We love a good crab cake. My favorite crab cakes are the ones that really showcase the meatiness of the crab. This simple recipe is easy enough for a weeknight and delicious enough for comfort food on a rainy Sunday.

Homemade Crab Cakes

I use green onions because they are slightly milder and have a less overpowering flavor. The panko adds a little bit of light crunch without making these crab cakes too bread-y and taking away from the texture. Depending on how you like your crab cakes, you can add more or less bread crumbs for more of a solid texture.

Use one deep pan to cook the vegetables and use the same pan for frying crab cakes to make cleanup even easier. I also like to make a large batch of these and freeze some for an easy weeknight meal in the future. [Pro tip: I find the best deals on crab to be at Costco. I buy the 16 oz container and double the recipe below.]

Pan-fry crab cakes

We usually serve with a side of mac and cheese and broccoli for no reason other than it just seems to go together. It’s the ultimate comfort food!

The shells are easy to make with just a couple ingredients mixed on the stovetop, then piped onto a sheet pan to bake.

Meanwhile, you can whip up the filling, made with instant vanilla pudding mix.

Whipped until thick, this version is way more flavorful than recipes that call for just whipped cream.

Once the shells are cooled, just slice them open and stuff generously with the filling. Easy as that!

This recipe from Ina’s book Cook Like a Pro is easy, fresh, and delicious.

This cake is also as pretty as it is delicious. It’s best made in a springform pan but can also be made in a regular cake pan.

You can top with some creme anglais, or melted vanilla ice cream.

This classic Italian salad combines two of my favorite things as the star ingredients – bread and tomatoes. This is the perfect salad to make at peak tomato season. I love to grab Heirloom tomatoes from the farmer’s market, and this is a great recipe that highlights their flavor. I also add in some arugula, which is not in the traditional version of Panzanella, so this is my take on the Tuscan stale bread salad.

My Panzanella Salad with Arugula

Because I’m a sourdough baker, I almost always have a loaf of day-old bread around. But you can also get any classic rustic loaf from the store, and chop it into large bread cubes.

Cut into large bread cubes

Then lightly toast the bread on the stove.

<img loading="lazy" decoding="async" width="768" height="1024" src="https://jailavie.com/wp-content/uploads/2021/07/Panzanella-4335-768x1024.jpg" alt="Toast bread lightly on the stovetop.
Once toasted, combine with tomatoes, arugula, and shallot. Then make the oil and vinegar dressing and toss to combine.

I like to finish the top with shaved parmesan, but you can also use a hard Italian cheese like asiago and shave it right on top. Finish it with some flaky salt like Maldon.

For a more classic version of Panzanella, you can omit the arugula and just add in a bit of basil.

Panzanella without greens

For a perfect Italian summer meal, you can also pair with the Fig Ricotta cake!

This pasta is the perfect summer weeknight meal, and is super easy to prepare.

Start with some zucchini – either one large or two small. I prefer one small green, and one small yellow squash. Sauté with some garlic in some olive oil with some red pepper flakes which add so much flavor – add more if you like it with a bit of spice!

The sauce is simply just olive oil, parmesan, and some pasta water – not too heavy and still full of flavor. And then the piece de resistance: the burrata! Trader Joe’s burrata is perfect for this recipe. I add it to the top of the warm pasta straight from the fridge, but you can also heat the burrata up in some warm water if desired.

Top with a little drizzle of good olive oil and some flaky sea salt, such as Maldon. And serve!

This recipe is about four servings, but can easily serve two hungry people.

There’s nothing quite like a warm biscuit straight out of the oven with some melted butter. It’s the ultimate comfort food, and something I would literally go out of my way to find. (If you’re ever in Denver, go to Denver Biscuit Company and you’ll know what I mean!)

This recipe came about because I had leftover chives and scallions in my fridge. I pretty much always have cheddar, so I thought the combo would make an excellent biscuit to accompany dinner that night…and as breakfast for the next four days!

I didn’t have buttermilk (not typically a fridge staple in my household) but I did have yogurt which can also be used in drop biscuits. So I experimented and ended up with a dough which was super easy to make. The cheddar, scallion, and chives mixed in created a savory side that I could eat with every meal.

I first found this recipe in my Giada at Home cook book, and this quickly became my go-to dessert recipe for parties. Espresso, chocolate, and caramel – it’s an obvious crowd pleaser. But it took me several tries to make the tweaks to make this perfect. (And considering the online recipe is a bit different from the one in the book, I think the recipe makers at Food Network had some edits as well!) My final product is the perfect bite-size snack to end any special meal, or served as something sweet with some coffee.

The original recipe called for too much butter in the crust for my taste, which left a bit of a coating on the bottom of the graham crackers. Follow the measurements below and you’ll get perfectly crisp and non-greasy crust every time.

Espresso Caramel Bars – adapted from Giada at Home

The recipe does require a candy thermometer to get that perfect caramel texture, but if you don’t have one just pay very close attention to the temperature and amount of time that the caramel simmers. (The first time I made these years ago I did not own a candy thermometer and just eyeballed it. It came out fine.)

Homemade caramel – cooks perfectly at 240 degrees

It’s best to let each layer cool and set at room temperature before adding each additional layer. But if you’re in a hurry, you can rush the process along and put it in the fridge. I mean, we’ve all taken short cuts!

The chocolate layer is super simple, just melted over a double boiler (or a glass bowl over a simmering pot of water). Just be sure to stay put and keep stirring so that the chocolate doesn’t overcook.

The top layer: Smooth chocolate mixed with espresso

The last step is to top with some sea salt. I tend to add it after the chocolate has set a bit, otherwise the heat from the fresh chocolate will melt the salt into the layer, whereas I prefer the salt to stay crystallized on top. It creates that perfect salty crunch, combined with the sweet chocolate.

3 layers of Espresso Caramel Bars

And finally, just cut them up and wait for the compliments! They are very rich in flavor, so cut them small…although most people will probably go back for seconds!

Espresso Caramel Bars can be made the day before and refrigerated overnight

This decadent dessert looks like it came from an Italian bakery, but it’s really simple to make yourself. Buon appetito!

I wanted to share a recent gift idea I put together for my sister’s boyfriend, in honor of his new home! Guys can be tough to find a gift for – especially when your design-savvy sister is decorating the whole house – so I went the practical route and got him all of the essentials … in a tower of toiletries!

I call it … a toilet-tree!

Toilet-tree!

Here are the components, from bottom to top:

Paper towels

toilet paper

cleaning products (Windex and bleach cleaner)

tissues

hand soap and dish soap

more tissues

sponges

bar soaps

I wrapped it all together with some cellophane and tied it all up. And voila! A toilet-tree!

While in the past I’ve posted recipes for some hearty, meaty chili, sometimes I like to freshen it up with a pot full of veggies. It’s extra healthy but still has the delicious chili spices that we love to smell simmering on a Sunday afternoon.

There are lots of recipes floating around for vegan chili, and this has been a combination of my favorites. I use sweet potato instead of meat, so it provides a hearty base. And it’s packed with nutrients!

If you’re not actually vegan, like me, it is also excellent topped with cheddar cheese and sour cream! (I know, a vegan nightmare!)
