<p>Combine the water and milk in a medium size pot or saucepan, heat the water and milk to a simmer. Keep the pan over low heat.&#0160;</p>
<p>Melt the butter in a large casserole or skillet over medium high heat. Add the onion and cook for 3 to 4 minutes, stirring occasionally. Add the garlic and the rice, stir constantly for 1 minute. Add the white wine and stir until completely absorbed.&#0160;</p>
<p>Begin to add the heated milk-water mixture 1/2 cup at a time, stirring frequently. Wait until each addition is almost completely absorbed before adding the next. When the rice has cooked for 15 minutes and most of the liquid has been incorporated, add the corn kernels and tomatoes along with the end of the milk-water mixture. Cook, stirring frequently, until the rice is tender but still slightly chewy.&#0160;&#0160;</p>
<p>The risotto should take 18 to 20 minutes of cooking all together. Stir in the Parmesan cheese, most of the basil, and the salt and pepper. Spoon the risotto immediately onto plates, top with the remaining basil strands, and serve.</p>

<p>Ingredients</p>
<p>•	1 1/2 tablespoons unsalted butter, cut into pieces, plus more for brushing</p>

<p>Directions</p>
<p>Position a rack in the upper third of the oven and preheat to 425 degrees F. Generously brush a large skillet with butter, then rub with the garlic. Combine the mozzarella, asiago and raclette in a bowl.</p>
<p>Heat the skillet over medium-high heat. Add half of the potatoes, spreading them out. Sprinkle with 3/4 teaspoon salt, half of the cut-up butter, half of the shredded cheese blend, and pepper to taste. Arrange the remaining potatoes on top. Sprinkle with 3/4 teaspoon salt, and pepper to taste. Pour the cream over the potatoes, then add the nutmeg and bay leaves; simmer 3 minutes. Dot the potatoes with the remaining cut-up butter.</p>
<p>Generously brush a shallow baking dish with butter; slide the potatoes into the dish; arrange with a fork, if desired. (If your skillet is ovenproof, you can skip this step and bake the potatoes in the skillet.)   Sprinkle the potatoes with the parmesan and the remaining shredded cheese blend. Bake until golden, about 25 minutes. Let rest 5 minutes before serving. Discard the bay leaves.</p><div class="feedflare">

<p><strong>Ingredients</strong></p>

<li>8 whole eggs </li>
<li>2 tablespoons heavy cream </li>
<li>Kosher salt </li>
<li>Freshly ground white pepper </li>
<li>2 dashes hot sauce (recommended: Tabasco) </li>
<li>Splash Worcestershire sauce </li>
<li>3 tablespoons extra-virgin olive oil, divided </li>
<li>16 stalks &quot;pencil&quot; asparagus, stems trimmed off </li>
<li>2 scallions, sliced into thin rounds (white and green parts) </li>
<li>2 cups arugula, stemmed, washed and dried </li>
<li>1/2 cup grated Parmesan </li>
<li>4 ounces Brie or Taleggio cheese, larger parts of rind removed, cut into slices </li>
<li>4 ounces goat cheese, cut into rounds or crumbled into small pieces </li>
<li>1 cup cherry tomatoes, washed, dried and halved </li>
<li>1/2 lemon, juiced </li>

<h2><span style="font-size: 11pt;">Directions</span></h2>

<p>Preheat the oven to 350 degrees F.</p>
<p>In a medium size bowl, whisk together the eggs. Add the cream, salt, pepper, hot sauce and Worcestershire and whisk to blend.</p>
<p>Heat a 10 to 12-inch cast iron (or other heavy-bottomed) skillet and add 2 tablespoons of olive oil. When the oil begins to smoke ever so slightly, add the asparagus. Season with salt and pepper. Cook for 1 minute until some of the liquid starts to escape.</p>
<p>Stir in the scallions, arugula and cheeses into the egg mixture and pour into the skillet over the asparagus.</p>
<p>Place the skillet on the center rack of the oven and cook until firm around the edges but still somewhat loose in the middle, 15 to 20 minutes. Remove from the oven and allow to &quot;rest&quot; for a few minutes before serving. Toss the tomatoes with salt, pepper, the remaining olive oil and the lemon juice and sprinkle them on top of the frittata just before serving.</p>

<li>1 cup grated Monterey Jack cheese</li>
<li>1/2 cup crumbled blue cheese </li>
<li>Grilled steak </li>
<li>1 bunch watercress, coarsely chopped </li>
<li>Balsamic Glaze </li>
<li>Shaved Parmigiano-Reggiano</li>

<p>For the glaze:</p>
<p>Bring vinegar to a boil in a small nonreactive saucepan and cook, stirring occasionally, until reduced to 1/2 cup. Stir in the honey and season with salt and pepper, to taste.</p>
<p>For the steak:</p>
<p>Heat grill to high. Brush steak on both sides with oil and season with salt and pepper. Grill until golden brown and slightly charred on both sides and cooked to medium-rare doneness, about 5 minutes per side. Remove from the grill to a cutting board, tent lightly with foil and let rest for 10 minutes. Slice into 1/4-inch thick slices.</p>
<p>For the pizza:</p>
<p>Heat the grill to high. Brush both sides of the pizzas with oil and season with salt and pepper. Grill until golden brown on both sides, about 2 minutes per side. Remove from the grill, divide the Monterey Jack cheese over the top of each one and then sprinkle with the blue cheese. Place back on the grill, close the cover of the grill and grill until the cheese has melted, about 1 minute. Remove to a flat surface, divide the steak between each pizza, then top with the watercress. Drizzle&#0160;with some of the balsamic glaze and sprinkle with some of the shaved Parmigiano-Reggiano.</p>

<h2>Pizza Dough:</h2>
<li>2/3 cup lukewarm water (105 degrees F to 115 degrees F) </li>
<li>2 1/2 teaspoons active dry yeast </li>
<li>1/2 teaspoon sugar </li>
<li>2 tablespoons olive oil, plus additional for oiling bowl </li>
<li>1 3/4 to 2 cups all-purpose unbleached flour </li>
<li>1/4 cup finely ground yellow cornmeal </li>
<li>2 teaspoons coarse salt </li>

<p>In a large bowl stir together 1/3 cup water, yeast, and sugar and let stand until foamy, about 10 minutes. Stir in remaining 1/3 cup water, 2 tablespoons oil, 1 3/4 cups flour, cornmeal, and salt and blend until the mixture forms a dough. Knead dough on a floured surface, incorporating as much of remaining 1/4 cup flour, as necessary, to prevent dough from sticking, until smooth about 5 to 10 minutes. Form the dough into a ball.</p>
<p>Lightly oil the sides and bottom of a large bowl with oil, add the dough, turn to coat in the oil, cover and let rise in a warm place until doubled in size, about 1 hour. Gently punch the dough down and divide into 4 equal pieces. Roll each piece on a lightly floured surface into a 10-inch circle that is 1/8-inch thick. Brush off excess flour and transfer the dough to a baking sheet, cover each circle of dough with plastic wrap and continue stacking rolled out pieces on top of each other. Wrap well with plastic wrap and refrigerate until ready to grill</p>
