Lasciarne da parte due e mettere a lessare le altre in poca acqua bollente. Scolarle e raffreddarle sotto al getto dell'acqua per fissarne il colore e per fermarne la cottura. Tagliarle nel senso della lunghezza ,svuotarle delicatamente e tritare la polpa ricavata. Mescolare la polpa alla besciamella , aggiungere il parmigiano grattugiato , salare e pepare. Lavare le zucchine rimaste ,tagliarle a rondelle e, metterle in una padella antiaderente con lo spicchio d'aglio e l'olio e farle cuocere per 5-6 minuti. Farcire le mezze zucchine con il composto preparato e decorate la superficie con le rondelle. Ridurre  con l’aiuto di un coltello il cioccolato a scagliette. Versare il liquore in un piatto ed immergere velocemente i biscotti.Coprire il fondo con un cucchiaio di crema , spolverizzare con il cioccolato e disporre uno strato di savoiardi. Tagliare i pomodorini a cubetti  e unirli al pane e alla cipolla insieme a del basilico tritato.Aggiungere ½ cucchiaio di aceto e 1 cucchiaio di olio,regolare di sale e pepe mescolare e mettere in frigo per 30 minuti. Poi asciugarli e metterli su un foglio di carta forno. Lavare i pomodorini e tagliarli a metà. Disporli sopra ai branzini con i capperi, quindi condirli con un filo d'olio, sale e pepe. Tagliuzzare la menta e versarla sopra agli altri ingredienti. Chiudere il cartoccio e mettetelo in forno a 200 °C per circa 30 minuti. Lavare gli spinacini e asciugarli usando la centrifuga per insalata. Ridurre a fettine sottilissime il cipollotto e tagliare in 3 o 4 parti le fettine di speck nel senso della larghezza. Dividere in due ciotole gli spinacini,il cipollotto e lo speck. Spolverizzare con le cialde di formaggio spezzettate,un pizzico di sale,del pepe e mescolare. Ricavare 3 scorzette dall’arancia(utilizzare un pelapatate)e tagliarle a striscioline sottilissime. Spremere il succo di ½ arancia in un recipiente di plastica,aggiungere le scorzette,la maionese,la senape,il pepe e mescolare. Scaldare in un pentolino 4 o 5 cucchiai di acqua e salarla (servirà durante la cottura). Sciogliere 40g di burro in una padella con un filo d’olio fino a farlo spumeggiare,aggiungere la carne e lasciarla rosolare per 1 o 2 minuti per lato e regolarla di sale e pepe. Toglierle dalla padella e tenerla in caldo tra due piatti. Versare il vino nella padella , lasciare evaporare ed aggiungere l’acqua salata. Lasciare che tutto si addensi leggermente , rimettere le scaloppine e scaldarle su entrambi i lati. Disporre le scaloppine nei piatti , sciogliere il burro restante nel fondo di cottura e versalo sulla carne. Insaporirle con il succo di limone,il prezzemolo tritato,aglio tritato e scorza di limone grattugiata.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;INGREDIENTI E PREPARAZIONE DELLE MELANZANE CROCCANTI:&lt;br /&gt;&lt;br /&gt;-1 melanzana&lt;br /&gt;-1 uovo&lt;br /&gt;-farina&lt;br /&gt;-2 pomodori&lt;br /&gt;- formaggio tipo  galbanino&lt;br /&gt;- basilico&lt;br /&gt;-origano&lt;br /&gt;-olio extravergine d’ oliva&lt;br /&gt;-sale&lt;br /&gt;&lt;br /&gt;Lavare la melanzana,ricavarne 6 fette rotonde di poco più di ½ cm ,sbattere l’uovo con un pizzico di sale. Impanare le melanzane(passarle prima nell’uovo e poi nella farina) , friggerle per qualche minuto in una padella antiaderente con olio  caldo  fino ad ottenere una giusta doratura su entrambi i lati ed aggiustarle di sale. Una volta dorate posarle su della carta assorbente per eliminare l’olio in eccesso. Tagliare sei fette di galbanino di circa 3 mm ,  lavare i pomodori ,tagliarli a cubetti,e condirli con un filo d’olio e dell’origano. Mettere sulle melanzane un fetta di formaggio e mettere in forno a 200 gradi per 5 minuti. Tirare fuori dal forno e disporre su ogni fetta un cucchiaino di pomodori e del basilico tritato grossolanamente(metterlo  poco prima di servire per  evitare che diventi scuro). Lasciare marinare per circa mezz’ora le fettine,sgocciolarle e  adagiarvi sopra la pancetta e il formaggio. Arrotolarle ,fissarle con stecchini e infarinarle. In una ciotola amalgamare il porro con la ricotta ed aggiustare di sale e pepe. Con l’aiuto di un coltello spalmare la cremina ottenuta sulle fette di bresaola e arrotolarle.
