I don’t know why it’s taken me so long … but I just discovered making  cashew creamer. It’s seriously SO easy and just 3 ingredients in the blender:

  • cashews 
  • dates 
  • Purified h2o

I don’t want to include amounts of each ingredient, because it’s completely customizable. 

Want it super extra creamy?! Add more cashews! 

Want it slightly creamy and fewer calories? Take out some cashews! (Or add more water)

Adjust desired sweetness with the dates. 

…me personally… I like it super creamy + frothy 😜 and sweet! 

It’s a 👌🏻👌🏻👌🏻 addition for your cozy beverage of choice. I like to add it to a cup of boiling water, cacao powder and Vital Proteins Collagen Protein powder for a morning (hot chocolate) breakfast of champions 

.. also use more water and less dates/ cashews for a smooth cashew 🥛 🥛 🥛 MILK – homemade & w/o all those extra gums and synthetic vitamins like the typical store-bought brand.

I love me a yummy meatloaf recipe, but I really LOVE a healthy turkey meatloaf recipe… loaded with veggies, lean, gluten-free, and low-carb for the times when I’m trying to cut back.

For the last 4 months I’ve been participating in the Core Rehab Program by Erica Ziel. This recipe came with my membership to the program, and it’s 100% the best meatloaf recipe I’ve tried yet. Since beginning the program, I make it bi-weekly, because it’s so darn easy, healthy, satisfying and delicious.

Core Rehab Program Review

Erica Zeil Core Rehab Program Review

I began the program in October of 2017. I was 4 months postpartum, and I was eager to get back in shape. With my first pregnancy I struggled to find my deep core for a long time, seeking high intensity workouts like crossfit, HIIT workouts, and long distance running. I got in pretty good shape, but it took me a very long time to find my deep core (over a year), which I have learned is essential to postpartum core recovery.

After completing the Core Rehab Program (took me about 3 1/2 months), I sincerely feel that I have a better understanding of my body than I have ever had before. I understand how to properly connect my body and core both before and during exercise. This mind body connection has been life changing, and it has yielded results for me that go beyond improving my body confidence and physical appearance.

I have gained such an important understanding of my body: where it is still weak, and where I have strengthened it. I look forward to continuing core rehab program as a significant part of my fitness routine, and I also believe this program has laid the foundation for me to tackle higher intensity workouts again soon.

What is the Core Rehab Program?

  • The Core Rehab Program comes in 6 phases. Phases 1-3 are released two weeks apart, and phases 4-6 are released 3 weeks apart.
    • PLUS a bonus 12 week phase (which I am currently doing).
  • As a member you receive lifetime access to the program, and access to digital streaming tutorials and workouts from any device. (I would often find it on my phone and even took it on vacation). You can also print the tutorials and workouts.
  • Within the program there’s a beginner schedule (workouts under 30 minutes) and an intermediate schedule (workouts 30-60 minutes). I was in a lot of pain, and I was significantly out of shape when I started the program. I completed the first 3 phases as a beginner and moved to the intermediate program when I reached phase 4. Some of the workouts (especially phase 6) were quite challenging for my core, but I was ready to challenge myself! 😉 After kicking it into high gear… I really started to see results!
  • The program also includes information on digestion and nutrition. A 7-day meal plan is included. I’ve incorporated a lot of the dietary suggestions, but I’ve also been far from perfect! It was the holidays after-all, and I don’t like to diet too strictly while breastfeeding. I just try to be healthy, and I try not to over-eat. When I am done breastfeeding, I’d really like to give the dietary guidelines a better go (I mean… considering how yum the food is!)

There’s no rush to complete the program. Life happens… especially with kids. If you start it and take a break, it’s A-OK to come back where you left off.

Workout From Home!

My Favorite part is that I can do it from home. It is seriously so hard to get to the gym these days. Life is crazy busy, and I love the option to workout from home.

Ingredients
  • 1 egg (lightly beaten)
  • ½ cup rolled oats
  • ¼ cup frozen peas
  • ⅓ cup milk (or milk alternative)
  • ¼ cup chopped frozen spinach
  • ¼ cup red onion (chopped)
  • ½ cup sweet bell peppers (chopped)
  • ¼ cup Parmesan cheese (grated)
  • 1 ¼-1 ½ pounds ground turkey
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • organic ketchup
Instructions
  1. Preheat oven to 350 degrees.
  2. In large bowl, mix egg, oats, milk, onion, peas, spinach, bell peppers, Parmesan cheese, Worcestershire sauce, salt, pepper, and garlic salt.
  3. Add turkey + Mix well.
  4. Place mixture in an 8 in. X 8 in. X 2 in. loaf pan.
  5. Bake at 350 degrees for 75 minutes.
  6. Remove from oven & spoon off fat.
  7. Spread ketchup over meatloaf.
  8. Bake for 10 more minutes.
  9. Let stand for 10 minutes before serving
Notes
To make dairy-free, omit Parmesan cheese and use a milk substitute (i.e. coconut or almond milk).
Refrigerate extra. Best if eaten within 2-3 days of making

Macro Diet

When I finally made the decision to get back in shape after my first pregnancy, I tried many diets. I felt helpless to loose the last bit of weight that I wanted to until I discovered the macronutrient diet. I’m not currently dieting, but as often as possible I try to eat macronutrient balanced meals, because they keep me feeling full, I don’t have to eliminate certain food groups (causing intense cravings), and eating this way just makes me feel good!

Frozen Oatmeal

Frozen Oatmeal is something that I came up with after I had my son. It’s a great addition to a breastfeeding diet, because oats are a low glycemic and slow digesting, potentially aiding breastmilk production and increasing supply.

The holiday season was referred to as Christmukkah in my childhood home. I have fond memories of decorating the Christmas tree, lighting the menorah, playing dreidel, and watching Christmas Vacation. Occasionally I’d offer my help in the kitchen as my parents slaved away over holiday ham and potato latkes.

This year Eliza is old enough to really embrace the holiday season. She’s excited for Santa Clause, and we are getting ready for our family Hanukkah celebration! A family Hanukkah celebration means potato latkes galore, and I can’t help but offer a healthy twist on this traditionally greasy (yet tasty) recipe.

A Healthy Twist

I LOVE healthy variations on traditionally “unhealthy” recipes, and I’m always trying to sneak vegetables onto my daughters plate. Instead of the grease-heavy latkes I grew up with, I’m bringing zucchini latkes to the party this year! They’re light and crispy, the vegetables are in disguise, and they maintain the same delicious flavor and emotional sentiment as the childhood recipe I know and love.

Zucchini Latkes

I recently got together with my best friend April to create some healthy holiday recipes for The Tea Collection blog. We collaborated on these Zucchini Latkes and a Clean Cranberry Pie. Did you try the pie for Thanksgiving? It’s straight from heaven.

Ingredients
  • 2 russet potatoes, grated
  • 1 large zucchini, grated
  • ½ yellow onion, grated
  • ½ cup oat flour
  • 1 tsp baking powder
  • 1 egg
  • salt & pepper to taste
  • grape seed oil
Instructions
  1. Preheat oven to 425 degrees. Cover two sheet pans with parchment paper.
  2. Lightly fried in a healthy grape-seed oil and then baked in the oven, these zucchini latkes are a perfect healthy addition to your Hannukah, Christmukkah, or holiday plate! Plus they're gluten-free!
  3. Spread half of the grated vegetables on a clean kitchen towel, then roll and wring the towel to draw out the excess moisture. Transfer to a large mixing bowl. Repeat with the remaining vegetables.
  4. Lightly fried in a healthy grape-seed oil and then baked in the oven, these zucchini latkes are a perfect healthy addition to your Hannukah, Christmukkah, or holiday plate! Plus they're gluten-free!
  5. In a small bowl, combine the oat flour, baking powder, salt and pepper. Add to the vegetable bowl, and mix well, using your hands to evenly distribute the flour and baking powder.
  6. Lightly fried in a healthy grape-seed oil and then baked in the oven, these zucchini latkes are a perfect healthy addition to your Hannukah, Christmukkah, or holiday plate! Plus they're gluten-free!
  7. Stir in the egg and mix well to combine.
  8. On the stove, add oil (1-2 tbs.) to a large non-stick or cast iron skillet and bring to a medium heat.
  9. Grab small handfuls of the potato mixture and pat into pancakes. Place pancakes into the pan (as many as will fit, leaving enough room to flip with a spatula).
  10. Set them on heat for 2-3 minutes until they brown slightly – this will make them move and/or flip over with ease. Use additional oil sparingly and as necessary.
  11. Once the bottoms are slightly browned and tops look drier, flip the pancakes to cook the other side for 4-5 minutes.
  12. Then using a spatula, transfer one by one onto the baking sheet. Continue baking them in the oven for about 12 more minutes (no extra oil in needed).
  13. Serve them up nice and hot and top them off with your favorite sweet and savory sauces.

Have you heard of bulletproof coffee? It’s basically coffee with a tablespoon or more of grass-fed butter and coconut oil or MCT Oil blended into it.

When I first heard of bulletproof coffee, I thought that is sounded so gross. Drinking that much fat? No thank you! However, there are a people who believe that filling up on healthy fats keeps you satisfied longer and keeps carbohydrate cravings at bay. These are the “keto people”, and they promote a keto diet.

Diet or no diet though… drinking butter has become my jam. I’m not much of a coffee drinker, so I came up with a yummy and chocolatey AND healthy alternative. I call it…. bulletproof hot chocolate.

This bulletproof hot chocolate recipe makes a great breakfast to start the day. It also makes for a delicious dessert to cozy up with on the couch after a long work (or parenting) day in the winter. AND… let me tell you… those heaping tablespoons of butter and oil grow on you in the best kind of way. It will make your hot chocolate oh so frothy, creamy, and freaking delicious.

Collagen Protein

I also like to add in a scoop of Vital Proteins Collagen Protein, because I’m real into that lately. I’m convinced it really works (as a hair skin and nails supplement), plus it adds some quality protein to your cozy beverage.

Ingredients
Crust
  • 1 cup walnuts
  • 4 tbsp. coconut sugar
  • 1 tsp. ground ginger
  • 1½ cups almond flour
  • 4 tbsp. coconut oil, melted
  • 1-2 tbsp. molasses
  • 1 pinch of salt
Filling
  • 12 oz bag of fresh cranberries
  • 1½ cups organic coconut sugar, divided
  • ¼ cup water
  • 3 large eggs
  • 2 egg yolks
  • 1 pinch of salt
  • ½ cup fresh lemon juice
  • 4 tbsp coconut oil, at room temp
Garnish
  • extra fresh cranberries
  • sliced almonds
  • fresh mint leaves
Instructions
Crust
  1. Set oven to 350F
  2. Put walnuts, coconut sugar, ginger and almond flour in food processor; process until everything is finely ground.
  3. Delicious spiced "gingersnap" crumble crust with a silky, sweet cranberry curd filling. Topped with sugared cranberries and almond slices, and made with only the cleanest ingredients.
  4. Add the coconut oil, molasses and salt and process briefly to combine.
  5. Remove the mixture from the processor and transfer to a 9-inch pie plate. Pat the mixture into the bottom of the dish, and up the sides to form your crust.
  6. Delicious spiced "gingersnap" crumble crust with a silky, sweet cranberry curd filling. Topped with sugared cranberries and almond slices, and made with only the cleanest ingredients.
  7. Bake for 10-12 minutes. Then, set aside to cool.
Filling
  1. Combine the cranberries, 1 cup of the sugar, and ¼ cup water in a saucepan.
  2. Set the heat to low and simmer the cranberries, uncovered, for about 15 minutes until they've popped and the mixture is quite thick.
  3. Remove from heat to let the mixture cool slightly and then puree in a Vitamix until completely smooth.
  4. Delicious spiced "gingersnap" crumble crust with a silky, sweet cranberry curd filling. Topped with sugared cranberries and almond slices, and made with only the cleanest ingredients.
  5. In a saucepan, combine the puree with the eggs, yolks, salt, lemon juice and remaining ½ cup sugar, and whisk together.
  6. Set over medium heat to cook, stirring constantly until the mixture thickens and coats the back of the spoon. This will take about 10 minutes or so.
  7. Push the curd through a mesh strainer, using the back of a spoon to get it all through.
  8. Let the curd cool for a few minutes and then add in the room temperature coconut oil, bit by bit, while you stir to melt it.
  9. Pour the curd into the pie crust and smooth out evenly. Then set in the fridge and chill until firm, about 2 hours or so.
Garnish
  1. Top off your pie with a sugared cranberry garnish. Just roll damp cranberries in organic cane sugar (or coconut sugar) and let dry.
  2. For a little extra fancy, accent the inner edges of the crust with slivered almonds, and pop a fresh sprig of mint in the center of your dish.
Notes
I recommend storing any leftover pie in the freezer covered with foil for up to a week.

This chicken bone broth soup recipe is loaded with protein, vegetables and all around hearty goodness. This recipe also makes perfect for someone who is a little under the weather during the flu season.

Bone Broth

I’m probably very late to jump on this band wagon, but I just discovered bone broth. It has been linked to various health benefits, including: joint health, digestive health, immune system health… AND it apparently helps to reduce cellulite (okay… thumbs up emoji). Rehabilitation

Since I had my baby in June, I’ve been very immersed in rehabilitating my body. They say it takes up to a year to feel like your old self again, and I’ve been learning all about how supplementing the diet with bone broth and collagen can boost the healing process. I’ve given up a lot of grains in my diet (which is hard for me… I love my oatmeal) for healthy fats and good/ lean sources of protein. I’ve ditched beans for the time being, and I enjoy a lot of lentils and other delicious produce – peppers, cucumbers, avocado, kale, beets, berries, etc.

This is the collagen supplement I use! I love it and I swear by it that my skin looks younger and more fresh!

My diet hasn’t been perfect (I definitely ate a large baguette and a significant amount of cheese today… plus some of my daughters halloween candy – that’s ok cuz’ I’m breastfeeding… right??)… but on the days that I am being good, I have noticed significantly positive changes in my digestion, my overall zeal, and my skin.

I guess you could say that I am a believer in the bone broth. I buy into it 100%, and I think you should give it a try too.

This chicken bone broth soup recipe has been my go to. I’ve made it three times in the past three weeks, and it has been my dinner at least 4/7 nights each week. I’m not sick of it yet, and it makes me feel good. I like to add extra cayenne pepper to my recipe, but if you aren’t into spicy ease up on the pepper while still enjoying unbelievable flavor and heartiness.

Ingredients
  • 6-8 organic chicken tenderloins (frozen or thawed is ok)
  • 32 oz. organic Bone Broth
  • 3 large carrots (chopped)
  • 3 celery stalks (chopped)
  • ½ sweet white onion (diced)
  • 2 cups chopped kale
  • 1 14.5 oz can diced tomatoes
  • 1-2 tbs. olive oil (or butter)
  • 1 clove garlic (minced)
  • 1 large (or 2-3 small) sweet potato (peeled and cubed)
  • 1 bay leaf
  • 1 tbsp. onion powder
  • 1 tsp. pink himalayan salt
  • 1 tsp. garlic salt
  • 1 tsp. black pepper (or more to taste)
  • 1 tsp. - 1 tbsp. cayenne pepper (adjust to spice preference)
Optional Garnishes
  • Serve with avocado, cilantro or parsley, cheese or sour cream on top.
Instructions
  1. In a small skillet warm olive oil over medium heat. Place minced garlic and onion in the skillet and sauté on low until onions are translucent and lightly golden brown (stirring occasionally).
  2. While onions are cooking, prep the remainder of the ingredients.
  3. Place all ingredients in the crockpot and cook on high for 3-4 hours or low for 6-8 hours until chicken is cooked through.
  4. Remove chicken from crockpot and shred it.
  5. Add chicken back to crockpot and stir to combine.
  6. Serve warm and enjoy with optional garnishes!

Juicing Vs. Blending

Last summer I purchased a juicer. I love me some healthy juice; however, I have a few issues with the juicer: 1. It requires more cleanup than my Vitamix, 2. I feel like I’m wasting a lot of the fruits and vegetables I’m using, 3. there is extra compost to get rid of, and 4. in my opinion juicing is more expensive than blending.

Juicing has it’s health benefits too, but sometimes I’d just like some refreshing juice without the hassle of the juicer.

I seriously love my Vitamix… it’s by far my favorite kitchen appliance (aside from my food processor), because it’s simple to use and easy to clean! I’ve used it to make muffins, sauces, cauliflower mashes, smoothies, and now… juice!

I came up with this little Vitamix green juice recipe. It’s no Jamba Juice smoothie, but it’s cool, refreshing, just the right amount of sweet, and perfect on a hot day when you want something light. It also feels detoxing in the body, so it keeps me feeling energetic and fresh.

Ingredients
  • ½ Cup Frozen Fruit (I like to use mixed berries or mangoes)
  • 2 Handfuls Frozen Greens (I like to use frozen spinach)
  • Juice of ½ Lemon
  • ½ Cup Water (or more depending on how thick you like your juice)
  • ¾ Cup Ice (Or 3-4 large ice cubes)
  • 1 Tsp. Raw Honey (Optional)
  • 1 Pinch Cayenne Pepper (Optional)
Instructions
  1. Place all ingredients in your Vitamix or blender and blend until smooth.
  2. Add tablespoons of water as necessary and use your vitamix tamper tool until your juice reaches your desired consistency.

RX Bars

I’ve recently discovered RX Bars (I don’t know what rock I’ve been hiding under), and I’m obsessed! The ingredients listed on the label are clean and great; they’re ingredients that I feel comfortable consuming, especially during pregnancy while I’m slow cooking a precious angel.

Vegan RX Bar Recipe

If you haven’t tried RX Bars, they are basically a Lara Bar, but with extra protein. And who doesn’t want a clean healthy snack with extra protein? So good! The protein added to RX Bars is egg white protein. This is awesome and I’m all about that, but I was thinking that the vegans of the world would also probably love an RX Bar. I thought about writing a letter, but I figured coming up with my own recipe would suffice ;).

You guys… these bars… they might give my Lara Bar Recipe a run for it’s money… and those Bars are pretty darn good. This RX Bar recipe though… so tasty and oh so satisfying. I’m actually really proud of myself for this one. Also… making your own RX Bars is muuuuch more cost effective!

RX Bar Recipe: This vegan RX bar makes the perfect vegan protein bar. It's perfectly sweet, nutrition packed, and gluten free. A great on-the-go snack, workout snack or part of a healthy breakfast. Recipe is easily customizable for different flavor options.

Serves: 8-10 Bars
Ingredients
Instructions
  1. Place dates, protein powder, whole raw almonds, ½ cup shredded coconut and h2O in your food processor.
  2. Blend for 5-10 minutes until mixture becomes a dough like consistency.
  3. Combine dough, ¼ cup shredded coconut and ¼ cup almond slices in a mixing bowl (I kneed the almond slices and shredded coconut into the dough with my hands).
  4. Make a dough ball, and place it on your counter (on top of some parchment paper - for easier clean up).
  5. Using a rolling pin, roll the dough to be about ½ an inch thick. (You can also use your hands to mold the dough into rectangle or square shape that is ½ inch thick.)
  6. Use a knife or pizza cutter to slice the dough into rectangle or square bars
  7. Refrigerate your bars for about 20-30 minutes and enjoy!
Notes
Instead of rolling and slicing out the dough... you can make them into little energy bite balls!
Also - this recipe is also completely customizable! Fold in chocolate chips or other dried fruit (instead of almond slices and more coconut) to change up the flavor!
