Formo un panetto che lascio lievitare per 2 ore, poi lo divido in palline di circa un etto e lascio lievitare ancora mezz'ora. Poi su un piano infarinato le allargo lasciando il bordo un po più spesso. Le friggo in olio di arachidi e le passo nello zucchero. La lascio riposare in un sacchetto qualche ora in frigorifero. Per il ripieno ho usato spezzatino di lonza e di tacchino, che ho insaporito con sedano,carote,cipolle,aglio,salvia,rosmarino e una foglia di alloro. Ho spruzzato di vino bianco di Custoza e ho portato a cottura con brodo vegetale. Una volta raffreddato ho frullato tutto e poi vi ho aggiunto un uovo, grana padano, regolando di sale se serve. Poi ho steso la sfoglia cHe ho farcito con il ripieno chiudendoli a tortellone. Vanno conditi con burro e salvia, oppure come nella foto, con pancetta tagliata a cubetti e rosolata in un sofritto di cipolle. &lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Questo è un altro piatto unico della domenica.&amp;nbsp;I maccheroni li faccio io con la Pastamatic, quando mi regalano delle uova nostrane. Il primo ragù è fatto con un mix di funghi (porcini secchi, prataioli,chiodini che ho raccolto io), li faccio semplicemente trifolare con olio di semi di mais e aglio. I porcini secchi li ho fatti precedentemente ammollare nel latte,questo latte l'ho usato poi per portare a cottura i funghi. Il secondo ragù è fatto con macinato misto di maiale e vitello al quale aggiungo cubetti di pancetta. Inizio con soffriggere aglio&amp;nbsp;e cipolla e una volta rosolata vi aggiungo la carne macinata che mescolo in continuazione per un paio di minuti&amp;nbsp;in modo che si sgrani. Sbuccio la zucca e la taglio a cubetti, faccio sciogliere in una pentola una noce di burro, vi metto i cubetti di zucca e li porto a cottura aggiungendo un pò di brodo. A parte nella teglia del risotto, faccio un sofritto di cipolla (ancora meglio lo scalogno), quando è ben rosolato vi verso il riso che lascio tostare per un minuto, vi aggiungo un mezzo bicchiere di vino bianco di Custoza che faccio evaporare a fuoco vivace, mescolando bene. Porto a cottura il riso aggiungendo il brodo, a circa metà cottura aggiungo la zucca, che continuando a mescolare si scioglierà amalgamandosi al riso. Da ultimo vi aggiungo un'abbondante spolverata di grana padano e una grattatina di noce moscata. Sulla latta del forno ricoperta con carta da forno metto in fila mucchietti di riso soffiato, di granella di nocciole e gocce di cioccolato. Con un cucchiaio lascio cadere l'impasto sui mucchietti che ricopro nuovamente con granella di nocciola, riso soffiato e gocce di cioccolato. Metto in forno a 180° per circa 10/15 minuti. A parte ho fatto un sofritto di cipolla che&amp;nbsp;una volta&amp;nbsp;raffreddato ho aggiunto al pane. Ho fatto un trito di speck affettato e prosciutto cotto,(si può fare anche con altri salumi). Per dargli un tocco in più ho aggiunto funghi porcini secchi che avevo precedentemente ammollato nel latte, li ho tritati grossolanamente e li ho aggiunti all'impasto di pane assieme al trito di affettati.&amp;nbsp;Ho impastato&amp;nbsp;tutto regolando di sale e pepe, aggiugendo una grattatina di noce moscata. Se l'impasto vi sembra troppo morbido non abbiate fretta di aggiungere del pane grattugiato per rassodare l'impasto, io lo lascio riposare per un'ora così il pane mi assorbe l'umido in eccesso. Possono essere lessati in acqua salata o brodo vegetale (carota,sedano,cipolla e una foglia di alloro). Dopo qualche minuto metto i filetti nella teglia, li cospargo con l'insaporitore da entrambi i lati. Dopo due minuti metto tre cucchiai di vino bianco di Custoza e succo di limone, lascio restringere il sugo e servo. &lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Preparo un soffritto con cipolla e olio, vi aggiungo le zucchine tagliate sottili facendo attenzione che non attacchino al fondo, lascio cuocere per cinque minuti. Poi verso il riso, lo faccio tostare aggiungendo un mezzo bicchiere di vino bianco di Custoza che faccio sfumare. Porto a cottura con brodo vegetale. Prima che termini la cottura aggiungo cubetti di prosciutto cotto affumicato. Terminata la cottura faccio mantecare con grana padano per tre o quattro minuti. &lt;/div&gt;&lt;div style="text-align: justify;"&gt;Affetto sottilmente la cipolla e le zucchine, le cuocio in una padella antiaderente con olio a fuoco medio, mescolando spesso,insaporisco con sale e pepe. Quando sono quasi cotte le tolgo dalla padella, verso un po di olio e le uova battute con sale e grana padano. Appena la frittata si rapprende distribuisco zucchine e cipolle, lasciando cuocere la frittata a fuoco basso con il coperchio per due minuti. Poi con l'aiuto di un piatto o di un coperchio rovescio la frittata, la cuocio dall'altra parte e la servo. Ho preparato a parte un trito di aglio e prezzemolo, al quale ho aggiunto sale, pepe, pangrattato e grana padano. Ho passato gli spiedini in entrambi i lati in questa panatura, cuocendoli al forno a mezza altezza (solo grill), dieci minuti per lato. In questo caso lo ho serviti su un letto di radicchio di campo condito con aceto balsamico. Ho lasciato cuocere per 25 minuti circa, ho tolto il cartoccio, l'ho aperto e lasciato raffreddare. Ho spezzato il trancio e condito le tagliatelle precedentemente lessate. Li ho cosparsi di succo di limone e sale. A parte ho preparato un trito con: aglio,prezzemolo,basilico,salvia,rosmarino,pangrattato,grana padano,sale e olio. Con questo battuto ho cosparso i filetti e ho messo al forno per 15 minuti a 150 gradi. Come potete vedere li ho poi serviti con una insalata di cavolo cappuccio e pomodori del mio orto. &lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Faccio un soffritto &amp;nbsp;di cipolla, vi aggiungo pomodoro spellato e tagliato a cubetti, lascio rosolare per un po, poi metto peperone verde e giallo tagliato a piccoli cubetti, quando anche questi sono rosolati, aggiungo sale e origano e da ultimo prima di spegnere, cubetti di prosciutto cotto (si può anche usare un salume a piacere). Lascio insaporire per un paio di minuti e spengo. Lesso la pasta al dente, la lascio raffreddare con acqua corrente fredda, la condisco con il ragù e con scaglie di grana padano. &lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Uso un pezzo di lonza di un chilogrammo circa, la lesso in acqua bollente salata, con l'aggiunta di cipolla, aglio, sedano, carota, alloro, chiodi di garofano e un cucchiaio di aceto. Servirà circa un'ora, la lascio raffreddare e la affetto sottilmente. Queste fettine si possono ricoprire con salsa tonnata o con altra salsa a piacere, in questa occasione io l'ho condita con un soffritto di abbondanti cipolle,con la mio &lt;b&gt;insaporitore&lt;/b&gt; (vedi la ricetta descritta nella sezione &lt;b&gt;ragù salse e conserve&lt;/b&gt;), &amp;nbsp;e sfumata con vino bianco di Custoza. Disporre in bella vista le fettine su un piatto da portata, ricoprire con il soffritto di cipolle e servire come piatto freddo. La tiro con la macchinetta (nonna papera) e la lesso al dente. Il ripieno è fatto con spinaci saltati in padella, non li lesso ,ma li lascio cuocere a fuoco basso bagnati con l'ultima acqua di risciacquo, uno spicchio di aglio, grana padano e sale. Li faccio asciugare bene, li mescolo con ricotta, grana padano grattugiato, noce moscata e sale. Questa sarà la farcia dei rettangoli di sfoglia che una volta ripieni arrotolo e &amp;nbsp;taglio più o meno della stessa altezza. Li metto in una teglia da forno unta di olio e li passo al forno ricoperti con grana padano e pangrattato. Il ripieno l'ho fatto con macinato di carne mista (manzo, maiale tacchino). Vi aggiungo una salsiccia sbriciolata, un uovo, aglio, prezzemolo, grana padano grattugiato, pangrattato e sale. Riempio i peperoni e li adagio in una teglia da forno unta di olio,sopra ogni peperone metto una sottiletta e metto in forno per 30 minuti a 160 gradi. Verso il riso nel soffritto, lo faccio tostare, vi aggiungo le zucchine del mio orto tagliate con la midollina, mescolo e lo porto a cottura con brodo fatto in precedenza con una carota, uno spicchio di aglio, una costa di sedano, mezza cipolla e una foglia di alloro.. Quando è cotto lo manteco con grana padano grattugiato e lo lascio stufare per due o tre minuti, quindi vado a impiattare. Impasto farina di semola con uova e spinaci (le proporzioni variano a seconda della quantità degli ingredienti che ho). Tiro l'impasto con la macchinetta (nonna papera), lesso al dente le lasagne in acqua, olio e sale. Faccio raffreddare in acqua fredda e le farcisco a strati con besciamella, grana padano, mozzarella e scamorza affumicata. Poi una volta raffreddata la taglio a losanghe e le fisso con uno stecchino.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;b&gt;Croissant di pasta sfoglia&lt;/b&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Taglio a spicchi la pasta sfoglia farcendola con pesto al basilico, olive nere trite e grana padano. Li arrotolo, li spennello con un tuorlo d'uovo e li inforno per 10/15 minuti a 160 gradi.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;b&gt;Bastoncini di sfoglia&lt;/b&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Servono due rotoli di pasta sfoglia rettangolare, spennello il primo con uovo sbattuto e latte, lo ricopro con un trito di tonno, olive nere e ricotta. Le formo del diametro di circa 2 cm., le friggo in olio extravergine d'oliva. Lesso la pasta e la condisco con una besciamella morbida insaporita con noce moscata &amp;nbsp;e peperoncino.
