(Article) - Crab Cake Recipe

Crab cakes are a delicious way to treat the whole family. With a good recipe and a little time they will be begging for more. Since taste is all that matters, I like to use a minimal amount of filler in my recipe. It tends to be a bit more expensive but the cost is worth it in taste.

How To Make:

Ingredients:

1 pound of lump crab meat. Carefully pick out any shells. Crab cakes are much better without any shells.
3 - 4 ounces of bread crumbs. (the white bread crumbs work the best)
2 eggs
2 - 2 1/2 ounces of mayonnaise.
Salt and pepper to taste. I like to add some parsley to mine as well.

Directions:

Mix your mayonnaise and eggs together and set aside.

Put crab meat in a bowl, add bread crumbs and seasonings. Put your egg/mayonnaise mixture on top and carefully mix it all together with your hand. Be careful not to break apart all the lumps. You want it to be lumpy..

Form a small amount into a cake or ball, whichever you prefer, and fry each crab cake with butter. I like to add a little lemon juice to my butter. My mom adds a little white wine to hers. I think that extra ingredient (whichever one you choose) makes our recipes that much better. Enjoy.

(Article) - Swedish Tea Cookies

These cookies are my brother's favorite. They are so easy to make and I always have the ingredients on hand. When I do cookie arrangements for a holiday gift I always include these because they look nice on the plates and I can put whatever colored sprinkles I want on them to add to the variety.

How To Make:

Ingredients:

1 cup of butter

4 Tablespoons of sugar

1/4 teaspoon of salt

1 teaspoon of vanilla

1 3/4 cup of flour

1 cup of nuts (I always use chopped walnuts)

1 cup or so of powdered sugar to roll the cookies in after they are baked

Colored sugar to sprinkle on (optional)

Directions:

Mix all the ingredients except the powdered sugar and colored sugar together and form into balls.

Bake the cookies at 350 degrees for 35 minutes. The cookies do not spread out much so you can put a lot on one cookie sheet.

Roll the still hot cookies into the powdered sugar.

Sprinkle with colored sugar if you like.

(Article) - The Best Peanut Butter Pie Ever

I had an Uncle that loved sweets, but he didn't like peanut butter. I always used to tempt him with peanut butter sandwiches and cookies etc. His comment was always no way. But when it came to my mom's peanut butter pie he would say it looks good but I don't think so. I think it even tempted him when everyone would comment on how good it was.

How To Make:

Ingredients:

1/2 cup of crunch peanut butter

3/4 cup of powdered sugar

1/2 cup sugar

2 teaspoons of flour

1/8 teaspoon of salt

1 can of evaporated milk (regular size - not the real small one)

2 eggs (beat them with a fork) and set them aside in a bowl

2 Tablespoons of butter

1/2 teaspoon of vanilla

1 Tablespoon of coffee (optional but she usually puts it in)

Directions:

Bake your pie crust and have it cooled and ready.

Dredge the peanut butter and powdered sugar together and spread out all but 2 or 3 tablespoons into the bottom of your crust. You will garnish the top with what you saved back.

Bring the sugar, flour, salt, coffe, and milk to a rapid boil and cook for 2 minutes. Then put the heat to low.

Gradually add some of the milk mixture into your bowl of beaten eggs and then back to the milk mixture stirring constantly. (You don't want to cook your eggs by just dumping them in the boiling mixture)

Cook for 5 minutes over the low heat.

Add the butter and vanilla and stir till the butter is melted.

Pour this over the peanut butter mixture that you already have in your baked pie crust.

(Article) - My Sister-in-law's Homemade Runza Recipe

I love it when my sister-in-law makes homemade runzas. They taste so awesome, she does need to make them more often though (hint, hint). She is also one of those cooks that just cooks. Me, I need a recipe to follow, so she wrote it out for me so I could make runzas on my own too.

She makes her own dough some of the times when she makes it too. But I use frozen bread dough when I make runzas. Much quicker and easier.

How To Make:

Ingredients:

Frozen Bread Dough

1/2 pound of ground beef

1 chopped onion

2 cups chopped cabbage

2 tablespoons of butter (to wilt the cabbage)

Salt and pepper to taste, about 1/2 teaspoon of each

Directions:

Brown the hamburger and onions in a big enough pan that you can add the cabbage to it later.

Wilt your cabbage in the butter.

Add the cabbage to the beef as well as the salt and pepper. Stir.

Roll your dough very thin and cut into 6-7 inch squares.

Place about 3 tablespoons of your meat mixture onto the center of each square. Bring the corners of the dough to the center and pinch the edges together.

Place each runza with the smooth side up on a greased cookie sheet.

Bake at 350 for about 20 minutes.

(Article) - Homemade Caramels - A Yum Yum Recipe

My mom used to make these quite often and now I enjoy making them as well. Some candy recipes used to intimidate me a bit when they started talking about which stage to cook them to, but my trusty candy thermometer works quite well and I just heat everything to the right temperature and have had no problems.

One tip is to get the pan you are going to let the caramels cool in ready ahead of time. It is much easier to have it already buttered so when the candy is done you can just pour it in.

How To Make:

Ingredients:

1 cup of butter

2 1/4 cup of brown sugar (which is about 1 pound)

1 cup light corn syrup

1 can of sweetened condensed milk (15 ounces)

1 teaspoon of vanilla

Directions:

Melt butter in a heavy pan. I use my 3 quart pan.

Add the sugar and salt and stir it up well.

Add the syrup and mix it up again.

Slowly add the milk while you are constantly stirring.

Cook and continue to stir it over medium heat until it reaches 245 degrees. (which is the firm ball stage) It takes about 12 to 15 minutes.

Remove the pan from the heat and stir in the vanilla.

Pour into a buttered pan. When it has cooled cut it into squares and enjoy!

(Article) - Date Pinwheels Cookie Recipe

These cookies do take a little more time to make than some but they are worth it. The biggest time consumer is that they need to be chilled and then after the are rolled out they have to be refrigerated overnight. I have other cookie recipes that have to be refrigerated and what I have started doing when I bake for holidays is to mix up all refrigerated cookies one day and then bake them all the next. I do this one first since they have to be both chilled and refrigerated.

How To Make:

Ingredients:

1 cup shortening

2 cups brown sugar

3 beaten eggs

4 cups flour

1/2 teaspoon salt

1/2 teaspoon of baking powder

2 1/4 cup chopped dates (about 1 pound)

1 cup sugar

1 cup water

1 cup chopped nuts (I use walnuts)

Directions:

Cook dates, white sugar, and water till it is thick. (about 10 minutes)

Add your nuts to that mixture and then cool. (put in the refrigerator)

In another bowl cream shortening and brown sugar together. Then add your eggs and beat.

Add the rest of your dry ingredients (flour, salt, and baking powder) and mix well.

Then chill the cookie dough mixture. I divide it in two parts so it chills quicker.

When it is chilled (about 1 - 2 hours) take out 1/2 the dough and roll out like you would a jelly roll and spread with half the date mixture. Then roll it up, again like you would a jelly roll. Do the same with the other half of the dough.

Chill all night and then slice in 1/4 inch cookies.

Bake at 400 for 8 to 10 minutes.

Tip: I usually mix up the date mixture after I have the dough in the refrigerator chilling. Gives me time to clean up and get an area ready for rolling it out. Then they are both chilled at about the same time.

In our family, due to inquisitive young children, we call this "better than anything" cake. Most of you who have had it before will recognize it by the original name better than sex cake. It is really easy and the rich taste is unbelievable. We don't make it often and we cut the pieces small but it is gone in no time.

How To Make:

Ingredients:

Devil's Food Chocolate Cake Mix (and whatever the box calls for in it such as eggs, oil, and water

1 can sweetened condensed milk (I use fat free)

1 jar caramel syrup (like you use on ice cream, you can also use butterscotch if you prefer)

A Tub of Whipped Topping

Heath Bits, or even a few crushed up Heath Bars (whichever is easier)

Directions:

Bake your cake according to the directions in a 9 x 13 pan

While it is still hot poke holes in the cake and slowly pour the condensed milk over the top, then follow with the caramel sauce.

Then after the cake is cool spread it with the whipped topping and generously sprinkle with your heath chips.

Refrigerate until ready to serve.

(Article) - Frog Eye Salad Recipe

My recipe makes quite a bit so I love to take it to family gatherings. It is slightly sweet and fruity so it makes a nice addition to summer barbecues as well. You do need to start in the night before so keep that in mind if you are planning to make this salad. It really isn't that hard to make you just have to do it in a couple of steps. But the taste is worth the wait!

How To Make:

Ingredients:

3 20 ounce cans mandarin oranges (drained)
2 20 ounce cans of pineapple tidbits (drained but save the juice)
1 20 ounce can crushed pineapple (drained but save the juice)
23 ounces of cool whip
1 cup mini marshmallows
2 eggs
1 cup sugar
1 tablespoon of lemon juice
2 tablespoons of flour
1/2 teaspoon of salt
1 3/4 cup of pineapple juice (from your drained pineapple)
2 teaspoons salt
1 tablespoon oil
16 ounce box of spezziello pasta or acini de pepe pasta

Directions:

First off drain your mandarin oranges and discard that juice, then when you drain all your pineapple you will want to save that juice - you will need 1 3/4 cup of pineapple juice. If you drain it well you will have no problem getting the juice but if you are a little shy no problem just add water to make up the 1 3/4 cup. Then put your fruit in a bowl and stick it in the refrigerator you won't need it till the next day.

Next mix the spezziello pasta. Sometimes I can't find it in the stores but that isn't a problem I just substitute acini di pepe and no one knows the difference. Use a 4 quart saucepan (or bigger) and add 3 quarts of water, the 2 teaspoons of salt, and the oil and bring it to a boil. then add your 16 ounces of pasta and cook for 8 minutes. You will need to rinse it extremely well, I always rinse it 3 times in cold water. Set it aside for a bit in a big big bowl while you make the sauce.

You can use your same saucepan and mix your eggs, sugar, lemon juice, flour, reserved pineapple juice, and 1/2 teaspoon of salt together. Next you will want to cook this till thick and let it cool. After it is about room temperature combine it with your already cooked pasta, mix well, and refrigerate it overnight.

Now you just need to add the fruit that you have drained, the mini marshmallows, and cool whip to the pasta and sauce. Mix it up well and put it back in the refrigerator until you are ready to serve it.

(Article) - Banana Bread Recipe

Smell the bread baking. Nothing smells so good as banana bread fresh from the oven. Here is a simple recipe for you to try as well as a few variations.

How To Make:

Ingredients:

1 cup of sugar.
1/2 cup of shortening.
1/2 teaspoon of lemon juice. Not lemon extract.
2 large eggs.
1 cup of ripe mashed bananas. Better to be a little more than a little under.
2 cups of flour.
3 teaspoons baking powder.
1/2 teaspoon salt.
1-1 1/2 cup of walnuts.

Directions:

Cream shortening and sugar together and add beaten eggs.

Add bananas and lemon juice.

Sift dry ingredients together and add to mixture. Then add nuts.

Bake in a greased pan (I use pam) at 375 for about an hour.

Sometimes I alter the ingredients by adding a few chocolate chips, dates, pecans, cherries, well drained pineapple chunks. It changes the taste a bit and it always tastes wonderful.

(Article) - Hamburger and Rice Porcupine Balls

I can remember my mom making this quite a bit when I was growing up. I was a bit of a picky eater but even I would go back for more porcupines. I liked it best when she made it with homemade rolls and a big garden salad. I find myself making it quite often for my own family.

How To Make:

Ingredients:

1 - 2 pounds of hamburger
1/2 cup uncooked rice (I use white)
3/4 cup milk
1 beaten egg
1 - 2 tablespoons of finely chopped onion
salt and pepper to taste
2 cups of canned diced tomatoes (sometimes I add a little extra tomato juice)

Directions:

Mix all the ingredients together except the tomatoes and make them into small balls.

Brown them in a hot skillet.

Pour the tomatoes over and cook covered for about 45 minutes. (The rice will be popped out when they are done.)

(Article) - Simple Veg-All Hamburger Casserole

When I am running behind and dinner still needs to be made this is an old stand by. I almost always have all the ingredients on hand so this casserole is the first one I think of when I am looking at 2 pounds of hamburger and quick inspiration.

How To Make:

Ingredients:

2 pounds of hamburger
1 onion (chopped)
1 green pepper (chopped)
2 cans of cream soup
2 cans of veg-all
1 can corn
1 - 2 cups of shredded cheese for the topping
salt and pepper to taste

Directions:

Brown your hamburger with the onions and green pepper.

Drain your grease if there is any.

Add your soup and vegetables and pour it all in your casserole dish.

Sprinkle the cheese on top and bake if for 20-30 minutes at 350. You just need to make sure it gets heated all the way through and the cheese gets melted.

(Article) - My mom's Southern Pecan Pie (from Nebraska)

Everyone looks forward to the pie in our family come Thanksgiving time, and it is always my mom's pecan pies that seem to disappear the quickest. My grandma used to make these when I was younger, I even remember her making them without the pecans for my brother because at that time he didn't like the pecans!! I try to remind him of that at family dinners but he just tells me things change as he goes for his second slice.

How To Make:

Ingredients:

3 eggs
2/3 cup sugar
dash salt
1 cup dark corn syrup
1/3 cup margarine (melted)
1 cup pecan halves
unbaked bottom pie crust

Directions:

Start out by beating your eggs thoroughly then add the rest of your ingredients (except the pecans) and mix it up well. Add the pecan halves and then pour it into a 9 inch unbaked pie crust.

Bake it at 350 for about 50 minutes. You can tell the pie is done if you insert a knife about 2 inches from the edge and it comes out clean.

Cool and cut.

You may want to double this recipe because one slice is never enough!

(Article) - Baked Apples Filled With Carmel Made In The Crockpot

I love to make this easy and delicious dessert. Not only is the end result quite tasty but it makes the whole house smell wonderful. One of the best things about it is it only takes about 10 minutes or so to do the preparation and then the crock pot does the rest!! For my crockpot and family size I use 4 apples, you can vary the recipe to accommodate your family and slow cooker needs.

How To Make:

Ingredients

4 cored apples (I prefer granny smith)
8 - 12 individually wrapped caramels (I almost always use 12 and have been known to use 16 if I have big apples)
4 tablespoons of brown sugar
20 small red hot candies
4 tablespoons of margarine
cinnamon to sprinkle on top (about 1 teaspoon or so)
1/2 to 3/4 cup apple juice or cider

Directions:

First core your apples and cut off the top 1/2 inch or so of the apples.

Place your apples in the crockpot and more your juice or cider over the top.

Next comes the filling!! In each apple place in this order the brown sugar, the margarine, the red hots, and then the caramels.

Last sprinkle it with your ground cinnamon.

Let it slow cook on low for about 5 hours or so.

You can serve it just like it is, or you can serve it with ice cream or whipped cream. When you take out your apples be sure and have a spoon or spatula underneath each one so you don't loose all the good caramel filling!!

Side note: My cousin varies my recipe a bit, she doubles the brown sugar and only puts 2 or 3 red hots in the apples. I don't think she sprinkles cinnamon on the top either. Either way it is good, I just prefer a little extra of the cinnamon flavor than she does.

(Article) - Four Layer Dessert Recipe - Butterscotch or Chocolate You Pick

This dessert may be 4 layers, but except for chill time it is really very quick and easy to make. It is excellent with chocolate pudding, but my favorite way to make this recipe is with the butterscotch pudding.

How To Make:

Ingredients:

1 cup flour
1/2 cup margarine
1 cup pecans
8 ounces cream cheese
1 cup powdered sugar
1 16 ounce tub of cool whip
2 - 3 ounce packages of either butterscotch or chocolate instant pudding

Directions:

1st layer - Mix 1 cup flour, 1/2 cup margarine, and 1/2 cup chopped pecans thoroughly and pat in a 9 x 13 pan. Bake 15 minutes at 350, let cool completely and refrigerate.

2nd layer - Mix 8 ounce packages of softened cream cheese and 1 cup powdered sugar together. Fold in 1 cup of your cool whip. Spread on the 1st layer and chill.

3rd layer - Mix your pudding according to directions and spread over top 2nd layer and chill.

4th layer Top with remaining cool whip and sprinkle the rest of your chopped pecans (1/2 cup) over the top. Chill.

I like to make this bread pudding recipe and time it so it is still warm come dessert time. It also only takes a few minutes to get the bread pudding ready for baking.

How To Make:

Ingredients:

2 cups 1 inch day old bread cubes (about 3 slices)
2 slightly beaten eggs
2 1/4 cup milk
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup brown sugar

Directions:

Combine all the ingredients and pour them into a 8 x 8 square pan. Then place that pan in a larger shallow pan with 1 inch of how water in it. Bake at 350 for 45 minutes.

They are so good you will find yourself making them over and over again. They are really really easy to make too.

How To Make:

Ingredients:

24 caramels (about 7 ounces)
1 - 5 1/3 ounce can evaporated milk ( 2/3 cup)
1 - 2 layer chocolate cake mix
1 cup chopped walnuts
6 tablespoons of margarine
1/2 cup of chocolate chips

Directions:

In a saucepan you melt your caramels and 2 tablespoons of your evaporated milk until it is melted.

In another bowl combine the rest of your milk, the cake mix, nuts, and margarine and mix it well.

Spread 1/2 of the cake mixture in a greased 9 x 13 pan and bake it at 350 for 10 minutes.

Then sprinkle the chips over the hot crust and drizzle the caramel mixture over that. Drop the remaining brownie batter on top of the whole thing by teaspoonfuls.

Bake another 20 minutes at 350 degrees.

A tip is to cut the brownies while they are still warm but to let the brownies cool in the pan.

Her lemon bar recipe has gotten me many compliments. It doesn't take long to make and it smells so good while it is baking.

How To Make:

Ingredients:

2 cups flour
1/2 cup powdered sugar
1 cup butter or margarine

4 eggs
1/2 cup lemon juice
1/4 cup flour
2 cups sugar
1/2 teaspoon baking powder

Directions:

First off cut in 1 cup of margarine into your 2 cups of flour and 1/2 cup of powdered sugar. Pat it into a 9 x 13 pan and bake at 350 degrees for 20 minutes.

While that is baking mix your other ingredients together (eggs, lemon juice, flour, sugar, and baking powder) and pour over the hot crust and bake for another 20 minutes.

I haven't tasted any other ginger snap cookies that can compare to these.

How To Make:

Ingredients:

3/4 cup shortening
1/4 cup molasses
1/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon ginger
2 cups flour
1 cup sugar
1 egg (beaten)
2 teaspoons soda

Directions:

Cream your sugar and shortening together then add your molasses and egg. Beat well and add your sifted dry ingredients and mix thoroughly.

Roll into small balls and dip into sugar. Place them 2 inches apart on a greased cookie sheet. Bake at 350 for 10 to 12 minutes.

(Article) - Cream Cheese Salad Recipe

I don't know where my mom found this but I am glad she did. Our whole family really likes it. It should have a better name than cream cheese salad though. But I guess once you have tried this one there is no other one that will ever taste so good.

How To Make:

Ingredients:

1- 3 ounce package lemon jello
1 - 8 ounce can crushed pineapple
1 cup pineapple juice
6 ounces of cream cheese
1/2 cup chopped celery
1/2 cup chopped walnuts
1 small glass jar of chopped pimentos (drained)
1 cup whipped topping
dash of salt

Directions:

Dissolve your jello into heated lemon juice then add the rest of the ingredients in the order given and mix. Place it in a 9 x 13 pan and chill. Then serve and let your whole family enjoy it.

When I make it I sometimes put in a few extra walnuts since I love that crunchy texture that they add.
