<p style="text-align: left">200g (7 oz) flour</p>
<p>5 ml (1 tsp) baking soda</p>
<p>5ml (1 tsp) baking powder</p>
<p>30 ml (two tablespoons) of cocoa powder</p>
<p>150 g (5 oz) brown sugar</p>
<p>30 ml (two tablespoons) golden syrup</p>
<p>2 eggs</p>
<p>150 ml (¼ liter) oil</p>
<p>150 ml (¼ liter) of milk</p>
<p style="text-align: center"><strong>Recipe</strong></p>
<p>Grease and flour 23 cm (9 inch) cake tin.</p>
<p>Sift together all dry ingredients in a bowl.</p>
<p>Put sugar, syrup, eggs, oil and milk in a manhole in the middle of the dry ingredients.</p>
<p>Beat vigorously until mixture is smooth.</p>
<p>Pour the mixture into the prepared pan. Bake for 45-50 minutes, or until a skewer inserted into center of cake comes out clean.</p>
<p style="text-align: center">Leave in the pan in the oven for a few minutes and turn on the rack to cool.</p>
<p>For the glaze: Place chocolate and cream in small saucepan and heat gently until melted.</p>
<p>Cool slightly and pour evenly over cake.</p>
<p>Garnish with nuts.</p>

<p>First take some sesame seed and Roast them lightly for a few of minutes on a medium or slow fire.  Grease a flat tray or use your kitchen platform with some ghee or butter. Heat Â3/4 cup jaggery in a pan until it melts and changes colour.  Now add the sesame seeds to it and mix till the two form a homogenous mixture. Place this mixture of sesame seeds and jaggery on the greased plate. Flatten it on the tray and roll it with a rolling pin. Cut it into diamond shaped or square pieces quickly before it cools down.</p>

<p>200 gms black gram dal<br />
200 gms desi ghee<br />
250 gms sugar- powdered<br />
150 gms khoya<br />
1 tsp dry ginger powder<br />
Milk according to need<br />
100 gms almonds blanched<br />
1 tsp cardamom powder<br />
<strong> METHOD</strong></p>
<p><strong></strong><br />
1. Clean and make a powder of black gram dal.</p>
<p>2. Add 1 tbsp ghee in luke warm milk and knead into a very soft dough.</p>
<p>3. Keep it aside for 10-15 minutes.</p>
<p>4. Heat the remaining ghee and fry soft dough on a low flame till it is light brown.</p>
<p>5. Add the powdered sugar and khoya.</p>
<p>6. Stir constantly till the mixture leaves the sides of the pan.</p>
<p>7. Mix the cardamom powder and ginger powder.</p>
<p>8. Spread on a greased tray.</p>
<p>9. Sprinkle some sliced almonds.</p>
<p>10. When it is cool cut into a desired shape.</p>

<p><strong>Directions</strong></p>
<p>Preheat oven to 350 degrees F (175 degrees C). Grease 3 &#8211; 9 inch round cake pans. In medium bowl, pour boiling water over cocoa, and whisk until smooth. Let mixture cool. Sift together flour, baking soda, baking powder and salt; set aside.<br />
In a large bowl, cream butter and sugar together until light and fluffy. Beat in eggs one at time, then stir in vanilla. Add the flour mixture alternately with the cocoa mixture. Spread batter evenly between the 3 prepared pans.<br />
Bake in preheated oven for 25 to 30 minutes. Allow to cool.</p>

Assortment of Vegetables, cut and diced (excluding salad and leafy vegetables and beetroot)

<p style="text-align: left;"><strong></strong>Blanch the diced vegetables and set it aside for later use.<br />
Grind channa dal, urad dal, asafoetida and green chillies to a paste.<br />
Heat ghee in a separate shallow pan and add the grounded paste.<br />
Fry lightly till it emits fragrance.<br />
Add the grated coconut and sauté it over a low flame.<br />
Add the blanched vegetables and cook till done.<br />
Add salt to taste.<br />
Serve hot.

1 recipe of date and tamarind chutney<br />
1 recipe of green chutney<br />

<p style="text-align: left;">Assembling the Papdi Chaat<br />
Lay the papdi’s in large plate or in individual plates<br />
Place the 1 slice of potato on each papdi. Add 1 tablespoon of whipped yogurt, 1 teaspoon of date and tamarind chutney and 1 teaspoon of green chutneyon each papdi<br />
Sprinkle ¼ teaspoon of onions and tomatoes on each papdi<br />
Sprinkle chaat masala, roasted cumin powder and red chilli powder on each papdi<br />
Lastly sprinkle sev on top of each papdi and serve immediately</p>

<p><strong>Method of preparation:-</strong></p>
<p>Take groundnut, roast it in a pan over low heat and then take off the pan from heat. Keep it aside to cool and then take out its skin. Take a frying pan, mix sugar and brown sugar in it. Then add a little water and keep it to boil. When it gets thick in consistency then adds groundnuts in it. Mix it well. Take a thali, grease it and then spread the groundnut mixture in it. Keep it to cool slightly and then cut it into pieces with a knife. Now keep the groundnut chikki a side to cool to cool completely and then store in airtight container.</p>

• 2 Cloves</p>
<p><strong>For The Filling:</strong><br />
• 1 Cup boiled and mashed potatoes<br />
• 1 Pinch asafetida powder<br />
• 2 tbsp Khajur imli ki chutney<br />
• 1/2 tsp Cumin seeds<br />
• 1/2 Cup water<br />
• 2 tbsp Oil<br />
• Salt to taste<br />

<p><strong>How to make Dabeli:</strong><br />
•	Roast the masala ingredients in a pan for about 2 to 3 minutes.<br />
•	Grind them to make a fine powder in a blender, set aside<br />
•	For the filling, heat the oil in a pan and add the cumin seeds to it, until they crackle.<br />
•	Add the asafoetida, dabeli masala, potato, water and salt, mix well.<br />
•	Remove them from the heat, combine khajur imli ki chutney and mix well.<br />
•	Divide it into 15 parts, set aside.<br />
•	Cut the burger buns into halves and cook them in a pan using a little butter.<br />
•	Now put a portion of the filling on the lower half of each bun.<br />
•	Top it with the chopped onion, sev, coriander, pomegranate, peanuts, garlic chutney and khajur imli ki chutney.<br />
•	Sandwich it with the top halves of the burger buns and serve it.</p>

<p><strong>How to make Thepla:</strong></p>
<p>•	Put the flour in a flat vessel.<br />
•	Combine together all the ingredients and mix with the flour.<br />
•	Knead it using 1 tsp oil. Set aside for 15 minutes.<br />
•	Prepare medium sized balls from the dough.<br />
•	Give them a round shape with a rolling pin.<br />
•	Heat a tava and roast rolled out theplas on it.<br />
•	Roast both sides properly. Apply little oil on the turned side of each thepla. Repeat the procedure with the other side.<br />
•	Remove when well roasted.<br />
•	Serve hot with curd or chutney.</p>
