Valentine's Day treat; Low-Fat Dirt Cake

This is a great creative and cute Valentines day dessert for a School Party or Valentine Get Together!

Low-Fat Dirt Cake
Ingredients:
1/2 cup margarine, softened
1 (8 ounce) package fat free cream cheese, softened
1/2 cup powder sugar
2 (3.5 ounce) packages instant sugar free vanilla pudding mix
3 1/2 cups skim milk
1 container sugar free whip cream
32 ounces reduced fat Oreos, crushed
Small Flower Pots 8-12oz *for Valentines Day paint Red and paint on the words 'Roses are Red, Violets are Blue, a Sweet Valentine Treat from Me to You' or something like that!
Make Paper Heart Flowers to stick into the flower pot filled with Dirt Cake

If making these for a classroom treat, tie on a small packet of Flower seeds for them to plant in the pot later.
Directions
Crush Oreos until looks like dirt, the white cream will disappear
In one bowl:
Mix butter, cream cheese, and sugar
In a large bowl:
Mix milk, pudding and whipped topping together
Combine pudding mixture and cream mixture together
Place one whole Oreo in the bottom of the flower pot
Layer in 13x9 pan, starting with cookies then cream mixture
into a clean Flower Pot

Chill for an hour then add homemade Heart Flowers, it should resemble something similar to this

We have been the most boring couple in Texas since Christmas! Outside of the busy~ness of school, everything here has been really really calm and BORing! The past few weekends we have had Spring like weather, it has been so nice! All we have wanted to do was open all the windows and spend time outside. I would love for it to stay like this until summer! But it looks like it is all about to change...:(
Seriously, there is nothing going on to blog about, ha! {which should explain my blog neglect} I am still looking for a J.O.B. if anyone knows of one....Help a sis~ter out!!

Breakfast Potatoes

3 large cubed Potatoes

1lb breakfast Sausage or Bacon

6-7 Eggs

1/4 cup chopped Onion

Biscuits or Tortillas

serves 4-6

Skillet cook on high Cubed Potatoes and Onion

season with Garlic Powder, Salt, Pepper and Italian seasoning

Skillet cook Sausage

season with alittle bit of Salt, Pepper and Garlic Powder

Scramble Eggs

season with Garlic Powder, Pepper and Salt

Combine Potatoes, Sausage, and Eggs

Serve with Biscuits or on Tortillas with salsa

Taco Pie
1lb Ground Turkey or Beef
8-10 Flour Tortillas
1 can Black Beans
2 cups of Mexican blend Shredded Cheese
1/4 Onion, chopped
2 Tomatoes, chopped
Sour Cream
serves 4-6

Skillet cook Meat and half of chopped Onion. Season to taste
(ground turkey pictured)

Warm Black Beans with a scoop of Sour Cream

Layer Tortillas, cooked Meat, Cheese and Black beans

Cook in the oven at 400 for 20 minutes

top with chopped tomato, onion and sour cream

and Serve

It's Friday!! We survived our first week of the New Year, can I get a Woo Hoo!!It has been a crazy busy week. JR had to go back to work Tuesday, the first day of class was Wednesday.

Wednesday night his BFF {Chris} came over for dinner and to hang out. We were all so exhausted that we ate Taco Bell and just hung out. VERY VERY low key!!
Last night we went to a Baby shower for the BFF and his wife {Marla}, who are expecting a baby boy in May. It was hosted at Blue Mesa. {I did enjoy a couple of yummy Margs!!} To continue our quest to spoil this baby I made a Personalized Basket filled with {very random} GOODIES!!

We had a great time!! It was alot of fun to catch up with all of their friends and their family.

Tonight {or I should say more like this afternoon} JR is joining Chris and his in-laws {Marla's parents} for the Cotton Bowl Game at Cowboy Stadium.

Arkansas vs. Kansas State

Marla's parents are HUGE Arkansas fans!! They are even staying at the teams hotel tonight! HA!

JR is going to have a great time! Today is Chris's birthday, so I am sure it will be extra fun! Let's all hope JR behaves himself!! ;)

Speaking of Football, JR's grandfather is a Texas High school Coaching Legend and we found a book that he is in

Catching Up....

Woo, I feel like it has been so long since I have "really" blog, that I don't even know where to begin!
December has been a crazy month for us, I feel like I am just sitting down for the first time since December 1st.
December 10th we celebrated our 6 year Anniversary. The following weekend our besties from Germany came into town and we met them Friday for drinks and then Saturday night we went to dinner together. We hadn't seen them since our trip this summer so it was really great to see them and spend time together. Especially since they are having a baby!! We found out in September that they were expecting and in November find out they are having a boy, so of course I got right onto making him a few things for Christmas. I have been dying to show these but I had to wait until after Christmas!! I made him a few onsies to support his mommy and daddy! A Baylor Bear one to help his mommy cheer on her Bears Sig'Em and an Austin College one to root on his daddy's Roos, JR made the Guitar and Airplane one for him. I also made an Austin College one for our future bebe.

JR didn't get off for Christmas break until the 21st which put us so behind on getting ready for Christmas! We always wait until the last minute to do our holiday shopping. On the 21st we had invited Jenie and Charly to come over for dinner and to go look at Christmas lights in Grand Prairie. FYI if you ever go look at the Lights of Grand Prairie, go right at dark! We waited in line for an hour and a half just to get up to the ticket booth to drive through and look at the lights! It was ridiculous! Especially with a 4 year old. We did not get home until 11:30 so they ended up spending the night. And of course JR was coming down with a really bad sinus infection and was a Party Pooper! Speaking of JR spent the entire break SICk! It was so annoying!

We had a wonderful Christmas and of course I have no pictures to share. We spent Christmas Eve going to the Christmas Eve Service at Church and then dinner at my dads youngest brothers house. Christmas morning we went to my other uncle's house for lunch and then went to my mom's Christmas night. It was a very nice Christmas but we were so exhausted by the end of it!

Last week was nonstop for me! My mom, sister and I always go shopping the day after Christmas, Thursday was my nieces 5th birthday and that night JR and I went to dinner and he got food poisoning! So we did not do anything New Years Eve, it was quit boring!

Today was JR's first day back to work and it is nice to get back into a routine!! Christmas is all down and put away, now I just have to clean this house! It is a hot mess!! But I am so tired, I feel like I could sleep for the rest of the week! Ha!

a Table needs a Chair

Holiday Gift Buying Guide: Buying for your child's Teacher

It is such a sweet, nice surprise when students bring a little gift for their teacher on the Holidays.
However, after reading some comments on Twitter and seeing a few gifts that have been given to teacher friends over the years I thought it would be helpful to post a
Teacher Gift Buying Guide:
*Don't give Figurines-unless you know for a fact that the teacher collects specific one. Buy exactly what they collect

example: If they collect Snowmen; Buy the brand they collect or one from a local Christmas store, don't buy one from Target or Walmart!

*Don't give Homemade gifts from your child! While I know anything home made by your child is special to you, it {probably} does not mean as much to the teacher. *Do-have your child make a sweet, personal card for the teacher! It will mean alot more to them

*Don't give Food! Unless it has been requested or is not homemade, teachers get so many baked goods over the holidays most of the food ends up in the trash.

{Honestly all baked goods given to the husband by a student goes right in the trash...sorry :(} *Do-save yourself time and money and give a Gift Card! Do not feel like you need to spend alot of money, a $5.00 gift card is generous. You may think they are impersonal but trust me they are a favorite among teachers!

Most important to remember:

This is a gift to say thank you and that the person is special to you, if you wouldn't want it....then they probably won't either!

Think of them; remember you can be thoughtful without spending alot of money

Take your heart out of it; just because they work with kids doesn't mean they want kid like items-no baby bootie necklaces or earring, nothing with your child's name on it, etc...

If you can not think of any thing, Go Simple; Gift cards or a beautiful Flower Arrangement is perfect!
