<content:encoded><![CDATA[<p style="text-align: center;">I had every intention of writing a brand spanking new blog post this morning. Something witty and awesome. Possibly about the new guy I met this weekend. Or my idiot Monday mistakes. Or the guy that&#39;s headed in to town for 3 weeks who has been pretty relentless in his pursuits. Or maybe I&#39;d finally be posting about J&#39;s birthday party. And I&#39;d be posting pictures! Lots and lots of pictures!</p><p style="text-align: center;">Instead, I&#39;m sitting at my desk trying not to puke because I woke up with a killer migraine. And then I took excedrin migraine on an empty stomach. Yep, I&#39;m an idiot. The headache is gone but the nausea is overwhelming. <content:encoded><![CDATA[<p style="text-align: center;">Wow, I&#39;ve been a slacker when it comes to posting over the past week. Although to be fair I had a lot going on. I worked from home Thursday &amp; Friday due to J&#39;s daycare being closed and then spent Saturday through Tuesday celebrating J&#39;s FOURTH birthday. I still can&#39;t believe that my little monster is FOUR!</p><p style="text-align: center;">We kept the party simple, dinner with family and friends at my parents&#39; house on Saturday night. On Sunday we drove to the Hill Country to stay with my friend Michelle so I could take him to Sea World San Antonio on Monday, his actual birthday. We finished up our trip with a visit to the San Antonio Children&#39;s Museum on Tuesday and then drove home. I am still trying to recover from the madness.</p><p style="text-align: center;">There will definitely be future posts about our experiences at Sea World &amp; the Museum. Neither were impressive. But right now I&#39;m trying to keep my head off my desk so those will have to wait until I&#39;ve caught up on laundry, house cleaning and sleep. Or at least until later this afternoon when I&#39;ve imbibed enough caffeine to help me think straight. Because lets face it, I&#39;ll never be caught up on laundry, house cleaning or sleep.&#0160;</p><p style="text-align: center;">Until then, feast your eyes on this little bit of absolute adorableness:</p><p style="text-align: center;">

He told me that he&#39;d go to the pool &amp; watch me if I <em>really</em> wanted him to, but he didn&#39;t feel like swimming. You know it&#39;s HOT when your kid doesn&#39;t even want to go outside to get in the pool.&#0160;Instead we hung out with the family, braved Target in Corpus on a Sunday. (Never again!) Then we finished off the weekend with dinner at my aunt&#39;s house for my grandfather&#39;s birthday. <title>Dinner for One. And a half.</title>

<content:encoded><![CDATA[<p style="text-align: center;">Sometimes I get frustrated cooking for myself &amp; Josh. I love to cook and I love to try new recipes but I&#39;m not a huge portion kind of girl, and he&#39;s 3 and eats about half the amount that I do. When we have friends over for dinner I get a chance to be a little more creative and try new dishes. And over the past couple of years of course I&#39;ve mastered the art of modifying recipes to fit our needs &amp; our appetites when it&#39;s just the two of us. I still like finding an easy to prepare menu that works for us.&#0160;</p><p style="text-align: center;"></p><p style="text-align: center;">We eat a lot of veggies &amp; salads and try to keep things pretty healthy. Neither Josh nor myself has a penchant for fast food or anything frozen. Unless you&#39;re talking about Eggo waffles because we will fight over the last one of those. When we get the craving for pizza we like to make it at home so that we can put our favorite fresh veggies on it and because Josh loves helping me &quot;decorate&quot; the pizzas. One of our favorites is a &quot;Greek Pizza.&quot;&#0160;</p><p style="text-align: center;">Here&#39;s the dish on this delish:</p><p style="text-align: left;">Sliced Tomatoes: <em>We like to use the little grape tomatoes.</em>&#0160;(<em>P.S. These are perfect to snack on while making your pizza!)</em></p><p style="text-align: left;">1 Sliced Avocado</p><p style="text-align: left;">Kalamata Olives: Sliced or whole. <em>We only put them on half bc Jdizzy isn&#39;t a fan</em>.</p><p style="text-align: left;">Mozzarella &amp; Feta Cheeses</p><p style="text-align: left;">1 Clove of Garlic Chopped</p><p style="text-align: left;">Olive Oil</p><p style="text-align: left;">Tomato Sauce (optional)</p><p style="text-align: left;">Pizza Crust: Sometimes we make our own but I&#39;ve recently found a brand at HEB that carries pizza crust in mini sizes. The two of us can easily split one and it makes for an easy dinner after a long day at work/school.&#0160;</p><p style="text-align: center;"><em>Please note that I didn&#39;t put exact measurements of the toppings because it&#39;s really a personal preference.</em></p><p style="text-align: center;">So here is how it&#39;s done. I usually start by heating a tablespoon of olive oil and letting the chopped garlic cook a little bit. Once I&#39;m done with that I brush a little bit of olive oil onto the pizza crust. I like to put all of the chopped garlic on the pizza as well but that&#39;s just a personal preference. Next goes the tomato sauce if you&#39;re into that kind of thing. If not, skip on ahead. Mozzarella goes on next, followed by tomato, avocado and olive slices. Finally top with a healthy (or hefty) serving of feta cheese.&#0160;</p><p style="text-align: center;"><strong>This is what you get:</strong></p><p style="text-align: center;"><strong>

I&#39;ll get a couple of hours under my belt and then take a break, either because I&#39;ve got too much going on or because financially college is just not an option right now. I&#39;ve had a lot of ups and downs grade-wise because of my spastic schedule and<span style="font-size: 15px; "> <strong>life</strong> not always going the way I&#39;ve</span> <strong>planned</strong>.&#0160;</p><p style="text-align: center;">When I was pregnant with Josh I got my foot in the door in the banking world and managed to <strong>climb the ladder</strong>, slowly but surely, for about 4 years. I changed banks a couple of times due to opportunities opening up that were a better fit and more along the lines of what I wanted to do. But at the last bank I worked at I was miserable. Beyond miserable actually. I worked with unpleasant people in what should have been a low-stress environment. Things started off well enough but it became obvious, very quickly, that a couple of the people at my branch did NOT like me. That coupled with the fact that two of the women from the corporate office not liking me turned out to be one of the most miserable years of my life.&#0160;</p><p style="text-align: center;">Please don&#39;t misunderstand, I know that no matter where I work I will face obstacles. Not everyone that I work with will be my friend. I&#39;ve worked long enough to not only understand that but to embrace it. I&#39;m more than capable of keeping my work and personal life separate. That said, it does become harder to do when you&#39;re in a small office environment on top of living in a <strong><span style="font-size: 15px; ">VERY</span></strong> <strong><span style="font-size: 11px; ">small </span></strong>town.&#0160;</p><p style="text-align: center;">As I was reaching the <strong>end of my rope</strong> at my banking job I was approached by a regular customer asking me if I knew anyone that was looking for a job. He described the position and asked me to please get the word out. I left work early that day and drove straight to his office. I spent the following afternoon learning the details of the position and put my two weeks notice in at the bank the very next work day. I can honestly say it was one of the best decisions that I&#39;ve ever made. I work with the <strong><span style="font-size: 15px; ">most fantastic people</span></strong> and I know without a doubt that this is where I&#39;m supposed to be right now.&#0160;</p><p style="text-align: center;">While I<strong><span style="font-size: 14px; "> love</span></strong> where I am right now, I know that this is not a forever-job. In a couple of years I&#39;ll probably have the opportunity to go into real estate sales if I want to, and while I&#39;m definitely soaking up all the information that I can, I&#39;m not sure if that&#39;s what I see in my future. I&#39;m not sure if I want to stay in Port A forever. And I&#39;d definitely like to know that I have <span style="font-size: 16px; ">options</span> elsewhere.&#0160;</p><p style="text-align: center;">Which leads me to the most awesome news in the history of <strong>EVER</strong>. My boss pulled me aside yesterday and told me to please not let finances (or a lack thereof) be my reason for not continuing my education. Y&#39;all, my freaking boss offered to pay for me to go back to school. I&#39;m so <strong>overwhelmed </strong>at his <span style="font-size: 15px; ">generosity</span> that it makes me want to cry.
