I had never even heard of Hawaiian Haystacks until browsing Pinterest. I looked at the recipe and as soon as I realized that the chicken gravy is made with the same base ingredients and the same method as the sour cream enchilada sauce that is on my famous White Chicken Enchiladas with Green Chili Sour Cream Sauce.
1. Cook chicken how you choose. I love to toss a few frozen chicken breasts in the crock pot. For this recipe I seasoned the chicken with dried minced onion, pepper, and dry ranch dressing mix. Cook on low for 6-8 hours or on high for 3-4 hours. Drain and shred. Set aside.

2. Place butter into a large saucepan over medium heat. Stir to melt. Slowly whisk in flour, salt and pepper until smooth and thick, about 2 minutes.

3. Slowly whisk in broth until smooth. Increase heat to high and whisk until thick, about 2 minutes.

4. Remove from heat and stir in sour cream, ranch seasoning, garlic salt, and cooked chicken breast. Stir to combine well. Serve over hot cooked rice and top with all the yummies you can find.

Enjoy!!

Minnie Mouse Birthday Party {Success!}

We are getting ready to take a girls trip to the Pacific Northwest! I love Seattle. I have such fond memories of it growing up and before last year, it was a place of excitement and fun. Then, Nora got sick and after a week in the hospital here in Montana, we were flown on the MedFlight to Seattle Children’s Hospital. Boy was that an adventure. My dad and husband drove the 16 hours through the night to get there before us. My black t-shirt got LOTS of wear. Thankfully my aunt and twin sister took good care of us and went to Target and got us a few things to wear while we were in Seattle. At this point, we had NO CLUE how long we would be away from home. Preheat oven to 350 degrees. Spray 2 cookie sheets with cooking spray.

2. In a food processor, pulse oats until partly ground. You just want a coarse meal. Dump in mixing bowl and add flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

3. In a large bowl, beat together the melted butter, sugar, and brown sugar. Add the eggs one at a time. Mix in the dry oat mixture and stir until well combined.

4. Drop by rounded tablespoons onto prepared cookie sheets. Bake for 14-16 minutes until browned. Let cool on cookie sheets for 5 minutes before placing them on a wire cooling rack to cool completely.

5. Once cookies are completely cooled, mix together powdered sugar and milk and pour over cookies. Let set to harden before storing.

Sweet and Spicy Cucumber Slices

On my way to 100 recipes in 100 days. Here is recipe 92.

I saw this recipe floating around Pinterest and I am so glad I tried it. Thank you Our Best Bites for the yummy treat.

This will be a perfect thing to keep in the fridge to pull out for a quick BBQ summer dinner. Yum Yum!! And I liked it as a nice crisp snack.

Sweet and Spicy Cucumber Slices

3 medium cucumbers, peeled and sliced

2 tsp kosher salt

1/2 cup rice vinegar

1/2 cup water

3 Tbsp sugar

1/4 tsp red pepper flakes

2 Tbsp minced red onion

1.
