It is not too often I do hot pot night but my brother wanted the change from our usual family bbq. Sooo, here's a simple breakdown on what we did for our hot pot event. If you aren't aware of what hot pot is, it is a primary Asian dish similar to fondue that consists of dipping vegetables and meat into a flavored of choice hot boiling pot until cooked. It is basically a stew. You cook as you eat along.
We used an electrical hot pot and burner to make our hot boiling water. Now you can create your own version by adding or taking away what you don't like. It is all about what you'd like in it. Meat, veggies, and sometimes seafood are just some of the common ingredients.
**Sauce is often a bland, a tint of salt, a savory mix of seafood paste (curry like paste) or spice if you prefer!

The purpose of this whole idea is to have the boiling hot pot in the middle of a table surrounded by vegetables and meat, therefore as you eat, you may dip ingredients and then put it into your own bowl, by adding rice noodles and the soup into one. This is a good dinner idea for a group of friends or small family to enjoy around the table as we chat.

Ingredients:

1) Veggies: Lots of spinach, green onions or scallions, mushrooms (sorted), bok choy, tofu, cilantro or parsley

2) Coconut juice, crab paste or shrimp paste (often found in the international stores)

3) Beef briskets, meatballs, squid, baby crawfish

4) Rice noodles(optional). Boil beforehand in separate pot til tendered enough

5) hot pepper spice, salt or favorite side seasoning sauce, black pepper

Burner (propane or eletrical)

This second option is an electrical burner has two sided giving you two options of soup base. As you may tell one looks spicier than the other.

These vermicelli like noodles are doable but it is not necessary if you prefer without it. The ingredients below the noodles are coconut and a crab paste that has a great flavoring to the soup base. You may find it in your international stores. If you do not prefer it, a home base of salt and olive oil mix poured into the base works just fine.

Ingredients:

1) 3 medium pk dry pre-made tapioca strips, pearls, etc (starch flour) any shape or size
of your choice (Found in international stores)

2) Raw coconut milk (1 can)

3) Brown sugar (1 cup or bark)

* 4) Jackfruit (1 can) **optional for a fruity and texture test

Fill pot with water about 1 1/2 inch from the tapioca and bring til boil. Then simmer down to low, and stir and stir and keep on stirring. You want to let it soften but not get sticky to the bottom of the pot too much. So periodically stirring and letting it sit for a good 30 minutes until its ready. Taste test to make sure it can be chewed with your teeth by biting off. You will notice colors will change as seen in picture step on right. Do not leave your tapioca to long as it could drain water fast and burn. Add a little more water at a time if needed. The end results of the tapioca should look like the last picture.

Coconut milk comes in can as this and make sure its milk, not clear juice. You may find these in most grocery stores.

Add 1 cup of water with 1 1/2 cup of brown sugar into a small pan or pot. White may be used for substitution. Keep at medium-high until boiling and stir in periodically to make sure brown sugar is melting. I am using 1 1/2 bark sugar because it is easier at melting but granulated is fine as well. Once all sugar has dissolve, let cool.

Cut up the Jackfruit out of the can as picture shown. Size is up to you however I prefer small thin slices. *If you aren't fimiliar with jackfruit, its a tropical sweet fruit that grows on tree. Its rare to find them around but you can find can ones at the international stores.

Once all is done, mix tapioca, jackfruit in a big bowl. Then pour in the brown sugar and can of coconut milk. Stir in til mixed well. It may still be warm at this point but since it is usually served chilled, you may add ice into the bowl or in individual's cup for their own desire. For a milkier taste, add a bit more of coconut milk if you have extra cans around.
Easy chocolate truffles ever and you can actually find this on the back of Oreos too. I just like to add white chocolate to mines as well.

1) Crush up your bag of cookies in a plastic Ziploc plastic bag. If you like some crunch in your truffles, lessen the crush. Then move on to mushing in your crumb cookies and room temperature cream cheese into a bowl and mix well.

2) Start by rolling into gum-size balls with your hands. *Mines weren't perfect since I was not too patient today but you can take your time and roll them nicely in a ball. Place them on a cookie sheet under parchment or wax paper about half inch apart. Let sit in the fridge to harden for a few hours. I had to leave mine over night because I started ahead of time and it turned out fine too.

3) Melt your chocolate, broiling style or microwave. I used mini tongs to dip each chocolate ball in the chocolate until coated well. Let sit on parchment paper until harden well. Usually takes almost a whole day for chocolate while white chocolate only takes an hour or two to dry fully well.
Ingredients:

Popcorn
White chocolate morsels or vanilla bar
Candy canes or peppermints
Big bowl or Tupperware

I start off with 2 bags of popcorn, 1 bag of white chocolate and 1 candy candy or 4-5 peppermints. You can do without the mints if you prefer just simply the white chocolate. Next, I pre-chopped up the mints. There is no easy or best way to do this. I simply used a wooden meat pounder to crush the candy. Its best if you have a clean cloth to put the candy wrapped in. Ive tried using paper towel, plastic bags and pounding in a bowl. they all get ruined quickly and candy goes flying everywhere. Moving on, now pop all your popcorn. Separate all the kernels from the bag as much as you can. It takes time but you will be glad you did it later.

Melt a handful of white chocolate at a time under 25-30 seconds. You will have to microwave the chocolate in 3-4 separate times. Do not attempt to melt the whole bag of chocolate at once. *There's also the option of melting the whole bag in a double boiler. Anyhow, check on chocolate every 15 seconds and stir in microwave. Leave the chocolate back in if not complete melted. Set for another 15-20 seconds. You can also til when the chocolate chips are shiny, they are melting. Stir with spoon quickly.
*Always watch your chocolate, they burn really fast.

Once you are able to smash all the morsels together into a pasty melt, throw in the crushed mints in. As much or little as you want. And quickly mix it in. Then pour over popcorn and mix well completely. Do this for a good 20 minutes until you evenly get most popcorn covered with chocolate. The chocolate hardens pretty quick. Just keep mixing. I like to do this in a big tupperware so I can cover it with a lid and shake it around. Once they become loosely, let it sit for 30 minutes to dry off to get best testing. These popcorn are amazingly addicting and just melts in your mouth!
My sliders aka mini burger were inspired by this past summer's food truck visit. It was a food truck galore all around. I cannot recall the truck name but I enjoyed the mini burgers more than I thought I would. I even made my own sauce, simply 2 sauces combined. No brainer on that. These mini bites are fun for lunch with friends over or dinner. Easy to put together and anything goes! No wrong way to make them. Here's my simple recipe.
Ingredients:

Mini burger buns
Beef
Bacon* optional
Salt & pepper
Yellow onion
Green & red bell pepper
Mozzarella cheese
Sauce (Sriracha hot red sauce & mayo mix)

Chop and shred up your bacon and beef into threaded pieces. Do the same to your bell peppers & onion. Mozzarella can be in round or square slices. Sauteed meat til desired taste. Throw in bell peppers and onion. I like little onion therefore only threw in a little but maximize your preferences! Add your pinch of salt and pepper. Heat up the buns in oven for 5 to 8 minutes, depending on how crisp and hard you like them. Lay them opened. Place sliced mozzarella pieces between buns and let sit til almost melted. Take it out and throw your cooked sauteed meat and veggies in your buns and you are about done. You can either brush on your sauce unto the inside of buns or dip them instead which is how I usually like it.

Love, peace & eats!

I normally prefer yams over sweet potatoes when making this dish however this time around I decided to use sweet potatoes and it was just as good. Thats also known as candied or marshmallow-ed yams! Sometimes its hard to define the taste but as long as the results are the same, right? Anyhow, its easy to whip for the holidays when you need to add another side dish with your turkey or ham. Also this is my first time making from a can. Years before I have always used fresh yams or sweet potatoes do this dish. It takes just a little longer to bake but its just as good, if not better.

2 Can of sweet potatoes or 4-5 fresh raw sweet potatoes
1/2 bag of marshmallows
brown sugar
butter
*option-Throw bread crumbs/stuffing on top for a crunchy taste

Find a non baking tray and butter it up a little before you throw in your canned sweet potatoes. They should be pre cut in a bite size but you make smash a little more if you like it smoother. Add brown sugar on top of dish. Amount is up to you but I like alot so I make sure to cover the whole top. Leave in oven for 325 degrees for 10-15 minutes and then throw marshmallows on top minutes after. Let sit in oven for another 5-10 minutes until marshmallow area almost melted but not gone. Pull out and let sit to cool off.
Everyone loves this easy dish everytime. It has a nice balance to the salty dishes served at the table.

Great holiday appetizer and something easy to put together before the gather begins. Just simply wrap bacon around shrimp and pre-cut salmon pieces. Stick toothpick to keep it together and from falling apart. *Brush lightly of olive oil on the salmon before wrapping. Once you are done with a handful, stick in on a tray in the oven for 325 degrees for 30 minutes or less. Check to see when done. Once done, brush on Teriyaki sauce or any other sauce of your favorite. No need add salt as the bacon is salty enough already.
Enjoy!

*Optional. For a fancier appetizer party, pre-cut small pieces of pineapples and stick them on after wraps are done and lay out in nice platter bowl. Im sure your party will immensely enjoy this savoring sweet flavor.

Love, peace & eats!
Ingredients:

Turkey juice (from cooked Turkey)
corn starch - 1 cup (flour replacement ok if none)
butter (1/2 of 4 oz butter stick)
salt

I got about 5 cups worth of juice leftover from the turkey tray. Cover your turkey will with a plastic cover while cooking and you should have plenty of juice to use.
Throw in your butter on high into your cooking pot. Stir well and as it melts, throw in your turkey juice. Let stay on high to about boil then throw in cornstarch by slowly spreading and whisking it in, instead of dumping whole cup in. The trick is to keep whisking on high and then to medium if boiling too quick until all lumps are gone. Add 1-2 tsp of salt along the way. Test taste to make sure it is how much salt you'd like. This may take about 15-20 minutes however if your batch is smaller, should be quicker. If you'd like it a little thicker, add more starch.
And we are done.
This was my first attempt of making tartlets ever in my adult life. So I got some help from a friend and online, of course. These babies really take time if you aren't so crafty. So I have to give credit to everyone out there who gave tips. I admit, I screwed up the first batch. My crust was burnt and bland. I gave it a second try and the second batch turned out better. So since it nearing holidays, I top it with a Halloween candy corn treat. I tell ya, the butter shells really melt in your mouth. Hope you enjoy!

Ingredients:

8 oz - 1 can of pumpkin puree

3/4 of an 8 oz whip cream bucket

1 cup brown sugar

1 tsp pumpkin spice (add again later for garnish)

1/2 tsp cinnamon

6 granny green apples

graham crackers

6 oz - 1 white yogurt (I used apple cinnamon greek yogurt for more flavoring)

1/4 cup of orange juice for some tartness (*optional)

Blend in all spice, sugar and pumpkin puree in one bowl. Mix well. Then add yogurt and juice. Mix again. Finally, pour in whip cream and whip gently into whole. Chill for an hour before serving.

Cut up apples in small slices and spread along to serve with graham crackers in serving dish. I used graham cracker sticks, a lot funner to eat and dip.

This dish is light and less heavy than your average dip. I found different but similar online recipes on this so

I decided to make it for the holiday and added a little twist to mine. I cannot recall sites now on sharing this dish but thank you.

Enjoy!

Tonight's dinner is simple yet filling and with what I had in the fridge. I needed to also get rid of the last potatoes and carrots before they go bad so this was the easiest dish on a tiring and crammed Tuesday night.

Ingredients: (8-10 servings)
5-6 potatoes (standard size)
carrots (couple thick stalks)
1 yellow onion
spinach (store bundle)
1.5lbs of pork (bottom or shoulder is fine)
garlic (2-3 cloves)
Salt & Pepper
Pressure cooker
Pot
*Without pressure cooker, boil meat for 1.5hr or 'till tender

Chop up the pork to bite size portion. Pressure cook with water just an inch above meat for 30-40 minutes. After tenderized, drain meat out into pot. *You may cook all into pressure cooker however it leaves a lot of oil, therefore, I decided to throw it into a separate pot. Fill new pot with water of 3/4. Bring to boil then add chopped veggies. Boil for 20 minutes or till veggies are tenderized. Don't forget to add salt and pepper.

Chop up veggies as seen in picture below.

My husband makes the best chili bean ever! And Im not bragging, just experiencing the truth. So when the neighbors came home from elk/deer hunting one day, he handed my husband some meat. The hubs then decided to make it for lunch this past weekend so of course, I had to blog about it. But let me tell ya, he was hesitant about sharing his recipe. Haha.
The smell invited the whole neighborhood. Our neighbors said they were so surprised at how easy it was to make after we gave them our ingredients. They couldn't taste the gaminess of the venison at all. It was so addicting, they boundlessly had seconds and thirds.

Instructions:

1) Chop & slice up all your side ingredients

2) Ground half of the meat in grinder/blender. Chop up the other half in small cube chunk.
Sauteed into a steel pot with garlic until well cooked. Add 1/2 can of beer into pot. Add 1/2 bottle of a standard size V8 vegetable juice. Lastly, throw rest of side ingredients in. (Black, kidney & pinto beans, jalapeno, green pepper, onion)

* If you don't have a steel pot, boil for 2-2.5 hrs in a regular pot.
* Pre-pressure cook the meat is an option for a faster result.

3) Let sit and cook for an 1.5 hr. Add more juice if you should need more later. Donot add water.
*If you like it spicier, add more jalapeno.
*Salt and pepper as tasting.

3) Serve. And shred cheese over serving bowl while hot

So quickly I ordered everyone their part in making this and had them cut up in all sorted slices; garnished with salt, pepper, chives and cheese. Potato wedges, fries, bits, etc, however you prefer to call them, sounded good about then. I also had extra cheddar cheese laying around the fridge and needed to use them up before it went bad. Was so glad I did not throw out the last of it yet. Threw the potato slices in the oven and 40 minutes later we had some tummy filling late night snack.
These babies make easy snacks for informal gatherings and when you just need to do something with the long sitting over due potatoes in the cupboard, this be it.
The cheddar cheese came last, shredded and bedded on top of the potatoes, minutes before the potato wedges are ready to come out so you dont burn the cheese to early. Quick and easy as that, we had our movie "popcorn" and enjoyed a family movie into the late evening. They were so addicting, we made a second batch before the movie was over.
This is an old tradition many families have done in their homes for decades and with the holidays nearing, had to try it on my own one time for the daughter and her cousins. We all love marshmallow rice krispy treats, don't we?! The gooey and crunch can't combine any better than this. To avoid messiness with the kids, I decided to roll the marshmallow rice crispies into balls on a stick like a cake pop. Shape them in any way for fun, I even made heart shaped ones for the little girls.
And if you want to experience a super sugar high, melt some morsel chocolates in the microwave for dipping. You can use anything edible, whatever you can find in your cupboard from sprinkles to candy to throw on the pops. I let the girls make their own, dipping and sprinkling while I indulge in a plain rice krispy pop. Traditions are always best.

Bag of marshmallows

Rice crispy cereal (1/2 of regular standard size box)

Butter ( 1/2 - butter bar)

2) Melt marshmallow next in microwave for 20 seconds in a glass bowl. Check to make sure it does not burn. If it bubbles up, it is done.

3) Mix rice Krispy cereal into the marshmallow quickly. Then add the butter. Mix well.

4) While still soft and gooey, roll up balls of the krispies. I kept my hands cleaned and wet to do this process. And then add the pop sticks. Let it sit dry for 20-30 minutes. Then add decors.

I especially loved the last minute cheese over the bell pepper. Again, another easy dish for last minute dinner idea in just 4 steps. There is no really wrong way to make it, add or subtract what you'd like!

Ingredients:
1/2 cup Rice
1 pkg. Ground beef
1 Tomatoes
1-3 garlic
1 egg
Pinches of salt/pepper
1 yellow onion
1 tsp olive oil
1 can 8oz tomato sauce
Cheese (optional* We used chedder but use your favorite)
Bell Peppers (We used about 5-6 bells for our serving)

1) Pre-cook the rice. And pre-cook the ground beef in a pan for a few minutes. Optional: You dont have to cook the beef alone if you don't mind the turn out from just cooking it in the oven.
2) Then mix both together with the rest ingredients.
3) Boil the pepper with pinch salt in water for 5 min or until boiling. This helps it soften a little. Then stuff the peppers with the rice/beef mix and stick it on a glass perferably tray baking it over at 350 degrees for 1-hour.
4) Once close to done, pour a little more sauce(tomato) before taking out of oven to keep it moist. And lastly, right before serving while still hot, top it with your favorite cheese on plate. Cheddar has the rich fatty taste so its works well but you may use any favorite cheese of your own.
A last minute throw in the oven brownies after dinner with a whip of puree banana filling to excite it.. made by daughter tonight. So simple, even kids can do it. The bite size was addicting. We left some brownies unfilled and threw the slice banana as garnish on top as well.
A friend made this simple but delicious outdoor kebab snack over the summer. And I thought it be a great way to share although summer's about over, you can still make it as a party appetizer. You may use any kind of meat ball from fishballs, pork balls to beefballs, etc but in this one we used the fish balls. Now don't let that make your stomach turn. They are just meat grinded into a ball. Like meatball from beef in your spaghetti. Yes, it may sound odd but they do sell them at your local International store for under $3 or $4 dollars a bag. They are precooked so you do not have to grill them long over heat You have the option of throwing it in the oven if you plan to do it indoors. Our fish ball is primarily made from white fish like Cod.
Stick your meatballs on the kebab stick (about 4 or 5 on each) and throw it on the grill or oven for about 5-7 minutes. Oven can be at 350 degrees. And then with a brush, glaze the kebab with honey while turning it to even all sides. Then let it sit until it becomes lightly golden brown. Turn the sticks as it does this so all sides are even at caramelizing. This should only taking a few more minutes. And thats it!

Its a fun and quick snack if you do not have time to do much for a gathering. You can do this with all meat, again as I've said. You may throw some cut up cube veggies or fruit as garnish if you'd like as well. Be creative. Its almost the holidays! Hope yall enjoy!
