15 years ago today I woke up nervous, anxious, and very excited.  That night I married my best friend.    God knew that I needed someone strong and patient to deal with my crazy and stressed out attitude.  My husband is definitely patient with me when I get strung out and crazy over deadlines and just life in general.  Oh, he has his moments too…he is just better at hiding them than I am.

I do love him very much for loving me and staying with me through thick and thin.   Who would have thought that 15 years later, we would have 3 kids, have lived in 2 states, moved 6 times, and changed jobs 10 times before getting to the place God wanted us to be.  Happy anniversary babe!  I can’t wait to see what happens in the next 15 years.

Cheesecake is definitely the one dessert that my husband and I agree on.  He usually doesn’t care that much for dessert…I know, it’s hard being him in this house with what I bake up  He is definitely the cheese to my cake!  LOL!  Corny yes, but hey, that’s why you read my blog right?

Cheesecake cookie bars are some of my favorite dessert to make.  If you haven’t seen this Caramel Apple Milky Way Cheesecake Cookie Bar, you need to take a peak.    It was the inspiration for this bad boy that is staring you down right now.

To give this bar some more fun and crunch, you are going to add some Oreo cookie chunks into the the cookie dough.  Put some cheesecake between the layers and then bake it up.  Now you could go ahead and eat it as is (after is chills), but we need to pretty it up some.  A drizzle of white and dark chocolate and a sprinkling of Oreo cookie crumbs makes it totally done.

These are the perfect dessert for any celebration you might be facing…birthday, barbecue, ANNIVERSARY!!!  I better go bake another batch

With summer just around the corner, I have been really trying to eat healthy.  Some days that’s hard because I bake things like Peanut Butter Snickers Cheesecake Brownie Pie or Coconut Fudge Poke Cake.  Do you know how hard it is to NOT eat those things for lunch??  There are days I have to keep my eyes closed when I reach into the fridge because I know that I will grab the pie if I see it first.  Yes, these are real #foodbloggerproblems …LOL!

I like to keep different meats and veggies chopped and ready to go for a quick and easy salad.  If I keep things in containers at the front of the refrigerator, I am definitely more likely to eat healthy.  For this easy salad, I combined some ham, pineapple bits, and mozzarella cheese on top of a bed of salad greens.  This combo is one of my favorite pizza toppings, so I knew I would love it on a salad too.  The thing that put this over the top though…was the barbecue ranch dressing. I did use a light ranch to keep more calories out, but then I stirred in some barbecue sauce and added them right back in.  It’s ok.  Just drizzle a little bit on for some flavor.  

The extra protein in the salad from the meat and cheese helps keep you fuller longer throughout the afternoon.  I can’t promise you that it will make those pie cravings go away, but the sweetness from the pineapple and dressing kind of helps calm that sweet tooth down a bit.

I have to keep that sweet tooth in check.  Summer is almost here and that means swimsuits and trips to the beach or pool.   I better keep eating the salads so I can continue to fit into my new Albion swimsuit.

 After years of baking cakes, I have officially come to the conclusion that I like making cupcakes so much more.  They bake faster, they are faster to frost (because you don’t have to smooth it out), and it is easy to make them look cute.

Now I may just be slightly against cake right now because starting tomorrow I need to start baking a bazillion cakes.  Ok, ok, it is only 12 layers, but it’s going to feel like so much more by the time I get to that 12th cake.  Not to mention how many batches of butter cream I am going to be making.

 I love how easy it is to make a cupcake look so cute!  There are so many cute wrappers and toppers out there to make your cupcakes be fashionable for any party you might be having.  I had the opportunity to use these adorable pink zebra wrappers from Bella Cupcake Couture.  (You will have an opportunity later to win a fun party pack below.)

I didn’t know what wrapper she was going to be sending me, so I got really excited when I opened my envelope and found zebra print staring back at me.  I just might have a zebra print obsession

Then came the fun of coming up with a delicious cupcake and party idea for these adorable wrappers.  Right away I knew it had to be some sort of pink cupcake, so I decided on an easy cherry cupcake with a slightly tart lime frosting.

My daughter loves having sleepovers.  With bright colors and animal print being so popular right now, I knew these would make the perfect sleepover cupcake.

I love sleepovers at this age.  Since parents are not the coolest anymore, the girls entertain themselves with make overs, fashion shows, and movies.  I just need to make sure there are plenty of snacks and drinks.  Some fun colored Jones soda, some snack mix, and cute cupcakes make this a perfectly fun and easy sleepover to have.

The only thing left to come up with was a party scene.  I ended up going very simple for this cupcake party.  I wanted to tie in the pink and white from the wrappers and the black and white from the soda labels.  A quick walk around  my house and I came up with a black cupcake stand, some black and white plates, green striped straws to match the sprinkles, some white bowls from Valentines Day, and some extra pink napkins leftover from another party.

Try walking through your house the next time you are planning a party.  You might be surprised at the things you find to use that are already there in your home.

]]>  Peanut Butter Snickers Cheesecake Brownie Pie…yeah, say that 10 times fast.  Ok, it might be kind of hard to do that with a mouth full of pie.

 The past few weeks I have been learning the value to saying no.  I usually just can’t say no when I am asked to do different projects.   You need 10 matching headbands for a wedding party this coming weekend.  Sure I will get right on that.   200 cupcakes for a party you are having…sure, why not.  Ok, ok, those might be slightly embellished examples, but you get the point right?  I don’t like to turn down requests for things I know I can do.

So far in the last 2 weeks, I have said no to 3 large graduation cake orders and a hand picked blog project.  It was hard to say no because I know that I can do them.  The thing of it is that I would be so stressed out trying to finish everything all while doing a wedding cake and packing for our family vacation.  It really was in my best interest and my family’s best interest to not take on that many extra projects.

There were a couple that I thought long and hard about trying to fit in…I mean when someone hand picks you for a special blog job/project, you want to say yes immediately.  After weighing everything, I knew that I just couldn’t put the time and effort into it.  The email I got back from my campaign manager saying how impressed she was that I would say no to something like this, reaffirmed to me that saying no to someone or something is ok to do.

Just a little life lesson that I had this weekend that I thought I would share.

 Something I couldn’t say no to this week…this pie!!!!

Oh, my goodness!

Talk about decadent and delicious!  A thick fudge-y pie topped with peanut butter cheesecake that has Peanut Butter Snickers chunks in it and a layer of Cool Whip on top of it.  Yeah…this had my name all over it.  Well, one slice anyway.  Remember the lesson in saying no…it kind of has to apply to desserts too.  All winter and spring I have not said yes, and well, now I’m not going to be wearing some of my summer clothes from last year.

It’s time to start saying no to the goodness that keeps happening in my kitchen…well, after one slice that is  All in the name of recipe research, right?

Peanut Butter Snickers Cheesecake Brownie Pie

Prep Time: 30 minutes

Cook Time: 1 hour

Yield: 12 slices

Fudge Brownie pie topped with a peanut butter Snickers cheesecake and Cool Whip is a decadent and delicious dessert.

Ingredients

For the Brownie Layer

1 sheet refrigerated pie crust (I used Pillsbury)

1 brownie mix for 9x13 pan (I used a Pillsbury mix)

1/4 cup oil

1/4 cup water

1 egg

For the Cheesecake Layer

1 package cream cheese, softened (8 oz.)

1 egg

1/4 cup sugar

1 teaspoon vanilla

1/4 cup creamy peanut butter

1 bag Peanut Butter Snickers Minis, chopped into quarters (11.5 oz.)

Topping

1 container Cool Whip (8 oz.)

2 Tablespoons chocolate sprinkles

Instructions

1. Let the pie crust sheet sit out on the counter for about 15 minutes. Remove wrapping and unroll gently. Press into a 10 inch pie plate and crimp edges. Set aside.
2. In a mixing bowl, combine the brownie mix, oil, water, and egg. Mix just until combined. It will be very thick. Spoon into pie plate and spread out. Bake at 350* for 35 minutes.
3. While the brownie pie is cooking, place the cream cheese and sugar in a mixing bowl and beat until creamy. Add the egg, vanilla, and peanut butter and beat again until creamy. Stir in the Snickers candies by hand. When the brownie pie is finished baking, remove from the oven and gently spoon the cheesecake batter on top of the brownie. Spread out very gently. Return to the oven and bake another 25 minutes. Remove from the oven and let cool. Refrigerate until completely cooled. Top with the Cool Whip and sprinkles. Cut into 12 slices. Keep covered in the refrigerator for 4-5 days.

Coffee is the thing my husband and I drink the most, after water that is.  There is nothing like the smell of a freshly brewed cup of coffee to get you moving in the morning.  I am quite the night owl, and I need that smell and caffeine to get my body to do what my brain is saying in the morning.  

Recently I had the opportunity to try the Gevalia single serve cups for the Keurig.   Our Walmart had the Colombia and the Signature Blend.  You can see my shop over on Google+.  We like the flavor of a more medium blend coffee, so I chose the Colombia.  I was impressed with the rich, never bitter flavor as I sat and enjoyed my first K-cup of the day.  I love that we can enjoy a premium cup of coffee right in the comfort of our home and jammies.  That first cup makes me feel better about getting started with my day.

We love coffee so much that I like to brew an extra cup of coffee and let it cool in the refrigerator.  It is the perfect addition to an after school milkshake.  Yes, my kids drink coffee, and yes, we are fine with that.  It is only a once in a while thing.  Some of my favorite “dates” with the kids is when we make a stop at a local coffee shop for a fun drink.

Today I decided to surprise the kids with milkshakes when they got home from school.  I made a coffee shake and a mocha shake and then tried to layer it in the jars with a layer of hot fudge on top.  The layers didn’t work as well as I had pictured in my head, but it didn’t affect the taste at all.  The Gevalia coffee paired so well with the ice cream.

It was warm in the house, and I enjoyed sipping one of these Mocha Fudge Milkshakes as I took a few pictures.  Frozen food is always a challenge because it melts so quickly.  Thank goodness for a coffee shake to distract me from taking a billion pictures this time.  Maybe I should make a coffee shake every time I start to take pictures.  It would sure save me some time later when I go to edit.  Either that or I just need to make another shake to keep going when I need to work on pictures.

With summer just around the corner here, we will be enjoying plenty of milkshakes as a family on our new deck.  Early morning cups of coffee and afternoon milkshakes…that deck is definitely going to get some good use this year.

Mocha Fudge Milkshakes – #CupofKaffe

Prep Time: 5 minutes

Yield: 4 shakes

Vanilla and Chocolate ice cream blended with Gevalia coffee for a fun mocha milkshake.

Ingredients

2 1/2 cups vanilla bean ice cream

2 1/2 cups chocolate ice cream

1 cup brewed coffee, cooled

1/4 cup hot fudge ice cream topping

1/2 cup Cool Whip

4 maraschino cherries

sprinkles

Instructions

1. Beat the vanilla ice cream and coffee in a blender until creamy. Pour into an extra large cup and place it in the freezer. Beat the chocolate ice cream and coffee in the same blender. Layer the coffee and mocha milkshakes in 4 cups.
2. Top the milkshakes with a tablespoon of fudge on each milkshake. Add some Cool Whip, a cherry, and sprinkles for an extra fun touch. Serve immediately. Serves 4.

]]> These easy cake mix bars are filled with coconut and Nutella and then covered in sweetened condensed milk.  You will be the hit of the party if you bring these Nutella Almond Joy Bars to any barbecue or picnic this summer.

 This week we bought flowers for Mother’s Day to plant in the front of our house.  I love a pretty house with a beautiful outside.  The thing I really don’t like…dirt under my fingernails.  It is definitely on my list of pet peeves for sure.

I found some old gardening gloves to use while putting the flowers in the dirt.  Apparently I have bum gloves because I still ended up with dirt under my nails.  I have decided that gardening is not on my list of favorite things to do.  In fact, it is on my list of things I would love to pay someone else to do.  A maid is also on my list  Maybe one of these days, but until then I will suffer through it and document my “complaints” here.

 Something that I do enjoy doing is eating coconut and Nutella together.   A couple years ago I made these Coconut Nutella cookies, and they are still some of my favorites.  I love using cake mixes for a base for easy dessert bars.  Add in some coconut and Nutella in the center and cover it in sweetened condensed milk for a ooey, gooey bar.

I would much rather lounge on the deck with a plate of these than be digging in the dirt.  Who’s with me?  You bring the milk, and I’ll make the bars!!!

Nutella Almond Joy Cake Bars

Prep Time: 20 minutes

Cook Time: 25 minutes

Yield: 24 squares

Cake mix bars filled with Nutella and coconut.

Ingredients

1 vanilla cake mix

1/2 cup finely chopped almonds

1/3 cup butter, softened

1/3 cup milk

1/2 cup shredded coconut

1 cup Nutella

2 cups Almond Joy Pieces

1/2 cup sweetened condensed milk

Instructions

1. In a mixing bowl, combine the cake mix, almonds, butter, and milk until it forms a dough. Press half the dough into the bottom of a greased 9x13 pan. Spread the Nutella over the dough in the pan.
2. In a bowl, combine the coconut and sweetened condensed milk. Spread over the Nutella carefully. Crumble the rest of the dough on top. Bake at 350* for 25 minutes. Cool completely. Makes 24 squares.

Do I have a cookie recipe for you guys today?  These little whoopie pies have quickly moved into my top favorite list.  Who knew that a brownie mix could turn into these cute chewy cookies?  I love to make cake mix cookies like these Butterfinger Whoopie Pies.   So, I decided to sub in a brownie mix and see what would happen.  

At first I was disappointed that the cookies flattened out after coming out of the oven.  I had big puffy sandwich cookie visions, and flat cookies were not part of that vision.

So I made another batch of cookies, this time using a chocolate cake mix.  Turns out, you really shouldn’t bake things when you are in a hurry.  I messed up by forgetting some cream cheese, so those cookies turned out crumbly.  It was either use the brownie cookies or take no cookies at all to the dinner we were going to in less than an hour.

I went ahead and made up the Reese’s White Chocolate Butter Cream because…well, because it has Reese’s in it.  And you guys know how much I love my Reese’s.  One bite and I almost went and hid in the closet with the bowl of frosting.  Brownie cookies can be eaten plain right?  This frosting…oh my word!!!  I am drooling thinking about it again.

Turns out this frosting was made for thin, chewy brownie cookies.  Here I could have saved 40 minutes by just sticking to my original plan.  It’s a good thing cake mixes are not that expensive.

Reese’s White Chocolate Brownie Whoopie Pies

Prep Time: 30 minutes

Yield: 24 whoopie pies

Brownie cookies filled with a Reese's White Chocolate Butter Cream

Ingredients

For the Brownie cookies

1 brownie mix (for a 9x13 pan)

1 egg

1/2 cup butter, melted

For the Reese's White Chocolate Butter Cream

3 oz. baking white chocolate

2 Tablespoons heavy whipping cream

1/2 cup butter, softened

1 1/4 cup powdered sugar

1 teaspoon vanilla

12 regular sized Reese's Peanut Butter Cups, finely chopped

Instructions

1. In a mixing bowl, combine the brownie mix, egg, and butter until a dough forms. Roll the dough into 1 inch balls and bake at 350* for 8 minutes. Let cool completely.
2. In a small saucepan, combine the white chocolate and whipping cream. Heat on low until melted and creamy. Let cool for about 5 minutes.
3. In a mixing bowl, cream the butter and vanilla. Slowly add the powdered sugar and cooled chocolate. Beat until creamy. Add the chopped Reese's and beat on low for 1 minute. Spread on one side of cookie and top with another. Store cookies in an air tight container on the counter for 4-5 days. Makes 24 whoopie pies.

]]> We are on the count down for school to be over here.  My kids have less than two weeks left.  That means we are busy finishing projects and studying for finals.  Plus add a wedding cake and packing for vacation into all that.  It is going to be a crazy few weeks.  The days are going to fly by.  But that just means we will be lying on the beach in no time at all.  Bring on the sun and the shine!!!

Happy Mother’s Day!!!

I hope your families are pampering and spoiling you today.   I am so blessed to be called mom by three awesome children.  God has chosen to put them in our care, and even though I don’t do things right all the time…ok, a lot of the time,  I am so thankful He gave me those 3 children to love and adore.  I am so proud of the young people they are becoming!!!

I have said this so many times, so you know that breakfast is one of the things I probably make more than anything.  Yes, more than cookies, brownies, and cake.   I keep trying new things to see what the kids will actually eat for breakfast.  I found that if I put berries into a cake with streusel topping, 2 out of the 3 will eat it for breakfast.  The other one is just a picky little monster.  It’s no wonder the stinker still wears size 5-6 shorts and is almost 10!!!

My oldest son ate most of this coffee cake.  He kept saying how “amazing” it was.  And he is quite honest with me on whether a recipe is good or not.  There have been a few that he told me were not blog worthy.  LOL!  I’m glad I’m raising such brutally honest kids.

But really, how can you go wrong with a cake that has berries smothered in a buttery, sugary streusel.  You just can’t!!!

Berry Coffee Cake

Prep Time: 20 minutes

Cook Time: 45 minutes

Yield: 24 squares

Strawberries, blueberries, and a streusel topping make this Berry Coffee Cake a delicious breakfast or snack.

Ingredients

For the Cake

2 cups flour

1/2 cup sugar

1/2 cup brown sugar

1 Tablespoon baking powder

1/2 teaspoon salt

2 eggs

1 cup milk

1/4 cup butter, melted

2 1/2 cups sliced strawberries

2 cups blueberries

For the Topping

1 cup flour

1/2 cup oats

1/2 cup sugar

1/2 cup brown sugar

1/2 cup butter, cold

2 teaspoons cinnamon

Instructions

1. Combine all the topping ingredients in a bowl. Use a fork to cut the butter into the dry ingredients until it looks like coarse crumbs. Set aside.
2. In a mixing bowl, sift together the dry ingredients. Create a hole in the center and add the milk, eggs, and melted butter. Beat lightly until a thick batter forms. Do not over beat. Spread the batter in a greased 9x13 pan. Top with the berries. Sprinkle the topping over the berries. Bake at 375* for 40-45 minutes. Cool. Cut into 24 squares. Store in a sealed container on the counter for 4-5 days.
