I am a big fan of quinoa… you can prepare it so many ways. I can easily  have it for breakfast, lunch or dinner! I have wanted to try this recipe for Quinoa Taboule and I finally made it last weekend. I didn’t have all the correct ingredients on hand, so I did a bit of substituting. It turned out quite delicious. It’s so fresh! Taboule is also a versatile dish. It’s great alone as a side-salad, with pita bread or chips, on a sandwich….the possibilities are endless.

INGREDIENTS

• 2 Cups cooked and cooled Quinoa
• 1 Cup chopped Parsley
• 1/2 Cup chopped Scallions
• 2 Tbsp. chopped fresh Mint
• 1 Tbsp minced fresh Basil
• 1 Garlic Clove, minced or pressed
• 1/2 Cup fresh Lemon Juice
• 1/4 Cup Extra Virgin Olive Oil
• 1/4 tsp. Salt
• 1/8 tsp. freshly ground White Pepper

Toss together all ingredients. Chill for 1 hour or more to allow the flavors to blend. Makes 6 servings.

I have said it once and I will say it again… collaborating with others is such a neat process in design. It helps when those you are working with are urber talented and think outside the box. A couple of months ago I got the privilege of contributing stationery and paper goods, along with my awkward-modeling abilities. haha! It was fun to play dress up and wear some killer shoes.

Juli of Juli Vaughn Designs can rock out top-notch styling AND beautiful floral arrangements. Her concept for this shoot featured on Brooklyn Bride a couple of weeks ago, was “A little bit neon retro meets tea time.” So fun! Four Inch Fold‘s amazing inventory provided all the little details to make the look complete. And of course, it was captured beautifully by Amber Wilburn Photography.

Yes!!! It’s live and ready for brides everywhere! Fresh Love by Yours is the Earth was/is such a fun collaboration with Allie. If you’re not familiar with the line, read this blog post. Working along side (I mean, across the country-Skype helps!) is so refreshing and challenges my skills. The beauty of working with another designer is you always walk away learning something…like shortcuts. I promise, there are 2 billgillion shortcuts in Illustrator!

I was rummaging through my sister’s closet the other day and found a new dress… though she graciously informed me she bought it as a maternity shirt. Oops. I was drawn to the lace and different fabric patterns. Maybe I should take pics of Justina in it with her super-cute baby bump?!? Ya know, a different “look”. It’s a little caffeine, adrenaline rush over here…full of meetings, final edits and all the details that go into launching a stationery line. When I was on vacation I found these cotton shorts on clearance at the J Crew Outlet Store… The soft material and stripes drew me in. I thought they’d be a comfy option and a break from my regular summer staple, jean shorts. Pairing with the unexpected… like a black bandeau and lace tank….and my DIY cut-off cowboy boots made an eclectic combo.
