /&gt;
6.  Masukkan separuh aduanan dalam acuan, kemudian masukankan sedikit   inti dan masukan lagi adunan keatas inti tadi sampai penuh. &lt;br /&gt;
7.Kukus selama 10-15 minit.&lt;br /&gt;

Tak jemu betul buat cistart nie. Oleh kerana anak2 sukeeee sangat makan cheese tart ni, harus kena ulang masak. Selepas "graduate" belajar dari kakak ambo sendiri... ambo perturunkan ilmu kepada anak dara i. Yang sulung tukang sukat bahan, yang no. 2 &amp;amp; no.3, tukang buat tart shell...dan.. si bongsu pulak..tukang makan. Hemm..lengkap. &lt;br /&gt;
&lt;br /&gt;
Kebetulan nak gi rumah adik bongsu di saujana impian, kajang. So, usung aje la benda ni ke sana, dapatla makan bersama adik beradik kat sana. For those yang nak cuba buat cheese tart ni, saya kongsikan resepi kat sini.&lt;br /&gt;

Blueberry Cheestat&lt;br /&gt;

Sweet Pastry &lt;br /&gt;
200 g butter&lt;br /&gt;
100 g gula aising &lt;br /&gt;
1/4 sudu teh esen vanilla &lt;br /&gt;
1 biji telur &lt;br /&gt;
420 g tepung &lt;br /&gt;
1 sudu besar tepung susu &lt;br /&gt;
&lt;br /&gt;
Cara-cara &lt;br /&gt;
1. Putar  butter, gula icing,vanila  hingga lembut dan tambahkan telur . Putar lagi hingga gebu. &lt;br /&gt;
2. Masukkan tepung dan tepung susu dan gaul sehingga sempurna. &lt;br /&gt;
3.  Tekankan pastri manis ke dalam acuan tat. Tusukkan lubang di kulit  pastri dgn garpu dan bakar pada suhu 180 darjah Celcius selama 15 minit  atau sehingga kuning perang. Ketepikan.&lt;br /&gt;
&lt;br /&gt;
* Tart akan bewarna keemasan dan rangup jika dibakar di rak bawah ketuhar (lebih kurang 1/2 inci dari bahagian bawah ketuhar. &lt;br /&gt;
&lt;br /&gt;
Cheese Filling&lt;br /&gt;
a.250gm cream cheese&lt;br /&gt;
b.150gm plain yogurt sejuk&lt;br /&gt;
c.susu pekat (sila adjust rasa ikut sedap)&lt;br /&gt;
d.3 sudu besar tepung jagung &lt;br /&gt;
e. 2 table spoon jus sunkist (optional)&lt;br /&gt;
f. Blueberry Filling secukupnya.&lt;br /&gt;
g. Piping bag&lt;br /&gt;
&lt;br /&gt;
1.campur bahan a/b/c dalam mixer. mix until fluppy.&lt;br /&gt;
2. campurkan tepung jagung . adjust kepekatan&lt;br /&gt;
adunan. boleh omit sunkist sbb yogurt tu dah masam.&lt;br /&gt;
3. tutup adunan dgn kain muslin. biarkan pada room temperature for 1 hour. &lt;br /&gt;
4. pipekan dalam tart shell and bakar for abt 5 minutes. sejuk kan at room temp and then baru simpan dalam fridge 6 hrs.&lt;br /&gt;
&lt;br /&gt;
Note : Untuk filling ni, boleh letak/ganti dgn lain2 filling mengikut selera anda.&lt;br /&gt;

Ahaak.&amp;nbsp;Cuti sekolah hanyalah seminggu, tapi penat layan permintaan selera anak2.&amp;nbsp;Kali ni saya nak kongsi resepi kegemaran keluarga iaitu Ketupat sotong. &amp;nbsp;Makanan ini memang popular di tempat asal saya, Kota Bharu, Kelantan. Rasanya sangat sedap, maklum lah kombinasi pulut dan sotong berkuahkan santan pekat bersama manisan nira kelapa. Huh..sungguh harum semerbak bila di letakkan daun pandan. Saya sangat suka cium bau masakan ini sepuas hati dulu, baru saya makan. Pelik kan! tapi kalau tak caya cuba la masak dan amik bau nyer dulu...&lt;br /&gt;

KETUPAT SOTONG KOTA BHARU&lt;br /&gt;

Bahan2 :&lt;br /&gt;
10 ekor sotong bersaiz sederhana - bersihkan dan buang kulit&lt;br /&gt;
1 cawan beras pulut - basuh &amp;amp; rendam selama setengah jam dan toskan&lt;br /&gt;
2 cawan santan pekat&lt;br /&gt;
1 ketul manisan Nira kelapa (gula perang/gula melaka pun boleh juga) - diricik halus&lt;br /&gt;
3 sudu besar gula (tambah atau kurangkan ikut selera)&lt;br /&gt;
1 helai daun pandan&lt;br /&gt;
Secubit garam&lt;br /&gt;
Lidi @ pencungkil gigi secukupnya&lt;br /&gt;
&lt;br /&gt;
Cara Masak&lt;br /&gt;
1. Isi kan sotong dengan beras pulut tetapi jangan terlalu penuh, tinggalkan ruang untuk di masukkan kepala sotong.&lt;br /&gt;
2. Masukkan kepala sotong dan pinkan dengan lidi/pencungkil gigi. Saya guna 2 lidi, cucuk memangkah di kepala sotong. Sila rujuk gambar sebagai contoh.&lt;br /&gt;
3. Bila dah siap diisikan semua beras pulut kedalam sotong, susun sotong ke dalam periuk. Masukkan santan.&lt;br /&gt;
4. Taburkan gula nira, gula &amp;amp; garam. Dan daun pandan.&lt;br /&gt;
5. Masak sehingga pekat. Siap..boleh hidang.&lt;br /&gt;

Atau kalau tak ada daun pisang,&amp;nbsp;daun pandan pun boleh. Bungkus kecil2 jer. Kalau beras pulut tu di tabur ke dalam periuk sebegitu aje, kuah akan jadi lebih pekat, which i don't really prefer, sebab nak makan kuah nya jugak..heheh. So, yang petang tadi dah habis di kerjakan anak2. I sempat merasa sekorrrr jer.
