OK, here's how I made the soup I've been banging on about.

After last night's Cantonese expedition, I found myself with a bit of leftover pork and duck that the restaurant helpfully packaged up. Feeling peckish after a couple of pints, I knocked up a rather tasty hot and sour noodle soup with the meat. Probably the best I've made in years.

Ingredients (serves 1, should scale up)

Leftover pork, chicken or duck

1 x spring onion

1 x garlic clove

1 x small spicy chilli

1 x teaspoon of olive oil

400ml of water

1 x stock cube (or pot)

1 x teaspoon of Chinese 5 spice

1 x bunch of noodles

Dark Soy Sauce

Chopped coriander

1/2 a lime

Method

- Chop the onion, garlic and chilli

- Add the onion, half the chilli, and half the garlic to a pan with the oil and stir fry for a couple of minutes

- Add the water, bring to the boil, add the five spics, and add the stock. Stir to dissolve.

- Add the soy to taste. This takes away the need to season.

- Chuck in the noodles (you could use pre cooked here). Cook for a couple of minutes.

- Add the meat. As much as you like really.

- Cook for another minute

- Serve in a bowl, and top with the chilli, onion and coriander. Squeeze in the lime.

- Stir. Eat.

- Done.

You can add or subtract pretty much any ingredient from this. It's not rocket science, but it tasted awesome.

[[posterous-content:Qz5pl15vjgSxk2mYNsCy]]

TODAY IS RIB DAY. After taking some inspiration from here I'm embarking on another journey in my quest to fully master the art of ribs at home. Now, due to both space and weather issues, there won't be any smoking or outdoor grilling, but I'm following the method of dry marinating then cooking long and slow in the oven, before finishing with a basting of BBQ sauce and throwing under the grill.

Here's the rub recipe. Would work nice with any cut of pork, chicken, or beef.

Ingredients

Equal measures of:

- Dried Rosemary

- Dried Oregano

- Dried Thyme

- Salt

- Pepper

- Smoked Paprica

- Cayenne Pepper

- Garlic Powder

Method

In a pestle and mortar, grind the rosemary into a coarse powder, then add the oregano and thyme (with another quick grind). Add the other ingredients and stir together.

Lightly oil the meat before adding the rub, and then leave it for an hour or so before cooking.

That's kinda it. Go wild.

This is my Dad. He's a lovely chap from Dudley who, very recently, as a rather special 60th Birthday president from David Cameron, was made redundant from his role as Marketing Manager for Corporate Property at Dudley Council. After 34 years, he's being cast into the wilds of normality, and is now faced with having to find something to do with his time. So, in a great display of pluck, he's decided to come to Manchester and attend SASCON tomorrow where he's hoping to learn a little more about the whole search and social media lark. He's a bit interested see. So, if you see him, say hello, and feel free to impart any wisdom you have that can help.

Oh yeah, his name is Bill, and you'll find him on twitter as @_billgrant.

#gettwittertoMCR - Why we're all too late

1) We're too late

Let's face it people, we're just too bloody late to be campaigning to get Twitter to Manchester. Yes, Manchester has great connectivity, great facilities (like Media City) and a massive Twitter community, but it seems we've all been a little slow on the uptake. On the Twitter Jobs page, positions for the UK have been advertised for at least the last month, and all state that the roles are based in London. But even if this campaign started then, we'd still have been too late to make a claim.

2) The Prime Minister intervened

Much has been made of George Osborne's obsession with digital. As it happens, it's been reported that he was the main digital force during the Conservatives campaign. He did a tour of Silicon Valley and met with many CEOs and product managers, and was even spotted wearing a Mozilla tee on a cycling journey prior to election. Now, the Tory's digital campaign was actioned by others, but it was Osborne's desire to emulate President Obama's successful use of social media.

Since coming to power, the Tory's have made no secret about their mission to attract big business to UK shores. While David Cameron has professed to not knowing a bloody thing about Twitter, and not wanting to appear a "twat", he pursued Twitter in a way akin to a randy teenager chasing the class slag at a school disco. Last December, he invited Twitter to number 10 to personally appeal to establish their base in good ol' London Town. If anything, he was massively scared by Ireland, who's low taxation saw the arrival of Google UK and European Operations. He couldn't allow Twitter to slip through his fingers.

We could have we been better organised. We could have produced a great little web app, where we could all voice our support with a hashtag. We didn't though, mainly because we didn't know it was happening. We also need to pick our battles. Taking the government to task over their "hey Twitter, meet London" approach could result in us lacking the ability to lobby for other concerns in the digital ecosystem.

3) The wider problem

Manchester and the North West has one of the most vibrant digital and creative workforces in Europe. Yet, somehow, we sometimes get overlooked. The PM announced in November last year how the Shoreditch Roundabout (he read about it in Wired) would become the UKs Silicon Valley (I'm sure we've heard that before). The problem is that Manchester has the right infrastructure to support digital expansion. We've got high speed internet. We've got a digital community. We're seeing start ups and businesses build on this, but we need to position ourselves better on the world stage. Until we learn to stick up for ourselves, our best people will be sucked away, and we worry that we won't be attractive to big, successful corporations like Twitter. Unless we can find a way to promote our wares to a wider audience, our buoyant community could be facing a decline in skills, as we all know that the Beeb is starting to hoover up talent.

4) Sort it out Manchester Digital/NWVM/Creative England/Whoever-bloody-else

We need someone, anyone to make sure our interests as a region are protected. We work hard to make the NW an exciting place to do business, and we all know that we're working at the bleeding edge of technology. But we need more support, investment, and education to keep us ahead of the pack, or at the very least, in the line of sight. We then might not need a hashtag to persuade a business to come to us, because they will already know what a great environment we have for the best in the digital industry.

A couple of weeks ago, my world was finally made complete with the release of Speedball 2 for the iPhone. I first encountered the game on my mate's Amiga like, 17 years ago, and was so impressed I bought it for my Gameboy. Later on in life, I became obsessed with Worms, but Speedball 2 still had that special place in my heart. Upon discovering it was now available for my blower, I grabbed it and have been playing it pretty much none stop. It's accompanied me on flights, train journeys, and even - AHEM - to the bog after a troublesome ruby.

I've managed to gain what I'm calling "LEGENDARY" status, where I've smashed the league and all the cups, have built an amazingly strong team, and now find myself in the semi finals of the Champions League.

Proceeding through, I then spotted that my 5 star rated team had been whittled down to a 1 star.

Further investigation made me realise that all my team upgrades had gone. I've no idea why. This basically means I'm at the top of my game through hard work, and now face total decimation. Is this a bug, or some key functionality? Either way, I'm both pissed off and sad, as many hours had been spent reaching this point, and I'm now faced with the unenviable task of doing it all again.

Anyone else had the same problem?

Here's a good article talking about the Guardian, and how since they've decided to make all of their news open, there's no point in buying the paper any more. I completely agree. I now consume most of my news either on my iPhone or iPad as it's easier, though I still purchase both the Guardian and the Observer at the weekend. I do also like the Times iPad edition, though would totally subscribe to a GMG equivalent if it was available. I also think the Guardian iPhone app is piss poor, and when I'm reading their content on my phone, I just use the website instead.

While it's cool to operate outside of a paywall, but they're missing an opportunity to fully engage with touch device users. If they want to keep revenues flowing, then they need to change their strategy.

I've just downloaded Byword, a new fancy dan app costing a whopping £1.79 through the less-new Apple App Store. It's taken over my entire screen, which is a nice way of losing distraction, however doesn't stop Growl spoiling the party by pumping Gmail and Last.fm updates over the top of the interface. It does however mean I'm completely immersed in my writing, which, as an individual who suspects they have some form of attention grabbing autism means I spend less time perusing twitter and more time, y'know, WRITING STUFF. Who knows, I might even cobble together a novel, like, just for fun, therefore proving my new lack of distracting elements.

The app kind of reminds me of iA Writer on the iPad, which, like Byword, does away with distractions and just allows you TO GET THE FUCKING WORDS DOWN. No bullet lists, wizards, or anything else, just the luxury of a text editor. Back in "the day," I was a massive fan of Word 4. The reason? It was the last version of MS Word to not have the ambition of being a DTP app when it grew up. It allowed you to get the text in, with minimum fuss, and without the need for any helpful windows popping up with the question "how would you like me to fuck this up for you?" Byword is better, in that it just lets you get on, with a lovely big margin around your work, and a lovely readable font. Yeah, you can minimise the screen so it exists within a window and has the "file" and "edit" bollocks, but when you're rocking a nice small laptop screen, do you need such elements getting in the way?

Bywater takes the essence of an iPad app and throws it into the desktop space. I applaud the approach. It goes to show how the different UI that a tablet offers is now starting to cross over into the mainstream of the desktop. Sure, I could witter on about this in more detail, but with this being my first blog post in an age, there's more internet required for that.

Biscuits: My thoughts on City Sites

"Has anyone ever led, or engaged in an effective online discussion
before?" asked one of the panel members, Susie Stubbs.
Various hands went up (including my own), and when it was my turn, I
was asked what it was about.
"Biscuits" was my reply, as my memory harked back to my heady days in
online research communities, where I once may (or may not) have led a
discussion about a new snack product. This was my only contribution to
a reasonably lively and well structured panel discussion about "Wired
Cities", where the likes of Julian from FutureEverything, Susie from
Creative Tourist, and a self confessed 'zealot' from Manchester
Climate Fortnightly, all spoke about digital democracy, the death of
the newspaper, and the general advancements councils are making in
opening up public data.
The conversation took the route of the occasionally controversial,
with a general bemoaning of some of the writing quality out there, and
how there's simply no effective routes for quality arts journalism to
break into the mainstream. A concern was raised about whether bloggers
are the journalists of the future, and the general inexperience, lack
of research, and inability to self edit all counting as factors
leading to a resounding "no" from around the room. It was also
accepted that many blogs are too targeted, too niche, and often
speaking into an echo chamber, or to those who are already involved in
blogging themselves.
All of the above made sense. There is some absolute utter bollocks out
there. However, the problem doesn't strictly exist with the shorter
attention spans of web readers today. The problem (or opportunity) is
with the means of content delivery. The internet isn't something fixed
royally in the realm of a desktop browser; Some users, including
myself, often consume web content over a multitude of different
devices, which therefore can impact in the types of content they
engage with. Those of us lucky to have a new fangled tablet device may
find themselves engaging with and creating content in a different way.
This, in my mind, points to a different concern, and that being how
the Government actually plan to bring those excluded (either
voluntarily or for reasons outside of their means) into the world of
online content.
The country is populated by those who want to engage, are able to
engage but don't, and those who wish to engage but can't. It's with
these groups where digital inclusion needs to work. By getting
broadband into communities where it lacks, and granting access to
uncomplicated devices which can be connected to the internet in
seconds, the ways in which users digest online content will change.
Since Twitter, I've been nowhere near as active with long form
blogging. Why? I'm time poor, and those moments in the day when in the
gainful employment of someone else which meant I could get away with
bashing off 200 words just don't exist. I don't have time to read
either - my google reader account has long since been abandoned. I
could take this opportunity to be REALLY controversial, by confessing
that I've never found online writing truly stimulating - if anything,
short form content on a screen is easier to read. But as the devices
change by which we consume content, we may find that we start to
engage with content which is applicable to the platform. My iPhone is
for short, my iPad for long, and my desktop for work. While I'm lucky
to have access to this technology, it has only gone to convince me
that someone who's digitally reluctant, like my Mum (bless her cotton
socks), may be able to interact with the web and the long form
treasures it has squirrelled away or in production for the future.
The future of the wired city is in rude health. It's not just about
the short/long form, it's about all those individual elements teaming
together to be culturally important, and by providing an access point
to those who need it. We need to find new and exciting ways of
delivering content to those excluded, and with new technologies
ranging from tablets to internet on the television, we may have a
route.

Our esteemed PM gave a speech the other day, harping on about how he wants to turn the UK into a top tourist destination, and reinvest in the sector after the previous Government "raided lottery money" to fund projects that met with it's idea of "Cool Britannia". Now, if the raids he's talking about mean "funding the arts", he's obviously barking up the wrong tree. What's he's failing to mention is that the vast arts programmes funded by lottery cash actually provided a reason for both domestic and overseas people to travel to our fair island. And with the arts having had it's guts absolutely torn form it's torso in the name of "sweeping cuts", what does Mr Cameron actually expect people to do when they travel to these newly invigorated destinations? Go and purchase some fish and chips from a substandard takeaway and sit in a park as there's simply fucking nothing else for them to do? Let's not forget that arts tourism accounts for a tidy chunk of the travel economy, with the short breaks market also underpinned by those visiting museums, arts centres and other cultural spots as a form of entertainment for their stay.

It also means that he's quite happy for people to go and get jobs on minimum wage in many of our country's hotels. With his "sweeping immigration reform"/closing of our borders, at least there will be jobs in potwash and housekeeping for the newly redundant public sector workers to get jobs in. Yeah, that makes perfect sense. Throw some workshy benefit claimers in there as well and sales of in-room safes will increase too.

It's not 1974 any more, and Morecombe isn't the destination it was in the 40s. It may be prudent for Mr Cameron to actually see what's going on, and the positives his Government have inherited from the previous, and build on that rather than taking us back to the happier memories from his informed and fortunate childhood.

And with all this in mind, what does he plan on doing about Blackpool?

Some of you might remember that my Mum had a rather serious road accident last year, and it's something that has left her only able to move about with the aide of crutches. Today, she's embarking on the race for life with my sister (who's also disabled), so given that while most have come in and they're still waddling around the circuit on their sticks, it would be like, TOTALLY AWESOME if you'd chuck some money their way. It's all for Cancer Research, so it's going to a good home like. Get on board with them here.

In 2005, I moved into a giant house share in the Northern Quarter where one of the people living there was a complete and utter douche. Aside from being just generally irritating, he also had a penchant for the food we all used to leave in the fridge. One day, I came home to find out he'd eaten my favourite Valencia Orange yoghurt from Tescos. No big deal, though I was rather miffed when I went to buy a replacement only to find THEY'D STOPPED MAKING THEM. Devved. Fast forward to today, where not only did I find they've started stocking them again, but also at the grand age of bloody thirty, I was asked for ID when purchasing a bottle of wine. After a shit afternoon fucking about with iPhones, my trip to the supermarket was one absolutely full of win.
