&lt;br /&gt;una testa piccola di broccoli bolliti&lt;br /&gt;100 ml di panna&lt;br /&gt;100 ml di besciamella&lt;br /&gt;300 g di pasta (ho usato le penne rigate)&lt;br /&gt;qualche pezzetto di toma poco stagionata&lt;br /&gt;grana q.b.&lt;br /&gt;una nocina di burro&lt;br /&gt;sale e pepe q.b.&lt;div&gt;
&lt;br /&gt; Mettete a bollire l'acqua, quando è pronta salatela (come dice Buddy Valstro "deve essere salata come l'acqua del mare" O.o) e buttate la pasta.&lt;br /&gt;&lt;br /&gt;Versate in una grande padellona la panna, la besciamella, il formaggio a pezzetti, i broccoli a pezzi e in pizzico di sale e una grattata di pepe.&lt;br /&gt;Mescolando fate sciogliere il formaggio, poi abbassate la temperatura.Quando la pasta è ancora un pochino dura scolatela velacemente e versatela nella padella, con un cucchiaio di legno amalgamate insieme i vari sapori.Imburrate una teglia da forno, versateci dentro la pasta, poi livellatela con il dorso di un cucchiaio, spolverizzatela di grana grattugiato e infornare a 180°C per 20 minuti, se ci vuole gli ultimi minuti possono servire per far gratinare per bene la pasta (funzione grill del forno).&lt;/div&gt;

1 rotolo di pasta brisè già pronta&lt;br /&gt;4 porri&lt;br /&gt;acqua q.b.&lt;br /&gt;sale e pepe q.b.&lt;br /&gt;1 patata grande o 2 normali bollita/e&lt;br /&gt;una confezione da 250 g di stracchino&lt;br /&gt;50 ml di panne&lt;br /&gt;2 uova&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Tagliate a rondelle i porri dopo averli puliti e stufateli con un po' d'acqua a fuoco basso.&lt;br /&gt;Quando sono pronti alzate un po' la fiamma per ascugarli e metteteli da parte.&lt;br /&gt;Tagliate a fettine sottili la patata/e e sbattete in una ciotola la panna con le uova.&lt;br /&gt;Stendete la pasta in una tortiera lasciando sotto la carta della confezione, mettete uno strato di porri, alcuni pezzetti di stracchino e un velo di patate.&lt;br /&gt;Versate sopra metà del composto panna-uova e riprendete a fare gli strati: porri, stracchino, patate e infine l'ultima parte delle uova.&lt;br /&gt;&lt;br /&gt;Piegate i bordi sulla torta e infornatela a 180°C per 30-40 minuti, finchè non si colora la superficie.&lt;br /&gt;Se non siete sicuri che la base sia ben cotta potete mettere gli ultimi 5 minuti la cottura solo dal basso oppure abbassate di livello la torta. Eliminare la pelle dei cachi , e mettere tutta la polpa in una terrina capiente . Unire lo Zucchero di Canna e il Rum , e lasciar macerare mezza giornata .&lt;/div&gt;

Passato il tempo unire la pectina e cuocere in una pentola capiente (io uso sempre quella di rame per le conserve , che mantiene temperatura costante in tutto il contenuto ) fino a bollore a fuoco vivace , per poi abbassare al minimo per evitare l'uscita della schiuma che si formerà .&lt;/div&gt;

Preparare i vasetti sterilizzandoli per 20 min in acqua bollente e asciugandoli bene.&lt;/div&gt;

Metterli nella pentola con lo zucchero , mescolare bene e accendere il fuoco a fiamma madia.&lt;br /&gt;Lasciar cuocere per 10 minuti dal bollore.&lt;br /&gt;Tendenzialmente i Fichi tendono a disgregarsi facilmente , quindi non sarà necessario passare la marmellata con il passaverdure .&lt;br /&gt;Passato il tempo di cottura mettere nei barattoli preparati le noci rotte grossolanamente a pezzetti e versarvi la marmellata ancora calda . Chiudere ermeticamente , sbattere leggermente e capovolgere.&lt;br /&gt;Lasciar raffreddare e ricapovolgere .&lt;br /&gt;Lasciar riposare in luogo fresco e asciutto per 15 giorni prima di consumare.&lt;/div&gt;

Le marmellate non richiedono grandi abilità culinarie , ma sono un ottimo modo di conservare le abbondanze di frutta stagionali , e se fatte a dovere , con frutta fresca e integra possono conservarsi oltre un anno senza perdere sapore o integrità .

&lt;br /&gt;
Ungete abbondantemente le cocottine o la teglia e rivestite il fondo e le pareti con lo zucchero di canna . Tagliate a spicchi le pesche-noci ( le mie erano grandi e ogni ½ pesca ho fatto 4 fette) e foderate il fondo della teglia. Per le pirofiline, tagliate mezza pesca in 4 fette e adagiatela sul fondo dalla parte della buccia ricomponendo la mezza pesca. Montate le uova a temperatura ambiente con lo zucchero, fino a farle diventare spumose e chiare. Aggiungete il latte, la panna e la maizena. Lavorate ancora fino a che il composto è liscio. Rovesciate l'impasto sopra le pesche e spolverizzate a piacere con lo zucchero di canna. Mettete in forno preriscaldato a 180-200° per circa 30 minuti. Togliete dal forno, spolverizzate ancora con lo zucchero di canna e rimettete in forno per circa 5 minuti; preferibilmente sotto il grill.

Pulite e tagliate a dadini le zucchine. In una padella antiaderente, con qualche cucchiaio d'olio extravergine,&amp;nbsp; brasate una cipolla e aggiungete le zucchine; cuocetele lasciandole piuttosto al dente; alla fine aggiungete il prezzemolo tritato e aggiustate di sale. Se l'impasto vi sembra troppo denso, fate come me; aggiungete il latte (io ne ho aggiunto ½ litro e un vasetto di yogurt). Se volete la preparazione&lt;/span&gt;&lt;/span&gt;&lt;span style="color: red;"&gt;&lt;span style="color: black;"&gt;&amp;nbsp;più cremosa&lt;/span&gt;&lt;/span&gt;&lt;span style="color: red;"&gt;&lt;span style="color: black;"&gt;, potete aggiungere della panna fresca al posto dello yogurt. Iniziate a fare gli strati in una teglia. Foderate il fondo della stessa con qualche cucchiaiata di impasto, mettete i fogli di pasta, il ripieno e così fino alla fine degli ingredienti.Finite con il ripieno e con una spolverata di&amp;nbsp; formaggio grattugiato (il mio era montasio stravecchio). Mettete in forno preriscaldato a 180-200° per circa 1 ora o finchè si sarà formata una crosticina dorata.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

Pulite e tagliate a fettine sottili il cipollotto e il sedano e&amp;nbsp;brasateli in una padella antiaderente con un cucchiaio d'olio,&amp;nbsp; aggiungendo acqua gradatamente. Togliete dalla padella e nella stessa aggiungete&amp;nbsp; qualche cucchiaio d'olio, le carote e le zucchine tagliate a dadini. Portate anche queste a cottura e mettetele insieme al cipollotto e al sedano. I peperoni, se volete pelarli li mettete in forno a 180° per 15 minuti circa e, una volta&amp;nbsp;spento, li lasciate dentro per circa 1 ora. Toglieteli, pelateli&amp;nbsp;&lt;/span&gt;&lt;span style="background-color: white; color: red; font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; font-size: 13px; line-height: 18px;"&gt;(io li ho lasciati dentro troppo)&lt;/span&gt;&lt;span style="background-color: white; font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; font-size: 13px; line-height: 18px;"&gt;,&amp;nbsp; tagliateli a filetti e aggiungeteli al resto già cotto.Tagliate a cubetti le melanzane dopo averle pelate. Friggetele in olio abbondante.&lt;/span&gt;&lt;span style="background-color: white; color: red; font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; font-size: 13px; line-height: 18px;"&gt;(Questa operazione la faccio il giorno prima; dopo fritte, le metto in un colapasta sistemato su una terrina, un piatto e sopra un peso; in frigo fino al giorno dopo e così avranno perso l'olio rimasto e saranno asciutte).&amp;nbsp;&lt;/span&gt;&lt;span style="background-color: white; font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; font-size: 13px; line-height: 18px;"&gt;Riunite tutte le verdure in una pentola e aggiungete i pomodori che avrete precedendemente pelato e tagliato a filetti. Mettete anche le olive snocciolate, che, a piacere, possono essere nere o verdi&lt;/span&gt;&lt;span style="background-color: white; color: red; font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; font-size: 13px; line-height: 18px;"&gt;&amp;nbsp;(io metto le olive taggiasche)&lt;/span&gt;&lt;span style="background-color: white; font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; font-size: 13px; line-height: 18px;"&gt;. Aggiustate di sale e finite la cottura. Lessate il riso, raffreddatelo sotto l'acqua fredda, asciugatelo bene e conditelo con le verdure aggiungendo qualche foglia di basilico spezzettata con le mani. Se serve aggiungete anche olio extravergine a crudo.&lt;/span&gt;&lt;span style="background-color: white; color: red; font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; font-size: 13px; line-height: 18px;"&gt;(Si possono aggiungere dei capperi e se mettete delle mozzarelline diventa piatto unico).&lt;/span&gt;

&lt;span style="background-color: white; font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; font-size: 13px; line-height: 18px;"&gt;Sciogliete il cioccolato a bagnomaria, o al microonde, con la panna e il latte. Lasciate raffreddare. Montate gli albumi a neve fermissima con un pizzico di sale, aggiungendo, gradatamente, la metà dello zucchero. Con l'altra metà montate i tuorli fino ad ottenere una crema chiara e spumosa. Aggiungete delicatamente il cioccolato raffreddato. Unite la maizena con il lievito e le mandorle tritate. Unite all'impasto la meringa delicatamente, in più volte. Imburrate e infarinate (con la maizena) una tortiera di 26/ 28 cm. Versate l'impasto tenendone da parte 8 cucchiai. Sistemate le pesche a fette piuttosto grosse e sopra mettete il resto dell'impasto. Infornate nelle parte bassa del forno preriscaldato a 150°/160° per circa 50 minuti (essendo un dolce con la frutta, cioè umido, e avendo la funzione, ventilata, "pasticceria" nel mio forno: a 150° e in 40 minuti è pronta).&lt;/span&gt;&lt;/div&gt;

Lasciate raffreddare. Montate a crema i tuorli con lo zucchero; aggiungete gradatamente la maizena mescolata al lievito e le mandorle tritate. Montate a neve fermissima gli albumi con un pizzico di sale e aggiungeteli delicatamente, mescolando dal basso verso l'alto. Imburrate e infarinate (con la maizena) una tortiera di 26/28 cm. Verstae l'impasto (tutto) e sistemate le pesche. Infornate nelle parte bassa del forno preriscaldato a 150°/160° per circa 50 minuti (nel mio caso ho utilizzato sempre la sopracitata funzione "pasticceria", quindi...150° - 40 minuti).&lt;/span&gt;&lt;/div&gt;

&lt;span style="color: #333333; font-family: arial; font-size: 14px; line-height: 22px; text-align: left;"&gt;Unite la farina setacciata con lo zucchero e il lievito e&lt;/span&gt;&lt;b style="color: #333333; font-family: arial; font-size: 14px; line-height: 22px; text-align: left;"&gt;&amp;nbsp;&lt;/b&gt;&lt;span style="color: #333333; font-family: arial; font-size: 14px; line-height: 22px; text-align: left;"&gt;impastate con la ricotta e l'olio, quest'ultimo aggiunto gradatamente.&lt;/span&gt;&lt;b style="color: #333333; font-family: arial; font-size: 14px; line-height: 22px; text-align: left;"&gt;&amp;nbsp;&lt;/b&gt;&lt;span style="color: #333333; font-family: arial; font-size: 14px; line-height: 22px; text-align: left;"&gt;Coprite la pasta con la pellicola e ponete in frigo per circa un ora. Intanto preperate la crema.&lt;/span&gt;&lt;br /&gt;
&lt;b style="color: #333333; font-family: arial; font-size: 14px; line-height: 22px; text-align: left;"&gt;Mio procedimento per la crema:&lt;/b&gt;&lt;br /&gt;
&lt;span style="color: #333333; font-family: arial; font-size: 14px; line-height: 22px; text-align: left;"&gt;Montate il tuorlo e l'uovo intero con lo zucchero, possibilmente con la frusta elettrica, quando è bianco aggiungete la farina, mescolate cercando di non fare grumi. Aggiungete il latte, mescolate e mettete in microonde per 2 minuti alla massima potenza. Mescolate e rimettete in micro per altri 2 minuti. Questa operazione va fatta finchè la crema è bella densa.&lt;/span&gt;&lt;br /&gt;
&lt;b style="color: #333333; font-family: arial; font-size: 14px; line-height: 22px; text-align: left;"&gt;Assemblamento del dolce:&lt;/b&gt;&lt;br /&gt;
&lt;span style="color: #333333; font-family: arial; font-size: 14px; line-height: 22px; text-align: left;"&gt;Dividete la pasta, 550 gr per il rivestimento della tortiera e 400 gr per chiudere il ripieno. Oliate e infarinate una tortiera da crostata di 26 cm e rivestite con la pasta stesa su una spianatoia infarinata. Metteci la crema raffreddata e cospargete di ciliegie snocciolate e divise a metà. Coprite con l'altra pasta stesa e chiudete i bordi pizzicando. Infornate in forno preriscaldato a 180° per 35 minuti.&lt;/span&gt;

Ma nonostante sia tradizionale le varianti non posso certo mancare, da zona a zona.&lt;br /&gt;C'è chi la fa solo con grano e ricotta, chi aggiunge a questi la crema pasticcera (vedi me), chi i canditi, chi non mette l'aroma di fiori d'arancio, insomma... un dolce dai mille aspetti potremmo definirlo.&lt;br /&gt;

500 gr di grano per pastiera precotto,&lt;/div&gt;

1 cucchiaio di strutto,&lt;/div&gt;
&lt;div&gt;
300 ml di latte intero,&lt;/div&gt;
&lt;div&gt;
3 uova + 2 tuorli,&lt;/div&gt;
&lt;div&gt;
200 gr di zucchero,&lt;/div&gt;
&lt;div&gt;
500 gr di ricotta vaccina,&lt;/div&gt;
&lt;div&gt;
1 fiala di aroma fiori d'arancio,&lt;/div&gt;
&lt;div&gt;
vanillina.&lt;/div&gt;
&lt;div&gt;
&lt;b&gt;Per la crema pasticcera:&lt;/b&gt;&lt;/div&gt;
&lt;div&gt;
2 tuorli,&lt;/div&gt;
&lt;div&gt;
250 ml di latte intero,&lt;/div&gt;
&lt;div&gt;
2 cucchiai di farina,&lt;/div&gt;
&lt;div&gt;
4 cucchiai di zucchero,&lt;/div&gt;
&lt;div&gt;
1 bustina di vanillina.&lt;/div&gt;
&lt;div&gt;

La sera prima preparare la crema col grano.&lt;/div&gt;
&lt;div&gt;
Versare il grano in una pentola antiaderente, unire lo strutto e il latte e lasciar cuocere, mescolando spesso, fino a che non si sia ottenuta una crema densa.&lt;/div&gt;
&lt;div&gt;
Lasciar raffreddare tutta la notte mettendo della pellicola trasparente a contatto.&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Il giorno dopo preparare la frolla.&lt;/div&gt;
&lt;div&gt;
Setacciare la farina in una ciotola, unire al centro tutti gli ingredienti e lavorare l'impasto con le mani, non troppo a lungo; avvolgerla in un foglio di pellicola trasparente e mettere in frigo a riposare per 30 minuti.&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Preparare la crema pasticcera.&lt;/div&gt;
&lt;div&gt;
Mettere in un pentolino il latte con la buccia di limone e portare a bollore.&lt;/div&gt;
&lt;div&gt;
In una ciotola lavorare i tuorli con lo zucchero fino a ottenere una crema gonfia a spumosa, unire la farina, la vanillina e piano piano il latte caldo passato attraverso un passino.&lt;/div&gt;
&lt;div&gt;
Rimettere il tutto sul fuoco e portare a ebollizione; lasciar sobbollire per 5 minuti e spegnere il gas lasciando poi raffreddare (mettere della pellicola a contatto con la crema per evitare l'odiosa crosticina).&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Lavorare la ricotta con lo zucchero a crema, unire il grano cotto, la crema pasticcera e la fiala di aroma fiori d'arancio.&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Prendere la pasta frolla, stenderla in uno strato non troppo sottile e rivestire due teglie (una 26cm di diametro e l'altra 22) imburrate e infarinate.&lt;/div&gt;
&lt;div&gt;
Versare la crema di grano e ricotta e livellare bene.&lt;/div&gt;
&lt;div&gt;
Con la pasta avanzata ricavare delle striscette e decorre la superficie delle pastiere.&lt;/div&gt;
&lt;div&gt;
Infornare a 180°C fino a quando la superficie non risulta ben dorata (almeno 40 minuti), spegnere il forno e lasciare le pastiere all'interno ad asciugare.&lt;/div&gt;
&lt;div&gt;
Una volta fredde sformarle, cospargere di zucchero a velo e servire.&lt;/div&gt;

&lt;span style="background-color: white; color: #666666; font-family: Verdana, Geneva, sans-serif; font-size: 14px; line-height: 19px;"&gt;Unire a filo e poco per volta il latte caldo, mescolare con un cucchiaio di legno e lasciar cuocere fino a che la besciamella non inizia a bollire.&lt;/span&gt;&lt;br /&gt;

&lt;span style="background-color: white; color: #666666; font-family: Verdana, Geneva, sans-serif; font-size: 14px; line-height: 19px;"&gt;Prendere una crepe, spalmarla con un cucchiaio abbondante di besciamella, distribuirvi i cubetti di pelati e un paio di fettine (ma qui potete regolarvi voi, anche una va bene se sono belle grosse) di mozzarella. Chiudere prima la crepe a metà formando una mezza luna e poi ancora a metà fino a formare il ventaglio.&lt;/span&gt;&lt;br /&gt;

Il&amp;nbsp;pollo alla cacciatora&amp;nbsp;è una ricetta povera, derivante dalla tradizione contadina, grazie alle massaie, che riuscivano a realizzare un piatto gustoso e ricco con pochi ingredienti: quelli dell'aia uniti a quelli dell'orto.&lt;br /&gt;

Che cosa occorre per preparare un gustoso&amp;nbsp;pollo alla cacciatora: &lt;br /&gt;
&lt;br /&gt;
1 pollo di circa 1 kg,&lt;br /&gt;
1 bicchiere di vino rosso (o bianco),&lt;br /&gt;
1 gambo di sedano,&lt;br /&gt;
2 carote,&lt;br /&gt;
1 cipolla,&lt;br /&gt;
due rametti di rosmarino,&lt;br /&gt;
un ciuffo di prezzemolo (facoltativo),&lt;br /&gt;
1/2 kg di pomodorini ciliegino,&lt;br /&gt;
1 spicchio d'aglio,&lt;br /&gt;
pepe,&lt;br /&gt;
olio,&lt;br /&gt;
peperoncino (facoltativo).&lt;br /&gt;
&lt;br /&gt;
Prendere il pollo, lavarlo e (se non lo avete perso già in pezzi) dividerlo in pezzi lasciando la pelle.&lt;br /&gt;
Versare qualche cucchiaio di olio in una padella capiente antiaderente e rosolarvi il pollo da ambo le parti.&lt;br /&gt;
Unire la cipolla tagliata a pezzetti e le carote pulite e grattugiate, il sedano tagliato, il pepe e i rametti di rosmarino e lasciar soffriggere per una decina di minuti girando spesso il pollo per far in modo che non indurisca seccandosi.&lt;br /&gt;
Sfumare col vino e lasciar evaporare a tegame scoperto.&lt;br /&gt;
Lavare i pomodorini e privarli dei semi, tagliarli in quanttro parti e unirli nella padella col pollo e gli odori.&lt;br /&gt;
Salare, coprire col coperchio e lasciar cuocere, girando spesso, fino a che il pollo non risulti tenero e ben cotto.&lt;br /&gt;
&lt;br /&gt;
Servire caldo accompagnato da un buon mestolo di intingolo.&lt;br /&gt;
