	Lydie originally from Avignon, Provence is a classically taught French chef. She trained in Burgundy, home of French Gastronomy, and she was mentored by Chefs Jacques Lameloise and Bernard Loiseau holder six Michelin stars between them. No dinner at Auld Alliance is complete without hearing one of Lydie&amp;#39;s culinary anecdotes. 
	 
	The wine list is carefully chosen by Lydie whose wealth, depth and breadth of knowledge was taught to her at her grandfather&amp;#39;s knee, Monsieur Darbon, who was a Maitre de Chais, for one of the finest wine producer in Beaujolais and Burgundy- Domaine Chevalier. 
	 
	On summer evenings cocktails are served on the terrace - and when the nights &amp;#39;draw in&amp;#39; you can enjoy a dram in front of a roaring log fire. There is a comfortable lounge with an open fire, to read, unwind and relax. Lydie&amp;#39;s information on the local area is second to none. She was food stylist on Monarch of the Glen for seven years and can arrange trips, suggest excursions or simply give advice on the best places to walk. 
	 
	There are 4 comfortable bedrooms, some with views over the enigmatic Jacobite ruin known as Ruthven Barracks. A peaceful night&amp;#39;s sleep is assured. 
	 
	Breakfasts include: homemade breads, croissants and preserves and hot dishes such as award winning hot smoked trout. Lydie is an advocate for locally sourced produce. She was one of the founders of the Kingussie Food on Film Festival.
