Now almost a year later I dream of it on a daily basis. Today I'm lucky and get to do it (just for today since Dexter is sick) and I am totally into this. I can totally sit here and watch cartoons and play with Dexter and then do the laundry and FINALLY start writing regular blog posts. Unfortunately that will not be happening anytime soon. At this point Josh and I have decided to really hit our debt hard and by having two incomes right now that will help. We also have a wedding to plan! Josh and I officially got married on August 11, 2012 but are planning on a ceremony and reception next fall. So much to save and payoff before I can be that stay at home mom I am wishing for. So for now I am going to enjoy this day with him and completely dive into Pinterest while he is taking his morning nap to get some ideas! Maybe I'll even post some ideas here soon.

- Dexter's Mom

Welcome to Kitchen Katastrophe. I am a mom to a 1 year old. Girlfriend to a Loss Prevention Analyst and daughter to some great parents. I enjoy the simple things in life. Such as Keeping up with the Kardashian marathon's. Laying in bed with my son and watching Toy Story. Refusing to try seafood. Always wearing a ballerina bun on the top of my head at work. Excepting the fact that I do not know how to properly spell and use grammar. Lastly, my inability to cook real dinners.

Some people have a definition of what a 'real dinner' is. Mine is simple. Anything not frozen, pre-cooked or canned. I know the inner Sandra Lee in me needs to use some Semi-Homemade Recipes every once in awhile but I want to cook a real good meal by scratch for once! My boyfriend, Josh, and I have decided that it will not be July forever so nights of cold meat sandwiches and grilled meats with potatoes and corn is not going to cut it. It's not like I have never eaten or seen a good meal it's just that I become a Nervous Nelly when making it. "How long do you grill a steak?" "Fresh or frozen fruit?" "How do I clean this vegetable?" "Is that suppose to be on a chicken breast?". I have no idea.

As many of you (by you I mean the three people that will read this that I know) my mother is an excellent cook/baker. She use to be a cook in the Army so she knows not only good food but how to make it taste good in bulk. She can whip up a pie crust from scratch in under 10 minutes and can verbally recite most family recipes. I, on the other hand, am constantly texting and calling my mom to make sure you can sub this for that and only use a certain type of oil and what not.

Lots of you (haha, I'm assuming I have many people reading this) are wondering what this blog will be about? Well, honestly it could start at cooking and end with me telling you about how I finally figured out how to get stains out of my son's clothes. I'm not going to be sanctioned to one sort of writing or blogging. Most of it will be my learning process through cooking and baking and hopefully will turn into me creating my own dishes (one can hope!). So take this ride with me. And be careful if you're sampling my food. You might get a few eggshells in your cookie!

- Dexter's Mom
