Kathy’s Cheese Rolls

Description

Wonderfully warm, gooey and soul-satisfying cheese roll. If you let them sit overnight, they make wonderful rolls for a breakfast sandwich. These are wonderfully flavored with garlic and shallot (feel free to omit either, if they don’t suit you).

Inspiration

These are a take on Bazillion Cheese Bread, PAO DE QUEIJO. I first had these in a bazillion steakhouse many years ago. They are usually served with breakfast or with a meal. They are wonderful. They are gooey, puffy, pillows of cheesiness. Served warm, they melt in your mouth. Served room temperature, they are a wonderful base for a breakfast sandwich. I flavored mine with a mix of onion and garlic, they are strong flavored, but you can cut back on the onion and garlic, or leave it out entirely, to serve your preference. Word of caution, double the batch, or they will be eaten before you can even make it to the dinner table. ~Kathy

Extra Large Muffin Tin

Note: You can make them in any size muffin tin, just watch them close and adjust the time.

Ingredients

1 egg

1/3 cup oil (I like peanut or grapeseed, but olive or vegetable will work also)

2/3 cup milk

1 1/2 cups tapioca flour (sometimes called tapioca starch)

3/4 cup grated cheese (my favorite is queso fresco, but use what you like)

1 large peeled shallot, or 1 small peeled onion

4 cloves of garlic

1 tablespoon of grey salt

3 Dashes of white pepper (or pepper of your preference)

Prepare

Preheat oven to 400°

Spray muffin cups with non-stick spray

Add all ingredients into blender, and blend until smooth, a couple of minutes, scraping down the blender as needed with a spatula

Pour into muffin tins (not quite half way)

Bake

Bake 15 – 20 minutes, until puffed up and very lightly brown

Serve

Serve warm for gooey-cheesy rolls, or cool overnight for a nice, soft sandwich bun the next day. These need no embellishment, like butter, they stand wonderfully on their own.

Tasting Notes

Favorable, warm, gooey, cheesy, and satisfying…so wonderful with a dry sparkling wine before dinner. Or with a warm bowl of soup in the winter. The next morning, they are a cheesy burst of flavor with coffee or tea.

Pancetta and Gruyère Breakfast Casserole

1 tsp dried rosemary

1 tsp dried thyme

2 tb Milk

4 cups cubed, stale challalha bread

1 tb peanut oil

1/2 pound diced panchette

1 or 2 small shallots (optional)

dash of salt

pinch of sugar

1 cup shredded Gruyère

6 eggs

1 cup milk

1/2 cup cream

dash of salt and pepper

Spicy (buffalo) Vinegar

As you use your pickled peppers, or make hot sauce, save the mixture for Spicy Vinegar

Just strain the mixture into a clean container..

Add to veggies, salads or where ever you use vinegar...

Good and spicy!

Buffalo Dressing

Buffalo Dressing is the middle jar..

Thick hot sauce

Oil, Olive, Peanut, whatever you prefer

Place Hot Sauce in blender

Drizzle in Oil, while blender is running, until consistency you like in a dressing...roughly half a part oil to 1 part hot sauce

Pop open top of blender and use a spout to drizzle in oilll

Keep in fridge..should keep for a couple of months or so, but it won't last that long!

Roasted Hot Sauces; Thick and Thin

Picked Peppers, partially drained

Drain some of the vinegar / water mixture from the pickled peppers, and add peppers to the blender

Blend till very smooth

Strain sauce through a sieve, if you prefer a thinner sauce

You can strain it all, for thin sauce, or just some of it....I kept some thicker and made some thin..

Date your container..

I put the solid bits drained from the thin sauce, back into the blender and whiled it for a bit more..

Pour the thicker sauce into a jar and date!

Use the sauce on anything. Jeff puts hot sauce on everything from eggs to biscuits and grav..

Store in the fridge, it should keep for a long, long time..

You can also use the thicker sauce and make a buffalo dressing..YUM!

Pickled Peppers

Pickled Peppers

Clockwise from Smallest Jar

Thin Pepper Sauce, Buffalo Dressing, Thick Hot Sauce, Spicy Vinegar

I roasted all the peppers from my CSA share one evening... I soaked them in a water, vinegar and salt solution for several weeks,for some pickled peppers. Then I used to Pickled Peppers to make some hot sauces.

Bunch of your favorite peppers

Salt, Chopped Onion, Chopped Garlic to taste

Crushed Red Pepper Flakes, Optional

50/50 mixture of water and vinegar to cover peppers

Set oven to broil

Wash peppers

Arrange peppers in a single layer in a baking dish

Turn peppers every few minutes until charred

Wearing Gloves, rub off the charred skins...

Rinse remaining bits of charred skin off

Roughly chop peppers

Place in a large jar

Add salt, chopped onion, and chopped garlic to taste

Cover with 50/50 mixture of water and vinegar

Add crushed Red Pepper, if you prefer your peppers really spicy

Give a good shake and let rest in the fridge for several days to several weeks. They should keep for quite sometime....
Use them as in, in sandwiches, salads and veggie dishes..or use them for hot sauces, dressing and vinegar..

How to Make Sweet Rice (Glutinous)

Sweet rice, isn't really sweet, it's a Glutinous rice, meaning sticky (not with actual gluten). It cooks up a little like southern grits texture. It's great for eating with soup for a filling meal. It's also good for dessert type receipes and can be rolled into balls.

It can be pricey and hard to find. I bought it at a Japanese Market in town, you can locate it on amazon, if you can't find it anywhere else.

2 Cups Sweet Rice
4 1/2 Cups Water
2 Tsp Salt
2 Tb Butter

Cook over high heat till boiling.

Turn stove down to Med-Low and Cook for 15 minutes

Remove from heat and let rest for 15 minutes

Give a good stir before serving.

I put a pile in the middle of a large bowl and poured our soup around it. It was heavenly.

Pickled Garlic

3 pound peeled, cleaned garlic

4 cups 5% acidity white vinegar

3 Tbl pickling Salt

Herbs and Spices, optional

Cleaning and peeling garlic is a lot of work. Save sometime and buy a big bag from your local wholesale club like Sam's Club or Costco. Or an asian market.

Homemade Pumpkin Butter.....

Ther is nothing better than fresh cheese. It's moist, warm and delicious. And it's not very hard to do. A few ingrediates...some time and there you have it! And from 1 gallon of whole milk, you can make 3 unique cheeses..

Set 1 gallon of milk on counter and let it reach 50°
Disolve 1 rennet table into 1/4 filtered water (you do not want cholorine in the water!)
Disolve 1 tsp of citric acid into 1/4 filtered water (you do not want cholorine in the water!)

my cheese came oue very soft and creamy, almost the texture of a brie....but it was very good. I'll try again and see if it comes out more like Mozzarella...

Flavoring with Roses.....

Roses are beautiful...and smell great.

It's time to use them to up flavor profiles. I can't wait to taste the infusions, and they sure are pretty while resting...The lovely jars are IKEA. You can use any small jar you have on hand.

Honey, White Vinegar, Gin

Select tight, moist, non-wilted roses..

Aren't these Flowers from my boyfriend lovely...
The roses are from Whole Foods.

Clip close to the head of the flower

Give the roses a bath in running water to wash an impurities off

Pat dry with a clean paper towel and let air dry for 15 mins to get rid of any extra moisture.

I set mine under a ceiling fan, to help dry them

Drop a single bud into a small vase. I used 3 roses and 3 different liquids, you can do all three, or the ones you have on hand

They are going to be beautiful...

Pour in you liquids slowly...give them a gentle swirl

Honey

White Vinegar

Gin

Make sure the roses are submerged

If you use honey or another thick liquid, make sure it gets underneath the rose

Bottom of Honey jar

Let sit for at least a week, give them a gentle swirl everyday. I put the honey on the sunny back porch to warm it up a little and let the honey work it's magic...

The liquids will be fine indoors, but to help the honey get into the rose, I put the honey on the porch to warm it up

Homemade Lavender-Vanilla Marshmallows

If you've never had homemade marshmallows.....you are missing out. Those jet-puffed perfectly uniformed sized things, are fine. For kids or cooking outside on the fire for the classic s'mores. But truly homemade marshmallows have the texture of clouds and the lightness never found in a bag...Use these for 'grown up' versions of s'mores....

Ingredients

3 envelops of plain unflavored gelatin

1/2 cup water

2 TB dried lavender

1 Cup Sugar

1 Cup light corn syrup

1 Cup water

1 tsp vanilla

Powdered sugar

Non- Stick spray

Mix lavender into 1 cup of corn syrup. Let rest for 48 hours

Place. lavender corn syrup, 1 cup of water, 1 cup of sugar, 1 cup of corn syrup and dash of sea salt into pot. Cook on med heat till almost comes to a boil. Take off heat and let cool to room temp.

Sprinkler the gelatin over the 1/2 cup water in the bowl of a standing mixer. Then strain out the lavender back into the pot, and place back over med high heat.

Attach a candy thermometer to pot and boil to soft-ball stage, 240°, roughly 8 to 10 minutes, keep checking the sugar, you don't want to over cook it, it will change the marshmallow into something different, but still good...

Plum Infused Vodka - Step 1

Step 1

Note: There are 3 steps to this process. Step 1 will take a few minutes to prepare and 6 weeks to sit. Step 2 will take a few minutes to prepare and 6 weeks to sit and Step 3 will take a few minutes to prepare and 6 months to sit....be patient!

I don't know how other people get inspired and cook and create meals and spirits and concoctions... but I look up several or a dozen or so recipes. Either online or in actual books and use the best points of each to make mine. Now this doesn't usually work for baking and such...so be careful and research well..

For the plum vodka, this is what I thought sounded best..

3 750ml bottle of 100+ proof vodka

approx 2 1/4 pounds of washed plums

down the road you'll need some sugar, but not right now...

Step 1:

wash the plums

Place the plums into a large (approx 1 gallon) airtight container and pour in the vodka

Make sure to date the container you put the mixture in.....just in case you forget or you do more than one at a time, so you can keep track.

place the jar in box, to keep the light out...

store in a cool, dark place...off to the basement, mine goes...

set up a reminder, either in a smart phone, or a regular calendar...for 6 weeks ... in 6 weeks, you'll check on the mixture...you'll need 3 cups of sugar another large airtight container...cheers!
