Red White & Blue Strawberries {A Lazy Mom Recipe}

My friend Sarah emailed me a recipe for the cutest and most patriotic chocolate dipped strawberries. I just had to share them you for this coming Memorial Day weekend!

We always have a party for our church peeps at our house for Memorial Day. We call it "Party @ Pastors." I know, I know. We're just so darn creative.

Anyway, these would be super cute to put out for Memorial Day or the 4th of July, or any patriotic day really!

Red White & Blue Strawberries

1 cup of white melting chocolate
12 strawberries
sprinkles

Place wax paper out on a work surface. Wash and dry strawberries. Melt chocolate in microwave, stirring at 10 second intervals, until it reaches dipping consistency.

Dip strawberries in chocolate and shake sprinkles onto the bottom. Lay on wax paper to harden.

Sticky Buns and Underwear Issues (Not that those two things are related)

Wow. Y'all must really like the Lazy Cake Cookies recipe on this here blog. I've had over 55,000 page views on that recipe alone this month! Thanks for sharing!

Uh, I should clarify....not MY lazy sticky buns, the recipe lazy sticky buns.

Are we clear?

Speaking of sticky buns (just brace yourself for this transition), yesterday I mentioned on Facebook that I've had a pair of underwear that for several months now has been hurting me when I wear them. Namely, they hurt under my right "cheek." (Are you blushing yet?)

I thought maybe the elastic in the leg of the underwear was stretched taught or pulled, but never remembered to inspect them to find out.

Yesterday I had this pair of underwear on at church (didn't you want to know that about me?) and noticed it again. I started thinking (in the middle of Lazy Dad's sermon, no less) that I was just gonna have to ditch this pair of underwear when I got home. Come to find out, upon inspection in the bathroom stall, the culprit of my underwear torture was a burr this whole time!

I can only come to the conclusion that in order for me to put up with a burr in this certain pair of underwear for several months on end (not that I wore them everyday, mind you) is because I must, just MUST, have buns of steel.

So please now assume that any gorgeous girl you see walking around with buns of steel is me. Mkay?

(Did I really just write all of that?)

(Any minute now the Assemblies of God is going to call and revoke my pastor's wife membership in their fellowship.)

(Oh wait. There is no such thing as pastor's wife membership.)

(Phew!)

Speaking of discovering my underwear issue at church yesterday, Lazy Dad told the story of Job during his sermon in a way I'm sure you've never quite seen in "big church."

Using a gigantic "Bible" that he used to use when he was a kids pastor, he pulled out different toys from this "Bible" as he told the story.

For instance, Ken and Barbie played the role of Job and Mrs. Job.

What? Even "big kids" in "big church" like a good story with Ken and Barbie in it every once in a while.

Oo! Speaking of Lazy Dad, look who started to get his funk on over there on the dance floor at a wedding reception this weekend.

Can't wait to see what the wedding photographer got of him. Although I doubt it can top this awesome picture of funkiness that is my all-time favorite picture of Lazy Dad ever.

Speaking of pictures, we stopped by one of our area metroparks yesterday and took in some beautiful photographs of nature on display there.

Outside they have this ginormous picture on the side of the building, so I made my kids pose in front of it so I could say in my best German accent, "From way up here you all look like little bitty ants!"

They clearly thought that was funny.

Anyway, to wrap up this random blog post I thought I'd share with you something that I spied on the Olive Garden website. A "Taste of Tuscany" Sweepstakes where you could win an eight day guided tour of Italy for two! Uh, be sure and go enter that! Who couldn't use a trip to Italy, right?!

Lazy Mom Tip #60

Woohoo! It's time to share with you all another great Lazy Mom Tip that I have instituted around my house!

*Lazy moms everywhere go wild!*

Thank you, thank you. I thought that might excited you.

If you're like me you have GOBS of pens, pencils, crayons, and the like scattered all over your house. I know this because when we listed our house for sale and started going through every nook and cranny of our home, I FOUND THEM ALL.

In the past I had tried corralling them in various small tubs and such and keeping them in a central place in our house, but they would inevitably get scattered back around. So when I cleaned my house out for our listing, I knew it was time to take control. To truly keep everything in ONE accessible place where everyone can find it!

Behold. Lazy Mom Tip #60....

These tall tower of drawers are great! I bought one several years ago when we homeschooled to keep paper, workbooks and the like organized, but it had fallen into disarray when we decided to put our kids in school and stopped using it regularly.

When I cleaned out our basement after we listed our house for sale, I dusted these bad boys off and decided they would be the perfect place to house all our pens, pencils, colored pencils and markers.

And speaking of pens, did I ever find some PENS when I cleaned our house out! I told Lazy Dad, and I quote, "We should never ever have to buy pens again in our lifetime. We have enough pens to get our children's children's children through college!"

The bigger drawers on the bottom were perfect for holding our (multitude of) crayons, folders and scratch paper for coloring.

But as I continued cleaning out our house I discovered I needed a home for additional items of this general nature. So I ran to Wal-Mart to buy another tower of drawers, but alas, they don't sell them anymore! NOOOOOOO!

So on my way to another store I passed Big Lots and on a whim decided to stop and see if they had them. AND THEY DID. AND THEY WERE CHEAPER! I did a happy dance right there in the store, drug them home and propped them up next to the other set of drawers.

Then I promptly filled them up with stuff so they'd feel all useful and loved and stuff.

The top drawer holds general office supplies: permanent markers, sharpies, tape, staples, etc. The other drawers house scissors/hole punches, rulers/compasses/protractors, and a whole drawer of note pads.

The bottom two house workbooks I didn't want to part with and spiral notebooks.

Now everything is nice and neat and has a home to belong in! Woot!

I love this tip because it makes you feel super organized. B, b, b, b, BUT! I'd be remiss people, just REMISS, if'n I didn't give a shout out to my sweet, gorgeous, fabulous sister who originally came up with this tip for her home many years ago.

She rocks.

And she's gorgeous.

Proof:

She has two of these drawers that fit perfectly in her kitchen pantry area. She keeps stuff in them like lightbulbs, owners manuals, batteries, cameras, wax bars for her candle warmer, etc.

But she takes the organization one step further than I do, she discovered that you can write on these types of plastic bins with a sharpie or permanent marker and when you're ready to use the drawer for something else, you can erase the permanent marker off with fingernail polish remover to relable them! (Did I mention she was smart, too?)

I May Possibly be that "Crazy Sponge Roller Lady"

This week we had our last MOPS meeting at our church. (For those of you who don't know what MOPS is, check out MOPS International's website.) Since it was the last meeting, we decided to have some fun with it, so we had a pajama party!

*sigh* I just love pajama parties.

Because I love pajamas.

But anyway! The person who came with the craziest pajamas won a prize. I didn't really have crazy pajamas that were prize-worthy, so I had to get creative. I decided to up the ante with a throw back to something I loved as a girl.

Sponge rollers!

That's right people, I rolled my hair up in my daughter's sponge rollers (with her help) and we giggled and laughed the whole time.

And then when we finished, I realized something......

How am I going to get to church like this?!

I couldn't find a hat that would cover it.

I couldn't find a scarf that would work.

So in the end I drove 15 minutes across town like this.

Yup.

I looked awesome.

About half way to church I realized that I had forgotten to bring my "favorite munchie" for our snack. I thought about stopping at a grocery store on the way, and I NEARLY did. But in the end decided I just didn't have the nerve to walk through a store in my pajamas with sponge rollers in my hair (even if that would have made this blog post THAT much better).

When I got to MOPS everyone had a nice laugh over my curlers and wanted to know how many people stared at me as I drove down the street this way.

"I don't know! I purposely didn't look because I didn't want to know!" I said.

Well, technically I did steal two glances at cars beside me when I first pulled out into traffic. Both of the cars drivers didn't seem to notice me so I decided to not look at anymore! But I did laugh a whole lot on the way to church. Especially as I drove through intersections with a bunch of stopped traffic.

So basically, if you live in Toledo and saw a random woman driving down the road with sponge rollers in her hair laughing at nothing in particular, that was me, mkay?

Mkay.

I didn't expect to be blown away by a plunger! But I was! {Giveaway}

I was so blown away by this plunger that that night when Lazy Dad got home, I told him to immediately go get the new plunger and dip it in the toilet, "then prepare to be amazed!"

He looked at me funny, but seeing that we've been married for almost 12 years, he knew to just go with it, so he got the plunger, stuck it in the toilet water and WAS AMAZED.

He flung that plunger around and shook it like mad trying to get water to drip off of it, but the plunger was completely dry!

"Wow. That's amazing."

"I know! I didn't expect to be blown away by a plunger, but I totally was!"

Since Wednesday

So life's been a bit crazy lately. Well, who am I kidding, it's been crazy since late January, but whatever. I'm sure you've noticed my lack of regular blog postings.

You HAVE noticed, haven't you?

HELLO! I asked you a question!

Well anyway, my TV debut went well! Other than me looking 300 pounds on TV.

Seriously. I couldn't believe how BIG I looked. And neither could my friend Carrie who called me to point out the fact that I looked enormous on TV, but don't really look that way in real life.

Mental note: don't go on TV ever again.

Mental note #2: break-up with Carrie.

Here I am getting mic'd up for the show.

(See? I am SO not 300 pounds.)

(I'm also SO not 115.)

(But whatever.)

Here is the two hosts of the show on the set. This is where I started sweating profusely.

Seriously y'all. I was sweating so much that I regretted not putting pads under my armpits that morning.

No lie.

I was contemplating pads under my armpits. But decided against it.

So as the sweat started to pour and as my shirt started to show it, I went to the bathroom and stuffed some tri-fold paper towels under my arms. And that's how I got through the show. With paper towels in my armpits.

Mental note #3: Don't stuff paper towels in your armpits before a TV show, this could attribute to the fact that you looked 300 pounds on TV.

Mental note #4: Next time go with the pads. Less bulky.

And this is me after my part of the show. I had survived.

I think.

Mental note #5: Don't take pictures of yourself after something that made you sweat profusely. This does not help your "crazy lazy" image.

Mental note #6: Ignore mental note #5.

After I left the TV station, Lazy Dad met me for lunch. Where he proceeded to tell me we had a house showing the next night.

Everything was a blur after that. All the half-finished projects around our house loomed over our heads and we hit the ground cleaning, hauling, organizing, staging and painting.

I had to go get more paint from the store, so I took a picture of it so I could remember what it was I was looking for. Do you do this?

Then I came back from the store and continued cleaning, hauling, organizing, staging and painting. Fun was had by all!

Mental note #7: Not really.

Mental note #8: It wasn't fun at all.

We are also in the throes of baseball season here at our house. My oldest son is one of the "captains" of his team. So when he led the team out on the field to warm-up before their game on Thursday night (during our house showing) I had to take a picture of him leading them in stretches. (He's the one in the middle showing them the next stretch.)

Mental note #9: Cherish these moments. They go by fast.

Mental note #10: And take pictures. Lots of pictures. Motherhood wrecks havoc on your memory.

Some sweet friends of ours came into town on Friday and we took them to eat at the infamous Tony Packo's. It's a Toledo institution thanks to Jamie Farr and M*A*S*H. Have you heard of it?

If you've never been to Toledo and had a Tony Packo's Hungarian hot dog, GET HERE. It's the bomb. Our friends really enjoyed it.

Mental note #11: Take a picture of your friends the next time you take them somewhere to eat, not just Lazy Dad.

Mental note #12: I promise we have friends.

Also this weekend, I hosted our annual Ladies Luncheon at our church.

I promise people came.

You just can't see them here.

Mental note #13: Quit taking pictures without the people your talking about in it. It makes people question your sanity.

Mental note #14: Next time I'm at Wal-Mart, pick up some new sanity. Mine's expired.

Then of course, Mother's Day rolled around. I was walking into the kitchen when my daughter met me at the door and ordered me to "go get back in bed! I'm making you breakfast in bed!!"

I just love when people tell me to get back in bed.

It makes me happy.

I got all kinds of sweet hand-made presents from my sweet kids. Two coffee mugs, homemade soap and lots of cards, kisses, and love!

Mental note #15: Don't eat the homemade soap. Even though it looks like a cheese ball. Or a ginormous lump of cookie dough.

Mental note #16: Hire someone who's sole job is to order me to get back in bed.

I preached at our church for Mother's Day.

Lazy Dad took the day off. Well, from preaching.

Explain that one too me?

Then we had a nice lunch out at Burger Bar 419 and I spotted a table in the middle of the restaurant that I took one look at and declared to Lazy Dad that I wanted it. So I proceeded to take pictures of the table with my cell phone in the middle of the restaurant. It's rustic and awesome.

And apparently my daughter likes it too.

Mental note #17: Make Lazy Dad preach on Mother's Day next year, and I'll preach on Father's Day. That just makes more sense.

Mental note #18: Next time people stare at you for taking a picture of a table you want in a restaurant, just hand the camera to your daughter, hop up on the table and strike a pose. Gives them more to talk about that way.

The rest of the day, we hung out in our backyard and randomly invited neighbors over to see our house while it's as close to perfect as it will ever be.

It was a gorgeous day. And the neighbors enjoyed the impromptu tour. And didn't think that was weird at all.

Mental note #19: I love my neighbors. They embrace our weirdness with open arms.

Mental note #20: Well, at least to our face.

I'M GONNA BE ON TV! AHHHHH!

Oh my lazy people. Pray for me! PRAY. FOR. ME!!!

I'm making my TV debut tomorrow LIVE on WLMB-TV40 here in Toledo.

AHHHHHHH!

If you're wondering how this happened (kind of like I still am) WLMB is doing a bit of a Mother's Day show on their weekly program, Main Street, and they asked me to be one of the ladies on the "mom panel." I was chosen because I happen to know one of the hosts of the show, Virginia, and I guess when they were throwing around the idea of this show she thought of me.

First mistake: knowing someone who works at a TV station.

Second mistake: saying yes.

And guess what? You don't have to live in the Toledo Ohio area to see it. Oh no! You can tune in to see me sweat profusely and act like an expert on mothering on their live webstream on their website.

AHHHHHHH!

Monday Musings

On Thursday I got a package from Amazon delivered to my house. I was actually backing out of my driveway when I spotted it, so I jumped out, grabbed it and proceeded to rip it open. Even though I was thinking to myself, "What did I order from Amazon? I don't remember ordering anything from Amazon."

Inside I found this.

Puzzled, I thought that maybe it had been delivered to my address by accident. So I fished around in the box for the slip of paper from Amazon and pulled out this.

As soon as I saw it was from my friend Carrie, I knew it was one of her famous gag gifts. She cracks me straight up. She's the only friend I know who goes to this much trouble, and spends that much money to send someone a gag gift!

And apparently she thinks I need clearer skin.

This weekend I taught my almost 11 year old son how to mow the lawn. (I say "almost 11" just in case you think 10 is too young to teach a kid how to mow a lawn, by the way.)

This was quite humorous considering I have no idea how to mow a lawn.

Let's just say I've been slightly spoiled my whole life. Well, in a "I-got-out-of-mowing-the-lawn-my-whole-life" type of way.

I did finally have to learn how to mow when I was 21 years old though. I was house sitting for a couple from England who were friends of mine when I was going to Bible College in Florida. They had gone back to England for the summer months while school was out and I inevitably had to mow the lawn when it got embarrassingly high.

So I called my friend Paula (Hi Paula!) over to teach me how to mow. She showed me the ropes and then together we knocked the yard out. What can I say? She's a great friend.

But that pesky grass keeps growing for some ungodly reason. So after I let it get embarrassingly high *again* I decided it was time to break out the mower another time.

I pushed and sweated and heaved and huffed while I was working on the front yard. Then the neighbor came over. Apparently he had been watching my display of awesomeness and was impressed. Either that or he was laughing his head off at how ridiculous I looked.

"You know, you shouldn't have to work that hard. I think their mower is self-propelled." He said.

Huh? What does self-propelled mean? I thought to myself.

Then he showed me, with little effort mind you, how the mower moves by itself once you get it started.

WHAT?!

I felt like a nincompoop.

So yeah, that girl that mowed three times that summer (because I let the grass get embarrassingly high before I would do it, remember?) tried to teach my oldest son how to mow our lawn this weekend. It was loads of funny.

Guess you had to be there.

Do your kids love LEGOs as much as my kids do?

Seriously, the one toy my kids NEVER tire of playing with is LEGOs. It's amazing.

This weekend two of them built the ultimate "LEGO Land" in our family room. I am always amazed at my kids' creativity when it comes to building with LEGO bricks.

I know you can't see all the little details they had by this photo, but take my word for it, it was seriously impressive.

Because of my kids love for all things LEGOs, we are BESIDE OURSELVES EXCITED to go to LEGOLAND Florida this summer!

Speaking of that, this morning I saw on LEGOLAND Florida's facebook page that they have a contest going on right now for Twitter and Facebook fans. Simply build a LEGO model of a roller coaster ride vehicle (just the car, not a whole coaster) capable of holding a LEGO Minifigure and either tweet it to them or upload it to their facebook page for a chance to win a gift package, or if you are the grand prize winner, two water park combo tickets to LEGOLAND Florida!

Summer Vacay Here We Come!

That's a Wrap! {Giveaway}

Well all, my time as a Slim-Fast brand ambassador comes to an end today. I've had a great time working with this company and even slimmed down some too!

So how did I do exactly?

Drumroll please!.....

I lost 16.8 pounds using Slim-Fast!

I was really hoping to at least hit 20, but I'm happy with 16 considering the stressful few months we've had already this year. If you know me, you know I'm a bit of a stress eater (sadly) so I'll take 16 pounds of weight-loss any old day!

I have 8 things to tell you.

1. The stomach bug plague of 2012 has hit our home. I'm sad to say that it's too late for us... save yourselves!!!

2. Because of this lovely stomach bug, I missed the opportunity to go to our state Network Conference with Lazy Dad. I'm terribly upset about it, but he isn't......... things that make you go "hmmm."

3. In the midst of our stomach bug epidemic, did I show you what one of my kids did the other day?

It was a special moment in parenting for me.

4. I did cheer myself up a little though by my purchases at a fun little shop called "Pleasantries." Check out my finds....

I'm in LOVE with the vintage license plates. I scored a Texas, Wisconsin and Ohio one. And I've got Sue, the owner of Pleasantries, working on finding me a Florida one so I have one from every state we've lived in. They are decorating my family room even as we speak. I wuv them.

5. Before the stomach bug plague hit, I hosted a fun ladies night at our church. We declared it game night and busted out some board games, group games and card games. The group game we played was SO. STINKIN'. FUN. I highly recommend it. It's sort of Pictionary meets telephone. You can find out how to play on our super fun children's director's blog.

6. Did I show you the bike I want? I saw it when we were in Georgia at a park. You could rent them and I was standing there drooling over it. Dare I call it my "dream bike?"

And while you stop laughing, let me remind you that I am NOT 80 years old. I just like to be comfy when I ride a bike. And have a place to store things. SO THERE.

7. While we've been sick with the plague, we've done a lot of movie watching. The other night I whipped out the best movie of ALL TIME to watch with the kids.

Seriously. It's the best movie ever... it has drama, love, hilarious humor, action, revenge... if a movie can be "the whole package," this movie is. The Princess Bride never gets old.

8. Yesterday while plague victim number 3 was recovering from his night of stomach bug terror, I tried snapping a picture of us together. Much to my dismay any way I held my head resulted in me having a triple chin. We laughed and laughed at my triple chin. But we did find one way for me not to have it in the picture... to stick my head out like an idiot.

Laying down pictures are so unflattering. Unless your a cute 10 year old recovering from a stomach bug plague.

Have Kids, Will Travel {Lazy Mom Travel Tips!}

When traveling with kids, moms need all the help they can get! (Can I get a witness?) So today I thought I'd share with you dear sweet lazy moms (and dads) a few lazy tips I used during our spring break vacation.

We don't usually travel by plane when all five of us are headed somewhere, but this time we did! In order to get ready for the plane ride with three kids in tow, I prepared snack bags for each child (and a snack bag for Lazy Dad and I to share).

I decided to give each person a gallon sized zipper storage bag with various snacks/treats inside. Each person's name got put on the white label area to avoid confusion and that dreaded mom kryptonite - ARGUMENTS!

Also in each snack bag I packed a snack sized zipper bag with several sticks of gum. I didn't want to have to scramble for gum for each person once our ears starting popping as the pressure on the plane changed, so they each had their own to be "in charge" of.

I didn't give the kids free reign over their snack bags, they still had to ask to get a one, but it was great to be prepared ahead of time for the snacking munchies! Because remember, if you do a little bit of planning ahead of time, later you can be lazy! *wink*

Another great lazy mom tip we instituted for travel years ago was our color code tip. About 6 years ago I ran across some carry-on sized rolling suitcases that were in different colors for ten bucks each at Target. As I was standing there looking at them I realized that there was a color for each of my children, so I snatched them up and never looked back!

My kids love their colored suitcases and again, it cuts down on confusion and arguments. These bags have been all kinds of places with us!

An added bonus to this travel tip is the fact that most people do not have bright orange, blue and red suitcases, so they were super easy to spot mixed in with everyone else's bags. My kids even spotted their suitcase being loaded on the bottom of the plane as they watched out the windows!

Now, this next Lazy Mom Tip is a bit of a no-brainer for airport travel, but I thought I'd bring it up anyway just in case you haven't thought of it yourself yet.

I had each child pack a backpack of things to do on the plane. Books, playing cards, stuff for drawing/coloring, and small (quiet) toys topped our kids' list. I would also recommend a small stuffed animal for them to hold on to if the plane ride gets bumpy. (Just don't let your kids over-pack it! My daughter's got way too heavy! Definitely check the weight of it on your child's shoulders before you leave.)

Their backpack's contents not only gave them something to do on the plane, but also during the rest of the trip and in the airport.

And of course, if all else fails, my last Lazy Mom Tip for airport traveling is....

Let them play on the moving sidewalks!

HONEY I'M HOME!

Hello my lazy peeps!

Did you miss me?!

Did your heart get all sad and depressed to not hear from me the last 10 days?!?

Did you even notice I was gone?!?!?

The fam and I were on spring break this last week and after two services on Good Friday and a slam-bam Easter service we jumped in the car and high-tailed it to the airport where we jetted off to stay with my sister and her family on the coast of Georgia and lay on the beach.

IT. WAS. FABULOUS.

After the big Easter push it was nice to just relax on the beach.

I had the BEST time with my sister. OH! Speaking of my sister! GEORGIA HAS BLUE BELL ICE CREAM!!!!

I'm surprised you didn't hear me yelling at her when I saw her pull out some Blue Bell from her freezer. "What?! You have BLUE BELL here?! And you didn't immediately share this information with me when I got off the plane?!?!?!"

To this poor Texas girls heart, Blue Bell Ice Cream is truly the best ice cream in the country! (How many of you just sang the jingle in your head?) But for some ungodly reason, Blue Bell is not sold in these Northern parts.

I'm pretty sure the devil is behind it.

Then we immediately got in the car, drove to the grocery store and fast walked to the ice cream case.

Then I wept.

Then I asked total strangers to hold me.

Then I painstakingly read each carton of ice cream and lovingly held them in my hands.

Then I wept that I couldn't take them all home with me.

Then I had the excruciating decision of which ones to buy and which precious ones to leave behind.

Then I bought two half gallons and one pint and skipped out of the store. It was a glorious day. And made it that much harder to leave this beautiful place where my sister lives.

Isn't the pool in her neighborhood amazing?

*sigh*

Rubbermaid 2-in-1 Recycler {Giveaway}

People. Do you have to recycle where you live? Cause we do. And it ain't always pretty.

Over the years I've done various things to try and corral our recyclables in our kitchen, but it either didn't work very well, looked messy, or took up too much space.

Then Rubbermaid sent me their new 2-in-1 Recycler. *angels sing from heaven*

See how it opens up in two places? You can either use it for trash on bottom, and recycling on top. Or if you're like us and need all the recycling space you can get, you can use it all for your pesky recycling!

And do you see how it has those green handles? It makes it super easy to haul out your trash/recycling when it gets full!

But what I love is how when it's all closed up it looks like a regular kitchen trash can! *score!*

Before the 2-in-1 Recycler we had a BIG drawer bin, like the kind you normally use out in your garage. It took up a lot of space in our not-so-big kitchen, so that's why I'm loving our new Recycler! It takes up so much less space and looks much more kitchen appropriate, which is good when you are trying to sell your house. *happy sigh*

Plus, it's so easy to carry out the recyclables that my 7 year old daughter likes to do it now (much to her brothers shock)!

Yup, I'm loving it!

Jamaican Jerk Chicken with Sweet Potatoes {A Lazy Mom Recipe}

I don't know about you, but I've got a hankering for a Lazy Mom Recipe today. I stumbled across a good looking one on Good Housekeeping that sounds delish AND it's only 475 calories! SCORE! I did tweak it just a bit to make it a bit more lazy mom friendly for you.

You're welcome.

Jamaican Jerk Chicken with Sweet Potatoes
serves 4

1 1/2 pounds sweet potatoes, cut into 1-inch chunks
Salt and pepper
4 teaspoons olive oil
4 chicken breasts
1 tablespoon jerk seasoning

Preheat oven to 450°F. Line a baking pan with nonstick aluminum foil. In large bowl, toss chicken pieces with jerk seasoning, 1/4 teaspoon salt, and remaining 2 teaspoons oil until coated. Arrange chicken in pan and roast 25 minutes or until juices run clear when thickest part of chicken is pierced with tip of knife.

Meanwhile, in large bowl, toss sweet potatoes with 1/4 teaspoon salt, 1/8 teaspoon freshly ground black pepper, and 2 teaspoons oil until coated. Arrange potato chunks in another baking pan and stick it in the oven as well to roast for 20 minutes.

Let's Catch Up!

AHHHH!

I feel like I'm so behind!

There's so much I've been meaning to tell you. Things like...

How my friend Carrie won the tickets to the Monster Jam truck show I gave away on the blog so we decided to grab dinner beforehand and then sit together with all our kids (5 boys and 1 girl). And even though the boys were in hog heaven (including Lazy Dad) and even though my daughter thought the show was "awesome!" Carrie and I? Well, we were thinking of all the things we COULD have been doing instead. Like, going to a movie, or eating dessert, or having a massage. Oh and we were laughing. We did that a lot.

Let's just say Monster truck shows aren't our thing.

And let's also say, no matter how gorgeous you are, ear plugs are not fashionable.

I've also been meaning to tell you about the super fun murder mystery dinner train ride our fabulous friend Charlotte treated us to!

And how some of the humor was a bit, shall we say, "off color." And how Lazy Dad being a Pastor and all had to be protected from the women actors who were a bit, shall we say, "off color."

Finally at the end of the evening. The actors came around and took pictures of us and one of the women once again was a bit, shall we say, "off color" so when she said to Lazy Dad, "hold my leg" as we posed for a picture, Lazy Dad just closed his eyes and said, "I can't! I can't!" Which kind of made them think he was weird. So I said, "Ladies! He's a man of the cloth! He's a Pastor!" And so that got him out of holding her leg in this picture.

Speaking of Lazy Dad, I've ALSO been meaning to tell you about how he's a camera hog. And a microphone hog. And a attention seeker hog.

My proof?

He was interviewed by all five TV stations in the Toledo area a few weekends ago when he ran a business expo event for the Holland/Springfield Chamber of Commerce.

Give that man a microphone, a crowd and a TV station and he's a happy, happy man.

Oh! But I didn't tell you about the horror of watching it on the news later.....

Lazy Dad and I tuned in to one of the TV stations to watch their report that night. And you know how when the news reports on an event they usually pan the event or even show 2 second clips of the event?

Well this particular TV station did NOT do that.

Instead, much to my dismay, they showed about a 10 second video of me standing in front of our booth talking to our people behind the booth and all the while I'm scratching the side of my face like some FREAK! Even Lazy Dad was like, "why are you clawing at your face the whole time?" I said, "I don't know! I didn't even realize I was doing it!!"

Then, THEN! I start to walk away and you see my entire REAR END. I literally screamed in horror and covered my eyes when I saw it on the news!

BUT! Just as I was about to recover from my heart attack, they cut to Lazy Dad being interviewed. And, well, how do I say this nicely.... Lazy Dad's a bit "light" up top. And by light, I mean, there was a lot of LIGHT on the top of his head as they interviewed him. So when they cut to him being interviewed Lazy Dad screamed in horror and covered his eyes.

Needless to say we are both staying as far away from TV news reporters as possible these days.

And we are looking into therapy.

On a much lighter and happier note, I've been meaning to tell you about the fun reunion we had with some of our dear sweet friends from Bible College this last weekend when we were in Tennessee.

We had so much fun catching up and seeing each other's children.

And if you are wondering why the children are holding GINORMOUS Hershey candy bars it's because our friend Cindy asked each child around the table, "Which one of your mom and dad's Tennessee friends is your FAVORITE?"

Some of the kids said she was, but some of them pointed to others. After all of them had decided which one was their favorite, she said, "Okay! Each of you who said I was your favorite gets one of these!" And she passed out one at a time these huge Hershey bars! All of a sudden those that had chosen someone else as their favorite switched their favorites to her so they could get a candy bar too!

Which was her master plan all along.

She buys children's love.

She's a master of it.

Okay! I think we're all caught up!

Now it's back to the deep, dark basement for me. I'm ALMOST done going through every tub and pile and nook and cranny of it. Let's just hope people want to come look at our house after all this work. But even if they don't, my house as never been more organized and looked better! *house for sale bonus!*

Ober Gatlinburg

So I've been showing you some of the stuff we did while we were in the Pigeon Forge area. But I'd be remiss, REMISS people, if'n I didn't tell y'all my kids FAVORITE thing they did while we were there.

While I was off at the Fuse Women's Advance, Lazy Dad drove the kids the short distance to Gatlinburg and had a slam-bam day at Ober Gatlinburg. AKA, land of fun.

There is so much to do at Ober Gatlinburg (Lazy Dad and I went there on our honeymoon), but I had forgotten how much there was until I saw all the pictures Lazy Dad took.

First you have to take a tramway up to the funness. Which sort of freaked my daughter out a little. Just check out that little worried face of hers....

But that face soon changed to sheer joy.

And so did this child's.

I love his face in this picture. Like he's aiming to hit the child in front of him.

Like I said, there's so much to do at Ober Gatlinburg. There's train rides.

There's putt-putt.

There's an Alpine Slide.

But probably my kids' FAVORITE thing they did that they talked about non-stop? Ice skating. They had never done it before and they loved it.

But that's not all people! There's more!

And THEN, when you think you've done it all, there's a ski lift up to a gorgeous view!

Seriously, our kids had the best most funnest time at Ober Gatlinburg! You should definitely check it out if you're in the area!

Everybody Stampede!

So while we were in the Smoky Mountains (thanks Lazy Dad for correcting my earlier misspellings of it) we took the kids to the Dixie Stampede.

Raise your hand if you've been to it.

Isn't it just too much fun?

We hoop'd and hollar'd and ate and ate and ate. Let's just say I'm glad to be home and back on my Slim-Fast 3-2-1 Plan! Momma done ate and needs to reverse the damage!

But seriously, how can you NOT eat and eat and eat there? They give you SO much food. And I don't know about you, but the Dixie Stampede's chicken is literally the best chicken I have EVER had EVER. This makes my third time going to the Dixie Stampede (but my kids' first) and every time we go I ask them if they'll give me the recipe for the chicken. And one of these days I'm gonna get it, by golly!

Anyway, my daughter loves horses. So we made sure to walk by the stables on our way in to the building.

After I took this picture the horse in the stall realized what was going on and came over and literally posed for me as I took another picture.

I'm serious y'all! The horse stood there posed for me till I took a picture of him (or her... we didn't get that close). I kept saying to Lazy Dad, who was walking away from me, "I think this horse is posing for me. Hey! Look! This horse is posing for me to take a picture!" But he just kept walking away from me. *Men!*

And I don't doubt the horse was posing. They are show horses after all!

Before we walked in my girl took a picture with a pretty Southern Belle. I couldn't get the boys to go near her.

Once inside we walked through the "saloon" and hunted down a place to watch the pre-show. I say "saloon" because this is a family-friendly place and they don't serve alcohol, in case you are wondering.

We decided to sit up in the balcony and Lazy Dad got us some popcorn and peanuts to munch on as we waited for the pre-show to start.

My daughter was cute, she said, "Mom! I think I know why they call it a RE-show. Because they RE-show something they've already done!"

I said, "It's not a RE-show baby, it's a PRE-show, but good thinking!"

The pre-show was very entertaining. The talent of these performers was mind blowing. Especially the three-time banjo champion on the right. Wowie!

After the pre-show we were seated for the main show. You aren't allowed to take pictures in there, but I did snap these two pictures with my cell phone before the show began.

Oh, and did I mention you eat your food with your hands? So be sure and wash 'em!

The show is fun, the food is fantastic (and just keeps coming), the service is friendly and impeccable... I highly recommend the Dixie Stampede. And, I should mention, it's the Dixie Stampede's 25th Anniversary this year and you can find them in three locations... Pigeon Forge, Branson and Myrtle Beach.

The only down side is that it is very pricey just like any attraction is. But if you save up for it and are near one of their shows, you should totally go!

After the show you can walk back by the stables and meet some of the performers. Here's my kids with the show's Master of Ceremonies. He even signed their cups.

Sugar Maple Cabins {And Condos}

You know what's fun?

Staying in a nice new condo in Pigeon Forge Tennessee, that's what.

Thanks to Sugar Maple Cabins, who come to find out, not only rents cabins in the surrounding Smoky Mountain area, but also rents condos if you want to stay closer to the action, we had a beautiful place to stay right near all the Pigeon Forge fun!

When we walked in everything was so nice and new and clean! In other words, it was a lazy mom's paradise.

There were three bedrooms and two full bathrooms. But the highlight of this condo was that each bedroom had it's own TV. We only have one TV in our house, so this was practically paradise to my children. As soon as we settled in they each plopped down in their respective rooms and savored their new found freedom. Even though they watched the same exact thing on their TV's, they refused to watch it anywhere else but in their own rooms. They were in hog heaven people. TV hog heaven.

Lazy Dad plopped down in the living room to watch what he wanted to as well, so that left me with the king sized bed in the master bedroom and a TV all my own too.

Nothing says family togetherness like four TV's in a nice clean new condo and everyone in their own rooms watching it, now does it?

You know what else my kids were in hog heaven over?

This.

Not the toilet... the big jacuzzi tub. Since the condo's pool wasn't open for the season yet, they put on their goggles and took turns "swimming" in the big bathtub every. single. night.

My kids have never been so clean.

In fact, the bathtub was in such high demand I never even got to step foot in it. I was relegated to the shower. But it wasn't too bad. I mean, it's nice and new and clean and beautiful and all.

So if you're looking for a place to stay in Pigeon Forge, definitely consider renting through Sugar Maple Cabins. Whether you want a cabin away from it all or a condo down by all the fun attractions, they can hook you up!

Close to Heaven

If it were possible to physically touch heaven, I think I was the closest I've ever been this weekend.

This was literally my view while I was in the Smoky Mountains at Fuse Women's Advance.

Isn't it breath taking? (Even though these pictures don't come close to doing the view justice.)

My family and I trekked to the Smoky Mountains for two reasons... to see some dear sweet friends of ours from Bible College and speak to the amazing women from their church (Fuse Church) at their annual retreat.

I absolutely fell in love with these women! I was so, so, so, SO blessed to be able to meet each one and pray with them, and cry with them, and share my heart with them. Wow. I'm pretty sure we all touched heaven this weekend.

If you ever need a retreat place in the Smoky Mountains I highly recommend Eagle Rock Camp and Retreat Center. It was fabulous.

Each room had a door leading out the porch. This was my favorite place to sit and bask in the amazing mountain view.

While I was busy gazing at this view, my family was back in Pigeon Forge having fun staying at a Condo through Sugar Maple Cabin rentals. I'll post pictures of that tomorrow. As soon as I find my camera. It's AWOL.

I spy with my little eye... something purple!

I snapped this picture of my girl wearing her school color of purple earlier this week.

Speaking of school colors... how about a shout out to my hometown peeps in Nacogdoches! Axe 'em Jacks!! (When I'm homesick I wear this shirt.)

And then there's my daughter's room. That I lovingly painted purple when she was a toddler and then she informed me that she would have rather had a pink room. (Sorry I didn't make the bed for you.)

I spy with my little eye... something pink!

This little gizmo sits on the ledge of one of our windows and when the sun is out the flower rocks back and forth. It makes me smile. And it's pink.

But I also had to post one of my favorite pictures of my daughter.

I just love the big pink flower in her hair!
