Ho preparato un pan di spagna al cacao come&amp;nbsp; base e l'ho farcito con una crema al mascarpone, crema pasticcera, panna e caffè. Un primo disco di pan di spagna imbevuto di caffè, uno strato di crema, uno di savoiardi al caffè, uno di crema, e ancora un disco di pan di spagna. Infine tutta la crema rimasta a coprire superficie e bordi, un giro di pavesini, meringhette, chicchi di caffè e un bel nastro giallo.&lt;br /&gt;
Al mio fratellone e a tutti i commensali la torta 'tiramisù' è piaciuta moltissimo.... e anche a me!&lt;br /&gt;

è una delle preparazioni più diffuse in estate, per la sua freschezza e la sua leggerezza, quante volte sulla nostra tavola portiamo prosciutto e melone?&lt;br /&gt;
&lt;br /&gt;
Ho pensato di prepararlo negli stessi colori ma con ingredienti diversi, ugualmente fresco, più saporito e più insolito, ma molto buono, utilizzando speck e mango.&lt;br /&gt;
&lt;br /&gt;
Per la presentazione ho preparato cialde di parmigiano, su cui ho alternato fettine di speck a fettine di mango. Volendo si può aggiungere qualche foglia di rucola e condire con un'emulsione di senape, aceto e olio.&lt;br /&gt;

Fino a poco tempo fa non lo sapevo nemmeno io, ma adesso anche i miei amici lo sanno bene. Si tratta semplicemente di testare prodotti da poco tempo immessi sul mercato, al fine di raccogliere valutazioni da parte dei consumatori. La mia fortuna è stata di aver testato un prodotto che si usa in cucina, il nuovo insaporitore della knorr 'cuore di brodo'.&lt;br /&gt;
E naturalmente sono riuscita a cucinare diversi piatti gustosi, dalla pasta in brodo alle verdure, dall'arrosto allo sformato.&lt;br /&gt;

… ovvero la migliore torta salata che sono  mai riuscita a fare. E il bello è che riesce sempre bene, sia in formato  tortiera grande che in timballi monoporzione. Si adatta ad essere  inserita nel menù delle feste o come piatto unico, ma vi confesso che  l’ho  portata dietro anche  in montagna, dove le gite prevedono il  pranzo rigorosamente al sacco. &lt;br /&gt;
&lt;br /&gt;
Insomma, il successo è assicurato. &lt;br /&gt;
&lt;br /&gt;
Le  dosi le metto ad occhio, secondo me dipende molto dai gusti personali  far prevalere un ingrediente piuttosto che un altro, specialmente in una  preparazione come questa che prevede la combinazione di  alimenti  diversi. Vi elenco quindi gli ingredienti, lasciando ad ognuno la  ricerca del proprio gusto personale. &lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Torta di speck, porcini e patate&lt;/b&gt; &lt;br /&gt;
Ingredienti: &lt;br /&gt;
pasta brisèe (due dischi) &lt;br /&gt;
speck affettato &lt;br /&gt;
patate bollite al dente &lt;br /&gt;
porcini a fette (uso quelli congelati marca Asiago) &lt;br /&gt;
besciamella &lt;br /&gt;
grana padano grattugiato &lt;br /&gt;
aglio &lt;br /&gt;
sale e pepe &lt;br /&gt;
1 uovo sbattuto &lt;br /&gt;
&lt;br /&gt;
faccio  trifolare i funghi in padella con olio e aglio, con una spolverata di  sale e pepe a fine cottura, quando hanno ritirato l’acqua e formato un  bel sughino denso. Se l’avete, mettete un po’ di nepitella. &lt;br /&gt;
&lt;br /&gt;
In  una zuppiera grande metto le patate bollite tagliate a cubetti, i  funghi, lo speck tagliato a striscioline e la besciamella - circa mezzo  litro – mescolando bene il tutto e correggendo di sale e pepe se  necessario. Da ultimo, un bel pò di grana padano. &lt;br /&gt;
&lt;br /&gt;
Verso il  composto nella tortiera foderata con carta forno e pasta brisèe, copro  con il secondo disco di pasta e sigillo bene i bordi. Se ho tempo e voglia,  decoro la superficie con ritagli di pasta. &lt;br /&gt;
&lt;br /&gt;
Spennello con uovo sbattuto e inforno&amp;nbsp; a 180° per circa 50 minuti.&lt;br /&gt;

Io ogni tanto ci provo, ma poi mi vengono in sogno quei bei panini al prosciutto, le bruschette, i crostoni... e non da ultime quelle enormi fette di pane e nutella. E a quel punto sono morta, addio dieta!&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&amp;nbsp;In fondo il pane è uno degli alimenti più semplici presenti nella nostra alimentazione: farina, acqua e lievito, con un pizzico di zucchero. E il bello è che praticamente si fa da sè, basta dargli il giusto tempo per lievitare. Cosa dobbiamo fare noi? Solo aspettare, per il tempo di lievitazione e quello di cottura.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Il risultato eccolo qua, un bel pane bianco di quasi un chilo e mezzo, che si mantiene bene per qualche giorno, che non ha niente da invidiare a quello comprato in panificio, anzi, per i miei gusti è ancora più buono&lt;/div&gt;&lt;br /&gt;

e poichè in commercio si trovano diversi tipi di farine, ho provato anche il pane scuro ai cereali, con lo stesso identico procedimento di quello bianco. Voilà&lt;br /&gt;

Ingredienti e procedimento:&lt;br /&gt;
farina gr. 900&lt;br /&gt;
lievito secco gr. 14&lt;br /&gt;
sale gr. 20&lt;br /&gt;
zucchero gr. 10&lt;br /&gt;
acqua tiepida ml. 600&lt;br /&gt;
&lt;br /&gt;
utilizzando ken con il gancio impastatore, azionare per 1 minuto a velocità minima, e per 4 minuti a velocità 1, poi mettere a lievitare in luogo tiepido per almeno 1 ora. Impastare di nuovo a velocità minima per 30 secondi, quindi porre la pasta su carta forno e far lievitare per 30 minuti.&lt;br /&gt;
Cuocere a 200° per circa 30 minuti.&lt;br /&gt;
&lt;br /&gt;

&lt;div style="text-align: justify;"&gt;La saint honorè rimane un classico della pasticceria. Ma in versione 'salata' è un pò insolita. In effetti è solo un effetto estetico, poichè questa torta fresca a base di&amp;nbsp; formaggio e salmone ha ben poco in comune con la dolce saint honorè, se non il fattore visivo.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Ho utilizzato due dischi di pasta sfoglia sovrapposti, li ho spalmati con una crema di salmone al vapore, philadelphia e mascarpone, e con la stessa farcia&amp;nbsp; ho riempito anche i bignè.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Al centro un trito di pistacchi, e sul bordo ricoperto di crema ho fatto aderire un pò di sfoglia sbriciolata mescolata a scaglie di mandorle.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;

Il tema del menù era '...a casa di Anna', stesso nome che ho dato alla torta di pan di zenzero e cannella, realizzata con lo stampo in silicone - home sweet home - di silikomart&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Prima ancora di iniziare pensavo fosse difficile, invece è bastato avere un pò di tempo e tanta pazienza a disposizione. L'impasto base è quello di una frolla per biscotti, con tanto burro, zucchero a velo, farina e uova. Poi ho aggiunto le spezie per dare l'aroma desiderato. Quando l'impasto è cotto e raffreddato, basta sformarlo e procedere con l'opera di costruzione della casetta: è divertente, sembra di tornare bambini e giocare con i lego.... un pò di cioccolato temperato al posto della calce e il gioco è fatto.&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Infine, si libera la fantasia per la decorazione. La mia casetta è piaciuta proprio a tutti.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Ingredienti per l'impasto base:&lt;/div&gt;&lt;div style="text-align: justify;"&gt;burro gr. 500&lt;/div&gt;&lt;div style="text-align: justify;"&gt;zucchero a velo gr. 450&lt;/div&gt;&lt;div style="text-align: justify;"&gt;2 uova&lt;/div&gt;&lt;div style="text-align: justify;"&gt;sale&lt;/div&gt;&lt;div style="text-align: justify;"&gt;farina 00 gr. 680&lt;/div&gt;&lt;div style="text-align: justify;"&gt;zenzero in polvere gr. 10&lt;/div&gt;&lt;div style="text-align: justify;"&gt;cannella in polvere gr. 10&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Ingredienti per il montaggio e la decorazione:&lt;/div&gt;&lt;div style="text-align: justify;"&gt;cioccolato bianco gr. 100&lt;/div&gt;&lt;div style="text-align: justify;"&gt;zucchero a velo gr. 200&lt;/div&gt;&lt;div style="text-align: justify;"&gt;albume di 1 uovo&lt;/div&gt;&lt;div style="text-align: justify;"&gt;succo di limone&lt;/div&gt;&lt;div style="text-align: justify;"&gt;coloranti alimentari&lt;/div&gt;&lt;div style="text-align: justify;"&gt;decori in zucchero&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;naturalmente ci sono tanti altri modi per realizzare una casetta, ad esempio la si può fare completamente di cioccolato, con pan di spagna, con frolla semplice, decorata con panna montata, glassa di zucchero o di cioccolato, e chi più ne ha più ne metta.... il divertimento è assicurato, come pure il risultato: buona e d'effetto.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div style="text-align: justify;"&gt;immaginarmi un campo di papaveri mi rilassa la mente, mi riporta all'estate e ai periodi più spensierati della mia vita, quando il tempo scorreva più lentamente ed era così carico di aspettative che le cose che non andavano potevano aspettare&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;quanto è cambiato da allora! sono cresciuta abbastanza per capire che non si smette mai di imparare, che è più difficile capire quali sono le cose più importanti da imparare, e che alcune di esse le ho imparate e altre ancora no&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;oggi è stata una giornata strana; mi sono svegliata di malumore, poi ho visto il sole. Già questo è stato un regalo. Ho pensato ai miracoli e sono diventata triste, poi ho confidato nella mia fede e nella speranza che in essa ripongo. Mi piacciono, sulla pianta. Odio le rose recise che ci seguono ovunque, quando usciamo il sabato sera.... ci seguono al bar durante l'aperitivo, al tavolo in mezzo ad una cena romantica, ci piombano addosso nel bel mezzo di un dopo cena con il tuo lui/lei e non si fermano neppure quando sei con la compagnia degli amici. Osano troppo queste rose recise, invadono la nostra intimità, insomma non se ne può più!!!&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Non mi resta che starnutire e dire che sono allergica al loro profumo.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Però ci sono rose che mi piacciono molto...&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;

Un'arte che nasce dalla passione per le cose buone, dall'amore per le persone care, e dalla creatività e fantasia nel ricercare sempre nuovi sapori, nuovi accostamenti e nuove miscele equilibrate che soddisfano il palato.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Ma quanto contano gli arnesi del mestiere?&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;

Perchè deve accadere per forza qualcosa di eclatante per farci aprire gli occhi sul senso della vita?&amp;nbsp;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;i&gt;Mi sembra di stare sopra un' altalena, distaccata dal mondo. Nel mio andare e tornare alterno felicità e tristezza, che tanto è normale quanto non lo è il non riuscire a fermarmi, il non riuscire a trovare la mia stabilità, la mia dimensione in cui poter essere ciò che sono e non ciò che vorrei, senza sentirmi fuori posto. &lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;i&gt;Chi mi conosce sa di cosa parlo,.... gli altri ... beh, sono la pasticcera matta no? &lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;i&gt;Ma forse voi golosastri vi aspettavate scrivessi di altri argomenti, e questo mi fa venire in mente che potrei inventare il dolce 'altalena', magari con ingredienti contrastanti come un bel dolce-amaro-salato. &lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;b&gt;fagottino di mele con crema della nonna&lt;/b&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;dividete in quattro un disco di pasta sfoglia e su ogni parte mettete metà di una mela tagliata in senso orizzontale e privata del torsolo - occorreranno quindi due mele - riempitele al&amp;nbsp; centro con un cucchiaio di marmellata (quella che più vi piace) e un cucchiaio di crema pasticcera con pinoli. Spolverizzate di cannella e chiudere con la sfoglia formando i fagottini. Cuocere in forno fino a cottura della pasta. Sono ottimi ancora tiepidi.&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Il risultato eccolo qua&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;

L'unica nota che mi solleva in questa giornata di mezza via è che il mio grande papà viene a cena da me, ogni mercoledi. Con una 'cavia' di tale portata io di solito approfitto per nuovi esperimenti in cucina, sempre molto apprezzati da lui, che brontola solo per dire che lo faccio mangiare troppo. &lt;br /&gt;
Oggi però ero un pò (anzi parecchio) svogliata, e mi sono buttata su un semplicissimo pollo arrosto con patate al forno: buono, ma pur sempre il solito pollo arrosto. L'impegno l'ho messo tutto nel dolce, preparando dei biscottini da tempo rodati e di sicura riuscita: i sablès di bretagna, leggeri e dorati, che ho arricchito aromatizzandoli con limone e vaniglia e tuffandoli una volta cotti&amp;nbsp; in un ottimo cioccolato fondente fuso.&lt;br /&gt;
Credete, sono da provare!&lt;br /&gt;

Non bisogna per forza essere cuochi provetti per confezionare un'autentica buona cena tra amici; la passione è buona base, le pubblicazioni di ricette ben spiegate ed illustrate sono innumerevoli, e con un pizzico di fantasia tutti possono riuscire a concquistare i complimenti dei propri ospiti&lt;/i&gt;&lt;/span&gt;.&lt;br /&gt;
&lt;i&gt;&lt;span style="font-family: Times,&amp;quot;Times New Roman&amp;quot;,serif;"&gt;Ma a volte si vuole andare oltre la passione, e la soddisfazione di saper cucinare bene i soliti piatti non basta più, si va alla ricerca di fare qualcosa che solo in pochi fanno. Nella mia ricerca ho scoperto che esistono molte ricette cadute in disuso e mi sono molto incuriosita. E guarda caso, ho riscoperto qualcosa della mia terra, con una storia particolare, legata al grande maestro Giacomo Puccini, che visse proprio dietro casa mia, a Torre del Lago Puccini.&lt;/span&gt;&lt;/i&gt;&lt;br /&gt;
&lt;i&gt;Ho letto un articolo in cui si narra che il maestro, nelle sue passeggiate sul lungomare di Viareggio,&amp;nbsp; era solito andare in una piccola pasticceria per gustare i dolci di cui era molto goloso. Amando in particolare due ingredienti, il rum e il cioccolato, chiese al suo amico pasticcere di creare un dolce che li contenesse entrambi. Questa fu l'origine della 'torta Puccini', un dolce elaborato, con una base classica e un cuore di amaretti imbevuti nel rum, cioccolato amaro e marmellata di ciliege.&amp;nbsp;&lt;/i&gt;&lt;br /&gt;
&lt;i&gt;Purtroppo non ho trovato la ricetta, per cui sono dovuta andare alla cieca nelle quantità e nel procedimento.... ma il risultato è stato strepitoso! Credetemi, una torta all'altezza di colui che l'ha ispirata.&lt;/i&gt;&lt;br /&gt;

&lt;br /&gt;
il risultato? senza troppe pretese, un pò troppo secchi forse, ma buoni.&lt;br /&gt;
