E' piatto di ingannevole semplicità, la cui riuscita è basata su una perfetta armonia tra gli ingredienti.
Il suo nome origina dall'abitudine dei monaci conventuali di far desinare in camera(cammariare) i confratelli esentati dalla penitenza del digiuno. E quindi, "scàmmariare", al contrario, significava, appunto, mangiare di magro.
