Chocolate-Cherry Coffee Mix

Ingredients:

3 cups sugar
2 cups confectioner's sugar
1-1/3 cups powdered nondairy creamer
1-1/3 cups instant coffee granules
1 cup baking cocoa
1 envelope (.13 ounces) unsweetened cherry soft cherry soft drink mix
6 cups miniature marshmallows, divided
6 cups holiday sprinkles, divided

Additional ingredient (for each serving):

1 cup hot milk

Instructions:

In an airtight container, combine sugar, confectioner's sugar, creamer, instant coffee, cocoa, and cherry drink mix. Store in a cool, dry place for up to 2 months.

To prepare gifts:

Place 1 cup mix in a 12-inch disposable decorating bag. Fold corners of bag into the center and roll bag down; secure with transparent tape. Place bag in a second disposable decorating bag. Top with 1 cup of marshmallows and one teaspoon of sprinkles. Gather and twist the top of the bag. Attach ribbon and gift tag. Repeat to make 5 more gift bags.

Yield: 6 gift bags (1 cup/8 servings per bag)

To prepare coffee:

In a mug, dissolve 2 heaping tablespoons mix in hot milk and stir well. Top with marshmallows and sprinkles.

Yield one serving

Onside Kickin' Chicken Kabobs

2 T. olive oil
2 T. fresh cilantro, chopped
juice of one lime
1 t. ground cumin
salt and pepper to taste
2 boneless, skinless chicken breasts, cubed
1 zucchini, sliced
1 onion, cut into wedges
1 red pepper, cut into 1-inch pieces
10 cherry tomatoes
In a bowl, combine oil, cilantro, lime juice and seasonings. Add chicken; stir to mix well. Cover and refrigerate for at least one hour. Thread chicken, zucchini, onion, red pepper and tomatoes onto skewers. Grill skewers over high heat, turning occasionally, for about 10 minutes, until chicken is no longer pink in the center. Makes 4.

Directions:

Add essential oil to baking soda and blend. Next incorporate the liquid soap several drops at a time until a creamy paste forms.

Homemade Cleansing Travel Wipes

2 Tablespoons Water

1 Tablespoon Rubbing Alcohol

6 Drops of Tea Tree Essential Oil

3 Drops of Lavender Essential Oil

Directions:

Blend ingredients together in a small measuring cup. Individually stack and fold up to 24 paper towels. Saturate the paper towels with the mixture and store in a small, heavy duty zip lock type freezer bag. Retrieve them one at a time and use them as hand wipes.

1/2 tsp. sea salt

2 Tbsp. granulated sugar

1 cup all-purpose flour

11⁄4 tsp. baking soda

Preheat the oven to 375 degrees F, and line a muffin pan with paper cups. Form the cups into heart shapes by placing a marble or small crumbled piece of foil between the outside of the paper cup and the inside of each circle. Set aside.

In a small bowl, combine 3 Tbsp. of the butter with 1/2 tsp. of the herbs, 1/4 cup cheese, and the grated potato. Set aside.

In a medium-sized mixing bowl, combine the mashed potatoes with buttermilk, egg, salt and sugar. Add the flour and baking soda, and mix just until combined. Fold in remaining butter, herbs and cheese.

Fill each paper cup 3/4 full of batter. Divide the topping evenly amongst the muffins, about a tsp. on top of each one.

Bake until golden brown, about 25 minutes.

Makes 1 dozen muffins

Resolution to Recycle

My resolution for 2013 is to practice the 3 R's. Reduce, Reuse and Recycle.

To reduce waste, reuse materials and recycle where appropriate. This year, I intend for my personal recycling program to take off.

Most items used every day - especially containers - are made of materials that can be used over and over again. Recycling is collecting used materials that would otherwise be thrown away and breaking down and remaking these materials into new products. Recycling saves resources and sends less trash to landfills and incinerators.

I need to get serious and really commit myself to "rethink" old habits of throwing certain things away. I find myself cringing when someone in my household tosses a bottle, can, jar, or even an old magazine issue.

So, what is your #1 recycling challenge?

I need a designated area / totes or containers for paper, plastic, glass & aluminum. And to place it in a convenient area, an obvious area. Right now. I'm using a brown packing box for my recyclables and it's shoved in a corner.

I'm sure I'll be using some of these materials for crafts or even to store craft supplies. I will attempt DIY upcycling projects.

Items to recycle include paper, batteries, plastics, glass, used oil, tires, electronics, food waste and others.

Benefits of Reducing and Reusing

Prevents pollution caused by reducing the need to harvest new raw materials;
Saves energy;
Reduces greenhouse gas emissions that contribute to global climate change;
Helps sustain the environment for future generations;
Saves money;
Reduces the amount of waste that will need to be recycled or sent to landfills and incinerators;
Allows products to be used to their fullest extent.

Ideas on How to Reduce and Reuse

Buy used. You can find everything from clothes to building materials at specialized reuse centers and consignment shops. Often, used items are less expensive and just as good as new.
Look for products that use less packaging. When manufacturers make their products with less packaging, they use less raw material. This reduces waste and costs. These extra savings can be passed along to the consumer. Buying in bulk, for example, can reduce packaging and save money.
Buy reusable over disposable items. Look for items that can be reused; the little things can add up. For example, you can bring your own silverware and cup to work, rather than using disposable items.
Maintain and repair products, like clothing, tires, and appliances, so that they won't have to be thrown out and replaced as frequently.
Borrow, rent, or share items that are used infrequently, like party decorations, tools, or furniture.

Because of its association with insect repellency, citronella is usually overlooked as an aromatherapy oil. That's a shame because citronella possesses warming and activating qualities on both the physical and mental levels.
Physically, citronella will produce a subtle sensation of warmth when properly diluted in a massage oil and applied to the skin. Dilute 3 drops of essential oil per teaspoon of massage oil. Using this in a friction massage may help bring relief to painful joints and muscles. Perform a simple friction massage by rubbing a targeted area vigorously until warmth is produced by the friction. The idea is to bring blood and soothing warmth into the affected area. Combine citronella with eucalyptus to heighten this effect, or use lavender to make the effect more moderate and balancing.
Like its closely related counterpart, essential oil lemongrass, citronella is astringent and can help with oily complexions. First, test a single drop of oil on your inner arm to make sure that it won't irritate your skin. Then apply no more than two or three drops to a soft cotton ball to gently wipe clean any oily areas. Follow this with your regular cleaning and moisturizing routine.
On a mental level the aroma of citronella can be gently clarifying. Combining citronella with lemon will support its clarifying benefit while the addition of geranium and rose will make it more moderate and balancing. People who object to the aroma of citronella can easily modify its damp-musty undertone with a few drops of rose otto.

PATIO SPRAY:

11 drops citronella
5 drops grapefruit
2 drops cedarwood
1 oz. water in mister.

ACCEPT CHANGE:

3 drops each
citronella and ylang ylang,
4 drops lemon
in a candle diffuser.

SPRING FRESH ROOM SPRAY

Ingredients

4 drops lemongrass essential oil
8 drops fir needle essential oil
2 drops lemon essential oil
2 drops citronella essential oil
2 ounces distilled water

Directions

Add the oils to the distilled water and pour into spritzer bottle. This delightfully scented blend refreshes rooms and closets, filling your home with the scent of spring.
