Grilled Panini!

Everyone loves a sandwich....and to me, there's nothing better than a grilled sandwich...

In Italian a sandwich is called a panino...plural...Panini...

Let's see...what's in it...a panino is whatever you want it to be. Whenever you make one there's a part of you in it...and it's always a little different depending on what I have around the house at the time.

This one I made is...Italian bread(a whole loaf cut lengthwise and slightly hollowed out), some lunchmeat...ham...cappicola, mortadella, turkey, some stuffed roasted red peppers I had left over, cheese, lettuce, olive oil, spices...salt, pepper, a pinch of oregano, pinch of garlic powder, a pinch of onion powder, fresh parsley...grilled up toasty brown in real butter and olive oil in a cast iron grill pan...with another one on top to squash it!:)

Bad Company - VH1 Behind The Music

I found part one of this vid last week and posted it around... I came across the whole video so I thought I'd do a blog post about it...

Wow...so cool to find this over on Youtube! It brings back such great memories for me!:)

Bad Company were reuniting and did a surprise filming of their VH1 Behind The music at Manny's Music in new York City when I was working there...

I remember it being about closing time...6:00 pm...and Judd Goldrich saying "Hey Joe, you're staying late tonight...hurry up and go get some beer...he wouldn't say why...just that VH1 was coming in for something...which was not unusual for the store at all...so I ran down the corner...and when I got back a crowd had started to form outside the door.

I didn't know what was going on!:)lol Then...In walks Paul Rodgers and the guys...they set up and jammed a few songs right there on the floor of the Guitar Department and did a few interviews!

Those of us that were lucky enough to be working that day and chosen to stay late...had a blast!

We got to hang out and we were singing along the backup vocals to "Shooting Star"! I was in heaven!:)lol

I remember them all being so cool and friendly and approachable...and with all of the high end instruments and gear available to them...they all just reached and grabbed some of the cheapest and inexpensive guitars and amplifiers to use for the filming..it just didn't matter...Danolectro guitars, Peavey practice amps...and I remember thinking that was so awesome at the time..and proved that it doesn't really matter what you're playing..it's the person playing that counts...because they sounded unbelievable!!

I also recall with a smile how they all were interacting with each other...like kids or teenagers...bickering...and laughing and the best of friends.

I got a Danolectro guitar autographed by them all that night! I treasured it...such a prize posession for a fan...but regretfully had to sell it some time later to to survive...I sure wish I hadn't and still owned it today...oh well...that's rock n' roll!lol The memory will last a lifetime...

Any one of my NYC 48th ST FB friends remember this day on the block!? It was one of the very few times that I was really nervous to meet someone famous and I felt like a little kid!:)lol I was used to this kind of thing working on 48th ST and had many famous clients and walk in customers...but this was just different...and certain people just have that "thing" you know? A certain presence...you just can't explain it...I felt that way only on a few occasions while working on 48th St...not everyone has it it seems...I met or helped a lot of "Stars" in the biz over the years...it came with the job and no big deal for the most part...but I'll tell you...you know when you're in the presence of greatness...really....it's just a vibe you get....Stevie Wonder, Robert Plant and Jimmy Page, Ozzy Osbourne, Keith Richards, Les Paul, ACDC, Richie Blackmore, Tony Bennett...and others I can't remember right now....you just know....it makes me wonder...What happened to Real Rock Stars?

One of my co workers had to ask Paul Rodgers if I could talk to him and get an autograph!! I was definitely star struck...

It was so cool to meet one of my favorite bands, biggest influences, true legends and rock heroes! I think you can catch me in a basball cap at about 4:00 min in....and also a bunch of other places...

According to Joe Gande's page, it appears that Joe writes & produces his own music. The imagery is only of himself, although in his videos there appears to be either a backup band, or a group of musicians that plays for him. Nevertheless, it's Joe that's in the spotlight, and certainly the focus is on him. The pictures are straight-forward, with little special effects. This seems to work, simple and effective. No punches pulled. Joe is the centerpiece of a wild and wide range of sound.

Joe Gande is listed under the "Rock/Hard Rock/Blues" category. I was immediately wowed by the vocal composition in the song, "25 Hours". His voice is reminiscent of a young Joe Cocker, yet maintains the blended poetic breeze of Trey Anastasio of Phish. His voice is moving, heart felt, and full of soul. Commanded from the start, the content of the vocals certainly matches the aura he presents. He is in complete control of tone & key, a true singer is every way.

The band is in total synch with Joe. Whether they or he writes the music, their performance is nothing but stellar. If the band is a studio hire, he's obviously spared no expense finding the top quality of musicianship. The movements in the songs rise & fall with the utmost quality. I find it hard to believe this guy isn't signed to a real label. Between the piano, horns, guitars and vocals, it's a total rainbow of music. Joe Gande is the modern representation of "Rock/Blues", and certainly could very well be the standard to hold others to.

To say anything negative about this act would be blasphemy. However, to place Joe Gande in the Hard Rock category may be an overstatement. Hard Rock is usually reserved for a bit heavier tunes, but in no way does this affect the true compositions of Joe Gande. The tune "Shelter Me" has a harder edge, but this feel is not consistent throughout the rest of his compositions, therefore placing him in the Hard Rock category may not be sufficient.

I find Joe Gande to be a top-rated musician, performer, and audio magician. To miss out on these tunes would surely be a loss. I was amazed at the overall sounds blasting from my Reverbnation tune player. If you haven't had an opportunity to listen, I'd say go to it right now.

On his Reverb page, it states, "Music is supposed to make you feel."

Butternut Squash Soup!

I love soup!;)
Anytime of year really...but especially on a cold, cozy fall or winter's night!
This is my homemade Butternut Squash Soup...with ham and fresh ground nutmeg and crostini...
Just sautee a potato, some garliic and onion in a little bit of olive oil...add a bit of chicken stock...
Slice up two Butternut Squash in halves(long ways)
Place on a lightly greased cookie sheet(use a little olive oil or cooking spray like Pam) face down and roast in the oven at 350 degrees for about an hour...
When cooked scoop out squash and combine with potato/onion mixture and about e cups of chicken broth in a big pot...Add salt and pepper and ground nutmeg to taste...a little bit of cream(about half a cup).You can use milk if need be...and a little butter...
Use an immersion blender to blend anbd puree and then cook on medium heat about a half an hour...done!!:) Toast or grill some Italian bread buttered with a little garlic powder and parsley...
To add a special touch...slice up some ham or prosciutto...whatever you like or may have on hand and add to the center of the bowl and sprinkle some chopped chives on top if you have them...and a sprnklr of white pepper and sone fresh ground black pepper....serve!:)
The soup is delicious on it's own ...but the smokieness of the ham offsets the natural sweetness of the squash and is delicious!!;)

About My song "25 Hours"...New Video and Info

Hi everybody! Hope you're all enjoying an awesome weekend!

I have a new video up now over on Youtube for my song "25 Hours"! It has a groovy 1960's-1970's vibe...hope you all enjoy it!

I thought I'd write a litle about the song and how it came to be..for those that may be interested in that kind of thing..

"25 Hours" was originally a live jam session we did at rehearsal...and we played it in the studio while recording "The Godsend Sessions" as a kind of warm up tune to loosen up before pressing the record button to lay down the live rhythm tracks.

Many of you may not know that my record was recorded in this way...the basic bass, drums and a guitar track were performed live...with all of us playing in the same room.We would typically do a couple of takes of each track...and then later choose the best ones to use for the record.I know..to many of you...today that may sound like an ancient concept!:)lol But...I wanted to capture all of the raw feeling, emotion, sweat, cohesiveness, nuances, power and magic to tape(Yes, Tape)...which only is possible by doing it this way...Sometimes the greatest and coolest things happen in music by actually having musicians playing together...mistakes may happen that turn out later to be sheer genius for the song, feedback, overtones and overall vibe.Of course..it is very difficult and time consuming...it definitely costs more and takes alot of pre-production and 100's of hours of rehearsal to accomplish this believe it or not...unless of course you have a ton of backing and zillions of dollars to spend on studio time and you don't mind watching the clock tick by while your money goes out the window while doing take after take!:) This of course was not the case for me...so we had to have are shit together and be tight before heading in to the studio on day one! I am very lucky to have had THE best and most professional and prepared Bass player and Drummer alive to accomplish this feat and they happened to also be two of my closest friends...if you do not have this...then I do not suggest recording this way these days!:)lol

Back to "25 Hours"...as I said..it was recorded during the studio sessions as a live warm up jam....Near the end of production on the entire CD...I had the music for the song in my head constantly and went home one night and started writing down some thoughts and ideas and lyrics...then the vocal harmonies came to me...I could hear them...it happens like that sometimes for me...and finally...the horns started coming into my head..all of the parts....which ended up being a five piece horn section to accomplish what I heard and envisioned...

I remember walking into the studio the next night...excited..and psyched to tell the guys..and to say we were not finished yet and had to complete one more song! My guys new "That Look" on my face all too well...lol... and I remember Neal saying..."Oh No!!!" LOL Anyway....with the help and genius of musician, engineer James B. Gately....we went into overdrive over the next few weeks to try to get what I had heard in my head recorded and to finish the song in hopes to having it make the record...and I'm so glad that it did!

Notes:

"25 Hours" was originally entitled "Sway"...a term we used to call it in rehearsal..which is a reference to the beautiful female form:)

Many have asked...and yes...as with the entire CD...all of the vocal harmony parts and background vocal overdubs are sung by me...the "25 Hours a Day" back up is a five part harmony....that was one hell of a long night in the studio...lol...as I individually sang every part throughout the song from beginning to end...no Pro Tools copy and paste!!lol

Also...their is actually 4 versions of "25 Hours"...each with a different ending... I shall post those mp3s sometime soon to see which one you all like the best....

"25 Hours" was origanally the last track on the album...but..after much feedback and success at live shows it wuickly was moved to track #1

Mushroom, Zucchini, Tomato, Parmagiano

This is an awesome dish that I found in one of my favorite magazines...La Cucina Italiana.
Originally said to be made with porcini mushrooms...I improvised with what I had on hand and used regular white mushrooms instead.
-it was delicious! I love meatless dishes and try to eat a few per week...This is a great way to throw together a great meal with the fresh vegetables you may have and want to use up before they go bad....

Escarole and Cannelini Beans

This is truly one of my favorites...escarole and cannellini beans...Minesta as we say...or more properly "Minestra". This dish reminds me of my childhood and my Nonna...It is inexpensive, fairly simple to make and delicious...Italian Soul Food!!:)
It really is mainly a wonderful sidedish...but I enjoy it as a main course with Italian bread to sop up the juice and a nice glass of vino... and I make it for dinner quite often.
You can also make it using spinach or cabbage or broccoli rabe...and if you'd like you can add some water and chicken broth to make it a soup or add Italian sausage or pork etc.. for flavor...but, I prefer it "as is".
All you need is escarole, cannellini beans, olive oil, garlic and red pepper flakes...simple and delizioso...Buon Mangiare!;)

Insalata Caprese

Mozzarella, tomato and fresh basil with extra virgin olive oil, a pinch of sea salt and black pepper.

Sunday Ziti

Just doesn't feel like a Sunday to me unless I make...or at least have...some kind of macaroni;)
I made a quick sauce...with some hot sausage and a nice big bowl of Ziti. All the time I've spent as an adult out in the world away from home...no matter where I might be at the time...alone or no matter who I may be with...no matter how busy or hectic life gets...with all the crazy rock and roll lifestyle and fast paced NYC living going on over the years...I almost always would make sure that my Sunday was a day of r and r and be a relaxing and peaceful day and make a big macaroni dinner...I guess it just made me feel close to my family...remember my grandparents and lost loved ones and one might say that maybe it has helped me to stop to remember what is important and stay grounded and close to my roots...I just say is who I am, how I feel and how I like to spend my Sundays...it simply makes me feel good!:)lol...and I will continue to do so to this day and beyond!:)

God I Love Soup!!

There's nothing like homemade soup...I love it...it's simple to make, good for you, certainly economical...yet can be elegant, rich and flavorful and soul warming...winter, summer...doesn't matter.
Since I've been getting more and more food aware these days and reading the labels of some of my favorite quick go to canned soups we have all grown up eating...I noticed the extremely high sodium content...it's unbelievable! So I've been on a kick lately of making my own instead.It' so much healthier, easy to do and delicious!
If you're having one of those days when you're low on food in the house...and don't have a clue on what to make for dinner...have a look around the kitchen, chances are you have the makings of an awesome, hearty soup!
I through this great soup together tonight.It's a pureed cannellini bean soup...a little olive oil and garlic and a can of cannellini beans(white beans) into the food processor... then off to a big soup pan...a little water...or chicken broth...throw in some spinach, a few potatoes...sea salt to taste...a few sprinkles of peroncino(hot red pepper flakes) simmer ahile... Done!;)Squisito!!

Now...if only I can find that hat!:)lol An awesome friend of mine made it for me...he gave it me as a present for helping him out with guitars and gear while I was working at Manny's Music on 48th St in NYC...He made all kinds of leather goods and hats and belts and such for all kinds of musicians and rock stars...I typically do not wear hats very much...but this one was very cool...and reminded me of the one I wore when I played "Oliver Twist" in a school play when I was ten years old!:) I'll save that story for another blog post!:)LOL

Baccala Marechiara

Baccala Marechiara...

This a dish my Nonna used to always make and my Mother also.
It is a fish stew with cod, San Marzano peeled plum tomatoes, olive oil, garlic, large green olives, oregano, black pepper and salt...
Baccala is always associated with Christmas Eve...but I like it any time of year...and seeing as it is Ash Wednesday and I wanted to make some fish...I thought it would be a great night to make this awesome dish.
Marechiara means "sea light"...
When you see this name on a menu it usually means a light tomato sauce, in most cases paired with fish. I use green olives with the pits but you can use black olives and capers too if you like. When making it throughout the year...I use fresh cod instead of the traditional salted cod that I use on Christmas Eve...I find it a bit less "fishy" and it saves a lot of time also...

Just sharing along the way...This one is a live gig I did at The Bitter End, NYC...It was summer and 700 degrees under the lights, I had the death flu and I must have broken 100 strings...well maybe not 100...but a dozen at least!:)lol All things considered...it was a pretty good gig!:)LOL

Hi Everybody,

As I mentioned in my last post...I have been going through tons of video footage compiling clips for a new DVD that is in the works and due out soon...it will feature live footage, rehearsals, in studio antics and personal interviews...

Just sharing some of the vids along the way...

This one is a cool, live video of my song 'Shelter Me"...recorded at The C Note in NYC...

It is a bluesier version than the track on my CD....with a vocal intro...and is the complete song as opposed to a collection of clips...The song features The Godsend Sessions...Tim Ouimette on Trumpet, Neal Zum on bass, Craig Shrawder on Keys and Andrew Frawley on the drums...

Hi Everybody! Hope your new year has started out great for you!:)

I've been working on finding, gathering and compiling 1000's of hours of video footage from live shows, rehearsals, studio antics, personal interviews and a ton of film shot during the making of "The Godsend Sesions" CD...all for a DVD I'm putting together that will be out soon...so I thought I'd share some vids along the way...

Merry Christmas! The Feast of the Seven Fishes-An Italian Christmas Eve Tradition

Hi Everyone! I wanted to take this time to wish you all a very Merry Christmas and Happy Holiday Season!:) Buon Natale!! Thank you all so much for your friendship, love and also support of my music!

I hope you all enjoy an awesome time with your friends family and loved ones!

Though these are very difficult times we live in and it has been a very tough year for me personally in many ways...It is important to count your blessings and remember those less fortunate...

Christmas to me...is about many things...Jesus of course...but also family...looking back on goodtimes, reminiscing about Christmases past, telling stories, laughing, loved ones lost and that are missed, loved and never forgotten and are in heaven...and of course FOOD!!:)

Today...we prepare for tonight's feast and celebration...and putting out all of the family favorites...the cookies and pastries..the fruits...nuts, figs, dates...the tangerines in honor of my grandfather...all of the candies....especially the ribbon candy(does anyone still remember ribbon candy!LOL)I searched everywhere this year for it!lol), the antipasto...olives, lupini beans, artichokes, caponata(eggplant), hot peppers, stuffed peppers, gardiniera, stuffed clams, Finocchio(fennel), shrimp cocktail, cheeses and...and...I know! how do we ever eat the dinner after that!:)lol....

I watched my Mom cooking today and last night for that matter, watching all her hard work, I can't help to feel so very lucky and blessed to still have her in my life and that she even has the strength...at her age with all of her physical ailments...to do it all...it is simply mind blowing!

We have been talking about my Dad and my grandparents...and how much we miss them...especially at times such as these...I have a pretty small closeknit family compared to many larger Italian families and I wonder at times how this will all carry on when my Mom joins my Father in Heaven and every one of the older generations is gone....I only hope to one day have a family of my own that will carry on these traditions...because...yes..as I may be a rock and roll guy, having the long hair and such, and being somewhat of a non-conformist some may say...I have a very huge traditional side...that sometimes longs for the past and better times these days...

Whatever your background may be..I think it is very important to stay close to ones roots and celebrate your wonderful culture and traditions...embrace your past...it's good for you!:)

Being Italian...and raised a good Roman Catholic boy:)...I have always felt so very lucky and proud...but as I have grown older and wiser and have learned more about my family's history through the years and have experienced many of life's trials and tribulations... I think I have embraced my culture and Italian heritage even more and more...

Being a lover of history and all things past....

This is some information from my own personal knowledge and from what I have learned and researched over time, and stuf I found on the net.. that I put together, about why we have fish on Christmas Eve...

The Feast of the Seven Fishes-An Italian Christmas Eve Tradition!

Many Italians and Italian Americans follow the tradition based on La Vigilia di Natale, the vigil of the holy night, and do not eat meat on Christmas Eve, the night of the birth of Christ. Because the day is sacred, no meat is consumed, so the typical dinner includes fish. For Italians and Italian Americans, especially those from the southern regions of Italy, the Christmas Eve dinner includes at least seven fishes; but some follow a custom of serving nine, eleven, thirteen, or as many as twenty-one fish dishes.

Fish on Christmas Eve

Each number of fish dishes prepared has a reason—nine dishes are in honor of the Holy Trinity, times three; or for the number of months Mary was with child. Eleven dishes prepared represent the Apostles without Judas, and thirteen represent the Apostles with Jesus. Fish dishes prepared and served by large families and restaurant will sometimes number twenty-one, a derivative of seven.

The Tradition of Seven Fishes

Seven fish dishes is the most common, and the reasons are numerous. The most popular explanation for seven fishes is based on the seven sacraments—Baptism, Confirmation, Holy Communion (Eucharist), Confession (penance), Marriage, Holy Orders, and Anointing of the Sick. The Seven Gifts of the Holy Spirit and the Seven Utterances are also commonly sited. The Seven Gifts are counsel, fortitude, knowledge, understanding, piety, wisdom, and fear of the Lord. The Seven Utterances were the words that Jesus spoke on the cross.

Other reasons for seven fishes are the Seven Hills of Rome, the seven pilgrimage churches in Rome, the Seven Wonders of the World, the seven days that Mary and Joseph traveled to reach Bethlehem, the seven deadly sins, the seven virtues, and seven days in the week.

Traditional Italian Fish Dinner

The menu of fish served varies, depending on what is available. In Italy, the custom is mostly followed in the south, although some northern regions do observe; so the types of fish served and the preparations are as diversified as each province. In America, the custom is observed throughout the country, but family traditions—many handed down from the old country—will dictate the menu.

Most traditional menus include baccala, calamari, eel, scungilli, and smelts. More common types of dishes include anchovies, clams, mussels, shrimp, and lobster. The fish can be prepared in numerous ways, based on family traditions and according to preferences; and the dishes can be served either as separate courses or all at once. Many families today combine various types of fish into one dish. Cioppino, Italian fish stew, is a popular choice, as are large platters containing several different kinds of fish, either fried or broiled. Other common options are seafood salad—either with or without pasta—and stuffed seafood.

Christmas Eve Fish Feast

The Feast of the Seven Fishes reflects on the rich and varied history of Italians and Italian Americans. As with many customs, it has evolved with each generation, but the Christmas Eve Seven Fishes dinner is an important part of Italian culture. By keeping this tradition each Christmas Eve, Italians, and especially Italian Americans, remain close to their Italian heritage.

'A Musical Mind"

I was just looking through some old pics and came across this…It’s some artwork of mine that I did a long time ago now…it was originally just a doodle that I drew by hand…I often doodle:)I then scanned it into the computer at some point.When designing the original CD artwork for “But First…This Song”(Now recently released as “The Godsend Sessions”) I was going to use this for something…probably somewhere on the inside booklet…I guess I will still use it for the physical release of my CD ”The Godsend Sessions” which should be coming soon.

Some time back…I was a member of a website called talentdatabase.com and I titled the work “A Musical Mind” and uploaded it there…it was then given an award and featured on the main page!:) Some of my wonderful artist friends and also many artists that I began to meet online showed me alot of support and encouragement and seemed to really like it and wanted to see more of my work and so called “Doodles”. The website soon shutdown and disappeared…but then I put it up on deviantart.com…

It is also available at my cafepress store as a ceramic tile coaster…and from what some friends and fans have told me it really looks cool as a design for that…like a mosaic tile…
