I am excited to announce the grand opening of Your Homebased Mom Etsy Shop!!

I love shopping on etsy as well as promoting and supporting etsy shops so I am now proud to be part of this amazing community. A community of people who support the buying and selling of all things handmade!

Due to popular demand I have stocked my shop with some of those pretty reuseable grocery bags I shared with you a few weeks ago. I’d love for you to go over and take a peek and let me know what you think.

If I do say so myself I think they are pretty darn cute!

There are only a certain number of bags available in each fabric selection so if you see one you like you will want to grab it because once it is gone – it’s gone. I will be adding lots of other pretty fabric selections later this week.

Each bag has been lovingly made by me – Your Homebased Mom!

Stay tuned for other lovely, pretty items that will be added in the future!!

Happy shopping!!

This week I had fun finding the pretty here at home and in Utah too when I flew there to be with my son when he had ACL surgery. He’s doing great and on the road to recovery!

February 1 – Day 26

Pretty pears in a pretty bowl.

February 2 – Day 27

My friend Jeannena and I paid a visit to a fun bakery in NW Portland – Two Tarts Bakery. A yummy selection of fun and pretty bite size cookies.

February 3 – Day 28

Some more pretty and delicious – in fact so delicious this meal gets two photos. I enjoyed lunch at Communal in Provo with Logan and Cali. Logan commented on how much it felt like home – a very Portland-esque restaurant!! Pretty presentation and lots of local fresh ingredients. Just how we like it here in Portland! The blue cheese/bacon burger was amazing.

And even more yummy and prettier were the fresh cut fries! I loved the pretty presentation!

I knew we were in Utah though when they served fry sauce with the french fries!!

February 4 – Day 29

A fun photo shoot with my pretty daughter Cali.

February 5 – Day 30

Arriving back home after a quick trip to Utah – pretty Portland bathed in sunshine!

February 6 – Day 31

Some pretty flowers that we used for our table decorations at the church women’s event I helped with Friday night – yes, just several hours after arriving home from Utah . No rest for the wicked or is that weary???? For more details on our fun table decor visitYour Homebased Parties.

I have to admit when I opened The Pioneer Woman Cooks for the first time and saw the recipe for meatloaf I shuttered.

You have to understand that meatloaf has not crossed the table of the Wilkes household for at least 12 years.

We had an “encounter” with meatloaf 12 years ago that has left us all pretty scarred and we have been unable to bring ourselves to make or eat meatloaf since then. I guess you could say we have meatloaf phobia!

You see, someone very kindly brought dinner to us one night, it was meatloaf. Except, instead of being brown, the usual color of meatloaf, it was grey. I don’t know about you but I just don’t think food should be grey! No one was able to eat it and no one in our family has eaten meatloaf since.

I had made the committment to cook every recipe in The Pioneer Woman Cooks though so I knew I was going to have to make meatloaf. Maybe I could make it and take it to another family?

No, I decided we needed to get over our meatloaf phobia!

I prepared the family. I announced at the dinner table, the night before, that I would be making meatloaf the next night. Tessa replied , “I’m scared!”

Pioneer Women’s recipe is very similiar to the one I use to make, years ago, before our life altering meatloaf experience. She adds bacon on top too which I hadn’t done before.

And then covers it with a yummy, sweet mixture of ketchup and brown sugar that Pioneer Women calls tomato gravy. I am a ketchup fan and believe anything can taste better with ketchup on it!

So I baked up the meatloaf, served it with a baked potato and spinach salad. I also used the leftover tomato gravy as a dipping sauce. I then sat at the table and waited. Waited for them to take their first bite and see their reaction.

I was pleasantly surprised – they ate it and even said they liked it! Jim enjoyed the leftovers the next few days in a meatloaf sandwich. I halfed the recipe and we still had lots of leftovers.

I have to admit, it was good, but I’m still not a huge meatloaf fan. I think it is more of a texture issue for me – surprise, surprise. I am glad I tried it and maybe we got rid of our meatloaf phobia.

If you are meatloaf fan this is a good one – give it a try!

Pioneer Woman Meatloaf

The Pioneer Woman Cooks

1 C milk

6 bread slices

2 lbs ground beef

1 C grated Parmesan cheese

1 tsp salt

1/4 tsp seasoned salt, such as Lawry’s

freshly ground black pepper

1/4 to 1/2 C minced flat-leaf parsley

4 eggs, beaten

8-12 thin bacon slices

Tomato Gravy

1 1/2 C ketchup

6 Tbsp brown sugar

1 tsp dry mustard

Dash or two of hot sauce – more if you like heat

Preheat oven to 350 degrees

Pour the milk over the bread and allow it to soak in or several minutes.

Place the ground beef, milk soaked bread, Parmesan cheese, salt, seasoned salt, black pepper and parsley in a large mixing bowl. Pour in the eggs

With clean hands, mix the ingredients until combined well.

Form the mixture into a loaf shape and place on a broiler pan, this will allow the fat from the meat to drain. Line the bottom of the pan with foil to make clean up easier.

Lay bacon slices over the top, tucking them underneath the meatloaf.

Make the tomato gravy. Pour the ketchup into a small bowl, add brown sugar and dry mustard and splash of hot sauce.

Stir the mixture until well combined. Pour one third of the tomato gravy over the top of the meatloaf.
Bake for 45 minutes, then pour another one third of the remaining tomato gravy over the meatloaf. Bake for an additional 15 minutes. Serve with the remaining tomato gravy on the side as a dipping sauce.

Well the menu is finalized and the recipes are distributed to all the lovely ladies who are helping me bake.

The church event I am in charge of the dessert bar for is this Friday. I am headed out of town on Wednesday for 48 hours – I will arrive back home just a few hours before the actual event so I am grateful for all those who are baking for me!! Let’s hope my plane is on time!

Here is the dessert bar line up – a stellar lineup of yummy bar cookies!

Key Lime Bars – this may be my favorite bar cookie on the menu and the best part is they are even better the second day.

Raspberry Cheesecake Brownies - a yummy combination of chocolate, raspberry and cream cheese. One of my college boys has requested these when I come to visit!!

Blueberry Crumb Bars – I love the subtle lemon flavor in the base of this bar cookie and of course the blueberries are wonderful too!

Chocolate Chip and Toffee Bars – this combination of chocolate and toffee/caramel is amazing! These are yummy and gooey and best served warm and should definitely come with a warning label – may be dangerous to your hips!!

The final addition and today’s recipe is one I found over at my fellow food blogger Lori’s blog – RecipeGirl. Lori called these Snickerdoodle Heaven and if you are a snickerdoodle fan I think you will too. Even if you aren’t a snickerdoodle fan give them a try. Everyone I shared them with loved them and asked for the recipe!

The recipe calls for cinnamon chips. I have only been able to find cinnamon chips at Christmas time. Fortunately for me I had 3 bags in my freezer! They are available to buy on Amazon and I found another source for them here.

I think they would also be great without the chips – maybe even with some butterscotch chips!? If you try it let me know what you think!

Snickerdoodle Blondie
www.RecipeGirl.com

Cookies:
2 2/3 cups all-purpose flour
2 tsp. baking powder
1 tsp. ground cinnamon
¼ tsp. ground nutmeg
½ tsp. cream of tartar
1 tsp. salt
2 cups brown sugar, packed
1 cup butter, at room temperature
2 large eggs, at room temperature
1 Tbsp. vanilla extract
1 cup cinnamon chips, optional

Topping:
2 Tbsp. granulated sugar
1 tsp. ground cinnamon
pinch of nutmeg

Glaze (optional):
1 cup powdered sugar, sifted
1 tsp. ground cinnamon
¼ cup heavy whipping cream
1 tsp. vanilla extract

Preheat oven to 350 degrees F. Spray 9×13-inch pan with nonstick spray. Line pan with parchment and let it hang over the sides. Spray parchment with nonstick spray too.
In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, cream of tartar and salt; set aside.
In a large bowl, cream together butter and brown sugar with an electric mixer (3 to 5 minutes). Mix in eggs, one at a time, then vanilla. Keep beating until mixture is smooth.
Stir in flour mixture until well blended. If using cinnamon chips, stir them in now. The batter will be thick. Spread it evenly into the prepared pan. Spray your hands with cooking spray and use them to pat the mixture down evenly.
Combine the topping ingredients in a small bowl; sprinkle evenly on top of batter.
Bake 25 to 30 minutes or until surface springs back when gently pressed. Let pan cool completely.
When ready to cut, use ends of parchment paper to lift out baked bars. Place on a cutting board. If you’re adding the glaze, whisk the glaze ingredients in a medium bowl and drizzle onto the bars in decorative fashion. Let glaze set (this will work more quickly in the refrigerator) then use a large, sharp knife to cut into bars.

Makes 20 to 24 bars

Baking Tips:
*You don’t have to use parchment paper in your pan if you don’t have any. You can always just bake them in the pan and then cut them and lift them out. Baking w/ parchment though will help you to get the cleaner cuts seen in the photograph because you can take the whole thing out of the pan and work directly on a cutting board.
*This is a very sweet treat. Leave off the glaze if you wish, but it adds a good flavor to the top (and you can get a nice design out of it). Put the glaze in a little zip bag, snip off the end and you’ll have a way to squirt the glaze on in whatever decorative way you’d like.
*If you have chunky, white, sparkling sugar, add that to the top too for extra sparkle.

It was a busy, crazy week around here . I found I had to make more of an effort each day to find the pretty. Think you will see a bit of a theme this week – sweet friends and family and pretty flowers.

January 25 – Day 19

My pretty kitchen calendar. I originally found this calendar in a little gift shop in Kennebunkport, Maine one summer. I fell in love with the beautiful flowers and have been ordering one online every year since. Check out their website Art for Everyday. I chose to show you August because I think it is the prettiest month, although they are all pretty!

January 26 – Day 20

Sightings of pretty things to come in the garden.

January 27 – Day 21

Some pretty spring flowers from a pretty friend who came to visit. A sure way to brighten the day!

January 28 – Day 22

Decorating the house with some pretty Valentine decor!

January 29 – Day 23

A sweet friend stopped by with this amazingly yummy and pretty treat. She knew how much I love lemon. Thank you Jeannena!!!

January 30 – Day 24

Some beautiful flowers from my sweet husband – just because! The best reason to give someone pretty flowers is no reason.

January 31 – Day 25

Because there is not much blooming in the garden right now you can really focus in on the beautiful bark of some of the trees. My favorite tree in our garden is the one in our front yard – a Prunus serrula. The peeling red bark is amazing.

Have fun finding the pretty in your day this week!!

Cowboys may like calzone because they are quick and easy to eat on the run but so do us civilian folk , especially busy civilian folk!!

A calzone is like a pizza pocket or turnover. In Italian it actually means “stocking” or “trouser”. Not really sure how it resembles a stocking or trouser but oh well!

The great thing about calzone is they can be eaten out of hand or with a knife and fork. They freeze well so they are perfect for a quick snack or lunch for someone.

The recipe made more than our reduced size family could eat so after baking and cooling I wrapped them individually and tossed them in the freezer. When you are ready for a quick snack, lunch or dinner just zap them in the microwave!

I used Pioneer Women’s pizza recipe which is a good one. I makes enough dough for two pizzas or a batch of calzone and a pizza or two batches of calzone! I used half for the calzone and then saved the other half in the refrigerator (can be refrigerated for up to 3 days) for pizza.

The inside is filled with a mixture of hamburger, tomato and three kinds of cheese – yum. You could get creative with your filling even using leftover chicken, pepperoni or vegetables. Whatever you like to eat on pizza!

We’ve already made these twice at our house and I’m sure we’ll be making them again, next time I will experiment with the fillings a little bit!

Please excuse my poor photos. It was late, dark and we were really hungry and in a hurry!!

Pizza Crust

The Pioneer Woman Cooks

Pizza Crust

Yield: 2 pizza crusts

Ingredients

1 tsp or 1/2 packet active dry yeast

1 1/2 C warm water

4 C all-purpose flour

1 tsp kosher salt

1/3 C extra virgin olive oil, plus more for drizzling

In a mixing bowl, pour the yeast over 1 1/2 cups of warm water, stirring gently. In a separate bowl, combine the flour and salt. Using an electric mixer on low speed, drizzle in the olive oil until just incorporated. Add the yeast mixture to the flour mixture, mixing until the dough forms a ball. (You can also do this by hand.)

Drizzle a little olive oil into a clean bowl. Toss the ball of dough in the bowl and turn over to coat in oil. Cover the bowl with a moist kitchen towel and set in a warm place for 1-2 hours, or cover with plastic wrap and store in the fridge for up to 2 days.

Divide the dough in half, then using your hands, stretch the dough to the desired shape, pressing it into an oiled pan with your fingers. The thinner the better. The surface of the dough should be lumpy from finger marks. The other half of the dough may be wrapped tightly in plastic wrap and refrigerated up to 3 days before use, or frozen for up to 6 months.

Cowboy Calzone

1/2 lb. hot breakfast sausage (I used mild)

1 lb. ground beef

1/2 onion, finely diced

1 – 8 oz. can tomatoes and chilies (Rotel brand)

8 oz. whole milk ricotta cheese

1/2 C grated mozzarella cheese

1/2 C grated Monterey Jack cheese

1 egg, beaten

salt and black pepper

1 recipe pizza crust (1/2 of above recipe)

olive oil for brushing

Preheat oven to 450 degrees.

In a large skillet combine the sausage and hambuger with the onion. Brown and drain off extra grease. Pour in the tomatoes and chilies.

Stir to combine, and cook for 2 minutes. Remove from the heat and allow to cool slightly.

In a bowl combine the three cheeses and the egg. Add a dash of salt and pepper. Add the cooled meat mixture to the cheese mixture and stir to gently combine.

Divide the pizza dough into 8 equal size balls. With a rolling pin on a floured surface, roll each ball into a 6 inch circle.

Place one eighth of the meat/cheese mixture in the middle of each circle. Fold half of the circle over the other half, gently pressing to slightly spread and flatten the filling inside. Press a fork along the edge to seal closed then transfer the calzone to a greased baking sheet. Repeat with the remaining dough and filling. Brush the top of calzone with olive oil.

Bak for 12-15 minutes until golden brown. EnJOY!

Thanks to Val for sharing this yummy chocolate recipe with me. Not only did she share it but she sent it to me on a darling recipe card she got from the blog where she found the recipe.

Val’s recipe will also be showing up on that dessert bar.

This recipe combines lots of favorite flavors – chocolate, raspberry and cream cheese – yum!!

I used frozen raspberries which worked fine, just make sure to thaw and drain them well. Fresh raspberries would be wonderful too! If any of the bars happen to last through the day be sure and refrigerate them overnight because of the cream cheese.

Raspberry Cheesecake Brownies

from Dutch Girl Cooking

Ingredients:

1 C flour
2 C sugar
7 oz butter
7 oz dark chocolate
5 oz raspberries
14 oz cream cheese
1 tsp vanilla extract
5 eggs

Directions:

Preheat oven to 350 degrees.

Combine butter with 1 cup sugar and mix. Add 3 eggs one at a time. Melt the chocolate and mix it in with the butter and sugar. Gently fold in 1 cup of flour

Butter a 9 x 13 baking pan and line with parchment paper.

Put the cream cheese in a big bowl, add 2 eggs, 1 cup sugar and 1 tsp vanilla. Mix until it is smooth.

Spread 2/3 of the brownie mix on the bottom of the pan.

Pour the cream cheese on top. Add spoonsfuls of remaining brownie mix on top of cream cheese and marble it together with a knife. Sprinkle raspberries on top and push them into the cream cheese.

Bake for 40-45 minutes.

Let the brownies cool completely before cutting them into squares.

I don’t know about you but just about every January I get that bug – that redo, revamp, reorganizational bug and I always seem to start with my closet! I’m usually pretty tired of my clothes about this time of year and feeling like I need a little redo myself! Ever feel like that?

Well, lucky for me my friend Karen, a personal stylist, was there to help out! A personal stylist is someone who helps you look your best.

Karen spends time listening to you and getting to know you, your lifestyle and the various roles you play. (This didn’t take long for us because we’ve known each other for years.) Next, Karen spent one on one time with me talking about my body type and shape and how I can emphasis my assets and hide my defects. She helps you discover what looks best on your body just the way it is. She can even help you figure out what colors look best on you.

After helping me learn my style we moved onto the closet, yes the dreaded closet!! I must admit I spent a little time the day before she came over cleaning it up a bit!!

Karen doesn’t expect you to go out and buy a whole new wardrobe, in fact her main goal is to help you learn how to shop your closet. This is the part I loved. She went through my closet with me and we focused in on some of the things I never wear. Usually the reason was that I didn’t know what to wear with it. Karen helped me shop my own closet by coming up with some fun new ways to combine clothes I already had. Karen teaches that you don’t need to get rid of everything in your closet and you don’t have to spend a fortune to look good. I had a whole new wardrobe without going shopping! My husband loved that part!!

Karen recently did a great article where she shows you exactly how to mix and match the clothes you already have in your closet. Check it out here. If you tend to wear the same outfits in the same order Karen has some great tips and ideas for you.

Karen helps you learn your style, shop your closet and love your look! Be sure and check out her blog Style by Karen for more great fashion ideas and tips.

Now for the best part! Karen is sponsoring a giveaway here on the blog. Karen is offering a free 3 hour personal consultation. She will assess clothing needs, determine personal style, analyze body type/colors, and Karen will make suggestions for closet organization. She will work with a long distance winner via phone calls, photos and possibly skype. Also included: Style guide and closet tabs. This is an amazing value!

Just leave a comment below and you will be entered in the drawing. Giveaway closes Friday, January 29th at midnight PST.

Meet my friend Karen:

I have been a Washingtonian all but 10 years of my life. I was raised in Lynden, WA, a small farming community in the NW corner, just a few miles from the Canadian border. After attending college in Michigan, I landed my first job in Denver, Co where I lived for 6 years and met my husband, Mike. His job in the lumber industry brought us back to the NW and in 1989 we settled in Vancouver WA, which is in the very SW corner of the state. Nestled in between Seattle and Portland OR, we love the small city feel which has been perfect for raising our two boys Ethan and Collin who are now 17 and 14. My previous career as a school teacher and home business owner has paved the way for beginning a new business in 2008. As a personal stylist I enjoy using my creativity in a whole new way. I love teaching women how to look, feel and dress their best.

My journey in finding the pretty in turning 50 continues….

This week I had a little help in finding the pretty. Tessa found our first pretty for the week. One morning she called me into the laundry room to show me how pretty her dress was with the sunlight streaming through it – she was right!

January 18 – Day 12

January 19 – Day 13

A pretty vintage tablecloth on my kitchen table. Every table deserves a pretty tablecloth!

January 20 – Day 14

I always have 2-3 bowls of fruit on my kitchen counter and table. Fruit is just too pretty to be kept in the refrigerator.

January 21 – Day 15

A pile of prettiness in my sewing room. Remember those pretty reusable grocery bags I showed you the other day? Well, due to popular request I may just have made up a bunch this week that will be for sale soon – if you are interested leave me a comment or drop me an email! I promise – they’ll be pretty!!

January 22 – Day 16

Everyone needs a calendar, right? The rule at our house is it must be a pretty one. Isn’t this one darling? I bought it from Sarah Jane Studios. She is a children’s illustrator and I love, love her work! She has them on sale right now for 50% off so they are only $12.00. What an amazing price for so much pretty. If you buy one tell her Leigh Anne at Your Homebased Mom sent you over! This calendar hangs in my office – I’ll share the pretty one in my kitchen next week!

January 23 – Day 17

Tessa and I went out for our Saturday morning breakfast adventure this week and she ordered hot chocolate. I think it is one of the prettiest hot chocolates I have seen ! I just wish it had tasted as good as it looked…

January 24 – Day 18

I’ve been using Tessa as my practice model for my photography class. Isn’t she pretty!!

So where did you find the pretty this week?

I think my favorite ethnic food group is Mexican. It is usually my food of choice when I get to pick where we go out to eat.

One of my favorite food memories growing up are the yummy cheese enchiladas my mom made.

When I was in college I would save up my food money and treat myself to a cheese enchilada in the BYU Cougareat once a week!

And still, when we go out for Mexican food, my choice is always the same – cheese enchiladas!

I am not a huge ground beef fan so I was a little leery of PW’s enchilada recipe but I made a commitment so I knew I was going to give it a try. I was pleasantly surprised. The doctored up enchilada sauce is great – much better than straight out of the can.

One of the problems I have always had when I make enchiladas is that the tortillas crack when I roll them up with the filling inside. PW’s great tip for frying them in some oil first helps make them somewhat crisp so they don’t get all mushy when cooked but soft enough to prevent cracking when rolling up the enchilada.

I like the seasoned beef filling but next time I think I will try it with chicken and I must admit a plain old cheese enchilada is still my favorite!

The recipe doesn’t call for black olives on top (just on the inside) but I love olives in my enchiladas so I added extra. My mom always put olives in her cheese enchiladas but they were always whole olives. As kids we use to love putting an olive on each finger and then eating them off our fingers. I still remember the time I did it with the olives that came out of the hot, gooey cheese enchiladas – OUCH! I use sliced olives in my enchiladas so I’m not tempted!

I can’t eat enchiladas with out rice so I cooked up a batch of my favorite Mexican rice to go along with it.

So next time you have a craving for some good Mexican food be sure and try Pioneer Women’s Simple, Perfect Enchiladas! They live up to their name.

Ingredients

FOR THE SAUCE:

1 Tablespoon Canola Oil

1 Tablespoon All-purpose Flour

1 can (28 Ounce) Enchilada Or Red Sauce

2 cups Chicken Broth

½ teaspoons Salt

½ teaspoons Ground Black Pepper

2 Tablespoons Chopped Cilantro

FOR THE MEAT:

1-½ pound Ground Beef

1 whole Medium Onion, Finely Diced

2 cans (4 Ounce) Diced Green Chilies

½ teaspoons Salt

FOR THE TORTILLAS:

10 whole (to 14) Corn Tortillas

½ cups Canola Oil

TO ASSEMBLE:

3 cups Grated Sharp Cheddar Cheese

½ cups Chopped Black Olives

1 cup Chopped Green Onions

½ cups Chopped Cilantro

Preparation Instructions

Step #1 – The Sauce
In a large saucepan over medium heat, add oil and flour and whisk together to make a paste, cooking for one minute. Pour in the red sauce, chicken broth, cilantro, salt and pepper. Bring to a boil. Reduce heat and simmer 30-45 minutes.

Step #2 – The Meat
Brown the meat with onions in a skillet. Drain off fat. Stir in 2 cans diced green chilies and seasoned salt. Set aside.

Step #3 – Tortillas
Heat canola oil in a small skillet over medium heat. One by one, using tongs, fry tortillas in oil until soft, not crisp – about 30 seconds per side. Remove to a paper—towel lined plate. Repeat until all tortillas have been fried.

Step #4 – Assembly
Preheat oven to 350 degrees. Pour ½ cup red sauce in bottom of baking pan. Spread to even out. Dip each tortilla into red sauce, then remove to work surface. Spoon meat, a little grated cheese, a little black olives, and green onions in the center of tortilla. Roll up and place, seam down, in baking pan. Repeat until pan is filled. Pour extra red sauce over enchiladas. Top with remaining cheddar cheese.

Bake for 20 minutes or until bubbly. Sprinkle cilantro over enchiladas before serving.

I am in charge of the food for yet another women’s event at church.

This time we are doing a dessert bar with an assortment of bar cookies. That means I’ve been trying out a lot of bar cookie recipes lately. This could add a lot of extra calories to the old caloric intake but I have been pretty good about only eating a couple myself – for research and then giving the rest away! But I must admit that I ate more than just a couple of the bar recipe I am sharing today – it was so yummy.

I am trying to balance the flavors for the dessert bar and I knew I needed at least one citrus flavored bar cookie. I have done my yummy lemon cheesecake bars several times at church events so I couldn’t do those again. It would kind of be like wearing the same outfit to church two weeks in a row!

Since I had done lemon I decided lime would be perfect. I found a recipe for key lime bars in a Land O’Lakes Best of Baking magazine. I have found a couple of other great recipes out of the same magazine. Unfortunately for all of you the magazine is a couple of years old and no longer available but lucky for you I’m sharing!

The recipe calls for key lime juice. Key limes are smaller limes, about the size of a ping pong ball and not quite as green as the bright green Persian limes you usually find in the store. I couldn’t find fresh key limes at the store but I did find bottled key lime juice. The brand was Nellie & Joes. If you can’t find fresh key limes or bottled key lime juice just use regular limes. There is a slight flavor difference but the regular limes will be fine. If you use the bottled key lime juice buy a regular lime too so you can grate the lime peel to put on top. It’s so pretty!

The original recipe was for a 8 or 9 inch square pan but I changed it a bit to work for a 9 x 13. I one and a half times the recipe but after making them I wish I had doubled the filling part of the recipe so the recipe below reflects that change.

The great thing about the bars is that they were yummy the day I made them but even better the second day! Like I said I ate more than my share!! The recipe is a definite keeper and will be part of our dessert bar line up!

Key Lime Bars

Crust:

1 3/4 C all purpose flour

3/4 C butter, softened

1/3 C sugar

1/3 C chopped pecans

Filling:

1 1/2 C sugar

4 eggs

4 Tbsp flour

5 Tbsp fresh key lime juice

1/2 tsp baking powder

Frosting:

2 1/4 C powdered sugar

1 1/2 Tbsp butter, softened

2-3 Tbsp fresh key lime juice

Freshly grated key lime peel

Preheat oven to 350 degrees. Combine the crust ingredients except for the pecans into a bowl. Beat at low speed until the mixture resembles coarse crumbs. Add in the pecans. Press mixture into the bottom of an ungreased 9 x 13 pan. Bake for 15-20 minutes or until edges are slightly browned. You don’t want to over cook it.

Meanwhile, combine all filling ingredients into a bowl. Beat at low speed until well mixed. Pour filling over hot, partially baked crust. Continue baking for 18-20 minutes or until filling is set. Cool completely.

Combine all the frosting ingredients except lime peel in a bowl. Spread over cooled bars. Garnish with grated lime peel.

adapted from Land O’Lakes Best of Baking

I’ve been trying to be more green lately. I do live in Oregon after all – the capital of living green!

I have to admit one thing I struggle with is remembering to take those reusable shopping bags in with me to the grocery store. I tried leaving them in the car but I’d get in the store and realize I forgot them and I was just too lazy to go back and get them or it would be pouring down rain and I wasn’t going back out in the rain again!

The reuseable bags I had were plain old solid blue and green with some store logo on it – boring!! I thought maybe if they were pretty bags I’d remember to use them, even look forward to using them. Guess what – I was right!

I found a great pattern for a reusable shopping bag by Posie Rosy Little Things. She knows all about going green because she is from Portland too! You can keep up on all the other pretty things she is doing at her blog.

Here’s one of my pretty new bags! They are quick to sew up and I think I did three of them in less than two hours.

I just raided my fabric cupboard for pieces that were big enough. Have fun with your fabric selection – they don’t have to match!

Of course you are going to need more than one bag - at least I know I did!

I made this one with some leftover fabric from a quilt I made for Cali.

Don’t you think she is going to look darling at college carrying this bag…

…on this bike! She’s just going to wish mom had bought the groceries for her!

You know how I feel about pretty. So, if you are going to use a reusable shopping bag, it might as well be a pretty one. And it just might help you remember to use it!!

January 11 – Day 5

What is prettier than a pretty bowl full of fruit. I found this vintage bowl at a flea market. I don’t want to think about what it might have originally been used for….

January 12 – Day 6

I love green. Green makes me happy.

January 13 – Day 7

My birthday tulips are about spent. Not only are they beautiful on the outside but they are beautiful on the inside too – just like a lot of people I know

January 14 – Day 8

It has done nothing but rain around here for the last few weeks. Grey, wet and dreary. I’d had about enough of it this week so I decided some pretty yellow shoes would brighten my day!

January 15 – Day 9

Sun, glorious sun. Yes, the sun managed to poke its head out for a few minutes today!

January 16 – Day 10

The sun went away. I needed a “pretty fix” so I headed to Anthropologie. This store never fails me when I need a pretty fix! It is my favorite place to drool and dream! A pretty row of aprons – just what I needed.

January 17 – Day 11

The garden is wet and muddy and mostly asleep but I can’t bear to cut down the dried hydrangea blossoms – so pretty!

I love tomato soup. I have loved tomato soup since I was a kid. I think one of my favorite lunches or dinners growing up was tomato soup with a grilled cheese sandwich – wasn’t it yours too? Hands down, tomato soup always won out over chicken noodle or any other soup.

Of course there was that stage I went through when I was about two when the only thing I would eat was Turkey Vegetable soup – cold and unconstituted! Fortunately I outgrew that one but I have never outgrown my love for tomato soup and grilled cheese.

For my birthday I went out to lunch to a fun restaurant in the Pearl District of Portland and guess what I had for lunch? Yes, grilled cheese and tomato soup, it’s the restaurant’s speciality and it was delish!

I knew I couldn’t wait too long to try Pioneer Women’s Sherried Tomato Soup. I have a Fresh Tomato Soup & Herb recipe I love but you can never have too many tomato soup recipes!

Warning: this recipe contains alcohol. If you are opposed to cooking with alcohol you can easily leave it out. It is delicious without the sherry. But I admit, I added the sherry and the taste was amazing, it really kicks it up a few notches. Before you become concerned about this nice little Mormon blogger using alcohol in her cooking, I did allow the soup to boil longer than called for to burn off most of that alcohol!! Besides, I’m 50 now – I can live a little more dangerously! I’m sure there was still a little left but probably not much more than in my Listerine mouthwash!

My Thoughts: Because of the sherry and the cream this is a very rich and sweet soup. I loved the flavor but if you are looking for a lighter, fresher tomato taste this is probably not the one – my other tomato soup recipe may be better if that is what you are looking for. It is definitely worth trying though but I will probably keep my other recipe as my go to recipe.

Sherried Tomato Soup

Ree Drummond – Pioneer Woman Cooks

Ingredients
1 medium white or yellow onion
6 Tablespoons (3/4 stick) butter
Two 14 ounce cans diced tomatoes
One 46-ounce bottle of can tomato juice
3 to 6 Tablespoons sugar
1 to 2 Tablespoons chicken base, or 3 chicken bouillon cubes
Freshly ground black pepper
1 cup cooking sherry
1 ½ cups heavy cream
¼ cup chopped fresh parsley
¼ cup chopped fresh basil

1. Dice the onion.

2. Melt the butter in a large pot or Dutch oven. Add onion and cook until translucent..

4. Add diced tomatoes and stir to combine.

5. Add the tomato juice.

6. Next-and this is important-in order to combat the acidity of the tomatoes, add 3 to 6 tablespoons sugar. Now, you’ll want to start on the low side, then taste and add more as needed. Some tomatoes and juice have more of an acid bite than others.

7. Next, add 1 or 2 tablespoons chicken base to the pot.

8. Add freshly ground black pepper. Stir to combine, then heat almost to a boil. Then turn off the heat.

9. Add in the sherry, if desired. I boiled some more after adding the sherry to burn off the alcohol.

10. Add cream.

11. Chop flat-leaf parsley.

12.Chop up a few leaves of fresh basil.

13. Add in the parsley and the basil, and stir together.

14. Add additional black pepper to taste.

EnJOY!

As I logged into the dashboard of my blog yesterday I noticed that I had written 499 posts. That means that today’s post is my 500th post!!!

It is hard to believe that I have actually found 500 things to blog about over the last 2 1/2 years! My biggest fear when I first started blogging, other than that no one would read my blog, was that I’d run out of things to blog about. So far that hasn’t been a problem!

So welcome to my 500th post here on Your Homebased Mom!!

I did A LOT of cooking over the holidays and I loved it but once we got the kids sent back to school and work I was feeling a little burned out in the cooking department. Fortunately my birthday falls right after the holidays and that is always a nice excuse not to cook!

My little break from cooking has helped me to refocus (there is one of those re words!) my meal planning and recommit to doing it weekly. I eliminate so much stress from my life when I figure out on Sunday what we are going to have for dinner all week! It really only takes 20 minutes or so to make up the plan and it saves me so much time, stress and money! If you need some hints or tips on meal planning be sure and check out this post and this one. And if you’d like to see what I try to always have on hand that makes meal planning easier check out this list.

I really do love to eat out but unfortunately the budget doesn’t always allow for that or at least not as often as I’d like! So the next best thing is to make some of my favorite restaurant dishes at home. That’s how I get my Cafe Rio fix now and then!

Another favorite restaurant is PF Changs. I especially like their Mongolian Beef and it is a easy one to recreate at home.

The beef has a light cornstarch coating and is then lightly fried up in some oil which creates a nice crispy coating. If you are on a diet or health kick you could skip the frying part but then it wouldn’t be just like the restaurant version but still yummy.

You can use flank steak or top round steak. I like to slice my meat when it is still slightly frozen because it allows you to cut the meat nice and thin. The recipe calls for green onions but it would be yummy with some broccoli or fresh green beans thrown in too.

Mongolian Beef

1 lb top round steak or flank steak, cut thinly on the cross grain

1/4 C cornstarch

3 tsp vegetable oil

1/2 tsp grated fresh ginger or minced ginger

1 Tbsp minced garlic

1/2 C water

1/2 C soy sauce (I used low sodium)

1/2 C brown sugar

2 Tbsp rice wine vinegar

3 green onions, sliced into 2-3″ pieces

oil for frying

Dry off meat with a paper towel and slice into 1/4″ thick slices against the grain. Add to a bowl with the cornstarch and coat thoroughly.

Add 1 1/2 tsp oil to a wok or large frying pan over medium heat. Add the garlic and ginger, stir until fragrant. Add soy sauce, water, rice vinegar and brown sugar. Cook for about 2 minutes and remove from pan.

Add remaining 1 1/2 tsp oil to pan over high heat. Add the meat and cook until brown on all sides and slightly crispy. Pour sauce back into pan over meat. Add green onions, stir and remove from heat. Serve with rice. EnJOY!

If you read very many blogs you have probably seen a post of two about bloggers picking their Word of the Year. I think the whole idea was started by Ali over at aliedwards.

Last year I jumped on the bandwagon and declared a word of the year for 2009.

I dedicated a Christmas tree to the word…

and I also have the word inscribed on one of the walls of my home. Yes, my word was Joy.

I worked hard all year (and it was an especially difficult one in several ways) to find my Joy. It wasn’t always easy but I think I am a happier and more joyful person as a result of it. I dealt with difficult situations better and found joy in the small, simple things of everyday life.

I’ve spent a lot of time thinking and praying about what my word for 2010 should be. I wanted to make sure it was just the right word. The word finally came to me last Wednesday, a week into 2010, after attending a temple session.

My “word” of the year is ‘Re’. No, I don’t mean ‘Re’, the second note of a major scale or ‘Re’ the ancient Egyptian sun god with the head of a hawk; a universal creator; he merged with the god Amen as Amen-Ra to become the king of the gods or even ‘Re’ the element from the periodic table.

I mean ‘Re’ the prefix! The prefix which means again, back, repeat.

You see, as I pondered 2010, turning 50, and my goals for the next year and era of my life I realized there were not too many new things I wanted to do or accomplish.

But there were a lot of things that I wanted to return to, skills I wanted to refine or reclaim. People I wanted to reconnect with, things I wanted to rediscover about myself, places I wanted to revisit (and sometimes visit for the first time). And most important there were things I wanted to remember (and that can be difficult at my age sometimes!) And now that I am fifty I figured it was about time I learned how to relax!

See something in common with all those words? Yes, they all start with my word of the year, ‘Re’!

In 2010 I look forward to:

Refocusing my photography skills by taking a photography class (it started this week!)

Refresh my French language skills before my visit to Paris this summer. (those 8 years of high school and college French are a little rusty!!) Refresh my water color skills from college by taking a class before my trip to England so I can document the trip through photos and painting.

Read more books this year than last (o.k. so it’s not a prefix in that word but it is still ‘Re’) Reread the Book of Mormon (a yearly tradition for me)

Remake my bed everyday (Yes, that is a confession. I hate making my bed but I love the way my bed looks when it is made. I am going to make my bed everyday!)

Return to the homeland of my ancestors and do some genealogy research before I go so I can visit the places where they lived.

Remember all the amazing memories we have created as a family by finally having all my scrapbooks up to date! Check out Project Picture over at Homebased Scrapbooker for more info on this project.

Most importantly, I am going to Remember to Recognize the hand of the Lord in my life on a daily basis. Last year I started keeping a journal that I would write in each night or morning where I would record a way in which I had seen the hand of the Lord in my life that day.

Some days it was as simple as…”enjoyed a walk through Oak Hills today, beautiful fall foliage, sunshine and good friends.”

Other entries read…”our car doesn’t need the $700.00 of repairs we thought!”

I know that the Lord’s hand is involved in my life on a daily basis and I need to do a better job of remembering and recognizing that! Writing in this journal each day is a wonderful way to see his hand at work in my life. This year I will do better in writing daily!

There are several other ‘Re’ goals on the list but I won’t bore you with all of them.

So do you think ‘Re’ would look too strange engraved on a piece of silver hanging around my neck?

Do you have a Word of the Year for 2010? I’d love to know what it is!

First of all I want to say THANK YOU – thank you to all of you who left such sweet and wonderful comments on my birthday. I can’t tell you how much they meant to me. The thought of turning fifty was a hard one for me – harder than actually turning fifty because you all made it so fun!

You see I woke up on my fiftieth birthday to this..

This was the view out my front door as I came downstairs that morning. I think it was God’s way of saying “Happy Birthday Leigh Anne, 50 is going to be beautiful!”

And then I had an idea.

Sometimes my ideas are a little dangerous, my friends and family have been known to shake and tremble when I say those words, “I’ve got an idea!”

But this idea is a good one, I promise.

I have decided that each day of my 50th year (I guess technically it is my 51st) I am going to find the pretty in being 50. Each Saturday or Sunday I will share with you through photographs the pretty I found in being 50 that week. So not only will I be Finding 50 but I will be finding the pretty in being 50!

One of my goals for this year is to improve my photography and I have signed up for a photography class so this will be a great way for me to practice for the class too.

I hope you enjoy sharing my little journey of Finding 50! Invite your friends to follow along.

Here’s my first week of Finding 50!

January 7 – Day 1

My introduction to blogging was when I read the book Julie and Julia. A book about a women who decides to cook every recipe of Julia Child in Mastering the Art of French Cooking. She blogs daily about her adventures and experiences. I loved that book and I loved the movie that came out last year about the book (in fact, it was one of my Christmas presents this year!)

I loved it so much that it inspired me to start this blog two and a half years ago! It has now inspired me to set a goal for 2010. You all know how much I love the Pioneer Woman, I’ve shared many of her recipes here on the blog over the last few years. Well – I’ve decided that one of my goals for 2010 is to cook every recipe in Pioneer Women’s new cookbook this year.

Fortunately for me her cookbook isn’t nearly as big as Julia Child’s!

So once a week (usually Fridays) I will share my PW recipe of the week – yes it will be Ree and me or Ree and Leigh {Anne}. Aren’t I lucky that our names rhyme. I guess it was just meant to be!!

I decided that the first recipe I shared should be something that I have never cooked before – ever. That would be fried chicken.

My second oldest son LOVES fried chicken, I mean really truly loves it. A bucket of Kentucky Fried Chicken all to himself is a dream come true. If you ask him where he wants to have dinner – his usual response will be “KFC!” I am not a huge fan of “KFC” or fried chicken.

While the kids were home for the holiday break I asked each of them what they wanted me to fix for dinner and Clark’s response was, you guessed it, fried chicken! He didn’t want me to buy it, he wanted me to make it.

Lucky for me Ree has a recipe for fried chicken in her cookbook!

I am happy to announce that the fried chicken met with rave reviews. In fact, my fried chicken loving son announced at the dinner table that it was the juiciest chicken breast he had ever eaten!

I followed the directions exactly, I bought two cut up chicken fryers and let them soak in buttermilk for 24 hours. I am not sure if it is the buttermilk or the cooking process that makes the chicken so moist and juicy but it worked!

Of course fried chicken requires quite a bit of oil. PW’s method for making fried chicken was different than other recipes I had read. She uses a combination of frying and baking. As she mentions in the cookbook one of the hardest parts of making fried chicken is getting the chicken cooked all the way through without burning the breading – the frying/baking combo does the trick!

One of the main tricks to frying is to get your oil to the right temperature. Ree tells you to fry it at 365 degrees. I had a hard time getting my oil that hot, it probably only got up to 300 degrees but it worked fine. I fried it up, just like Ree in my Dutch oven!

My photos of the chicken are not the greatest, it was late and dark and everyone was hungry. I promise, I will do better in the future, out of respect to Ree. But if you want to see some great fried chicken pictures be sure and check out Ree’s cookbook. (Yes, those are PW buttermilk biscuits too, that post will be coming soon!)

I am taking requests – is there a PW recipe you’d like to me to make and review? Something you’ve been drooling over but haven’t had a chance to make yet?? Leave a comment and let me know!

Pioneer Woman Fried Chicken
from The Pioneer Woman Cookbook: Recipes from an Accidental Country Girl by Ree Drummond

(recipe is easily halved)

2 cut-up fryer chickens
1 quart plus 1/4 cup buttermilk
5 cups all-purpose flour
3 tablespoons seasoned salt (like Lawry’s)
2 teaspoons black pepper
2 teaspoons dried thyme
2 teaspoons paprika
1 teaspoon cayenne pepper
1/4 cup milk
canola or vegetable oil for frying

1. Rinse your chicken and in a large bowl add the chicken with 1 quart buttermilk. Refrigerate overnight. When ready to fry, remove chicken from bowl and let sit on counter for 30 minutes to take chill off.

2. Preheat oven to 350F. Stir together the flour, seasoned salt, pepper, thyme, paprika and cayenne in a very large bowl. In a small bowl combine the 1/4 cup buttermilk and the milk. Pour the milk mixture into the flour and use a fork to mix until still slightly lumpy. The lumps help the breading stick to the chicken.

3. Heat 1 1/2 inches of oil in a deep skillet or dutch oven over medium high heat to 365F. Use a thermometer to monitor your heat. Working in batches, thoroughly coat each buttermilk-soaked chicken piece with the breading, pressing to adhere the breading. Add the chicken to the oil 3-4 pieces at a time. Cover pan and fry 5-7 minutes, checking to make sure chicken isn’t getting too brown. Turn, cover and cook additional 3-5 minutes more. Monitor temperature of oil to make sure chicken doesn’t burn. Keep in mind chicken will finish cooking in oven.

4. Place chicken on baking sheet and continue frying rest of chicken. When done, bake the chicken for 10-15 minutes, until chicken cooked through. You can cut into one of the thicker parts of one of the pieces to make sure it is thoroughly cooked.

Today is my birthday.

My original plan was to just totally ignore it. Not mention it and pretend it wasn’t happening because you see it’s a big one! I thought about just staying in bed all day and pretending it wasn’t happening but then something happened – a dream came true.

You see, on my 18th birthday, many years ago, my parent’s gift to me was a trip to England to visit some of my relatives who I had never met, to visit the birthplace of my grandparents. Unfortunately, that trip never happened. My father quit his job, moved across country, started his own business and the money was just never there.

I have mourned the loss of that trip for 32 years (don’t do the math!) In fact sometimes I have done more than just mourn it, I have complained about it and felt sorry for myself that I have never been to England.

Now before you feel too sorry for me, I have kissed the Blarney Stone and stood on the Cliffs of Mohr (while my husband hung out over the Cliffs!). I’ve also stood next to and witnessed the amazing power of Igauzu Falls in Argentina and visited the breathtaking Macchu Picchu in Peru so I’m not all that deprived.

But I have never been to England. When my son was accepted to study at Cambridge University this summer I was thrilled. If I was never going to make it there at least one of my children would have the experience.

Then my daughter Cali applied and was accepted into a study abroad program over in London for this coming Spring – again I was thrilled and secretly a little jealous.

Well last Saturday my sweet family and dear friends threw a surprise party for me. It was a wonderful party. So many of my friends were there to celebrate with me that it made turning __ not quite so bad (I still can’t bring myself to actually say the number!!)

There were friends, delicious food and great entertainment. (For complete details and pictures on the party visit Your Homebased Parties!)

And there was a gift from my husband.

It was a surprise gift.

The gift was actually a dream come true!

It was a trip to England for 10 days. I will meet up with Cali after she finishes her studies this summer and we will tour the country (including a weekend trip to Paris hopefully!!)

So I guess turning 50 isn’t quite so bad (there I said it!!)

All of you out there that have been to England I need you to share with me your must sees! Where do we need to go and what can’t we miss??

It has become a yearly tradition at our house that my girls and I make the gifts they will give to their friends. We like to get crafty!

Usually the list of friends they need gifts for is quite long and we don’t remember to do it until the last minute! Because of that we have found that the gift needs to be quick and easy to make and inexpensive. This year’s gift fit the bill perfectly!

Last year we made these darling paper covered frames.

This year I saw this great idea over at Blue Cricket Designs and I knew it would be perfect – Holiday Clothes Pins.

The clothes pins, along with a piece of ribbon, are used to display your photos and if you know any teenage girls – they have lots of photos!

We purchased a couple of packs of plain, wooden clothes pins from the dollar store. A pack of 36 clothes pins was only – you guessed it – a dollar!

Amazingly enough I have lots of scrapbook paper around the house, there was a bottle of Mod Podge in the craft closet and I had a box of buttons in there too. I have a bit of a ribbon addiction so that wasn’t a problem either.

The girl’s picked out paper that they thought their friends would like and just cut the paper to size, mod podged it on and let it dry. Blue Cricket Designs has a good tutorial and pictures for each of the steps.

We used the hot glue gun to attach the buttons. One tip though is to be sure and remove all the hot glue tails before taking a picture or giving as a gift – it will look nicer that way (obviously I didn’t do that!)

We also clipped them onto a piece of cardboard with the friend’s name written on the cardboard so we didn’t forget which ones were for who!

The girls were very thoughtful in their selection of paper for each of their friends.

Yikes – see all those glue tails!!

They did turn out cute though – minus the glue tails!

We put a set of five clothespins along with a yard of ribbon into a cellophane bag and tied it up with a bow!

I discovered that the best way to hang the ribbon so that the pictures hang straight is to use those little suction cups that have a hook in them. Attach them to the window or wall and tie the ribbon to that and then clip on the photos.

Happy Crafting!

Welcome to 2010!!!

Some of you may recall that one of my goals for 2009 was to read 50 books.

In 2008 I set a goal to read 100 books and I read 32 books. I am thinking 100 books was just a little bit unrealistic for me.

So this year, 2009, I decided to be a bit more realistic and I set my goal at 50. I did better this year but didn’t quite hit the mark. I tried and read a lot of great books along the way but only made it to 40!

So today I am sharing the list of books I read in 2009 and my Top Pick for 2009.

Last year’s (2008) Top Pick was Molokai a piece of historical fiction that dealt with the leper colonies over in Hawaii. I highly recommend it.

My favorite genre of book by far is historical fiction so it is no surprise that this year’s Top Pick is also historical fiction.

This year’s top pick is Sarah’s Key. It takes place in France and tells the story of the round up of the Jews in Paris during WWI. A tragic and sad story but fascinating and well written.

I hope you’ll enjoy the list and maybe find a few new books to add to your To Read List. I’d love to hear what your top read for 2009 was.

And for my goal for 2010 – I think it will be to just read more books in 2010 than I did in 2009. I am going to make it this time!!
