This Pandemic Will Pass

Never in my imagination did it ever occur that I would experience a pandemic in my lifetime. The closest threat there was prior to COVID-19 was perhaps Sars and MersCov. But those were quite efficiently contained right were its epicenter was. This corona virus, however, went out of hand. In less than 3 months, our numbers of confirmed cases started to climb since it began in Wuhan, China. With social media rampantly spreading footage of the conditions of patients and the said lockdown in China, panic crept quite aggressively.

Weeks passed since the first case and there was (and to this date) still no clear information about its real source or beginnings. There is also no clear cure. Worse is, our Philippine government was also unprepared on test kits and laboratories nationwide. All these got me hyperventilating one day. I told myself to calm down but the news about lockdown in Manila and enhanced community quarantine got me alarmed. I live alone in Cebu and if anything happened to me, I am not sure who to call for aid. It became apparent to me how fallible I am. These days, my faith in God is definitely shaky, hence, my vulnerability to fear.

Nonetheless, I tried to play it cool. When everybody was panic buying, I told myself, let them be. Stay different.

First, the protective masks ran out -- I said, "Fine. A lot of people need it more -- let them have it. And for those who bought to hoard, shame on them." I was still denying my real emotions until came the news that bottles of alcohol disinfectants are becoming scarce too - in fact, already unavailable. And if they were, shops were selling them thrice the price. Now, I was disturbed. So I paid the pharmacies a visit to try my luck and there was certainly no more supplies left. The same was the situation in several more pharmacies too. I said, I'd be damned if I did not get one -- but there was none to find. Not even in shopping malls.

So, how dangerous is this disease really? Let's say, one could die if infected -- primarily those with existing cardiovascular disease, diabetes, chronic respiratory issues, and hypertension. It impacts mostly elderly people whose immune system is weak. For the younger population and people with strong immune system, the virus can be transmitted too but they have greater chances of recovering. Normally an ailment is diagnosed following a number of symptoms but this virus was found to be asymptomatic in some occasions. The person is infected but not feeling any discomfort or showing any symptoms at all -- just a carrier of the virus but still capable to transmit the disease to others. On most occasions, however, the symptoms show but they are flu-like in nature: fever, cough, difficulty breathing, etc. Everyone is very familiar with them, therefore it is easily shrugged off by many as just the usual cough or fatigue. Yet, on times like now, it is highly recommended that people who show these signs must go to the doctor to be certain that it is not COVID-19.

It is uncertain as to when this plague will end. For now, let us do our part by staying at home and keeping ourselves healthy and clean. The following are the recommended practices (by CDC) to do to avoid infection:

1. Clean hands often

2. Avoid close contact (social distancing)

3. Stay at home (especially if you are sick)

4. Cover coughs and sneezes

5. Wear face mask (especially if sick)

6. Clean and disinfect

Furthermore, I pray that Psalm 91 will be every household's anthem in times like this. Be reminded that God is our refuge. He will rescue us from any pestilence or plague that threatens our existence. Only, be obedient to Him and to the rules of the land to be safe. May all our frontline workers be sustained and kept protected from the virus so that they can continue to do the essentials. This too, shall pass.

Rapid Cycles

I am watching clothes spin in rapid cycles now and I can't help but be lured into its hypnotic motion. Somehow, life's been like this. Years go by really fast and I've seen victories and defeat visit alternately. In retrospect, I can no longer tell which one I like better but certainly, each experience has taught me tons of lessons. Some, I've learned to apply. Others, I continue to ignore. It's a cycle of happy and sad, ups and downs, and successes and failures. Through it all, however, I know God's hand has been very gentle and kind. On circumstances that feel harsh, He guides with tender gestures making sure my steps go back to safety. On events that are light and happy, His still small voice become my conscience that keeps me grounded.

Still, time flies like a fleeting aircraft. On some occasions, I watch it glide swiftly in grace. Sometimes, it disappears beyond thick clouds like a bullet shot in the air never to be seen again. It leaves me feeling hoodwinked by the sudden turn of events - the speed of which makes me wonder how much has changed within a short span. And then I look at where I stand only to find myself stuck not too far from where I started and still uncertain of where I am going. I well up thinking how much chances were lost in the process and then wallows in the misfortune long enough until I get tired of self-pity. One good thing I learned about myself, however, is that everytime I fall deep, I just need to hit the bottom because in the absence of options, I get enough motivation to climb out of the sinkhole.

Then again, this grief and relief cycle of life never leaves. I realize that if we focus too much trying to comprehend its nature, it can become our waterloo, a potential final setback. Instead, what I focus now is mastering my understanding of what a cycle really is. You see, when I think about the notion "In life, sometimes you are at the top, and then, you are at the bottom", my mental drawing of it is simple. It is just upward and downward arrows, or forward and backward, progress - regress. And drawing life that way is quite exhausting, it seems that there will never really be true "progress" if it means falling back to point zero time and again. Dropping to the beginning seems limiting and uninspiring which sucks out energy from anyone.

The reason it is a cycle is because it is a journey. It is a continuous uniflow process which has no reversals. It keeps moving forward until it completes a milestone. Now each milestone does not mean we are already living perfect lives, however, the character developed in the process strengthens our grit to get to "relief" after bouncing back from "grief". The more familiar we become of this process the more resilient we are.

No reversals. When we are done with one, then we move on for a new conquest or defeat. In manufacturing, a small defect on one item does not sabotage the whole production. It will keep running because time does not relent. Defects, much like defeat, give us insights of where the weak links for improvements are. Mind you, we have deadlines to meet and a few loss must not suffer it.

No exemptions. This reality needs no spectators. You and I will have to play our part.

The clothes are all dry. I gotta start folding. There should be enough clean clothes to wear for the week ahead. And when Friday starts stomping closer, then, a new cycle will begin.

In Memory of Dad

Perhaps the most difficult experience my family had recently was the passing away of my father.

I was seated at the back of the car looking out through the window and while the music played on -- "Hello darkness my old friend..." -- I felt the gush of emotions rising from my chest to my head. I was tearing up and was held captive by weakness and the feeling of sheer sadness. I guess the death of a parent or of any member of the family was something we intentionally barely speak about or think of. It's the awkwardness of the subject that makes it a matter seldom discussed within the household. So much so that when it came to visit us that fateful night of November 11, we barely had the time to fix ourselves to face the visitor. Death just stormed through the door robbing us empty and leaving us shocked thinking about the whys, what ifs, and whether we could have done something better to prevent, alter, or postpone the event.

My eldest sister and her nurse instincts play back the events thinking about what has gone wrong and whether we made the right decisions to let dad undergo the surgery. My mom bursts into tears every now and then at the memory of my dad's loving gestures for the family -- like bringing home bread for breakfast or when he buys her snacks in the afternoon. My other sibling who was with my dad from the first day of hospital confinement until the night my dad's last breath barely talks about her feelings but bleeds inside. People say that dad appeared to them in a dream and others claim my dad spoke to them through some sort of experience. Everyone's emotions were all over the place and I am enraged at the thought of dad being objectified like some sort of a ghost or element because my biblical stance opposes the premise --- but honestly, i held selfish hopes that he would appear to me... his eyes open, body moving, mind comprehending, and able to speak. I guess I just wanted to hear him say, "I'm okay. I have accepted the Lord, Jesus, in my heart." Then, I can be at rest knowing first hand that he is saved and that we can all reunite in the afterlife.

Nonetheless, I believe by faith that he did and that he is now in the arms of our Saviour. When he was in coma, I shared Jesus to him confident that hearing is the last sensor that gives up. My sister and Pastor Ebe also recalled having shared the same to him in the past. I trust that in those instances, he made both unspoken and/or spoken decisions to follow. On the door of his room months before he passed away he has written words of adoration to God which moved my spirit. Although the message was unclear but what stood out was his acknowledgement of God's existence.

Today, I fly back overseas and I remember dad saying in one of our last few conversations how proud he was of my accomplishments -- although small, he perceived them huge. He was happy of us, his children, for having the determination to make something out of ourselves. I guess he considered us one of his most treasured personal achievements -- rearing a family he was happy to have despite our unit's imperfections.

Tomorrow, is a brand new day and I don't expect the pain to disappear but be more manageable as the days go by. I pray for the family, especially for mom, to find the solace of good memories to carry us through lonely times. May dad's advocacy on integrity and hard work resonate in us and through us so dad can live through and in those whom these attributes positively impact. May God be more real than the death that comes one day to each one.

Life is a talk of mountains

Sometimes, a struggle to overcome;

But mountains aren't always bad

They're a happy pill for wanderers

A footstool for all to see

Foodscape: Chronicling Food Escapes (1)

Wanderlust takes you not only to spectacular sights and places but it certainly introduces you to new food. Oftentimes, food creates a deeper insight of the culture (diverse or pure) that resides in the town you visit. Couple the experience with a bit of history and you gain a different level of respect for the creators and hands that birthed the name and fame they have today.

PAT'S KING OF STEAK

I'm not a huge fan of sandwiches but the original Philly Cheese Steak at Pat's King of Steak certainly made an impression. The name is derived from its creator, Pat Oliveri, who discovered the recipe back in 1930. He began by selling hotdogs on a stand near the Italian market in South Philadelphia until one day he decided he'd do something new. Instead of hotdog, he filled the bread with sliced grill steaks which were first patronized by taxi drivers. Not too long after, news spread making it a big hit that got restaurants to start selling their version of the same thing. Today, the place is frequented by tourists and has become a go-to stop in most Philadelphia tour itineraries.

Their huge hoagie roll is generously filled with thinly sliced grilled beef steaks and topped with melted cheese. At the side of the store, a stainless steel cart stands full of grilled cherry bell peppers and dried dark chili for anyone who'd like them for sandwich toppings. Calorie is certainly one thing but making a pass on a deliciously juicy treat would be awful.

MR BEEF

Mr. Beef's Italian Combo

Chicago has a similar version in Mr. Beef. Their Italian Combo Sandwich has both sausage and cooked rib-eye meat. The beef flavor is unmistakable. While you chew the chopped steak the smokey cow fat aroma enters your nostrils. This sandwich tasted fresh and excellently seasoned. The bits of cooked celery as toppings made quite a distinction but the overall taste is certainly reminiscent of Pat's King of Steak without the cheese. You may want to eat it fast though cause I think the steak juice can wet the bread quite a bit making it hard to keep the filling intact. Thanks to The Jimmy Fallon Show for making a buzz of it in one of its episodes last year, a follow-up to the first one he did back in 2013 where he called it a "killer deal". This sandwich has smitten both him, Gabrielle Union and Jay Leno.

REVIVAL FOOD HALL

Four blocks away from the my office stands The National which is home of the Revival Food Hall that shelters 15 restaurants constantly flocked with people of every type and ethnicity -- mostly employees from offices around downtown Chicago. I remember the first time it opened. The line was long and extending outside the building. People did not mind the cold. All wore excitement on their faces even as they stood in front of a staff who stood (arms folded) looking like an intimidating bouncer in a nightclub making sure the crowd inside has room enough to move around.

SMOQUE BBQ

I did not join the crowd that day but returned 3 months after when the hype has gone down. One restaurant queuing heavily was SMOQUE BBQ. Five guys formed it out of pure passion on food, particularly barbecue. Their specialty is the barbecue-seasoned beef -- smoked until tender. They pride the use of hardwood smoke and pungent (sour) sauce which makes the balance on taste leaving customers feeling as if they are in "BBQ heaven". Meats (steaks) are most American's staple food.

Sliced Brisket Sandwich

Curious of the American palate, I brought along an American colleague on a second visit to sample their sliced brisket sandwich. I asked if that was the taste he'd describe "distinctly American" but it turned out he shares my similar impression. The food was great - meat was tender, juicy, and the barbecue flavor is confirmed in taste and smell. The black surface of the meat initially scared me a bit as it looked charred but the pinkish color behind the thin dark layer overcame my worry. It was surprising that the fat blackened by long exposure to hardwood smoke did not taste bitter at all. The only thing we hoped it had more of was flavor inside as it seemed concentrated only outside. Also, cheese and vegetables would be nice in BBQ heaven too.

BUDLONG

Classic Fried Chicken

This stall in the hall sold spicy fried chicken. I like the fact that it was perfectly cooked inside and not dry outside. The spicy rub gave its crispy fried skin the color and flavor you see when served. I find it very difficult to make comments on fried chicken as I am biased for Korea's soy garlic fried ones but this is certainly not bad. The chicken is served with pickles, beans, a Texas toast, and coleslaw.

Furious Spoon Ramen

Probably the only Asian shop of the 15 stalls inside. The adjective on its name is quite catchy and it encourages an appetite. It being the only asian store kinda has its advantage. It pulled me in among Thai, Chinese, and Japanese customers in a line. Americans who've learned to love the taste of Asia wait in the queue as well. Ramen was its specialty, so I bought myself a bowl and delightfully worked my spoon and sticks in it. The mushrooms were fresh and for some reasons I preferred it more than the sliced pork belly. The soup turned creamy after the egg was cut and mixed, but, slightly bitter.

375 Miles: The Rest of Florida

The Miami to Inverness drive the day before demanded rest for our tired bodies and so we woke up late. There were still plenty of food from Gavin's birthday party last night so we just heated some of the food in the microwave. Mayette and Mayet (coincidental twinning) came out to join us for breakfast. Ace will be in-charge of Gavin the whole day while Gloricel drives us to the Kennedy Space Center which once launched Apollo, Skylab and Space Shuttle. It will be a quick visit since we needed to hit other stops in Florida and hours were dwindling since starting late at 10am.

First we paid Gloricel's former home a visit. They moved out not too long ago and purchased the one we came to last night. And then tall, stately trees along the road didn't go unnoticed. We got off the car and started taking photographs.

Finally, we made it to NASA. We realized that if we went in, we'd be spending the whole day so we settled with pictures outside the visitor entrance. Not too long after, we headaed towards the famed Daytona Drive-In Church. The photographs online just looked mystical and odd. On regular services, cars drive into the property to park at the church front which bore the Portate Cross (slanted to refer to a carried cross). At the Friendship Hall, the church attendees get the chance to socialize with everyone over a Krispy Kreme donut before going back to the car to tune in for the broadcast at 88.5FM. After the service, all cars parade towards the exit. We came at a deserted hour and so we found none of the above descriptions in sight. On the other hand, we lobbied without competition at the parking area. Just as I finished taking the pictures and began heading towards the car, the girls were in the mood to play. I moved a meter closer and the car moved a meter away. I dashed to it and it sped further. Gloricel just drives you nuts. She's the same playful soul I know back in high school. It was hilarious.

The beach was just around the area, therefore, we decided to stop by. Daytona Beach is known for it's hard-packed sands making it possible for motorized vehicles to drive into the certain areas in the shore. It regularly hosts Daytona 500 where 200,000 fans gather for the season opening. We arrived at a crowded sea shore and everybody where minding their own business in bikinis and shorts and we went on with ours unperturbed. The girls took a spot at a nearby bay watchtower and got me trigger-happy with my camera.

The afternoon was getting late and Orlando, Florida is about 70 miles away. The scorching sun was getting us all lazy but we were motivated by the thought of dining at Boston Lobster Feast, their famous all-you-can-eat lobster restaurant. We arrived to find it fully-booked but we we didn't give up. While Glo and Mayet waited for admission, I and Mayette decided to walk around the area to see the eye of Orlando and Rippley's Believe it Or not, stopping also outside the Pirate's Cove. There is always amusement at every block and the town was so alive -- streets, brightly lit. We came back to the restaurant and found our friends digging in on a plateful of lobster. A joke cracked that got everyone boisterous enough to gain attention from customers. Eyes glared at us, some tried to mimic Gloricel infectious laugh, and others didn't look very happy at all. The laughter continued like screams inside Gloricel's car as Mayet sounded lobster-drunk saying loudly "I lobster you". It was crazy and fun. Everyone was generous of themselves and not holding back.

Finally, we were back at the house and Gloricel went straight to nurse Gab who vomited hours ago as reported by Ace. It was a little late so we just drank water and went to our respective nooks. I must have slept very soundly that night that the next thing I know was hearing the squeaking sound of door opening the next morning.

"Gab, Gab!", I said, while reaching out for Ace and Glo's baby after the mother and son woke me up the next day. I looked out the window and felt peaceful seeing the green grass carpeting the backyard. I must've done really well holding Gavin that he started leaning on me as if he knew me well. Then, I started enjoying the so-called feeling of borrowed paternal bliss. It was like that for quite a while until I took him outside the room and showed him his gifts. We opened some of them and showed them off to his parents while he drove his mini car around the living room. The neighborhood was very quiet and so did the house as if it knew we were leaving back to Chicago that day. Ace played the slideshow that showed pictures of him and the family while we watched closely. After we ate our breakfast, the doctor wrote me a prescription for a year-long supply of my hypertension medication (lol). We prayed and took some more pictures outside the house until the Filipino driver, contacted by Gloricel, gave us a ride to our last destination in Tampa, Florida.

Mayette met with her friend who chose Florida over Chicago for career and personal reasons a couple of years ago. We were welcomed into their home with fried chicken and Pizza. Soon after we were done, they fixed us a short trip to Tampa bay which was hands down marvelous! The white sand is real deal white and soft on the feet. It was surprisingly a little bit more appealing than Miami in my opinion. Sadly, we had to leave. Off we went chasing for the flight back. We came at the airport on time but not early enough to get through the lines and security inspection easily without dashing one stop to the other. We were literally running around since it was getting past boarding time. That was in my recollection the only instance I ran as I simultaneously unbuckled and dug for my wallet to surrender them for scanning. Mayette was doing a good job herself and finally we got on the plane, eyes on us, hyperventilating, sweats trickling down our faces, and man --- did I stink!

By 9AM, we were up and ready for yet another joy ride but first, a stop at Pier House's restaurant to ask for disposable spoons for our yoghurt breakfast. Then, we headed to the Southernmost Point Buoy since Mayette was not able to see it yesterday. While on the way, we stopped by the Mile 0 (zero) signage that marks the Key West start of US Route 1 highway which extends 2,369 miles to Maine, USA.

By the time we arrived at the spot, a line of people have already built up for an orderly photo opportunity of the Southernmost Point of USA. As soon as our picture was taken, we went to the Key West state line -- our final stop before we hit the 113-mile Overseas Highway.

It was going to be another long drive back to the Everglades. Adrenaline is pumping glee as we anticipated the airboat experience at Wooten Everglades Airboat Tour. On our way to the venue, we stopped for yet another delay - a farm of tomatoes by the roadside. The fruits were mostly rotten and the dried twines looked golden brown under the heat of the scorching sun. We stopped and quickly took a photograph.

Finally, we arrived at Wooten's and learned that we just made it in time for the last schedule that day. The ticket included access to their mini zoo. We ran from one cage to another to see the captive animals. We saw otters, panther, alligators and tigers. As soon as we heard the trainer bark, we quit sightseeing and joined the group as Charlie, the huge gator, was being rubbed on the neck. We watched in fear as the trainer sat his chin at the tip of the gator's mouth while he educated us about the animal. It was a quick 15-minute talk ending where everyone had the chance to hold a baby gator which weight wasn't to be underestimated. I struggled to keep my cool while holding the gator for a picture. Soon after that, we moved to the swamp side and got boarded onto an airboat. Noticeably, a huge fan at the back powered the engine that moved the boat. The moment the boat started speeding away, we held tightly on the rails to prevent getting thrown out. The wind was against our face as the captain sped through the water jungle with airy confidence. His words faded against the whirring fan behind us as he spoke about alligators and their habitat. He careens here and there and every turn was a thrill that made the tour feel like a roller coaster ride. We spotted a number of alligators but they were so few that if you only came for them you would feel disappointed by the time the tour ends. I wasn't, however, because I came with little expectation, although, with great excitement. My satisfaction was already at the brim just having experienced criss-crossing Florida's Everglades.

It didn't take us long and we got back en route to Miami. We were constantly checking our watch aiming to beat the time to see the sunset at the beach. It started setting while we drove over the elevated highway where the palm trees are nothing but beautiful silhouettes over the warm sunlight. There was no way I could've captured the scene in photographs since we were speeding through -- eyes locked at the scenery. We found ourselves a parking space and then headed out to the beach without delay. Mayette took as much time she could to enjoy the sky canvass as it gradually changed colors from dark red to light pink while sitting down on the shore -- the sand powdering her skin. I walked further away to get a wider perspective of the beach. I climbed up to the guard house and aimed my camera everywhere feasting on the serenity and stillness of it all despite the scatter of people busy with their own agenda. It is crazy how moments like this emanates the feeling of seclusion or solitude in the company of many - beauty amidst chaos. Alone, yet not, totally.

After an hour, we went back to the car and resumed the remainder of the long drive to Tampa Airport to return the rented car. We drove through almost pitch dark highways where only the road signs glared. A few cars passed by but they were petty consolation to the spooky darkness. Nonetheless, we made it intact and whole. From the airport, we called for an Uber ride to Gloricel's house. Finally -- the absence of news and the distance in separation is going to end into a reunion and in a country remote from our common home.

The conversation with the driver went from politics in Cuba and Philippines to IT and technology. Apparently the guy was an IT enthusiast who grew up in Cuba and saw how communism brought fear among his countrymen and pressed them deep into poverty. Their tunnel light lay on a continent across through Florida.

He drove the car to a stop at the front yard of a house in Inverness -- the neighborhood was already asleep at 1:55 AM.

"Glo,.. naa na mi.", I messaged.

Slowly and very quietly, the door opened, her petite frame in pajamas stood before us, and then she let us into their home.

We put on fast our version of the wet suit. Mayette had her rash guard on and I was ready with my shirt and a pair of shorts. We had at least an hour to find the location of Fury Water Adventures by the dock. It was only less than 10 minutes walk from our resort. You see, I have been through some amateur snorkeling adventures back in the Philippines but this was my first in US. Chicago does not have the luxury of oceans and seas. Its biggest closest water form is Lake Michigan which is also shared with three other states namely: Michigan, Indiana, and Wisconsin. Florida, however basks in the fortune of being close to the Gulf of Mexico, the vast North Atlantic Ocean, and further south -- the Caribbean Sea.

After buying a water protector for my phone, we waited in line until the captain of the boat opened the door for us. We were so happy to be walking on wooden ramps afloat the blue sea and onto a boat. I was grinning from ear to ear but deep inside, I was feeling the jitters the thoughts like "what if their ocean is not like the Philippines'?" or "what if I can't handle swimming with sharks?" gave me. We paid attention to the staff who gave instructions on how to use the provided gears (e.g. snorkeling goggles and flippers).

Soon the boat started moving, taking us deeper into the ocean. Our sun-kissed skin enjoyed the warmth of sunlight and our backside felt the sudden bumps as the the boat sped through sea swells. Finally, it stopped just right at a spot near a lighthouse. As soon as the anchor was dropped, everybody started putting on their flippers and walked around in their wet suits like seals. They've come prepared, even mentally. The waves weren't very kind that day and the boat swayed and people jumping off the boat were tossed by the strong current. Some made it out into the open while others made it only as far as the anchor rope which they held tightly onto. Mayette mustered the same amount of courage but after ample tries gave up and had to be helped back on the boat. I was not willing to let this experience end so fast. I pressed forward enough to see some fishes swimming but I didn't go all the way to the lighthouse. My bare feet were getting cold because I refused to wear the flippers. I felt they'd wear me down since I find them very uncomfortable. I waited... a few more fish were sighted but the water was murky. I may have had so high expectations that after a while of being in the ocean away from the boat with only a few of us in the water and too few sightings of sea creatures, I decided I've had enough and will start getting back. The mother whose son was crying for being brought in the water to snorkel already got back on the boat early on. I just had to make my way back and luckily it was just about the time everyone else were allotted with before the boat goes back to the dock to fetch an afternoon batch. Majority of our companions were just on the boat, chilling and enjoying the view.

After being treated with drinks of beer and soda, and some good tunes, our short cruise was over. We had to stand on the side, backs pushed to the rails as the staff counted making sure no one was left by him/herself on the reef. I was in great spirits after having survived the experience.

It was lunch time and we had to hunt for a restaurant stop. After Mayette bought a pair of Havaianas, we were tipped about a restaurant that cooked Cuban cuisine. So we started walking until we reached El Meson de Pepe. While we waited for the food, it was not hard to notice live chickens everywhere. And they seem to be getting into the dining area with no push backs. They were surprisingly the same chickens we have in the Philippines. The roosters, in fact, were very noisy as they crowed nearby. It was funny to feel so much of home in a country that is over 9000 miles away.

Travels get me high and even when my feet are sore I will walk as long as I can. Mayette was feeling tired and had mentioned she needed to rest and will need a substantial amount of time to freshen up before leaving again. When she snuggled on bed, I said I'll bathe and then leave and be back by 5PM so she can rest and then we can leave again together to resume the tour around the island. I thought I heard an okay, so, off I went.

Under the scorching sun, I never felt cooler than with my shades on, a knapsack on the back for my camera, and driving a rented bike. I pedaled my way, freely past strangers, tourists, and town folks. The wind compensates for the heat as I occasionally stopped to take pictures of sights and scenes.

As a traveler, immersion is key to a complete experience. The places and food certainly are essential, but the most potent aspect of travel is when you've talked to the locals and have seen the scene behind the glamour and facade. I found them to be trusting --- keys of rented bikes can be dropped anytime through a small hole on the shop's wall. They have a sense of humor too -- outside Wallgreens, a beggar clad in a pirate costume, a clown nose and a dog on his lap, sat on a stool playing the oud loudly. They are resourceful - instead of shoes, brown old coconut was creatively painted with football team logos and placed on a rack outside a store and sold as souvenirs. They are a grateful community who has immortalized Captain Outrageous for the creative work he's made in Key West. I would have thought they were superstitious when I saw Captain Outrageous' tombstone serving as stable foundation for the cherub figurine adorned with several beads (I originally thought were rosaries) in their local cemetery. At some point, I followed a woodpecker as it flew from one palm tree to another.

Armed only with a paper map, I let common sense and instinct direct me back to the Pier House resort. There I found Mayette waiting for yet another tour. She hopped on the bike I rented. When we learned that the rental shop already closed for the evening, we agreed that she'd take the bike to the bay while I walk closely, stopping on occasion for photo opportunities. We drove through souvenir shops, to Ernest Hemingway's giant monuments which sort of tell his tale. He is a popular writer/journalist who has won a Noble Prize and is celebrated in Key West, Florida and Cuba where he was in permanent residence for years.

Then came sunset. Nothing could have prepared me for the grand event that day. The sunlight has been casting shadows everywhere and the horizon lit up like a stage of bright light. We drew closer to the bay and followed the people as they swarmed like ants to their hill. Little did we know, we were going to see a show. The crowd gathered around, most took their place by the fence at the edge of the bay deck. The show was about to start and an entertainer was doing his comedy to amuse everyone else with his trickery and unnecessary abrupt surprises. I can hear his loud boisterous laugh that was disturbingly contagious from behind but it was not enough to remove my transfixed gaze to the main act -- the showcase that is the Key West Sunset! Mayette found an elevation that gave her a better vantage point. I joined her for a while but I was not content because I can't get a good shot of it with the people's head blocking the image. It was as if God dropped the sun in slow motion as everyone else stood still, mouths gaped, and others wowed in awe. My knees shook as the curtain of sunlight blazed through, rendering the sail boats, the island, and occasional birds silhouettes on a huge canvass. I wished KV was there to see it first hand. She'd have loved it too.

I have been shut in wonder, dumbfounded and silenced. We closed the night with dinner in a Thai restaurant after dropping the bike keys into the wall hole and a quick souvenir hunt. It'll take me a while to shake-off the amazement. I was so full of it that I have to consciously make room for the eye treats awaiting us the next day.

I have been excited since day one when Gloricel messaged the invitation for me to visit her and her family in Florida. There was no schedule yet, but I figured I'd bring it up with Mayette since they too knew each other since college. We've set the date and then it got changed maybe two or three times more --- then, Mayette put her confirmation on-hold. I was conditioning myself to think it could become a solo flight after all but I didn't care. I was certain I'd go. A few days later, Mayette said she'd go, too --- so I immediately took the cue, booked the tickets, and then a few weeks after, we flew.

The hours were long but I was awake most of the time during the flight. It must've been the excitement that got me sleepless. Just a week ago, we sat down to finalize our Florida itinerary. Mayette will be celebrating her birthday within the duration of the trip and she's requested we hit the road for Key West. It was a destination Gloricel also mentioned her family would be up to going again but about a week before we left Chicago, she backed out of the Key West trip because it was impossible for her to go there and make it back to Inverness in time for her son's birthday party. The turn-down was costly and refusing a "peace offering" was pointless (happy!!!). She wouldn't take it and have made arrangements of the hotel booking herself. I was ashamed to feel indebted but at the same time awed by such generosity. I still pray for her up to this day to get the blessings she deserves for making the unnecessary gesture. It was at that moment "Gloricel" sounded synonymous with "grace" for undeserved favor. We just missed each other a lot like we feel for the rest of our pack of friends. High school through college is long enough to etch "lifetime" in friendship, I must say. It's tight. So much so, that when we are together, we feel like we've actually seen Lonna, Abel, Alfred, Fra, Wilholm, Henry, Ate Malou, Ramon, Yen, Ian, Jech, Jenny, Jekoy, Joshua, Kuya Martin, Ate Lani, Pastor Cadiz, Mama Fe, and many more friends whose names, if mentioned, will by itself be an entire article. God made it special. Each made imprints to each other's spiritual lives while we were enjoying youthful bliss and madness. --- I honestly will never make it to the Key West story if I went on and on here but I'll park the memories momentarily to give way for the rest of the Florida tale.

From the arrival area, we went straight to the Enterprise Car Rental desk to claim our SUV reservation only to find out that they ran out of it and offered us another type of car instead. The staff was selling the idea as much as he could but we adamantly cancelled and rented from AVIS instead. My company's ties with AVIS got us some discount on a Hyundai Tucson SUV. It smelled brand new as Mayette wheeled it to our inn's parking space that evening. Immediately, we slept to gain the energy needed for our 7AM trip to Key West.

A quick breakfast, a handful of take-away cupcakes, and coffee got us started for the day. Coming from Chicago, Florida brings so much of my home country's ambiance. The heat of the sun, the palm trees lined on the street side and then some more trees remind me a lot of Philippines. The occasional sightings of Americans at street crossings became my constant reminder that I am on foreign soil. Wasting no time, we sped away via Sarasota, Fort Myers, and then Naples to try to make it to Key West by sunset. As soon as we pulled out of a McDonalds drive-thru in Naples we mused at the thought of going around a little bit longer. My manager mentioned it in one of our conversations in the office and I have been quite mystified about the place, too. We decided to make use of the opportunity while we were there. We mapped our way to Venice Court and then we wound into what looked like a cozy place full of shops that walled the lake behind it. We didn't have our lunch yet and decided we'd do it in one of the restaurants around the area. We found Riverwalk restaurant and ordered lunch while entertaining the thought of getting on the boat tour that'll take us around Naples Bay where the surrounding million-dollar mansions stood. And so we did. The tour was an hour long and they narrated the history behind each mansion, the who's who, the former and current owners. We spotted, on occasion, bald American eagles and lots of resting pelicans. On maybe two instances, the resident dolphins would show up. The last stop was near the Gulf of Mexico and then we came back. It was worth the time and a much needed break for Mayette who was driving non-stop from Tampa.

We were already hours delayed against schedule and so we continued. We drove through the Tamiami Trail which extends about 275 miles from Florida State Road 60, Tampa to US 1 Miami.

Tucked quietly at a bend in a remote place along the Tamiami highway is a tiny USPS office. It is known to be the smallest and oldest operating post office in the United States. The perks of having a car is that it can take you even to places the public buses do not reach. I regret not having a postcard to send to my family and KV. I would certainly have dropped it in the mailbox to send home. We've noticed a few others stopping by and taking pictures.

Lobbying a little longer would have been a great idea but it was getting late in the afternoon so we started moving until we had to make yet another stop. We parked in front of what looked like a shack with a mini boardwalk next to a swamp. All we know was that it was screaming "airboat" in its business sign. It turned out that the office was already closed. We inquired about their schedule of operation and took a few minutes for photo ops.

We drove again for miles. This time the sun has caught up and it sat while we passed through the 7-mile bridge to the southernmost point of Florida. We were taken one islet to another until we reached Pier House Resort and Spa. It was very late in the evening and there was no describing how uncomfortable it felt to be holding in your pee for a long time. We had to wait a little more for the front desk attendant to be available to confirm our booking. After we were handed the key, each had to run to our own restrooms to unload.

A Thrilling Invasion

We've crossed the bridge a second time and then the journey to Ludington began. The way back always seems shorter. Perhaps because the route and sites look more familiar. This time, John had to drive and Mayette sat beside him. I and Jhoanna sat at the back, chatted for a long while until we dozed off to sleep. From time to time we wake to snack on Chips Ahoy and Doritos and then we go back to sleep again. The world is a beautiful place and Michigan is farm space everywhere --- mostly empty from recent harvest.

I have mentioned in prior articles that I have a great appreciation for wanderlust and random trips. And I feel like I am going to sound contradicting if I say that I am all for a well-planned itinerary. Thanks to travel friends like Bee and Brennan who introduced me to the practice. Drafting it is a very engaging process and when you are assigned to complete a portion of the blueprint, it can both be exciting and dreadful. Nothing prepares you for the hurt of instant, random changes to plans you have been working hard all along to happen. On the other hand, there is nothing more rewarding in a group travel than when your plan succeeds and everyone ends up happy of the experience. They don't even have to thank you. Their gush and spoken reverie pays for the effort. Above all, you get the satisfaction of designing the fun the way you envision it.

--- Some good things are found when you're not looking. ---

Our Ludington tower trip set off late because we missed the first trip to Mckinaw Island and had to wait approximately one and a half hours for the next schedule. Of course that could have been avoided if we woke up early and made it to the boat on time. However, not all delays are because of undeliberate reasons. Some are welcomed random interruptions. While the car sped through the highway, we caught sight of locals in costume tending their farm. If my recollection is right, they appeared to be harvesting crops when we saw them. We realized they are people of the Amish sect, "a group of Protestants who broke away from the Mennonites in the seventeenth century. The Amish live in close communities, farm for a living, and do without many modern conveniences, such as telephones, automobiles, and tractor-drawn plows" (Dictionary.com). We have had quite a discussion about them and then we saw a carriage moving opposite our direction with the driver in dirt-smudged farm clothing (long sleeves, suspenders, and a bonnet). It snagged Mayette's attention and she could not resist a U-turn to follow the guy. That had to be our first stalking experience. We followed, hoping to go unnoticed as the horse was reined to turn right. I was reading the signs and found "Maple Syrup for Sale". It was a scary move as this community is known to be discreet and exclusive. The moment we turned on a bend we stopped to a dead-end facing the beautiful barn. On the left, we saw two ladies in full Amish costume doing some lady chores as they greeted the arrival of the carriage driver. I lifted my camera to start taking pictures but before I could press the trigger, my eyes locked with their stern glares and knew that they were warding me off. Mayette found the courage to ask permission if we could take a picture with them but was answered with "I'd rather not". Afraid that our presence is becoming a nuisance, I pitched the interest on buying their maple syrup. We bought two and were told that we can take pictures everywhere else (barn, etc.) but not of the people. We conceded and took a picture of ourselves with the red barn on the background. While focusing my lens on the subjects, the sight of a young lad being motioned by his father to hide inside the barn was quite noticeable. Once or twice he would peek to see what we were doing and then hide again. My nerves are telling me not to linger longer lest we get shot for violating personal privacy.

--- What you are not meant to see stays out of sight. ---

The encounter could have been worse as we were clearly trespassing on private property but thank God we got out unharmed. We were chatting non-stop about the experience, drove through a mini forest, and not too long after (around past 5PM) we arrived at Ludington State Park to see the Big Sable Point Lighthouse before sunset. We parked the car and then asked the passersby which road will take us to the site faster. We were told that the only way is around -- by the shoreline. Hills of sand dunes seem to provide as wind and wave breakers. At that moment, the ocean was calm, the sunlight was soft and gentle, the wind breeze was mild and soothing but the lighthouse was out of sight. I ran to try to be ahead so I can signal when we are getting close. We've covered almost a mile but there was still no lighthouse. The sun sat on the horizon and we gave up, rested and watched the sun set before our eyes. We were silhouette figures bathing on warm sunlight as it bid us its momentary farewell to give way for moonlight.

It was time to head out to our hotel and we were starved and thirsty. Despite drained batteries and the near nothing internet signal, we managed to locate a restaurant an hour before its closing. It didn't take us long and then we left for hotel check-in. One more trip tomorrow (at Frederik Meijer Gardens & Sculpture Park) and then we head back to Chicago -- back to the comfort of our bed and pillows, my freedom to snore as loud as I can and to my friends -- away from its deafening sound.

There Somewhere in Time

Mckinac Island is the famed film site of the movie, Somewhere In Time, starred by Christopher Reeves and Jane Seymour in 1980. Mayette was clever for bringing it up and selling it, hence, becoming our primary destination in this Michigan trip. Eight hours and more on the road yesterday was long. Thanks to a good night's rest, all four of us felt rejuvenated and ready to sail into the day's adventure.

We arrived a little late at the ferry terminal, so we settled to wait for the next boat trip to the island. It was already late March but the cold still bit in St. Ignace and an hour is too long to be doing nothing. I took my tripod and dared the chill to take pictures around the port area. My time flew as I watched birds fly over the ocean and into in the sky. The egrets are everywhere in US and I have not seen the lack of them, whether near the lake, in the suburbs, or even in downtown Chicago. I am amazed at how well traveled these birds are and I am oftentimes captivated just watching the graceful flapping of their wings and how unafraid they are from people. It is a comforting discomfort when they come too close. Moments later, I joined my friends back in the waiting area.

A few minutes passed then we boarded. The ride was making me remember of the island trips I had back in the Philippines. I realized that sea water in US is still dark blue, the same for their sky. The boat only bigger. I -- a lot shorter around six foot locals, my skin -- brown, theirs -- white, and some black. On board, too, was a Filipino couple who were tourists like us.

The boat had a decent dock and we were offloaded on a wooden platform. We stopped for the restroom. Across the door, a line of lockers were available for tourists who will pay for valuable/baggage safekeeping.

The island is small. Four hours on a bicycle, they say, is enough to circumnavigate it. Cars were not the popular means of transportation. Call for a taxi and a horse carriage will stop in front of you.

Tours in a carriage was popular in the island but sadly, we arrived a week too early for the season. Bicycles would have been an option but we have arrived too early for the day. The rental shops were closed yet. We were running out of options. The only thing I had left under my sleeves that day were hope and the audacity to start a conversation with locals. The horses have just been brought in from Mckinac City across the island and there were only a number of taxis in sight. We approached the driver of the carriage and asked if he could give us a tour for the price similar with the seasonal ones. He said No as the one he was on was really for taxi purposes. I looked around and there were not too many tourists. Eventually, I got myself on the phone talking with their taxi supervisor to try to persuade her to consent for a quick tour at $15 dollars each for an hour.

I and Mayette took the front seat to get a better view around and preferably good vantage point for photo opportunities. It didn't take us long to silently regret the decision as there was no denying the foul smell of horse poop. We did have the best view --- of the horses' behind, nonetheless! Good gracious!

While the horses trotted, we chatted with the driver. He was accommodating every question while he snorted from his colds which is likely due to the cold weather. Occasionally, I asked to be stopped at certain places for picture-taking. The horses paced by The Grand Hotel, the island's cemetery, the Governors house, some residential houses owned by rich people in Illinois, through forest roads and then back to the Grand Hotel. We tipped the driver for his gracious tour since it had already been over an hour.

Everyone else were feeling contented but I was looking for more. Days before, I have done my research of the sites to see in the island and I knew there was the Arch Rock. We earlier passed by signs pointing to its remote location but my friends said they are not up for a mile walk and would rather just go to the docking area where the restaurants are for lunch. Like a sheep gone astray, I have removed myself from the herd and headed to the Arch Rock myself. GPS and instinct are really not the best of friends but this time they made the best of guides. Like a consolation, internet data was up and so I Skyped with my baby and showed her the beauty of the Arch from the top where the sea waves crash to the barriers that held the well-paved highway around the island. I climbed down a long stairway to the bottom to see the arch somewhat becoming a viewfinder to the big blue sky behind it. Suddenly the long distance felt near. I held the phone like I clasped her hands. I showed her the egrets, the lighthouse, the yacht club, the mini Statue of Liberty, until the phone's battery ran out.

With barely enough power in my phone, I tried to locate the restaurant where my friends were and got reunited. For now, an enormous meal. Then, the lighthouse at Ludington.

My pace was twice the usual as I walked to the train station to catch the 8am train to Fullerton where all four of us were to meet for our Michigan trip that Friday morning. I was already running late and I had one more errand to accomplish - buy bread at a Chinese bakery and a cup of fresh soybean curd. I gave my debit card to the cashier but she refused saying they only accept cash. I have become accustomed to card payments in the US that I forgot there are still stores like theirs that refuse to put the card system in place. I ran across the street to withdraw money from an ATM for my payment.

I arrived at the station almost a quarter late with the ordered food. While in transit, I snacked on a custard bun. It was still hot, the bread smelled good and the dough was soft. It was going to be at least almost 8 hours travel to reach the Tunnel of Trees before we cross the bridge to St. Ignace of Mckinac ("mckinaw") Island. I have already booked our hotels the night before so we didn't have to worry about it.

Time flew slowly when there was dead silence but when there were lots of conversations and music, it ticked unnoticed. The seat next to the driver is always assumed to take the responsibility of keeping the driver awake, fed, and quenched. Friends at the back seat rest any time they like but they make good support and fillers when the alarm guy runs out of tricks and perky distractions. I put on the alarm guy suit quite fast and once the music tuned up, I started the painstaking entertainment. It's fun traveling and I didn't mind taking ownership of responsibilities others would refuse doing.

We probably just stopped twice before finally making it to the tunnel of trees. The first, at the shoe tree in Salem, Michigan. We had to do a U just so we could stop and take pictures of the tree that had so many hanging shoes. Several pairs of shoes were tied by the lace and hang on the tree branches. They have gotten too many that it looked like the tree was in season for shoe flowers. It turned out according to history that one man threw a pair which other random strangers took notice and followed suit. The whole madness has been going on for several years now that legends have been made up. No wonder I felt creepy when I stood and stared. One legend say those were originally shoes of a murderer's victims. Nahhh!! ---- The second time we stopped was to fill our gas tank.

Finally, the tunnel of trees. As soon as we found a a spot that had beautiful tree lines on both sides of the road, we sat our tripod and readied our cameras for a quick, risky, mid-road photoshoot. People reason that picture taking isn't necessary when traveling. They are absolutely right. I had a similar frame of mind when I started but call me a liar if it does not make traveling far better than without it. You see, pictures are the ones that make you remember when you start forgetting. And they tell the stories even when we have long departed.

As soon as the snapshots were taken, we moved kilometers further to reach what they call Devil's Elbow. It has been told that if you walked into the forest you would hear chimes and whispers of the spirits that are keeping watch of the place. Story has it that Indians once inhabited the place and that a water spirit is the site's keeper. The mysticism of the experience was quite exciting as we were teasing each other for unnecessary chills and anxiety.

It was growing dark and we had to make it to Mckinac Bridge to reach our hotel in St Ignace. The grandeur of the bridge's architecture was an effective distraction to our slightly hurting stomachs. We have not had a decent meal since we left that morning and we were determined to make it up with an enormous dinner. A small Chinese restaurant near St. Ignace bay would have been nice but it has been closed for a couple of years already. We ended up in a nearby pizza shop that served chicken wings. As soon as it was dished out, we dug in unable to speak until we had our fill.

Bright lights, the smell of barbecue, sightings of street artists, traffic, crowds --- my New York welcome. We emerged out of Penn Station subway a little past 10 pm and hastily walked up to the streets to get to the Manhattan Hotel. It was the cheapest you'd find near Times Square. Thanks to GPS and Google maps --- my very dependable allies.

Finally, we were reunited with our friends. Gela was getting ready for bed and John and Jhoana were out in the streets for the evening view of the Empire State building. I and Sheena knew we were running against time. Notwithstanding the cold, we took off with our hand-held cameras for a quick evening walk towards Times Square in long strides. At one point we stopped to watch an artist create a miniature mold of someone's face. Just next to his spot is another table filled with tiny creative artifacts sold at a couple of dollars each. All those times the smoke of grilled chicken barbecue nearby filled our nostrils. It was very busy everywhere and you can't avoid brushing shoulders with strangers while making your way around the downtown area. Amidst the chaos, the thrill of seeing huge electronic boards screaming ads everywhere was very amusing. The area still looked so alive even that late in the evening. Police kept watchful eyes open for any suspicious happenings around the perimeter.

At one time, a tourist approached me and she asked if I could take her a picture using her phone. Not just once but maybe for two awkward moments. I ended up giving her a little tutorial with image adjustments as she was having issues because of blurred, hazy results. She was fighting the fact that all cameras have limitations and are dependent to lighting conditions.

After being in the midst of the crowd and the plethora of noise for too long, I realized how such events easily become another form of escape. Anything that removes you out of the usual is awesome. Noise and hype are not necessarily respites but being in it certainly puts work and other concerns aside, even for a short while.

Conscious that there may still be a lot to explore in downtown New York, we kept moving until we reached places like Radio City, NBC, and the Rockefeller Plaza. It was drawing really late that night and our feet were feeling the rigors of the day. Right after stopping at St. Patricks, we started heading home. The smell of marijuana puffed by a passing fellow was easily distinguished by Sheena. I've never smelled one before, hence, it didn't mean something until I was told. It was growing intense and formidable as we got nearer to the person, so when we finally got past him unscathed, we were relieved. Televisions mostly hide the dreadful. That is why, New York is exciting for everyone because we are hearing only about the good stuff.

After a taste of New York pizza, i dozed off thinking of the events taking place the day after.

I woke up early the next day, jogged from my hotel and then around Penn Station, stopped at Pret Manger for blueberry muffin, croissant, and coffee while my friends were getting ready for the trip to Statue of Liberty.

All it took was approximately 30 minutes train ride to Whitehall St and then we walked about 5 minutes to Battery Park. There we trailed behind a line of hopeful tourists excited to finally see Lady Liberty up close and personal. The security was unforgiving as it required us to strip ourselves off anything in our pockets, my belt, bags, and jacket. At the foot of the statue where you enter to climb up to Liberty's inner room was another security check which required my tiny knapsack be left at the locker. It separated me from the flock and I had to find my way in by myself. I was roaming free and taking pictures where I had the chance. The view from the base of the statue was awesome as you see the New York skyline from a distance. We took as much time we had before jumping onto the boat that took us to Ellis Island. The group decided to forego exploration of the island so we can head back to NY for lunch. My friends were excited to eat it at Jollibee's but I was determined to do it in NY's Little Italy. After careful thought, everyone else jumped in to the plan and we made it there just a little past 12 noon for lunch.

From the restaurant I and Sheena parted from the rest who decided it'd be best to be at the airport early. We, on the other hand, still had Central Park to tour for the rest of the afternoon. Prior to the park, we made a quick stop at Queens to buy Jollibee goods to take back to Chicago. I downed a glass of coke then started our trip to Central Park.

As soon as the train stopped, we walked out of the subway and exited towards the park. It was huge and the only thing making sense was to keep walking, avoiding long stops and take photos where the great sceneries are. Everything from the trees, grasses, ponds, turtles, ducks, people, and design was breathtaking. Of the places we've gone to in NY, I would say the park is easily my favorite. It seemed like the most decent of the places we've been -- clean and well kept. You can do everything in the park -- hide when you need some solitude, bike and jog when you need exercise, go on a picnic with friends, and shout when you feel like you've had enough of troubles for the day.

About halfway the park, we were surprised by some unexpected entertainment. At the most inconspicuous corner near the fountain, a ballerina was putting on her ballet shoes. She put her basket at the center and carefully rested her scarf on it then struck an elegant ballet pose. After a few seconds, she gracefully frolicked and pirouetted on her pointed toes, paused to bend with one leg on the floor and raised the other. There was no music but in the silence you hear a tune play in the ear drawn by the graceful movements she made across the bricked floor. People tossed dollars into her basket, some were transfixed in astonishment. I was enjoying taking pictures but sadly, we didn't have the entire afternoon to watch her spin and sway. We struggled moving away but the park had so much more of just one thing to offer. We hiked an off the beaten path until we found our way out. A bus drove us back to the hotel where our bags were safely kept for a couple of dollars. After a quick dinner, we slid into a taxi to La Guardia Airport.

My tri-state trip concludes here. Mishaps can only mean a challenge to overcome. Danger is scary when you let fear overcome faith. Some let downs are blessings in disguise. If you let it cloud your judgment, you end up missing the golden opportunities behind it. Look far, reach out. Explore the unknown or get stuck at the usual. God is good!

People change minds. When my friends learned that we could not rent a car, they called our Connecticut travel quits. They got stuck to the idea that New York is huge and 3 days is not enough to go around it. Some stayed and two (including myself) climbed up to the railroad platform.

I did not see the absence of a car an impediment. The turn of events was very reminiscent of my Galena travel where everyone else had given up and I was being stubborn and unperturbed by the circumstance. I refused to believe that only people with cars can get to these places. There must still be a population of us out there who commutes and who the government cannot turn a blind eye on.

The MTA - Metro North Railroad train brought us to New Haven, Connecticut a little past 12 noon. At the Union Station, we walked outside to find the bus stop for a ride to Super 8 where two empty rooms were waiting. Thanks to friends who bail out on trips. Now I and Sheena have two separate rooms all to ourselves. Looking outside from the windows, flocks of crows and seagulls soaring over a nearby tree looked creepy awesome. I have never seen so many crows flying free. Although, not too long after, I stopped. It was becoming like Sleepy Hollow.

We left our belongings in the room to travel light around Yale University, one of America's oldest institutions for higher education (founded in 1701). Its property spans 411 hectares which is several times more than the main campus of Silliman University in Dumaguete City, Philippines. Yale has graduated many notable alumni including former US presidents William Howard Taft, George W. Bush, and Bill Clinton. The same school is also where the latter met his better half, Hillary, while studying law.

It was already mid-afternoon when we arrived at the campus. The intention was tour inside Peabody Museum first before it closes and then gallivant. At $6.50 you can stay in the museum for unlimited hours. The first door into the exhibits led us to a collection of bones put together to display a perspective of dinosaurs. The remains of a turtle is the largest I've seen of its kind. The next doors showcased stuffed birds, mineral, stones, an Egyptian mummy which coffin remains beautiful and well-crafted. A tile cut from the original wall allows you to run your fingers on centuries-old carvings. A lighted glass box shows the preserved corpse of a famed Egyptian.

Each artifact is breathtaking. Museums take you down memory lane and gives guests the experience of seeing textbook stories seemingly come to life. It is man's closest taste of distant past. They provide a reminder of what has been which becomes crucial in telling where we'll be. I don't dismiss museums in my travel. They make good introduction of the places I visit and the community that thrives or thrived in it.

As soon as we finished the tour, we explored the rest of the campus. We walked through bricked pathways and some, plain concrete. A carpet of green grass covering the outdoor space makes you feel like you are in a huge park. Random contemporary art monuments become useful landmarks tourists go by. It was an aimless walk but we were conscious of making sure we traveled around enough.

At one point a walkway at the roadside, walled by trees lined at calculated intervals, was very enchanting. It became the goal ending of our aimless exploration. We walked past the campus' finance, engineering, and science laboratory buildings until we stopped at a wall that spelled my college school's name SILLIMAN boldly. Unfortunately internet readings show no connection of the college's founder and Horace who founded my alma mater. Nonetheless, anything familiar is always exciting.

Finally, the walkway. The layout of trees guides eyes towards the tiny opening at the center which grows bigger as you get nearer. I imagined sprinting right through it but I chose to enjoy each footstep. Just as we were about to call it a night and head out for dinner, we saw an arched entrance. I approached the security person and asked if we could get in of which he nodded YES. Unexpectedly, it pulled us into the main Yale Campus. The huge maze was finally decoded and destination reached. It was a good finale to the campus tour. The bell tower chimed an ancient sound until suddenly the bells chorused to the tune of "Hey Jude". I wonder if the people around us knew but if they sang along, they'd know.

Then comes twilight. Vampire's came out and downtown was busy serving food for the hungry night owls. We were hunting to get our share. At one point we scouted for Ramen and found a Japanese restaurant kept downstairs from the roadside but remember --- people change minds. We opted for the oak barrel draft beers and pizza at Kitchen ZINC.

That was culmination, then comes rest. It was 10 pm when we finally settled in each of our sponsored rooms. Somewhere out there --- Narragansett!

"Here! Get a picture of me at this historic train station", she said. Sheena was talking about Kingston Railroad Station established since 1875 in Rhode Island. I gladly obliged. Striking a killer photographer pose, I clicked twice. Midway the second, she shouted, "the bus is here!!".

Off we ran. Almost immediately after we got in, the bus started moving away from the station jampacked. We were a seat behind each other. I couldn't help myself but smile, feeling both contentment and excitement. My tri-state travel plan has become a reality despite recent turn of events. I was enjoying watching one street sign after the other until the electronic board flashed Providence. Woops! Alert! It took maybe a quarter of an hour before we finally decided to check with the driver. I handed my new camera to Sheena, walked a steady pace to the driver and asked if we were bound towards the right direction and he shook a NO! At the next bus stop, we stepped out. Before I got to the door, I heard a thud -- my new camera fell off Sheena's grasp. Haha. Call it a series of misfortune but we are in fact just at #2 of the many other events that followed. Sad but feeling positive, we stepped off and found ourselves a bench at 2PM in North Kingstown Wickford Junction. You've got to understand, wanderers stay nowhere. We defy established routes when we get the chance. Getting lost is as crucial as finding the way back. The hiccups make exploration real. Easy is boring. To wonder and and be curious is everything.

I called a cab and the receiver said we wait 20 minutes. Twenty minutes passed, I have jogged round the oval and did a number of push-ups under the scorching midday sun but the taxi was nowhere in sight. I called again and the agent almost shouted, "it'll be there. It's just delayed." I called the second time and she said the orange taxi has been sitting there waiting for us. My eyes frantically looked from right to left and there was nothing orange in sight. Am I going crazy? An Uber car stopped in front of us but a bus trailed not too far behind and we hopped on the latter. The vehicle looked familiar and so was the person at the driver's seat who an hour ago drove the same bus that left us at the same spot. Rhode Island is very quiet and it was getting eerie at just 2PM into the afternoon. I kept the thoughts to myself, finding the mystery and creepiness so amusing. Now, that's crazy!

This time, there were already a few people in the bus. The moment it entered University of Rhode Island, the students started stepping off until there were only just 2 of us. The unexpected campus route was strange and quiet. Intersections seem to be the only ones that's keeping the fraternity and sorority houses apart. The set of Greek letters (Alpha, Gamma, Tau, etc) stakes claim to each house, like a flag meant to ward off anyone unaffiliated. I've always associated fraternity to riots growing up so it was screaming "fight" in my head. I picture teenage American movies where the frat boys hunt the best looking girl in the campus. Scene? The evening after a prom where the girl runs screaming, clad in a gown. Whew! Movies and the evil it spreads.

We had the window sides all for our viewing pleasure. I was enjoying the view too much that I lost track of where we were headed. I sensed it and Sheena must've too but we didn't budge until the driver said, "this is my final stop!"

Naturally, we left the bus and found ourselves in Galilee (not the Israel Galilee). The lighthouse, being elusive, is slowly sinking into my play. Suddenly it was no longer a game. Finding something to eat became a serious objective. We spotted George's of Galilee and lavished ourselves for a serving of their lobster and steak. We were digging in it with so much gusto while conscious of the time so we don't miss the train back to New York.

My UBER account was useless and so I decided to contact Orange Taxi again. Same spiel was told, hence, we decided to sprint to the nearby shore. There, we found ourselves embraced by the sea breeze, the sinking sun setting behind us, the friendly seagulls fly free, the windmill turning, the children and even a few old ones strutting the rocky wave breakers and enjoying the site of the beautiful North Atlantic Ocean horizon. It was easy to be carried away and be held captive by the beauty of Narragansett Bay, Rhode Island.

Thirty minutes and there was still no taxi. We headed to the bus stop, hoping we'd make it in time for its last trip at around 5PM. As awful as it felt, the orange taxi went past us, the bus stopped at nearly 30 meters away where we were. We waved hard but the bus driver wouldn't stop where we stood and our last hopes dwindled like a receding wave. Then suddenly the adrenaline kicked back as we saw the orange taxi getting stuck at a corner nearby. We waved and good Lord -- him coming back to us, felt like redemption sweeping us over while the salvation song heralds into crescendo. Hah!

We have not gone to Judith Point Lighthouse, but my itchy feet still wanted to make it to The Towers in Narragansett. It's history goes back to 1880s and is the only remnant of the Narragansett Pier Casino which burned to the ground in 1900. It became part of the National Register of Historic Places in November 25, 1969. We took a couple of shots and the journey to the next stops began. Our Amtrak ride was long and I settled down dreaming of the events in Connecticut and Rhode Island... birds..seagulls.. clam! Oh clam holding tightly for dear life on a swooping seagull's webbed foot!! Wake me up, New York!

Tosilog in Chicago: The Search is Over!

I think it was the name -- Uncle Mike's. Or it could also be the rave. Be it online or word of mouth, I hear a lot about the restaurant.

One afternoon, I decided to just go. It was chilly and snow piles were on the road but it was not enough reason to stop me from my intention. I went anyway. Armed with GPS on one hand, I trod until I reached where it sat. Right at the corner of an intersection lobbied the famed Uncle Mike's Place. I almost ran in excitement but I decided I'd keep it cool. Sadly, I was greeted by a closed shop. It was unwise not to check the store hours (5AM - 3PM) beforehand. My mistake for having thought of Chicago like Philippines where most, if not all shops, are open at the same time - from sun up to sun down.

Was I bitter? No. Motivated? Yes! Someday, I'll arrive to an open shop.

Finally, today, I made it! When you are in a foreign country, you can't help but crave for food that reminds you of home. Silog (a concatenation of sinangag at itlog) is a Filipino's fast food. Not because they are ready made like the usual sandwiches, but because fried egg does not take too long to cook. Match it with tocino, longganisa, ham, or bangus, and you go crazy with names like tosilog, longsilog, hamsilog and bangsilog.

I was mentally ready when I got there. I knew they serve complimentary lugaw (Filipino congee) and their meals are hefty. Without delay, I ordered their Tocino breakfast for dine-in and a 3-stack pancake to go. You would think I was greedy and famished but understand that the place is just not that accessible from where I live, hence, the need to order the must-trys.

Just as I expected, the congee was served. What I didn't know is that it came with boiled egg served separately. It was already a meal by itself. By the time my tosilog came, I was already half full. Now, remember, I said I knew the reviews said their plate is huge, but nothing prepared me for reality. It didn't look like a plate. It was a PLATTER with garlic rice, tocino pork strips, twin eggs (conjoined.. lol), tomato salad, and stalks of parsley laid neatly on it. A feast was literally set in front of me. And the challenge began. First a deep breath, like you would for a lap-long swim, then one spoonful led to another until the finish. Just as you thought you are done, they make sure you don't leave empty-handed. You go home with a take-away champorado in a small container.

Although I would say that there are better versions of tocino in the Philippines but Uncle Mike's certainly did the Filipino food representation really well in Chicago. I looked around and the Americans were digging it too. I overheard one say to the waiter, "I like the soup" (referring to lugaw). Another one dashed to the cashier saying "Was it you who cooked it? I have gotten full". I was listening and quietly felt proud for the crew. The cashier was a Filipina and by the time I signed my payment receipt, she had the Mexican waitress tuck a key chain for me after hearing it was my first visit. I would go back for the marinated skirt steak the Google reviews rave about and for their other silog entrees. Next time I'd share the plate with friends. Now.. --- I eat the pancakes!!

Galena Trip: Mistakes and Miracles

It was supposedly New York, a road trip in an RV truck and Niagara Falls - 2 drivers and 5 companions. Then the RV plan was ditched -- instead 2 cars. Days after, a driver declined, then the second followed. But I and one other companion wouldn’t give up -- there is always the options of flight or Amtrak. Then, Paris bombing happened and everyone else said “No” fearing a similar event like September 11 would happen in New York. The turn of events for me was beyond belief. I knew I had to be somewhere else away from work otherwise Thanksgiving holidays will waste like a missed chance. I was not prepared for the let downs and my friends' dying momentum but I could not insist – first, I can’t drive. Secondly, I did have pending work that coming weekend.

It was Wednesday and everybody were already decided to just celebrate Thanksgiving in a colleague's apartment. Email exchanges were plenty and everyone at a frenzy --- excited about the food assignments for our potluck party while I was hard at work and holding back frustrations of a denied travel. My momentums are highly catapulted by either sad or happy emotions and at that point i was feeling as if i was pushed to mope at a corner to meditate on defeat --- I wasn’t ready to give in. Flushed by soaring intent to make a trip happen... i set myself to draft a quick itinerary remembering my manager's recommendation to explore Galena, IL. The place had shown up in my searches for Chicago's best places to visit and the picture of Main Street brought back memories of Calle Crisologo in Vigan, Philippines. The Galena itinerary was a plan originally removed from the bucket list because there were no known public transportation that could take us there except by car. I couldn't drive but it certainly made no sense that United States would discriminate the population of commuters who by some circumstances can’t afford a car, or couldn't drive, or just plainly dislike driving long distances. I fiddled on my keyboard to search -- one keyword at a time until it took me to an old website that had Chicago to Galena bus itinerary. I tested some links, called a few numbers, and got confirmations that they do drive to Galena. I held on to that glimmer of hope, proposed a plan to my friends and got two of them excited. Without delay, I booked for an accommodation at an inn.

Finally, it was Thanksgiving Thursday and we all celebrated it as arranged. I readied my stuff certain that I will be skipping the black Friday sale in exchange for the early trip the day after. The plan was sleep over at my friend's apartment so I can wake up on time at dawn and make it to the bus station with them by 6AM. And so the journey commenced. Like steps calculated fairly well, we stood at Cumberland station on time waiting for Burlington Trailways that'll take us to Galena. Sighting not too many passengers, waiting and rethinking my friend's doubt about the legitimacy of the Cumberland station the night before, I called the bus’ hotline.

Like a deflated balloon, my excitement faded and my face read guilt all over it when I was informed that the Cumberland pick-up station was no longer in operation. The station has moved to another address. There was no way we could make it to the new location on schedule even by UBER. I knew the "I told you so" was coming and disappointed faces stood across a guilty one. It was a slow 10 mins waiting at the train tracks amidst the below zero degrees cold. We boarded the train going back to Chicago downtown and deafening silence clouded over us. We have retreated and sat quietly, no longer defiant. And then one blurted, asking if there is a chance we could have all reservations rebooked? In an instant, i tapped on my phone to dial. First, the receptionist at our inn. Thinking God's hand must be at play, the rebooking was done quite smoothly. Next our bus’ round-trip ticket (Cost: $83.33) was successfully rebooked. I apologetically smiled at the Greyhound agent and said we will be smarter the next time around.

It turned out that the cancellation of our trip was in fact a blessing. I and my other companion didn’t have to miss the Black Friday sale. I got home with a new DSLR bundle (which took almost 2 months of planning) -- my friend, brought home several bags for her siblings.
The next day, we headed towards Clinton Train Station. We readied our tickets and one of my companion got us to tear the boarding pass thinking it will make boarding faster and hassle-free. When it was our turn to board, the driver glared and reprimanded us asking why we tore the pass. It was so ghastly and we thought we were all jinxed. We stood our ground, faces begging, so he would relent considering it was only our first time. Miraculously, he did (of course with a warning)!

Mistakes aren’t always a bad thing if we leverage it as a means to learn. Most often the hard way, but the lessons learned are invaluable. The true test lies on how we manage to get up and get going despite the fall.

Finally, Galena. TMobile was almost out of signal at the location so we relied greatly on the offline map my friend installed on her phone. From McDonalds (the drop off point) we walked a good 20 minutes to reach Country Inn & Suites (Cost: $135.86). We were asked to wait since we arrived earlier than their check-in time. After settling down, we prepped to head out for an impromptu itinerary. I knew there was a Galena tour and since my friends were also up for it, I called and got confirmations that they were operating that day. We called for a cab and got ourselves quickly boarded for a trip to the Main Street (Cost: $18).

As soon as we boarded on the trolley for a tour (cost: $31.15 each), the guide started taking us down to history lane. He circulated a piece of lead which he explained is the meaning behind the name “Galena”. Apparently, the town was known for lead mining in the past. He drove us across the Galena river to see the old houses which stood the test of time, its first and current owners, the house of the 18th US president, Ulysses S. Grant, the stories of the first residents and immigrants, and lastly the Dowling House (oldest in Galena, since 1826).

When it was over, we opted to walk our way back to the Main Street for lunch, then across the river again to get a closer look at the old houses and run atop the hills which are not in Chicago. On the way back to the Main Street at around 5PM we joined the crowd of tourists and residents for their Christmas Parade and Tree lighting. It was a delight to see the group of youngsters singing in a choir and in full costume. Christmas melodies filled the cold, damp air and then the town mayor announced the lighting of the Christmas tree. Claps resonated in the quiet streets of Galena. Celebrating such blissful experience, I insisted we head for wine tasting (a stop almost marked off the itinerary) at Galena Cellars.

Greeted on the front door by bottles of wine formed into a Christmas tree, we sat at the bar and the attendant started explaining. Sold by the affordability of the experience ($5 to taste 6 different wine + a house special), my friends joined in. Each of us got our checklist and what was supposedly just 7 types of wine became 11. Thanks to the cheerful bartender (in fact, maybe the owner). She was up for a gab and we had so much questions. Hooked by our curiosity, she just kept explaining while adding extra samples until we had about enough. I ended up going back to the inn with a bottle of mulled wine (the type you drink warm and apt for winter).

The night passed us by and then came morning. The sneaky me just was not ready to give up another item in the bucket list. With my friends’ approval, I inquired about the taxi cost to get us to Chestnut Mountain Resort (Cost: $38). We checked out early from the hotel and took our bags with us to the uphill resort. We arrived to find out that snow skiing and zip line are not in operation yet but got the attendant’s permission to go around the area to explore. We chanced on the on-going snow making activity and then hiked the trail into the woods and out into an open field of green meadow, on a cliff that was overlooking the Mississippi River and a glimpse of Iowa. We took the time to enjoy the peace and quiet surroundings, fresh air, and the great view in front of us while seated on a bench. In as much as we would have wanted the experience to last, we knew we had to get going to the other side of the mountain where the birds fly on treetops and where one can get lost in thick forest. Everything was so serene and soulful. It was a trip so apt for the emptying of mind from intoxicating clutter and worries brought by stress at work (not to mention that I worked a couple of hours in the evening during this travel).

From the resort, the taxi took us back to the Main Street for a quick lunch where I had the most interesting mug of bloody Mary at a burger shop. They marketed it as the best bloody Mary but I’d say it was the spiciest. At about 3PM, we braved the cold outside McDonalds while waiting for the bus that’ll take us back to Chicago.

One said I was jinxing the trip and poor with directions. I might as well be after all the early itinerary mishaps. I think I am too but hey, we had the greatest time!

On our way home, one friend blasted “… you are both unreliable with directions. We should be headed to O’Hare. The same direction we took for CUCUMBER.”

“NooOO! It’s CUMBERLAND.” We parted laughing.

Hearts and Pancakes

There are discoveries you want to keep all for yourself because if everybody knew about it, then gets interested with it, you feel robbed of your comfort places. It becomes mainstream until the once quiet place with relaxing ambiance becomes just a regular hangout for everyone else. Nonetheless, my business is likely not the owner's and I decide to share this find anyway as show of support to keep the restaurant open "FOREVER".

It is a hideaway. It literally is.
A secret known only for those chasing after the unknown. A find only those who labor looking are rewarded with. Thanks to Laagholic. Her buyog instincts led us to the restaurant. Acacia Street in Kamputhaw is rather long, however, if you keep walking --- at the cul-de-sac (where the road ends) resides La Bouna Forchetta Da Paolo.

Without the glowing signage at the gate, it is nearly impossible to find the restaurant. Outside, it looks like a vintage home under a canopy of tree branches. The house is combination of concrete, glass and wood elements. Although it feels like trespassing, a waitress actually opens the door and welcomes you in like an expected guest. It is very spacious inside and the wooden chairs and tables can be rearranged to set up long tables retrospective of Jose Rizal era where big high profile Spanish families dine together but it can be setup for guests of two if you needed some privacy, isolation, or a feel of romance.

We settled on a spot near the glass wall where the faint bustling sound of the insects tapping outside the window is audible. It must be the burning lamp on our table and the heat it exuded that attracted them to huddle close. We didn't mind. They were a pleasant disturbance from the plain darkness outside that night. Sensing that we needed to get busy or we'll just be hanging out, the waitress approached us with their laminated menu. I found myself silently guessing and imagining the looks and taste of the dishes in Italian names but couldn't figure them out so I asked for the house specialties. They endorsed Salsiccia e Funghi Pizza and their seafood pasta. Buyog wanted to try arugula topping on pizza and the waitress gladly accommodated the request to halve the pizza flavors.

We also ordered their antipasti so we could start off on something while we wait for the pizza and spaghetti to be served. Unknown to us was their complimentary thin focaccia crispies. We nibbled on it, very delighted about the herby treat. Then came Insalata Caprese ( an italian salad consisting of tomato and fresh mozarella cheese ) which was paired with focaccia bread. The mozarella which tastes neutral paired well with the sour-sweet taste of tomato. I had trouble knowing how to eat it with the pastries. I decided I'd top it on the biscuit or the bread but the flakes fell off and I got embarassingly messy that I ended up eating them separately. Needless to say, it was "delizioso". That was a plateful of fresh yummy ingredients.

Halfway through the antipasti came their seafood pasta mixed with olive oil. Cooked al dente, the pasta was inexplicably tasteful. I go nuts over it like I did with most pasta sauted in olive oil. This was very redolent of Dong Juan's Gambas Aglio Olio but tastes even better. Mind-boggling to me is the manner their squid meat tasted. Its texture was somewhere between fresh and rotten (without the smell) that it could have been lobster or crab meat. I was over the moon as the salt, butter/oil, herbs, prawns, mussels, squid and fresh tomato blended to create that oddly glorious flavor. I am literally salivating at the thought of this.

Lastly, we had the pizza served. True to customer specifications, they delivered it in two flavors. One topped with the arugula herbs and the other with sausage and funghi cuts. Of course, the cheese! As a pizza maker myself, capsicum and onions were always a necessary topping. This defied my stereotype. I did not see capsicum on it. The pizza was mildly hot when I bit it and "lala-la-lala" it was like honey on my tongue and "symphony to my ears" ---- except arugula. While others describe arugula's taste as "peppery", "like mustard", "oompphh flavor" -- still others say it tastes like "soap" (hahaha). If you are the type that picks the capsicum toppings, you will do the same (with disgust) for arugula. The flavor is so strong but chefs and food lovers whose taste bud looks for adventures certainly marvel on its use. It is mostly mixed in green salads. Personally I think it was distasteful, too -- only in the beginning -- but the more I took in, the more my palate became accustomed to it. It is the type that belongs to "acquired taste" as some would describe. We finished with a glass of red wine.

As far as I am concerned, everything was delightful as it was educational. Nowadays, food tastes pretty much the same. Lechon, steak, liempo, humba.. they are available almost everywhere - the same pork meat cooked differently. The arugula, despite it's freakin' strong taste, was key to understanding that there is a lot more beyond the usual flavors.

I've gone back since my first --- with Kris this time. And like the first visit, the waitresses are still the same giddy fellas. They were courteous to the formal customers but they were ecstatic to the crazy ones. We had fun talking with them about the Mona Lisa painting and the frowning portrait hung on the wall, and then about Manny Pacquaio and life in general. I still have the same good things to say about the food (meaning they cook consistently) and I got to share it with my baby who mused at every bite. Our conversation were like "uuhhms" and "ohhhs", "nomnom", "namnam", "chompchomp", -- JUST WOW!

La Bouna Forchetta da Paolo, they say was originally located along Jones Avenue beside Angelica's bakeshoppe but they have since transferred to the new location for quite a number of years now. I was tipped that the food are now being prepared by Filipino chefs who took first hand training from the original Italian chef. True or not, I care less. The food sold for itself. It is raking 4 to perfect 5-star ratings in TripAdvisor. You shan't miss.

Third at the Kuizine

You've probably only known Jo's Chicken Inato and Jollibee across The STRIP in Osmena Blvd but what you are unfamiliar of are the nearby small dining hole-in-the-walls. One of which is Kuizine. There is nothing aesthetically fancy about the restaurant except their brand that is sophisticated and painted or glued like a wallpaper. I have to be honest that I, like most, have glanced, once or twice, then just walked past it many times before, except one time when I and Laagholic ran out of new finds around Capitol site.

We entered the restaurant with a little hesitation fearing that we might be disappointed because there were no other customers besides us. We sat at the corner thinking and browsing through the pages of the menu slid in plastic page holders. I am always uncomfortable at the slightest sense of pressure which is why i dislike waiting attendants standing at the back. I think it is really self-induced. I understand that it is part of their job but my melancholy always gets the best of me. I overthink and sometimes, even assume their thoughts. In order to free them from getting irritated by slow customers like us and also save myself from "overthinking", I engaged them into a chat, went straight for that one question that narrows choices down to just 1 or 2 ---- "What are your bestsellers here?" It works 90% each time I visit a restaurant for the first time. The very patient waitress said: Tinabal and Baby Back Ribs.

Baby Back Ribs is the younger generations' pop choice. And because I am young (not lying), i took that while my friend ordered tinabal. A few minutes passed and the orders came one after the other.

Tinabal is famous in Philippines' Visayas region, particularly in Leyte. This is no easy cooking because preparing it involves a delicate process and not to mention hours of waiting. Parrot fish is scaled, eviscerated, split (maybe deboned too) and soaked in brine solution for 2 hours. Afterwhich, it is removed from the solution, re-salted, and then put in a plastic pail for 24 hours. Remove the fish and dry by patting salt onto it again. Ferment by storing it in room temperature for 1 or 2 weeks.

I wonder how they do it in restaurants when orders keep coming in. Perhaps they ferment several kilos of fish ahead of time to make sure they wouldn't run out of stocks.

I couldn't, for certain, say that Kuizine's version resembles the authentic ones but even if it didn't I would still say with much delight that theirs did not run short of "wows" and "oohs" from us. I particularly like how the fermented fish was cooked such that the outer layer is crisp while the inside was still juicy and tender. The presentation of the dish looked well thought off. The color was festive and vibrant. It was salty but I guess it wouldn't be tinabal if it wasn't marinated in salt. Sauteed tomatoes, ginger, onion, and garlic gave it superb flavor. It was very evocative of my dad's cooking except that his version used sun-dried salted fish.

Baby back ribs, on the other hand, has invaded Cebu quite vastly. It is spelled in bold and sometimes italics in almost every restaurant. It has gone too mainstream such that they almost just taste alike. Kuizine's version certainly has joined the awesome band wagon and sits well in it.

For me, however, tinabal definiteIy makes Kuizine distinctive. And I will remember their chef and crew for serving that indisputable delicious treat.

I've come face to face with that parrot fish (tinabal) thrice this year: first with Laagholic, second with my baby, and the latest, by myself. Each time, meaningful: laughter, love, reflection. The last being introspective and spiritually boosting. Other than Jeremiah 29:11 and Psalm 37:4 (scriptural verses on flower pots), I caught sight of a wall piece that read:

I left thinking when my 4th will be. Just crazy!!

Kuizine's owners are from Leyte and they also sell their homemade "Bahalina" - the type that could take down "sukang Pinakurat" (which now sadly tastes very commercial).

The Escape to Palanas

Quiet, private, tall trees, mountain views, a swimming pool or a beach, fresh breeze, food, and comfortable accommodation -- my elements of a perfect escape. Once in a while the urge to separate from urbanity becomes a necessity for a working person. Overworking can be stressful and science concludes legitimate translation of stress to physical exhaustion and fatigue. If not dealt with, it can potentially lead to more chronic issues such as ulcers and other physical diseases.

I have an unspoken bias and liking for the eastern part of southern Cebu for many reasons. Firstly, it is my regular route back to Dumaguete (my hometown) on land. Secondly, travel spots are everywhere in the south. You have places like, Carcar (famous for lechon, chicharon, and old Spanish houses), Argao (famous for Torta), Alcoy (stretch of white sand beaches), Dalaguete (more beach resorts and Osmena Peak), Boljoon (home of the old Spanish church and Ilihan Rock), and Oslob (swimming with the whalesharks). And just as I thought I have been to this part of Cebu enough, there are always new finds that trigger your travelling feet.

One time, I passed by a sign that took my attention. It read "Palanas: Farm and Mountain Resort". I looked it up in the internet and the pictures were enticing. I knew I had to be there so when the opportunity came, I took it without hesitation. My friends were enumerating options about where to go for a summer getaway south of Cebu. I injected Palanas and I was secretly happy they voted for it, too.

Ready with my 1.5 kg Carcar lechon and a knapsack of personal travel necessities, I traveled ahead to Boljoon. While waiting for my friends to arrive, I took snapshots of the old church then sat on a chair under the tree shade watching tourists come and go. As soon as my friends arrived, we looked for an eatery where they feasted on the lechon I brought from Carcar. Right before riding the motorcycle to the farm, we bought a kilo of fish, squid, and some spices from Boljoon Market.

The ride up to Palanas was priced by the locals at P100 per motorcycle but my friend decided to pay P120 and took 2 for all three of us. It was about 20 to 25 minutes ride up the mountain passing through a provincial rode that was sometimes really close to cliff edges that had no railings and should the motorcycle collide with another, it could literally send you hanging by the edge. Some sporadic pine trees were great consolations along the road and as much as the view beyond the cliff were awesome, I dared not stare too long because my imagination goes all over the place in the absence of protective railings.

Finally, we arrived. A tall steel gate was the entrance to the resort. It was already 4PM and everything inside were teeming with greens. Hanging vines, exotic plants, white-petaled gumamelas, tall labeled trees, subtitled with a common name or a scientific name. It felt like going into an educational tour back in the days.

We were escorted to our accommodation. After leaving personal belongings, we toured the roof deck. Right where the stairs end at the top showcase the mini bar / kitchen. You don't have any idea what kitchens do to me. I went nuts and my happy cells bounced excitedly while wearing a regular expression. My friends stood at the open roof scanning the surrounding mountain backdrops with "wows" and "oohhhs". I blurted my share too but it was first upon hearing Kris (the receptionist) say "THE KITCHEN IS ALL FOR YOURSELF because you are our only guests sleeping in this building for the evening". "Whooa" beat that! Looking at our spice inventory, I said, "I may need some salt, some pepper, and lemon grass. Do you have these items for sale?" She paused, then said, "I think I can get those to you for free." "How about cooking utensils, frying pan, laddle, a stove, gas, plates, forks and spoons?", I went on asking. She said, "I can get you those too. And do you need a rice cooker?" Nah.. my jaw dropped to the ground. She was willing to provide all items I needed.
=== !!! may i pause for a somersault !!! === She lent me their rice cooker!! Other than the kitchen, she explained that we will be charged an hourly rate of P100 for every hour we consume using the karaoke device. My, my, my.... did you just give me two of my favorite pastimes? Any last hint of sanguine tendencies in me went alive.

That night I cooked for us Fish tinola, lumayagan (squid sauteed in onion and garlic), and fried fish. There was nothing better than dining on a roof deck, just you and companions, eating sumptuous dish, under shining stars and bright moonlight. The mountains hid behind pitch-dark backdrops and silence was gently broken by turkey gobbles and insect buzzes. I grew fond of one strange bug that didn't budge even when I went too near to take my sharpest photo.

After dinner, loud karaoke started. A clan in reunion were also doing their runs and rifts at a nearby function hall a few meters away from our building. You are kilometers above sea level! What do you expect? So we sang as loud as we could not minding the neighbors a hill away. I hope no animals or fouls died after we have disturbed them on their sleeping hours. When we could no longer sound a note due to exhaustion, we lounged on a swinging canopy bench directly staring at the moon glowing at the wide black expanse until my companions dozed off to sleep. I was drawn to the glorious moon and so I took snapshots of it. Sadly, none registered sharply.

After a while, we settled onto our respective beds. A white butterfly I saw fluttering on the hallway followed me to bed.

The next day, I woke up early to fix us breakfast: bulad (dry salted fish), egg omelet with lots of tomatoes, fried rice and what was left of our food the night before. We ate until we were satisfied and ready for a walk in a park.. uhmmm .. i mean "ZOO". Palanas has a mini zoo. A steel gate facing our steel gate exit was Palanas mini zoo. It's time we met with the gobbling turkeys, grunting ostriches, wild colorful fowls, cat-fox, tortoise, bleating sheeps and lambs, cows, python, and monkeys. The low hanging trees also had us climbing and of course a picture with the lone aircraft inside the forest. How in the world did it get there?

Lest we start liking the zoo life too much, we headed outside and then back inside the main farm to stroll along their fish ponds. And if the ponds were too murky to spot a fish, there are the glass aquariums. The swimming tilapia just had to be fried butterfly tilapia for lunch. While waiting for the food to be served at the roof deck, we settled for a dip in the pool which later became swimming, and then water sliding. I had the most fun since I was late to get off the pool. Surprisingly, in a very remote location, these pools were well maintained. The water was very clean despite the growing trees around it.

Finally, lunch. We were very quiet. Although unspoken, but it was sad leaving Palanas too soon. If there was only a way of storing fresh air, I would have already hoarded a lot so I could share it while sitting in a jeepney along Escario and Capitol Streets.

There was not too many spots in the vicinity that had access to Sun network but we were lucky to catch one enough to call the motorcycle driver in Boljoon market to fetch us from the resort. We bid goodbye to the crew and said we will return someday.

On the way back, Ilihan Rock and the surrounding coasts in Boljoon were pronounced and clear at certain curbs on the way back to lowland. Our driver suggested we stop to take photos just like the foreign tourists usually do. And we did. We also stopped to take a look at the old and ruined watch tower across the highway before going to Boljoon church, eat tempura and drank a plastic of orange juice. Now that was the conclusion I needed. Not the bus ride that followed..

Tip: When you are coming from the south and you need to head out to Cebu City late in the afternoon, do not be too picky and proud. Catch the first bus that stops... be it regular or air-conditioned as long as it has vacant seats. Believe me, standing the whole trip through even on an air-conditioned bus over an approximately 3-hour period is not at all pleasant.

High-Fiving Mr. Kimbob!

We were just passing by SM's sidewalk when a familiar picture glared at me and I glared back. Could it be? Did he finally?

If you remember, a couple of years back, I and some friends flew to Angeles, Pampanga to head out to Tarlac for Mt. Pinatubo. When we were too spent to even think about what to eat, we settled to take a quick dinner in SM - Angeles. It was not a familiar place so we thought the food court must offer several ready fast food options. We went where the people were going and fell in line. It was there that we met Mr. Kimbob. I am not going to detail any further about the first time but if you are curious, read Where to Eat in Angeles.

I couldn't believe my eyes so I made sure I blinked to validate my find. "Ho. Ho. Ho!" I must've shouted at my friend and excitedly said "It's finally here!". We were out for another itinerary so we agreed to visit it at a later time.

A week or so passed and I grew restless and knew we had to meet Mr. Kimbob in Cebu. One SMS took my friend off her seat fast and we found ourselves on our way to SM - Cebu.

The moment we neared the food court, we couldn't stop scanning until we found the corner where Mr. Kimbob sat. We could have ran if there were no obstacles along the way but we were certainly ecstatic to "high five" a long time acquaintance. Age does bring about changes. Mr. Kimbob changed quite a bit. Our Cebu branch is smaller and the enormous Bibimbob signboard (see here) was no where to be found. I find it difficult to outgrow old things and was looking for that sense of familiarity.

Nonetheless, I wasn't up for a let down. I realized that they have a promo going so we ordered their Combo Meal (Bibimbob + Jap chae + Dumpling + 16 oz soda for P176). BIBIMBOB at last! Rice at the center, topped with sunny side up egg, and surrounded with a variety of fresh vegetables ( kimchi, chayote, cabbage, carrots, cucumber). Jap chae is sweet potato starch noodles also named Korean Glass Noodles because it is translucent when cooked. Don't forget gochujang (Korean spicy sauce) in your festivity.

I "Heart" Lettuce Wraps

Some memories stick like glue in the mind. If it was a good one, you'd certainly want to repeat the same at least one time more. That first lettuce wrap dining experience definitely got me hooked such that even after several months have passed, I still drool over the thought of literally drooling at each mouthful of meat and spice filled lettuce. Not to mention wetting hands while folding the leaves to keep the fillings intact.

That first time was in Pearl (Korean Meatshop and Restaurant) right across Jo's Chicken Inato in Osmena Blvd., a few blocks away from Cebu Capitol. This time, Laagholic Bee, famous for her controversial blog (pun intended) More than Just Love in Loveland, succumbed to a sporadic and random invite to Gaisano Country Mall for lunch. Initially, we thought of the Japanese restaurant but somehow the road brought us to Korea (figuratively).

"PEARL" stood out clearly on an overhead banner and the smaller inscriptions below it read "Korean Meatshop and Restaurant". Both of us were surprised at how fast it has branched out across Cebu in maybe a period of less than 5 years. The other two locations they stand along A.S. Fortuna St. and another near Cebu Capitol Site.

Picture placards of lettuce, chop sticks, table-top grill, and kimchi flashed in mind. My stomach has gone giddy already and I couldn't wait to sit and start digging on their side dishes. I personally find their chopped cabbages (mixed with chili flakes, taste of sesame oil, salt and vinegar) my favorite rice substitute. As long as it is free and refilled limitlessly, I care less for rice. At P200, you are served a plate of samgyeopsal, and unlimited garlic, onion, chili paste, soy bean paste, soup, cabbage and lettuce leaves -- all served fresh,

Dining is so much fun when you are doing the grilling and the mixing of your food by yourself let alone the enjoyment of working the chop sticks, filling, and folding the lettuce leaves using bare hands. Every mouthful is delightful while the sauce drips down your lips. Instinctively, you reach your tongue out to catch it before it drops on your office shirt.

Tip: If you plan to eat inside a walled restaurant that has an open grilling station (e.g. CARNIVORE), you may want to consider putting on your extra shirt. That is so you can change back to your office top before going back to work. Otherwise, you will be conscious of how you smell like smoked meat around your colleagues.

This lettuce wrap dining experience is surely one I would like to to do again and again. Probably because I enjoy cooking food myself. Plus, it has the laid back and fiesta feel of the Filipinos' version -- the Boodle Fight.

I was thinking of my family back home whom I wanted to share this experience with. Finding help from shelves of Imported Goods in our local mall, I managed to purchase a bottled soy bean paste, lettuce and cabbage cloves, chili paste, and pork strips. I put together a replica of my PEARL experience. I was happy to serve my parents a healthy Korean-like dish and engage them in a fun lettuce wrapping food bonanza.

Indian Curry House, Finally!

Old Store in Mabolo, Cebu

This was in my bucket list for 2 - 3 years since I first saw the shop at its old location (P. Almendras St, Mabolo, 6000 Cebu) and ever since my colleague raved about it multiple times. I visited the place myself quite a number of times too but it was never open until I found out online that it had stopped operating. It closed before I even had the chance to understand my confrere's excitement about the place. There was not much news about it so I figured, it must have gone bankrupt or the owner just called it quits.*

Reinvented

It was not until a year ago that I learned about its transfer to a new location near SM Cebu City. Thanks to the same raving friend who tipped me about it. His persistent persuasion really got me excited all over again.

Finally, the day has come. Along with another hunter, we hit on it. The location, although a little pushed from the highway and discreetly tucked behind Angel Locsin and Mang Inasal, is still not lacking of foot traffic. It was already 8PM when I arrived and there were still a lot of people inside APM Mall across SM Cebu.

The store is not brightly lit, except for a few hanging handcrafted chandeliers. It worked for me as I wanted to get in unnoticed. Grand welcomes (also entrances) scare me so I felt comforted that the owner was preoccupied with paying customers. I casually looked up to their menu on a billboard and mentally recited my orders.

When Anjali, the gabby owner, asked for my order, I said it like I knew how they are pronounced:

Roti - 80 (20 per piece)
Mutton Biryani - 220
Mango Lassi - 70
Sweet Lassi - 60

Among the orders, I gush for their Chicken Dal, Roti and Mutton Biryani. Roti was a personal recommendation by the owner over Naan as she says the former brings in more health benefits than the latter. It is made of whole wheat cooked on a tava or griddle. On the other hand, naan's primary ingredient is white flour brushed with butter and cooked in a tandoori oven.

Mutton Biryani

Tear roti by hand, brush it on (or on it) the chicken dal that is made of curried lentils, and taste the inexplicable diffused spicy flavor exploding in your mouth and exiting through your nostrils. Do it again, and do it fast because the chicken dal tastes a lot better when hot. Like a hungry earthling, take a spoonful of the biryani, then reach out for the fish masala, then the roti and chicken dal again. "Whooaaa" .. that was superb! The after effect of the spice will linger so make sure to wash it off with lassi.

Sometimes in life you feel cut and wounded.

Unsure about where to go and what to do.

You are a fish. Caught in a world of chaos.

Chopped, salted, and cured in garlic.

And as if it wasn't enough, dashed also with pepper.

Every spice -a lesson.

The older you get, the more you season.

If you are lucky, an opportunity is cooking at the other end of the line.

Maybe a job, a lifetime partner, a major travel,

a dream business - each making up the coating.

Much like a batter of cornstarch,

maybe some additional experiences:

salt, pepper, garlic, egg, oil/butter.

Marry both before frying.

It gets pretty hot too. Disagreements of two,

conflicts with the boss,

deadlines to beat, financial defeat,

opportunities lost.

Sometimes it just feels like being fried both sides.

There will be better days. Go to the beach.

Get some tan and stay under the sun.

When it is brown and golden,

Uuuhh.. how my heart has fallen.

Put on some entertainment.

Be patient. Don't hurry.

While the music plays, worries drift away.

Add more experience. Bring on the sauce.

Blend sweet memories

Garlic,onion and ginger minces, 'though kinda sad

will wake when bathed with vinegar and

tastier with salt and soy sauce.

Tomatoes are posh. They are like red balloons.

Vividly they fly into the blue sky.

Lay on the pile some jalapenos.

And "whoooahh".. sound that cresciendo!!

There is so much good in life.

And so much that's more than meets the eye.

Keep exploring. Don't get stuck in a traffic. If you do, walk your way out smiling.
