S'mores Bars made with Whole Grain Flours - A Gooey, Delicious Treat

Looking for something to warm you up this Winter, but don't want to sit outside for a camp fire? Meet one of my new favorite treats - S'mores Bars made with whole grain flours. What a treat, although MaMa makes me eat these at the kitchen table, since they are a little messy and I'm a little messy.

Ingredients for S'mores Bars made with Whole Grain Flours:

1 c (2 sticks) unsalted butter, at room temp
1 1/2 c brown sugar, packed
2 eggs
1 c Joseph's Grainery Soft White Whole Wheat Pastry Flour
1 c Joseph's Grainery Barley Flour
2 c graham cracker crumbs
1 tsp baking powder
1/4 tsp salt
2 c marshmellows, mini size or quartered regular size
2 c chocolate chips

Directions: Preheat your oven to 350 degrees. Line a 9x13 pan with foil. Spray the foil with cooking spray.

In the bowl of your mixer, on medium speed, cream together the butter and sugar. Add the eggs one at a time. Reduce the mixer speed to low and add the flours, graham cracker crumbs, baking powder and salt. Divide the dough in half and press half of the dough into the bottom of the pan. Spread the marshmellows and and chocolate chips out over the base. Scatter the remaining dough over in clumps. You don't need to cover the entire top, the marshmellow and chocolate chips will peek through.

Bake for 30 to 35 minutes, or until golden brown. Remove from pan, peel off foil and cut into bars.

Love me some S'mores Bars!

Kid-approved Whole Wheat Snickerdoodles

Dad and I have been after MaMa to make some Whole Wheat Snickerdoodles, and guess what, she finally did! They were sooo good!

Ingredients for Whole Wheat Snickerdoodles:

1 c butter, room temperature
1 1/2 c + 4 Tbsp Sugar, divided
2 eggs
1 1/2 c Joseph's Grainery Soft White Whole Wheat Pastry Flour
1 1/2 c Joseph's Grainery Barley Flour
1 tsp baking soda
1/2 tsp salt
2 tsp cream of tatar
1 tsp cinnamon

Directions: Preheat your oven to 350 degrees. Prepare a cookie sheet with cooking spray. In the bowl of your mixer, with the paddle attachment, cream together the 1 1/2 cups sugar and butter until fluffy. Add the eggs one at a time.

Gradually add in the flours, baking soda, salt and cream of tartar. Slowly stir until well incorporated. Form the dough into balls.

In a shallow and wide bowl, mix together the 4 Tbsp sugar and cinnamon. Roll the dough balls in the cinnamon sugar mixture and then place on the cookie sheet. Bake for 11 minutes. Don't worry about flattening the cookies, they will do so as they bake. Let cool on a wire rack and then enjoy!

Multigrain Pancakes with Fruit Compote

Joseph's Grainery Multigrain Pancakes smothered with a nut cream and fruit compote.

We love us some Multigrain Pancakes around here, so when MaMa's friend Michelle brought us some fruit compote and a nut cream and suggested we try them on top of pancakes made with our mix, we got pretty excited. It was delicious! All we did was make our Multigrain Pancakes as directed on the packaging. Michelle was kind enough to share her recipes for the compote and nut cream, so here they are...

Ingredients for Fruit Compote:

5-6 pieces of fruit (apples, pears, etc)
2 c of dried fruit (raisins, figs, peaches, etc)
2 c apple sauce
cinnamon to taste

Directions: Cut up the fruit in big chunks and put in a sauce pan. Add the dried fruit and apple sauce. Bring to a boil. Simmer until the mixture starts to break down, about 20 minutes. Serve warm from the stove or store in fridge for 1-2 weeks.

Ingredients for Nut Cream:

3 1/2 c walnuts
1/2 c maple syrup
1/4 c water
2 Tbs cocoa powder (optional, but we like it!)

Directions: Place walnuts in a blender with the maple syrup and water. Blend for 2 minutes until smooth. Try to add as little water as possible to keep it thick, unless you want it more like a sauce. Store in fridge. We've also been putting this on our toasted artisan bread, and oh, it's good!

MaMa Bear's Porridge - She likes a lot of brown sugar.

One of my favorite stories right now is Goldilocks and The Three Bears. I ask to have it read to me at least once a day. DaDa thought it would be fun to serve up some Three Bear Porridge using Joseph's Grainery Cracked Wheat Cereal. Now I see why Goldilocks ate all of Wee Tiny Bear's porridge. Here's the recipe that DaDa used...

Ingredients for Three Bear Porridge with Cracked Wheat Cereal:

3 c water
1 c Joseph's Grainery Cracked Wheat Cereal
pinch of salt
1/2 c milk
1 tsp vanilla extract
toppings - brown sugar and craisins...or whatever suits your fancy

Directions: In a large pot, bring the water to a boil. Add the cracked wheat cereal and salt, stir. Reduce the heat to medium low and cook for about 30 minutes, making sure to stir the cereal so it doesn't stick to the pot. Once the cereal starts to thicken, add the milk and vanilla. Stir everything together and cook for an additional 10 minutes. Top with brown sugar and craisins and serve.
2 tsp cinnamon
1 egg
1 tsp vanilla
1 1/2 c buttermilk (need a buttermilk substitute?)
1/4 c chocolate chips

Glazed Egg Nog Cookies waiting for Santa

Santa isn't coming to our house this year, but don't worry, it's OK with me. I'm terrified of the Guy-In-The-Big-Red-Suit, or as I call him "Ho Ho". I've told MaMa on several occasions that I don't want him to bring presents to our house, so MaMa said she'd tell him not to come. But she said she was sad that she wasn't going to get to make Santa cookies with our Whole Grain Cookie Mix Base, so I told her she could make me cookies instead. That seemed to work for her, so here are Glazed Egg Nog Cookies that would be perfect to serve Santa (if you aren't scared of him, like me).

Ingredients for Glazed Egg Nog Cookies:

3/4 c butter, room temperature
1 1/4 c sugar
1/2 c egg nog
1 tsp vanilla extract
2 egg yolks
2 1/4 c Joseph's Grainery Whole Grain Cookie Mix Base
1/2 tsp baking powder
1 tsp nutmeg
1/2 tsp cinnamon

1 1/2 c powdered sugar
4 Tbs Egg Nog

Directions: Preheat your oven to 300 degrees. Prepare cookie sheets with cooking spray. In the bowl of your mixer cream together the butter and sugar until light and fluffy. Add the egg nog, vanilla and egg yolks. Beat on medium speed until smooth.

Gradually add the cookie mix base, baking powder, nutmeg and cinnamon. Mix on low speed until just combined.

Using a cookie scoop, place cookie dough on the prepared baking sheets, making sure to give them room for spreading. Bake for approximately 15 minutes or until the edges begin to become golden. Cool on a wire rack.

While the cookies are cooling, mix together the powdered sugar and egg nog to make the glaze. Add egg nog to get the desired consistency and then drizzle over the cookies. Sprinkle with nutmeg and allow glaze to set.

Set out for Jolly Ol' St Nick...or devour them yourself, like I did. :)

The best part of these gift baskets is that I was able to help MaMa with most of the items in them. I helped make the dough for the bread, helped pick the blackberries for the jam, and helped stamped the the snowflakes on the dish towels. So this is a great way to get the whole family involved in your gift giving!

Cinnamon Roll Cake with Joseph's Grainery Barley Flour

Are you starting to plan your menu for the Holidays yet? MaMa is. I'm not sure whether it's the nesting setting in (My little brother should arrive sometime after Christmas) or whether it's just her type A, need-to-be-organized self, but we're in full swing around here. This Cinnamon Roll Cake made with Barley Flour is a definite contender to make the cut for our Christmas menu.

It's not the prettiest cake you've seen, but oh, is it ever yummy!

Ingredients for Cinnamon Roll Cake:
(adapted from 52 Cakes)

2 1/3 c Joseph's Grainery Barley Flour
1 Tbs baking powder
3/4 tsp salt
1 1/2 c white sugar
3/4 c vegetable oil
3 large eggs, room temperature
1 c sour cream
1 tsp vanilla extract
1 c brown sugar
1 Tbs cinnamon
1/2 c walnuts, finely chopped

Directions: Preheat your oven to 325 degrees. Prepare a 9x13 cake pan with cooking spray. Sift together the flour, baking powder, salt and sugar in the bowl of your mixer. Add the vegetable oil on a low mixing speed using the paddle attachment. Add eggs, sour cream and vanilla extract. Beat at low speed for 1 minute, then a medium-high speed for 2 minutes, scraping the sides of the bowl down with a spatula occasionally. Pour the cake batter into the prepared cake pan. In a separate bowl, mix together the brown sugar, cinnamon and walnut pieces. Pour over cake batter. Swirl into the cake batter with knife. Bake for 35 to 40 minutes or until a toothpick inserted into the middle comes out clean.

Ingredients for Cream Cheese Frosting:

3 oz cream cheese
1/4 c butter, softened
1 1/2 c powdered sugar
1 tsp vanilla extract
1/8 tsp salt
5 Tbs of milk

While the cake is cooling, beat together the cream cheese, butter, powdered sugar, vanilla extract and salt. One tablespoon at a time add the milk until you reach the desired consistency. Let cake cool 10 or 15 minutes in the pan before icing with the cream cheese glaze. Spread the cream cheese frosting on the cake while it's still warm. Enjoy!

Whole Wheat Chocolate Chip Sour Cream Cake

Chocolate Chip Sour Cream Cake made with Whole Wheat Flour

MaMa made this Whole Wheat Chocolate Chip Sour Cream Cake for me and a couple of my friends during a play date and oh, it was good! We devoured it. This recipe is definitely kid approved.

Ingredients for Whole Wheat Chocolate Chip Sour Cream Cake:
(adapted from the Pink Apron Baker)

1/2 c (1 stick) butter, at room temperature
2 c sugar
3 eggs, separated
16 oz sour cream
1 ½ tsp vanilla
3 c Joseph's Grainery Softy White Whole Wheat Pastry Flour
1 ½ tsp baking soda
1 tsp baking powder
½ tsp salt
1 tsp cinnamon
12 oz semi-sweet chocolate chips\

Directions: Preheat your oven to 350 degrees and prepare a 9x13 pan with cooking spray. In a large bowl, cream the butter and 1 1/2 cups sugar. Mix in the egg yolks, sour cream, and vanilla. In a medium bowl, sift together the flour, baking soda, baking powder, and salt. Stir into the butter mixture. Beat the egg whites until they hold stiff peaks, then fold into the batter. In a small bowl, mix the cinnamon with the remaining 1/2 cup of sugar and the chocolate chips. Pour half of the cake batter into the pan. Sprinkle the top with half of the cinnamon-sugar mixture. Pour remaining batter on top, then cover that with the remaining cinnamon-sugar mixture. Bake 40-50 minutes or until a tooth pick inserted in the center comes out clean.

"Is It Organic?"

One of the most common questions we receive is, "Are your products organic?" While the whole grains we grow, mill and sell are not certified organic, we do believe that we offer an high quality, all natural alternative to organic that you can feel good about serving your family.

Our commitment to sustainability encompasses many different aspects, including a three year crop rotation, never treating the grains with pesticides and offering whole grain products that are free from additives and preservatives.

We believe that purchasing whole grain products is far more important than purchasing organic for many reasons, which a whole book could be (and probably has been) written about. In the October 2011 issue of Rachel Ray Everyday, our blogging friend Alex of Ma What's For Dinner was featured in the magazine's Grocery Cart Ambush. With good intentions, Alex was spending unnecessary grocery dollars by purchasing only organic.

The magazine's expert, Sara Snow, agrees with us - that focusing on purchasing whole grain products is far more important than buying organic bread, pasta and grains. In the article she says,

"Instead of shelling out for organic grains, focus on whole grains (like brown rice and whole wheat pasta), which aren't as processed as white carbs. The have a bigger impact on your health than organic varieties."

With Joseph's Grainery's line of Whole Grain Products you can feel good about serving your family hearty, healthy whole grains that are fresh from the farm and free of any additives or preservatives....a lot more than you can say for many of the items you see on the shelves.

Whole Wheat Coconut Banana Bread

What's one to do when they have a half of can of coconut milk left over from making chicken curry the night before? Make Whole Wheat Coconut Banana Bread of course! It just so happened that MaMa had everything she needed in the pantry to make this scrumptious loaf of bread...and we had the ever-present over-ripe bananas needing to be used up. When MaMa saw this recipe on Cheeky Kitchen you could see the gears in her head start to turn.

Talk about a moist loaf of bread! We savored it for breakfast. MaMa said it was delicious with her morning cup of coffee.

Ingredients for Whole Wheat Coconut Banana Bread:

3 eggs
1/2 c coconut oil, melted
2 very ripe bananas
3/4 c sugar
1 tsp baking powder
3/4 tsp salt
2 1/2 c Joseph's Grainery Soft White Whole Wheat Pastry Flour
1 c shredded coconut, less 1/2 cup for topping
1/2 c coconut milk
1 tsp vanilla

Directions: Preheat your oven to 350 degrees. In a large bowl, cream together the eggs, melted coconut oil, bananas, and sugar. Add the baking powder, salt, whole wheat flour, coconut, and coconut milk. Mix well.

Pour into a large loaf pan that you've prepared with cooking spray.

Combine the remaining half cup of coconut, with a teaspoon of sugar, and then sprinkle on top of your batter before baking. Bake for 1 hour. Remove and let cool before slicing.

Perfect for a Fall Day - Pulled Pork and Barley Soup

We had some delicious pulled pork left over and MaMa wanted to use it up before it went bad. This Pulled Pork and Barley Soup is the perfect way to use the pulled pork on a cool Fall day! Originally the recipe was for a chicken barley soup that we found in Everyday Food, but MaMa adapted it to work with the pulled pork!

Ingredients for Pulled Pork and Barley Soup:

1 Tbs olive oil
4 carrots, diced small
4 celery stalks, diced small
1 medium onion, diced small
2 c pulled pork, leftovers work great
salt and pepper, to taste
6 c broth (we used chicken broth, as that's what we had)
2 tsp thyme
1 c barley, soaked overnight
2 c chopped spinach (frozen or fresh)

Directions: In a large pot, heat the olive oil over medium-high heat. Add the carrots, celery and onion, cook about 8 minutes, or until just tender. Add the pork and season with salt and pepper. Add the broth and thyme and bring to a boil. Stir in the barley, cover, reduce heat and simmer until the barley is tender and cooked through, about 30 minutes. Add the spinach and cook until wilted, which only takes about a minute. Season to taste with salt and pepper.

Warm Apple Crisp made with Barley Flour

I helped Dad harvest the last of the apples on our tree last week and we've been swimming in apples since. MaMa's made a couple batches of applesauce, but my favorite was the apple crisp she made with Barley Flour. Perfectly paired with a scoop of ice cream, the apple crisp fit the bill for a cool Autumn afternoon last week! We thought you'd enjoy it too, so here's the recipe...

Ingredients for Apple Crisp made with Barley Flour:

10 c all-purpose apples, peeled, cored and sliced
1 c white sugar
1 Tbs Joseph's Grainery Barley Flour
1 tsp ground cinnamon
1/2 c apple cider or water

1 c quick-cooking oats
1 c Joseph's Grainery Barley Flour
1 c packed brown sugar
1/4 tsp baking powder
1/4 tsp baking soda
1/2 c butter, melted

Directions: Preheat oven to 350 degrees. Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and cinnamon together, and sprinkle over apples. Pour the apple cider (or water) evenly over all. Combine the oats, 1 cup barley flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture. Bake for about 45 minutes.

Is your mouth watering yet? You've gotta try this Apple Crisp made with Barley Flour!

MaMa and I needed to make a festive Fall treat to take to a get-together. We both were hankering for some more of the whole wheat brownies we told you about last week, but we wanted to add a fun twist to them, somthing a bit more Fallish. Grandma had recently sent us home with a bag of these Jumbo Pumpkin Marshmellows. Don't they look like fun?

We weren't quite sure what to expect, so we whipped up a batch of our favorite whole wheat brownies, and MaMa let me help her put the marshmellows in the brownie batter.

And we put them into bake. They took about 10 minutes longer than the original recipe states, but when they came out they sure looked like a spooky Halloween treat and they tasted even better!

Whole Wheat Brownies

Now, we've made whole wheat brownies before, and they were good, but these may just be our favorite brownies yet! This isn't the easiest brownie recipe you've seen, unlike the slow cooker brownies we made last spring, but oh, the taste of these lil' guys makes the extra effort so worth it!

Ingredients for Whole Wheat Brownies:
(recipe adapted from A Pretty Penny Blog)

1/2 c Joseph's Grainery Soft White Whole Wheat Pastry Flour
1/2 tsp baking soda
1/4 tsp salt
1/2 c unsalted butter
1 c brown sugar, packed
1/2 c unsweetened cocoa powder
1/2 c semisweet chocolate chips
1 tsp vanilla
2 eggs

Directions: Preheat the oven to 350 degrees and grease an 8x8 baking pan. Combine the flour, baking soda, and salt in a small mixing bowl. Then start to melt the butter in a large saucepan over low heat.

Once the butter is melted, add the brown sugar to the saucepan. Cook for about 3-4 minutes until the sugar is completely dissolved and the mixture is smooth, stirring continuously.

Remove the pan from heat, and stir in the cocoa powder until everything is smooth and well-blended. Do the same with the flour mixture.

Add the chocolate chips and vanilla. Beat in the eggs. Spread the batter into your prepared pan and bake for 15 to 20 minutes.

I promise, you'll be glad you tried them!

Whole Wheat Banana Bread

Whole Wheat Banana Bread with Chocolate Chips

This recipe for Whole Wheat Banana Bread has been a staple in our house for several years, so MaMa is scratching her head as to why we haven't shared it with you before now. We've shared other banana bread recipes, but not this one. It's our go-to whenever we have some over-ripe bananas on hand and boy, is it ever good. My Dad likes it plain, but MaMa and I prefer it with chocolate chips. ;)

Ingredients for Whole Wheat Banana Bread:

1 1/2 c Joseph's Grainery Soft White Whole Wheat Pastry Flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/8 tsp salt
2 egg whites
1 c mashed bananas
3/4 c sugar
1/4 c vegetable oil
1 tsp vanilla
1 c chocolate chips (optional, but oh, so good!)

Directions: Preheat your oven to 350 degrees. Prepare a loaf pan by spraying it with cooking spray. In the bowl of your mixer, combine all the ingredients. If adding the chocolate chips, stir in by hand. Pour the batter into the prepared loaf pans. Bake at 350 for 40 to 50 minutes, until a toothpick inserted in the middle comes out clean.

Take 5 Bars with Whole Whole Wheat Flour

So my MaMa says that by adding Whole Wheat Flour to these delicious Take 5 Bars, it totally turns them into a justifiable, halfway healthy treat. ;) I'm not sure if I believe her, but anytime she wants to make something this yummy I'm not going to complain!

She found the recipe for these Take 5 Bars on Inside BruCrew Life and instantly knew that if she was going to make them, she'd have to justify her actions by adding whole grains of some sort. I told her that since she's pregnant with my baby brother, that she doesn't have to justify anything, she's entitled to a few cravings, right?

So here's our Whole Wheat Version of Take 5 Bars:

1/2 c butter
1 c brown sugar
1/2 c peanut butter
2 eggs
1 tsp vanilla
2 tsp baking powder
1/2 tsp salt
1 1/2 c Joseph's Grainery Soft White Whole Wheat Pastry Flour
1 c. chopped peanuts
1/2 c. butterscotch chips

2 c chopped pretzels
2 c chocolate chips
1 Tbsp shortening

Directions: Preheat your oven to 350 degrees and prepare a 9x13 pan with baking spray. Set aside. Cream the butter and brown sugar until fluffy. Add the eggs, vanilla, and peanut butter and cream again. Slowly add the dry ingredients until it is all mixed in. Stir in the peanuts and butterscotch chips by hand. Spread the dough into the prepared 9x13 and bake for approximately 24 minutes, until a golden brown. Let the base layer completely cool before melting the chocolate chips and shortening in a microwave safe bowl, making sure to stir every 30 seconds. Lay the chopped pretzels on top of the cooled bars and spread the melted chocolate on top. Let set before cutting or you'll have a ooey gooey mess on your hands!

You're in for one delicious treat. Thanks again to Jocelyn at Inside BruCrew Life for inspiring my MaMa to make these yummy bar cookies!

Whole Wheat Pretzel Buns

Pretzel Buns...MaMa and I have been seeing them all over blog land. When we originally saw this recipe that called for Whole Wheat Flour on AmyBites, we knew we had to give Whole Wheat Pretzel Buns a try! If you try them too, we know you won't be disappointed!

Ingredients for Whole Wheat Pretzel Buns:

1 1/3 c warm water
2 Tbs warm milk
2 1/2 tsp active dry yeast
1/3 c brown sugar
2 Tbs unsalted butter, melted
4 c Joseph's Grainery Soft White Whole Wheat Pastry Flour
kosher salt or pretzel salt, to taste
2 qts cold water
1/2 c baking soda

Directions: In the bowl of your mixer, mix 1/3 c warm water and the yeast and let stand until it starts to foam. Then add the remaining cup of water, warm milk, brown sugar and melted butter. Stir until the brown sugar is dissolved. Add the flour and mix with the dough hook. Continue to let the dough hook knead the dough for about 2 minutes. Take the dough out and form a log about 2 feet in length. Divide into 8 pieces for buns or 12 pieces for rolls.

Form the pieces of dough into buns/rolls. Place on a lightly floured surface, cover with a towel and let rest for 30 minutes.

Preheat the oven to 425 degrees. Lightly grease two baking sheets. In a large pot bring the water to a boil, then add the baking soda. Drop 1 -2 rolls into the bath at a time, letting soak for no more than 30 seconds and turning once. Remove with a slotted spatula and place on a the prepared baking sheets. Sprinkle with salt and cut design in the top of the bun.

Let each sheet of buns bake in the oven for about 15 minutes, until golden brown (about 8 min for smaller rolls). Let cool for about 5 minutes before serving.

We enjoyed these Whole Wheat Pretzel Buns for dinner as Meatball Sandwhiches. Talk about a hearty sandwhich!

Whole Wheat Cinnamon Pumpkin Bread hot from the oven

Now this loaf of Whole Wheat Cinnamon Pumpkin smelled like a bit of heaven when it was baking in the oven. The smell of pumpkin wafting through the house, definitely helped make it seem a bit more like Fall around here. MaMa told me I'd like this bread, but I was a little apprehensive to try it at first, but once I took a bite of it, I think I ate three slices in a row. I might just be a pumpkin fiend.

MaMa saw this recipe on Cheeky Kitchen, but didn't have all the ingredients on hand that they called for, so she made up her own version of it.

Ingredients for Whole Wheat Cinnamon Pumpkin Bread:

2 eggs
1 c brown sugar
1/2 c coconut oil, softened
15 oz pureed pumpkin
1 tsp baking powder
1/2 tsp salt
1 Tbs cinnamon
2 c Joseph's Grainery Soft White Whole Wheat Pastry Flour
1 tsp vanilla

Directions: Preheat your oven to 350 degrees. Grease and flour a large loaf pan. In a large bowl, combine the eggs, brown sugar, and coconut oil. Beat until fluffy. Add the pumpkin puree, baking powder, salt, flour and vanilla. Mix together just until combined. Pour batter into prepared loaf pan. Bake for about 1 hour, until the loaf springs back when you touch the center of it. Let cool completely before removing from loaf pan and slicing.
