latcui 4.21 – longitude 146 This Week Sinead & I invite you to Shoreditch to straddle the 146th longitude on Friday night from 8. It’s the final tip of Japan and things get all hot under the collar with Russia as both claim sovereignty over the southern Kuril Islands – lands of fish & ore where even the etymology is contested – ‘kur’ possibly meaning man or, erm, smoke (they form part of the Pacific ‘Ring of Fire’). We sail past the Marianas and back to (New) Britain – off PNG rather than GBR, where they speak more languages than any other country, with an average of only 7,000 people per tongue – and over 3 times as many languages than belong to the whole of Europe. We aren’t yet the Jubilee but we are Aussie Queensland - land of one Mrs Rawson, C18th chef and auterur and keen cook of ibis and iguana, flying foxes & bandicoots. Have you ever enjoyed anything more serenely, sedately, pragmatically obscene than Aussie Beer Can Chicken?  Last Week Damaris hosted a superb evening in her converted bit of an old Synagogue tucked behind Ridley Road market. Rhoden fumigated the neighbours with the bliss of his BBQ chicken while indoors we feasted on some of the following: pakoras, crab and callaloo soup, guamese shrimp kelaguen, spanish tortilla & some fine antipasti (including lidlean wasabe crisps); japanese salads & shitake mushrooms, rice salad, melanzane alla parmigiana, lamb tagine with prunes, molten (lava) goats cheese salad, roast italian chicken, saltfish & ackee & even a gnocchi with tomato and mozzarella sent by an absent ill guest; all followed by banana cake, fruit salad, contested pavlova & something delicious that got half eaten before getting to the table Coming Up We have very very very awesome plans for the Olympics which are finally taking form. latcui 4.20 – longitude 140  This Week Damaris invites us to her flat in a converted synagogue in Hackney this Saturday, 19th May. As this day has been decreed Food Revolution Day, we’ll be just one of many groups of people around the world coming together to enjoy good home-made food. We’re at longitude 140 – still in Far Eastern Russia, Indonesia, Japan and Australia – just past Adelaide and Tokyo, bang on Jayapura, and coming up to Sapporo, Guam and Melbourne. Since we’ve been travelling through Russia, Indonesia and Australia for some weeks now, Damaris thought you might fancy a change and so is also offering you “latitude” this week to make “significant food” (which could be from any country in the world) – a dish that reminds you of your childhood, a special person or a special event in your life. Fast facts about this week’s cities and their cuisines: Adelaide was founded by the British in 1836 and ranked as the most liveable city in Australia in 2011. German Lutherans arrived there in 1838 bringing with them vine cuttings that they used to found the acclaimed wineries of the Barossa Valley Tokyo – capital city of Japan, the name actually means eastern capital – tō (east) + kyō (capital). It’s original name was Edo, which means “estuary”. Cuisine in Tokyo is internationally acclaimed. The 2007 Michelin guide awarded restaurants in Tokyo a total of 191 stars – much more than any other city and in fact twice as many as Tokyo’s nearest competitor, Paris Jayapura is the capital of Papua province, Indonesia, on the island of New Guinea. The literal meaning of Jayapura, as of Jaipur in Rajasthan, India, is ‘City of Victory’ (Sanskrit jaya: “victory”; pura: “city”). The staple food here is not rice, but sago and its most famous traditional dish is Papeda – a glue-like (!) sago flour congee served with tuna flavoured with turmeric and lime Sapporo hosted the 1972 Winter Olympics, the first ever held in Asia. It is the fourth-largest city in Japan by population, and the largest city on the island of Hokkaido. It is also home to the Sapporo Brewery – whose beer is stocked by Tesco – and famous white chocolate biscuits called shiroi koibito (白い恋人?, “lovers in white”) which apparently can only be bought in Hokkaido – but there’s a recipe and some pictures here Guam is a tiny Micronesian island situated 3,800 miles west of Hawaii and 1,500 miles south of Japan. Its original inhabitants were the Chamarro people who came from the Malay Peninsula around 3000 BC, since when they have survived invasions by the Spanish, the Japanese and the Americans, and still comprise 43 per cent of the island’s population. Traditional dishes here are Chicken Estufao – pieces of chicken stewed with tomatoes and onions, served with mounds of rice and a cucumber salad, Morcizas – chicken neck stuffed with chicken meat, pepper leaves, onions and garlic, tied at both ends and stewed in broth, Kadon Octopus – octopus stewed in coconut milk with onions and sweet peppers, Eskabeche – fresh fish marinated in vinegar and soy sauce and Shrimp Kelaguen – minced shrimp mixed with lemon, onions, peppers and shredded coconut Melbourne has the largest Jewish population in Australia, the world’s third largest Greek-speaking population after Athens and Thessaloniki (Melbourne’s Greek sister city), and the Vietnamese surname Nguyen is the second most common in Melbourne’s phone book. The city also features substantial Indian, Sri Lankan, and Malaysian-born communities, in addition to recent South African and Sudanese influxes. The cultural diversity is reflected in the city’s restaurants serving various international cuisines. latcui 4.19 – longitude 133  This Week Anthony hosts 12 in his fab pad in Limehouse, just by the river (& round the corner from one of our architectural projects). Dinner’s on Saturday – longitude 133 – and already we seem to have left Southeast Asia long ago. It’s our very last week in China, clinging to the tip of Heilongjang which is characterised (like frigging England these non-springy days) by its cold climate, varied topography and homogeneous culture. It’s full of pine and milk and oil – not ingredients we might immediately suggest for a culinary mashup. We’ll have left them by them (in fact today’s our last day there!) but since North Korea‘ll be joining us in a few months for our Paralympic Games (1st time ever!) perhaps we could include them in our feast. That rocket launch trumped their chancesof US food aid so they’ll be happy to be round that lush table. Just found this wonderful diminishing line in online instructions on how to prepare their signature dish, Mul Naengmyun noodles: “If you don’t have Asian pear, use bosc pears. If you don’t have bosc, use any pears. If you don’t have pears, use apples. Otherwise, just use sugar.” We’re still in Russia - when the heck aren’t we? – and it’s kinda like previous; you know, same same but different. We’re just entering the far-out Far East region, an area a third of Russia’s landmass, yet with a population of just over 6 million, mostly urban. We nip into Nippon, exploding into Hiroshima and heightened hospitality; a land of ritual and finesse & careful choreography of okazu, tsukemono – and kaiseki. Further South we pass through what’s left (post deforestation) of Indonesian non-New-Guinean Papua, home of the world’s largest (and dodgiest?) gold mine and just 2,500 speakers of the Yei language. And then Australia, arriving in aboriginal Arnhem land and riding route 87 straight down through Alice and South just west of Adelaide, out into the Great Australian Bight, sampling what we can of King Island cream, Sydney rock oysters, Bowen mangoes, Coffin Bay scallops, Tasmanian salmon, and Illabo milk-fed lamb. latcui 4.15 – longitude 112  Last week Was short and we ate alone at home (whopps – what a shame ) This week:  We hop back on the longitude trail, and make a pit stop on longitude 112 with a dinner for 20 at Anna’s in Hackney at 8pm (only 5 spots left so RSVP to anntxdr@aol.com soon!).Russia, Mongolia and China feature heavily this week. Shchi (cabbage soup) has been the predominant first course in Russian cuisine for over a thousand years. Shchi knew no social class boundaries, and even if the rich had richer ingredients and the poor made it solely of cabbage and onions, all these “poor” and “rich” variations were cooked in the same tradition. Guangdong is the most populous province in China, registering 79 million permanent residents and 31 million migrants who live in the province for at least six months of the year, travelling from all over China to jobs in the economic hub of Shenzhen. The region is associated with Cantonese cuisine – the type of Chinese food best known in the West, so have a go at making your favourite dish from your local take-away! Due to the climate and nomadic traditions of the people, Mongolian cuisine is light on veggies and heavy on meat and dairy products and animal fats. The Mongolian diet includes a large proportion of animal fat which is necessary for the Mongols to withstand the cold winters and their hard work. Yum. We also nudge into Borneo in Indonesia, famous for it’s orangutans and delicious cuisine, so let’s lighten up the menu with some Sarawak Laksa, Kolo Mee or Pansoh Manok. Hope to see you Saturday! latcui 4.12 – Feast-tastic  Last week Last Saturday we hosted a smorgasbord of nations (including two Swedes) – a pantheon of guests  and cuisines. We had a total of 14 courses (!) over four hours leaving everyone stuffed but happy and well versed in the cooking of the region. The longitude had a twang of Sovietscape sentiment – and the surprise revelation of amazing Kazakh food. The menu included a range of boiled and fried xinjiangian dim sum, some gorgeous Georgian starters, some Kazakh gutap-kazakh (herb parcels with lemon sour cream sauce), Tibetan shogo tang (roast potato soup with a tea broth), West Bengali tomato begun and dharosh bhaji, Kazakh soured mutton with dried fruits, and the finale of some Kazakh Samsa; awesome. latcui 4.11 – longitude 84  This week On Saturday evening, a few hours before the clocks surge forward into summer, Alex & Sinead invite 10 people to surge forward into the heat of the Indian subcontinent and beyond. It will be the 84th day of the year and thus longitude 84- a line stretching from Russia’s last major eastern tributary in the Kara Sea up North, through the eastern toe of Kazakhstan into Tibet via the province of Xinjiang (China’s biggest), and through Nepal into the Indian states of Bihar and West Bengal, Jharkhand, Orissa and Uttar Pradesh (India’s biggest). Kazakh cuisine caem from their nomadic origins – strong on horse, dried meats and soured milk. The most popular (equine) dish, ‘five fingers’, is so called because that’s how it’s eaten – your size of portion traditionally equating to your status as a guest. In Xinjiang, the food reflects the Islamic majority of the population – particularly the ‘Eastern Turks’, or Uyghurs – and is thus halal; signature stuff includes kebab and roast mutton, roast fish and rice, but also stretches to camel. Uttar Pradesh also peddles kebabs and mutton, but is most famous for many of more locally-familiar snacks and meals – pakora, samosa and biryani. latcui 4.10 – International Women’s Day The past Many thanks to Claudie for hosting a fantastic dinner full of Persian delights on Saturday night. Highlights included an array of spinach, aubergine and beetroot dips for starters, a lemon and black bean hotpot for mains and coconut burfi from Pakistan. This week To celebrate International Women’s Day (8th March) and Sinead’s launch of the Sky High Challenge on Facebook, on Friday 9th March, Sinead will be hosting a dinner focusing on food from countries where women and girls do not enjoy equal rights and face many challenges because they are female. The aim of the dinner is to build awareness of these issues but also to celebrate the amazing work that many organisations are doing to help. Here’s how to take part: 1. Choose a pressing issue that effects women and girls in the world today. Examples include sex slavery, lack of education opportunities, or child marriage. 2. Pick a dish to share from the country where this issue is prevalent, for example, sex slavery is common in South East Asia and India, girl’s education is an issue in many countries in Africa and the Middle East, and child marriage is common in India and parts of Africa. 3. Identify an organisation on the ground that is doing great work to help women and girls facing the issue. The Get Involved section of the Half the Sky website is a brilliant place to start. Examples of organisation making real progress in the issues above are Apne Aap in India, Camfed in Africa, and Girls Not Brides. 4. Bring a small donation which will be pooled and will go to the one of the organisation’s profiled. Best pitch wins the cash for their organisation!
