-Wes Willis, lead singer of Rush of Fools, was in the path of the tornado that hit Clay, Alabama on Monday. The storm missed his house by a couple hundred feet, but he did get some roof damage. You can see the destruction in his neighborhood on the 88.3 WAFJ Facebook page.

Simple Cooking - Roasted Ranch Potatoes

·1 oz. pack of the Hidden Valley Ranch Dry Seasoning/Dressing
·2 lbs. of red potatoes, quartered
·1/4 C of vegetable oil (I have also used with olive oil)

Take the quartered potatoes and place in a gallon ziplock bag then pour in the hidden valley pack and the oil. Shake well to make sure that all potatoes are covered in oil and seasoning. Empty bag’s contents onto an ungreased pan and bake in the oven for 35 minutes on 450. The recipe doesn’t say this, but about halfway through, I just kinda move the potatoes and try to flip them over some just so they can get evenly cooked. It will also be easier to clean the pan once you’re done if you’ve jiggled the potatoes around in the pan a bit.

They have a good taste without any additional seasoning but of course you can add salt and pepper as necessary.

-The Family Y's Team Lean Community Health Presentations begin this week. This week's topic is "Shape of a Healthy You" where you'll learn effective strategies that promote a lifelong healthy weight through balance, variety and moderation. Here's the schedule: Today (6:30-7:30 pm) at Warren Baptist Church, Wednesday (12:00-1:00 pm) at Aiken Regional Hospital and Thursday (12:00-1:00 pm) at the Richmond County Board of Education. You don't have to be a participant in Team Lean to attend. Weekly classes are open to the public.

Simple Cooking - Taco Casserole

1 pound of hamburger meat
1 packet of taco seasoning
1 can of corn
Shredded cheese
Jiffy muffin mix
Refried beans (optional)

Brown 1lb hamburger with taco seasoning pack. Drain and place in casserole dish with drained can of corn, top with cheese and mix up Jiffy muffin mix and place on top. Bake at 350 for 30 minutes. Serve with sour cream. I sometimes put a can of refried beans on top of meat and corn mixture before cheese and Jiffy mix.

Simple Cooking - Chicken Spaghetti

1 rotisserie chicken

1 cup of chicken broth

1 pkg. of spaghetti noodles

1 bag of frozen pepper onion blend (found in the frozen section of any grocery store)

4 tbsp. of salted butter

Salt and pepper

1 can of rotel tomatoes

1 can petite diced tomatoes

1 block of velveeta cheese

Take the rotisserie chicken off of the bone. Saute the pepper/onion blend with 4 tbsp. of butter to your desired texture. Cook the spaghetti noodles by instructions. In a 13x9 baking dish, place the cooked spaghetti noodles, then place chicken on top, next the pepper onion blend, then add the following ingredients; rotel, diced tomatoes, and chicken broth. Last, cube the velveeta cheese (about half a block) and place on top of dish.Salt and pepper to taste. Place in the oven on 350 degrees until cheese is melted.

Simple Cooking - Tortilla Chip Dip

Mix one package of cream cheese (at room temperature), a cup of salsa (mild, medium or hot) and a cup of shredded mexican cheese (the one with the spices in it). You can adjust the amont of salsa and cheese to your taste. Serve cold. I like it best with the lime tortilla chips!
