2014 Wedding Cake Trends!

Hello Everyone!

It has been quite a while since my last blog entry. The bakery has been keeping me quite busy! I did want to take the time to talk about the 2014 wedding cake trends because cakes this year are just gorgeous!

Here is the sweet scoop on this year's hottest wedding cakes:

1. Color: Ombré is everywhere! It was only a matter of time until this look made its way to the cake design world. Not only are they ombré on the inside, but they also ombré on the outside! Add a beautiful colorful gumpaste flower and voila!

2. Metallics: In 2014, make your wedding cake shine! Why not make it stand out by adding one metallic tier or even making the entire cake metallic!

3. Texture : In 2014 it's all about texture. Move over smooth cakes, the ruffle has taken over! Add some sass and style to your cake by incorporating a tier of beautiful ruffles.

4. Think it's hip to be square? Not so much in 2014, when the cake silhouette veers away from square tiers and embraces the classic round. Want your cake to stand out? Vary the height of your tiers. “One layer may be four inches, and the next six , or you can add risers in between the tiers."

5. It's all about seasonal flavors : For a summer wedding, choose a lemon cake with blackberry or wild blueberry buttercream. For a fall wedding, choose a maple brown sugar cake with dulce de leche buttercream or a delicious carrot cake with cream cheese frosting. For a winter wedding, choose something decadent such as praline, or mocha.

Piping Class-Using the Lambeth Technique

· How to make royal icing

· A series of exquisite, decorative borders

· How to apply the designs onto a cake

· A general understanding on the methods taught by Joseph Lambeth, in his book, The Lambeth Method of Cake Decoration and Practical Pastries (1934)

· An understanding of the different pastry tips and their functions.

· Students will be required to cover a 5” and 8"” round styro foams in white fondant, with a 10” base.

Winter can be such a drag....cold, wet and just down right miserable! I can't wait for spring. Spring only means one thing: the 2012 wedding season will be in full swing!

What is on the radar this year for the upcoming 2012 cakes trends: color, color, color!

Brides, don't be afraid to be bold! Express yourselves with loud colors, and stand out! Beautiful fuschias, reds, blues, yellow are all making their way onto the 2012 wedding color palettes.

This year's style will be bold and dramatic, yet minimalist. Such influences as Art Deco will be incorporated into cake designs.

Winter Wonderland Inspired Cake

A bride came to me with a ripped out magazine page that she got from Wedluxe magazine. The cake and sweet table arrangement was designed by Cake Opera's Alexandria Pellegrino.

I was a little hesitant about the design, as I did not wish to copy the cake, but rather incorporate some of my own ideas.

I designed a pomegranate topper, as the bride wanted to incorporate the fruit into the design. I also added of touch of winter by adding hand made gumpaste branches and leaves to soften the design.

Macaron Day TO ( Le Jour Du Macaron)

Mark your calendars: On the first day of Spring, March 20, 2012 J'Adore Cakes Co will be par of Le Jour du Macaron ( Macaron Day) in Toronto! Created four years ago through a collaboration between renowned pastry chef Pierre Hermé and other members of the prestigious Association Relais Desserts, le Jour du Macaron raises money and awareness for the charity Federation des Maladies Orphelines. This year, owner of La Bamboche has decided to bring this tradition to Toronto, collaborating with several shops throughout the city that offer macarons.

To receive your macaron, pop into any participating patisserie and simply mention you are celebrating Macaron Day TO. Participating locations will provide one scrumptious macaron per customer at no cost, with quantities limited by location. J'Adore Cakes Co.., La Bamboche, Butter Avenue, Patisserie La Cigogne and Petite Thuet are among the partipants who will offer complimentary macarons.

Sixteen fantastic picks from this year’s Wedding Co. Show (and yes, brides-to-be, macarons are still trendy)

This past weekend, The Carlu played host to an intimate (albeit overwhelming) boutique-style wedding extravaganza. The 11th annual Wedding Co. Show, curated by former wedding photographer Catherine Lash, filled room after room with frosted creations, lace-trimmed gowns, DJs, musicians, caterers, florists, photographers, videographers, invitation artists, jewelled and feathered accessories, bespoke menswear, venue ideas and even dry cleaners. Unlike many of the other bridal shows that infiltrate the city at this time of year, this one had a relatively modest list of 125 vendors, hand-selected by Lash, who believes they’re the best of the best in a sometimes oversaturated market. Creative displays (that we actually wanted to stop and look at), delicious samples (lots of them), an etiquette booth (we may have needed to know when to stop sampling) and a soaring tree installation by artist in residence Marjorie Campbell were all important in making this show welcoming and interactive. But it’s still a trade show focused on weddings, and much like the brides-to-be in attendance, we were overwhelmed with how much there was to see. Check out 16 of our favourite vendors, including some of the best-designed booths, after the jump.

Unique vendors included the vintage prop rental company Hazlitt Vintage Rentals, which carries a large selection of vintage suitcases, books, jars and other accessories for creating an old country barn wedding; Tell Me a Love Story, an entertainment company that hires actors to perform your love story in front of guests during the wedding; LOL Candy, specializing in gourmet candy tables; and master calligrapher Rajiv Surendra, who is working to revive the ancient handwritten art. Trends for 2012 include communal tables (say goodbye to tiered head tables), long and low floral arrangements, colourful shoes and accessories, lace, men’s bespoke suits, vintage decor and alternative venues like restaurants or galleries. Despite the hype of last year’s Royal Wedding, Lash has noticed a move towards a more toned-down wedding (this might be too out-there, ladies) that puts the guest experience at the forefront. Weddings: not just for the bride and groom anymore.

I really loved the simplicity of this cake--I designed it around the couple's invitation that featured a beautiful tree with lovebirds on one of the branches. I also incorporated a cage--which were the couple's centerpieces.

One of my favorite clients-Leslie Cote, who was an absolute delight to work with was looking for a little french inspired cake to stay true to her french canadian roots. The wedding took place at the grand Langdon Hall in Cambridge. The venue was stunning. The room was naturally lit by the bright rays of the sun, the tables were adorned with beautiful centerpieces full of fresh flowers, hydrangeas, peonies....
