If we do say so ourselves, she’s chosen a fabulous and mouth-watering catering menu for the affair. The feast begins with passed hors d’oeuvre such as Swedish Meatballs, Figs with Goat Cheese Wrapped in Bacon, Smoked Salmon on Belgium Endive, Brie and Raspberries wrapped in Phyllo Dough, Baby Lamb Chops, and Lobster Puff Kisses.

She’s also having a Cold Table with crackers and assorted cheeses along with a Raw Bar consisting of  Cocktail Shrimp, Cherry Stone Clams, and Oysters with Cocktail Sauce and Horseradish.

And what do we have to report? Krause Caterers is catering the Tehan-Carragan wedding at the Boathouse in Hartford, Connecticut in September. And it just so happens that the bride, Margaret Tehan, is also our graphic designer and web designer. We’re thrilled to be a part of her special day and are looking forward to serving the fabulous menu that she has chosen to serve to her guests. As official caterers for the Boathouse, we have to say that the place is very special… particularly for weddings. The view from the balcony overlooking the Connecticut River takes your breath away. It’s the perfect setting for cocktails and passed hors d’oeuvre.

Margaret chose the following menu:

Cold Table:
Assorted Cheese Boards:
Brie, Havarti, Jack, Muenster, Cheddar and Jack
Assorted Crackers
Raw Vegetables and Dips
Fresh Sliced Seasonal Fruits

Passed Hors d’ Oeuvre:
Tomato & Basil Bruschetta
Vegetarian Egg Roll with Sweet & Sour Sauce and Spicy Mustard
Swedish Meatballs
Scallops Wrapped in Bacon
Mini Crab Cakes with Tarter Sauce
Hawaiian Chicken Sticks

After the cocktail hour has passed, her guests will be invited into the main dining room at the Boathouse for a stations wedding buffet consisting of:

Carving Station:
Roast Tenderloin and Roast Breast of Turkey – Sliced to Order
Served on Small White & Wheat Rolls
Condiments: Béarnaise Sauce, Horseradish, Whole Cranberry Sauce, Spicy Mustard, Mayonnaise, and Steak Sauce

Pasta Station:
Mini Cheese Ravioli and Ziti with a choice of Alfredo Sauce or Tomato Sauce
Crispine Bread Sticks
Italian Bread and Butter
Grated Cheese and
Pepper Flakes

Dessert:
Coffee Service with Bride’s Wedding Cake

As we stated above, Margaret is a graphic designer. She designed her own invitations, programs, menus, etc. We particularly like her favors shown in the photo above. She bought green woven favor boxes and created place cards with cut-out hydrangeas and small pearl centers. She attached the place cards to the favor boxes with green satin ribbon. So as not to spoil the surprise for her wedding guests, we won’t tell you what’s inside until after the wedding!
