<p>On my recent visit I was able to sample several dishes from the Prix Fixe menu, a   highlight being the starter of <strong>Roasted Beets and House Made Ricotta</strong>. This was perfect blend of the earthiness of thinly slice roasted beets  topped with the freshest ricotta cheese I have ever tasted, sweetened with  Chesnut honey and pistachio &#8211; drizzled with a 12-year-old balsamic.  Rich  and surprising!</p>
<p>The  ricotta cheese is made in-house and I asked Chef Frank Rhodes how difficult it is to make. In two sentences he told me how.  I was surprised to think that even I could make ricotta. Below is his recipe.</p>

<h2>Homemade Ricotta Cheese</h2>

<p>I always use whole milk yogurt, but if you do try it with  low-fat yogurt, please let me know in the comments how it works out. I  don&#8217;t recommend non-fat yogurt for this recipe.  This recipe can easily  be halved or doubled.</p>

<h3>Ingredients</h3>
<ul>
<li>2 quarts whole milk</li>
<li>1 cup plain whole-milk yogurt</li>
<li>Optional: 1/2 cup heavy cream</li>
<li>2 teaspoons white vinegar</li>
<li>1 teaspoon salt</li>
</ul>

<h3>Method</h3>
<p><strong>1</strong> In a large pot, bring the milk, yogurt, heavy cream  (if using), vinegar, and salt to a boil. Very gently boil for one to  two minutes, until the milk is curdled.</p>
<p><strong>2</strong> Meanwhile, line a strainer with a few layers of cheesecloth  and set it over a deep bowl.</p>
<p><strong>3</strong> Pour the milk mixture into the strainer and let drain for 15  minutes. Gather the cheesecloth around the curds and squeeze gently to  extract any excess liquid.</p>
<p>Storage: Homemade ricotta is best served slightly warm, although it  can be refrigerated for up to three days, if desired.</p>
<p>Makes 2 cups.</p>

<td style="text-align: center;">Did you know?  That&#8217;s right, out of the kitchen of the equinox, Chef Jeffrey Russell produces hundreds of dozens of cider doughnuts for his guests and also for the local Manchester community.  Recently I was talking with Jeffrey about how he started this.  He said, &#8221; I grew up in the Berkshires and always loved the local cider doughnuts.  I thought I would recreate that here but it did not turn out to be an easy task.  First I had to convince the Equinox itself who was only luke-warm to the idea.  So I went out on my own and got a doughnut-making machine on Ebay, tested my recipes and now we serve several hundred dozen a weekend.&#8221;&nbsp;</p>
<p>I live a mile from the Equinox and did not know that I could go to the gift shop every weekend morning and get a dozen or more cider doughnuts.  Now I am there every time the kids need a weekend treat or guests come up from the City.    Get there early enough and they are still warm, with a substantial weight to their sweetness and a hint of cinnamon (or is that just a smell from my childhood?) You have got to try them. Why should just the Equinox guests have all the fun?</p>
<p>Chef Russell and his cider doughnuts were recently featured in <a href="http://www.foodarts.com" target="_blank" onclick="pageTracker._trackPageview('/outgoing/www.foodarts.com?referer=');"> Food Arts </a>magazine, the leading publication for restaurant and hotel &#8220;foodies&#8221;.</p>

It’s thrilling to see a   photographer’s work in this category.  Secondly though, it brings up the   issue of the archival nature of photographs. Ansel’s pictures survived   because they are silv…er salts on glass; they will last for hundreds   of years. What about your digital files? With the forced obsolescence   of ever evolving technologies and the fragile nature of digital media,   how can we insure that our files will last for future generations?</p>
