<p>Soya is one of the richest sources of protein, yet it finds only a small place in Indian cooking. I&#8217;m not sure why ; maybe there are fewer Indian recipes that you can make out of Soya. Soya - based dishes can not only be tasty but healthy too! Replace Paneer with Soya chunks or granules (available in most grocery stores) and you can make delicious evening snacks or tantalizing curries for your Rotis.</p>

<h3>1. Soya Manchurian</h3>
<p>Who says you can only taste Gobi Manchurian in restaurants? Well, now there is a healthier alternative to this Indo-Chinese recipe.</p>
<p><em>Ingredients</em></p>
<ul type="disc">
<li>Soya      Chunks- 1 small cup</li>
<li>Maida-      ½ tbsp</li>
<li>Corn      Flour- ½ tablespoon</li>
<li>Pepper      Powder- For taste</li>
<li>Aji-no-moto-      1 pinch</li>
<li>Finely      Chopped Garlic- 10 pods</li>
<li>Green      chillies- 5</li>
<li>Soya      Sauce- 1 teaspoon</li>
<li>Capsicum-      1</li>
<li>Salt-      to taste</li>
<li>Oil-      For frying</li>
<li>Finely      chopped spring onions- little</li>
</ul>
<p>How to make / Method:</p>
<ol>
<li>Soak      the Soya chunks in hot-water for 10 minutes.</li>
<li>Then      squeeze them to remove the excess water from it and keep aside.</li>
<li>Mix      Maida, corn-flour, salt, Pepper powder well in a bowl.</li>
<li>Mix      water if required to get a batter form (preferably a <a href="../../../../../../plain-pakoda-recipe.htm">pakoda</a> batter), add the squeezed Soya chunks into it and deep fry it in oil and      keep those fried soya aside.</li>
<li>Heat      little oil in another kadai or pan.</li>
<li>Add      chopped garlic, green chillies, Chopped capsicum, and sauté for a while.</li>
<li>Add Soya      sauce, Aji-no-moto, and little water and cook for a while.</li>
<li>Then      add those fried Soya ones into it and sauté it for sometime.</li>
<li>Sprinkle      chopped spring onions and serve.</li>
</ol>
<p>~~~~~~~~~~~~~~~~~~~~~</p>
<h3>2. Soya Kofta Curry</h3>
<p>With simple ingredients and a simpler recipe, you could turn any dull cooking day with this recipe for Soya Kofta Curry.</p>
<p><em>Ingredients</em></p>
<ul type="disc">
<li>Soya      Granules- 1 ¼ cup</li>
<li>Boiled      Mashed Potatoes- 2</li>
<li>Tomato      Puree- 2 tablespoon</li>
<li>Onion      Paste- 1 tablespoon</li>
<li>Pepper      Powder- 1 teaspoon</li>
<li>Ginger-Garlic      Paste- 1 teaspoon</li>
<li>Coriander      Powder- 1 teaspoon</li>
<li>Saunf      Fennel Seeds) - ½ teaspoon</li>
<li>Garam      Masala Powder- 1 teaspoon</li>
<li>Turmeric      Powder- 1 pinch</li>
<li>Salt-      To taste</li>
<li>Oil- 1      tbsp</li>
<li>Coriander-      For garnishing</li>
</ul>
<p><em>How to make / Method</em></p>
<ol>
<li>Mix      mashed potatoes, Soya granules, salt, and pepper powder in a bowl</li>
<li>If the      mixture is watery, mix a little corn/rice flour and then make smalls out      of it and deep fry it in oil</li>
<li>Keep      this aside.</li>
<li>Heat      oil in a pan and add saunf, ginger-garlic paste, onion Paste, tomato      puree, and fry for a while.</li>
<li>Then      add Pepper Powder, coriander powder, garam masala powder, turmeric powder,      salt and cook for a while.</li>
<li>Then      add fried Soya koftas or balls into it and stir for sometime.</li>
<li>Add      fresh cream and cashew paste to add more flavor (optional)</li>
<li>Garnish      with coriander leaves and serve with chapathi, Rotis, Pulkas, Kulchas or Nan. You could even enjoy this with plain rice</li>
</ol>

<h3>3. Soya Dosa</h3>
<p><em>Ingredients </em></p>
<ul>
<li>Soya      Chunks - 30</li>
<li>Toor      dhal (Pigeon Peas) - ½ cup</li>
<li>Bengal      Gram dhal - ½ cup</li>
<li>Rice -      ½ cup</li>
<li>Finely      chopped fenugreek leaves - 1 cup</li>
<li>Chopped      onions- 1 cup</li>
<li>Coconut      Milk - 1 cup</li>
<li>Red      Chillies - 10</li>
<li>Ginger      - 1 small piece - chopped finely</li>
<li>Saunf      (fennel seeds) - 1 teaspoon</li>
<li>Cumin      Seeds - 1 teaspoon</li>
<li>Salt      and Oil - to taste</li>
</ul>
<p><em>How to make / method</em></p>
<ol>
<li>Soak      the rice and the dhals in water for about 2 hours.</li>
<li>Remove      this soaked mixture and add red chillies, salt, ginger, saunf, cumin      seeds, and grind it coarsely.</li>
<li>Put      the Soya chunks in hot water. Squeeze them and add it to the coarsely      grinded mixture.</li>
<li>To      this batter, add chopped onions, fenugreek leaves, and coconut milk and mix      well.</li>
<li>Then      heat a dosa tava, Pour the batter like a dosa but little thick in size.</li>
<li>Serve      with tangy <a href="../../../../../../chutney-recipes.htm">chutney</a></li>
</ol>

			<content:encoded><![CDATA[<p>Recenlty my cousin was on a trip to Bhuj in Gujarat and was remarking how everything tasted sweet there. I recently tasted a Gujarati dish called Handva which was a baked dish garnished with sesame seeds. This isusually served as a snack in <a href="http://www.top-indian-recipes.com/gujarati-recipes.html">Gujarati cuisine</a>.</p>
<p>Unlike other dishes, this one is not so sweet, but it isn&#8217;t spicy either. Curd being the main ingredient along with rice, it tastes a bit sour and has a nice fluffy texture.</p>
<p>I&#8217;ve posted a video (courtesy - <em>Show me the Curry</em>) here. Try this and let us know the results.</p>
<p><em>Note:</em> I&#8217;m not the author of this video. I&#8217;ve just posted it here for spreading the word on Indian cuisine. The video is about 9 minutes long and may take some time if your internet connection is slow.</p>

			<content:encoded><![CDATA[<p>Long time no see! I have been having problems with the blog with some spammer / hacker freezing things around. I finally seem to have sorted out that problem by upgrading to the latest version of wordpress.</p>
<p>Ok, that aside, I wanted to search for more recipes to add to the <a href="http://www.top-indian-recipes.com/blog/3-eggless-cake-recipes/">eggless cakes collection</a>. Previously I had posted delicious <a href="http://www.top-indian-recipes.com/blog/eggless-pineapple-cake-recipe-video/">eggless pineapple cake video</a> from Manjula aunty. This time, the lady-duo from <em>Show me the Curry</em> have created a cake delicacy with dates and walnuts. This can make for a good tea time snack or maybe a weekend try.</p>

<h3><span id="more-417"></span>Mango Icecream</h3>
<p><em>Ingredients</em></p>
<ul>
<li>Mango pulp - 1 can</li>
<li>Sugar - 1 orÂ  2 cups(depends on personal choice)</li>
<li>Condensed milk(unsweetened) - 2 cans</li>
</ul>
<p><em>How to make:</em></p>
<ol>
<li>Empty the mango pulp in to a big bowl.</li>
<li>Add sugar and condensed milk and beat with a electric mixer for 15 minutes or stir by hand well.</li>
<li>Transfer the contents into freezer safe container and freeze the mango icecream.</li>
<li>It is ready to eat after 3-4 hrs. Enjoy!!</li>

Unique to Karnataka, &#8216;Set Dosa&#8217; is called so because it is usually served in a set of 3 dosas. You can find them in most restaurants and &#8216;darshinis&#8217; around Karnataka.</p>

<h3>Mysore Set Dosa</h3>
<p>You&#8217;ll need:</p>
<ul>
<li>1 measure urad dal</li>
<li>1 measure sago rice</li>
<li>1 measure avalakki or poha</li>
<li>4 measures raw rice</li>
<li>Half teaspoon fenugreek seeds</li>
</ul>
<p><strong>Method / How - to</strong></p>
<ol>
<li>Wash and soak all the above for at least 4 hours.</li>
<li>Then grind all ingredients using enough water till they become a smooth thick batter.</li>
<li>Add salt to taste and leave to ferment overnight.</li>
<li>Next morning mix the batter well and make set dose as per your choice on a non-stick griddle.</li>
<li>Normally the set dose are made thick and roasted on both sides.</li>
<li>This recipe makes soft spongy doses which may be eaten with chutney and chutney podi.</li>

Though this one&#8217;s not as popular as Biryani.</p>
<p>I have never liked Bittergourd much. The only time when I like having anything of bittergourd is when it is made into a Pitla / Kootu (a thick gravy like Sambar). Anyway, this video looked more tempting for me to try more of Karakaya (Bittergourd in Telugu) / Karela (in Hindi) / Pavakkai(in Tamil) or Hagalkai (in Kannada).</p>
<p>This one comes from Gayathri Vantillu through Youtube.com. Known as Kakarakaya Koora (Bittergourd fry) in Telugu, this andhra dish might just be good for a pleasant evening snack when the mood is just right.</p>

			<content:encoded><![CDATA[<p>Mangalore (in Karnataka) has a unique food culture - You&#8217;ll find a mix of Konkani cooking plus some Kerala influence with some Goan flavors mixed with traditional Karnataka cooking. Most, if not all dishes, substitute coconut oil (for regular cooking oil) which gives it a different yet delectable taste.</p>
<p>So recently when Cucumber Ghassi was prepared at home, I didn&#8217;t know it was from Mangalore. Apparently Ghassi is a regular curry dish in Konkani cuisine (Konkanis are an ethnic group found in Mangalore, Goa and a few parts of Kerala). I don&#8217;t however why they call it Ghassi.</p>

<p>You can eat Cucumber (&#8217;Mangalooru Sauthekaayi&#8217; in Kannada) Ghassi with Rice or with Chapattis. It is less spicier than regular curries and is a little thicker than Sambar. I had a yummy time devouring it! Here&#8217;s my mother&#8217;s recipe:<span id="more-411"></span></p>
<h3>Cucumber Ghassi</h3>
<p><strong>Ingredients: </strong></p>
<ul>
<li>Cucumber - 3</li>
<li>Sprouted green gram - 1/2 cup</li>
<li>Chopped Onions- 3 tablespoons</li>
<li>Salt - as required</li>
</ul>
<p><strong>Grind together:</strong></p>
<ul>
<li>Red chillies - 7</li>
<li>Coriander seeds - 1/2 tablespoon</li>
<li>Cumin seeds 1 teaspoon</li>
<li>Fresh grated coconut - 1/2 cup</li>
<li>Garlic - a couple of pieces</li>
<li>Tamarind - a small piece</li>
</ul>
<p>Dry roast the spices separately and then grind them with coconut, tamarind and garlic.</p>
<p><strong>For the seasoning: </strong></p>
<ul>
<li>Oil - 1 tablespoon</li>
<li>Mustard seeds - 1/4 teaspoon</li>
<li>Crushed garlic - 3 flakes</li>
</ul>
<p><strong>How to make / Method:</strong></p>
<ol>
<li>Pressure cook sprouted green gram for 10 minutes.</li>
<li>Chop onions into small pieces.</li>
<li>Add ground paste (spices) into the cooked green gram dhal along with salt and enough water.</li>
<li>Cook until you get a thick gravy.</li>
<li>Fry the seasonings in oil, add onions and fry all the ingredients turn golden brown.</li>
<li>Add to the boiling gravy and cook for a few more minutes.</li>
<li>Heat a little coconut oil, put some curry leaves and add it to the Ghassi</li>
<li>If you like, you can add a little more coconut oil once the Ghassi is ready</li>
<li>Garnsh with coriander and serve with Chapattis or steaming rice.</li>

			<content:encoded><![CDATA[<p><em><strong>Updated with new recipe: </strong></em>Deepa from Vellore, India sent us this easy to make Bread masala. Verdict - Tried and tested (tasted)&#8230;..goes deliciously well with Rotis or eaten by itself.</p>
<h3>Bread Masala</h3>
<p><strong>What you need:</strong></p>
<ul>
<li>Sweetless Bread - 1 Loaf (You can also use sandwich bread or brown bread)</li>
<li>Turmeric powder - 1 tablespoon</li>
<li>Red Chilli powder -  1 tablespoon (or as needed)</li>
<li>Salt - (as needed)</li>
<li>Onions - 5</li>
<li>Coriander leaves - (4 tbsp) finely chopped</li>
<li>Tomatoes - 2 (medium sized)Oil - 4 tablespoons</li>
<li>Green chillies - 2</li>
</ul>
<p><strong>How to make:</strong></p>
<ol>
<li>Cut the bread into small pieces.Heat oil in the pan.</li>
<li>Fry chopped onions in the pan until it is transparent.</li>
<li> Add green chillies.</li>
<li> Add turmeric powder and chopeed tomatoes.</li>
<li>Fry until it forms as a gravy.</li>
<li> Add salt and chilli powder.</li>
<li> Add a little watter and Add the bread pieces to the gravy.</li>
<li> Mix well and add coriander leaves to it.</li>
<li>Serve hot.</li>
</ol>
