I've made Pizza Dough now for Years!!!! but never ventured into Bread. However, this weekend Eddie has been feeling sick and that only thing that sounded good to him was bread so when I came across a recipe for homemade bread that was done from start to finish in around 90 minutes figured I'd try it for Breakfast and see what happens.

Thank You Cooking with Karli because this bread is DELICIOUS! I made a few adjustments because my instant pot didn't have the yogurt button but even with my oven method timing was the same.

We have been eating this bread all weekend - soooooo good!

Homemade Bread

<strike></strike>

Ingredients
1 1/2 tbsp rapid rise yeast
2 1/2 cup very warm water
1 1/2 tbsp + 1/2 tsp sugar, divided
2 tbsp oil, divided
2 1/4 tsp salt
6 cups flour

Instructions
1) Using the dough hook, combine all ingredients. Once 'dough' has formed, turn the mixer's speed up and knead for 5 minutes.
2) Put dough into a bowl or instant pot pot and top with about 1 TBSP oil (roll around fully cover dough)
3) Place dough into a oven hitting the proofing button - a oven warmed to 200 degrees than turned off - or instant pot hitting the yogurt button for 40 minutes
4) Every 10 minutes you will want to come back and 'knead' the dough a few times. So at 10 minutes, 20 minutes and 30 minutes you will 'knead' the dough.

5) At 40 minutes you will dump the dough out onto a floured surface, roll out then form your bread. You can make 1 big loaf, divide into 2, 4 mini loafs, or even rolls

6) Score the top of the dough with a knife. You may do an egg white wash at this point if desired.

7) Set the oven to 425°. Let the dough rise until double while the oven is preheating.
8) Bake at 425° for 10 minutes. Without taking the bread out, turn the oven down to 375° and bake for an additional 20 minutes.
ENJOY!!

Since me and Eddie have been gone all week for his Friend Joe's Wedding we are going over to Eddies Mom's instead of hosting ourselves so I decided to make a Broccoli Salad to bring along.
When a recipe popped up for Copycat Chili's Honey Chipotle Crispers I knew I had to try it as these are one of Eddie's Favorites from the restaurant.

The Original Recipe comes from Delish but I have adapted it based on what I had on hand and our love of extra spice :)

INGREDIENTS
Sauce
3/4 c. Agave
1/4 c. Water
2 tbsp. Sriracha ketchup
2 tsp. Adobo (from a can of Chiptole Pepper in Adobo)
1 tbsp. Apple cider vinegar

Chicken
3/4 c. Flour
1/4 tsp. Salt
1/4 tsp. Pepper
1 tsp. Garlic powder
2 Eggs
1 1/2 c. Panko
1 1/2 lb. boneless, skinless chicken breasts, cut into strips
Oil for Frying
Dried Ghost Pepper

DIRECTIONS
1) Make the Honey-Chipotle Sauce by combining all ingredients in a medium-sized saucepan over medium-high heat. Whisk and bring to a boil for about 2-3 minutes, letting it reduce. Remove from heat and set aside to cool.

2) In a Ziplock Bag, combine flour, salt, pepper, garlic powder, and chicken and shake until chicken is fully covered

3) In a bowl add the eggs and beat - In a second bowl, add the panko

4) Heat Oil to 350 degrees

5) Use tongs to dip chicken strips into the egg mixture, then in the panko and cook for about 12 minutes, or until the panko is a deep golden brown and the chicken is fully white and no longer pink or translucent in the center.

6) Place chicken tenders on a plate lined with paper towels to drain off any excess oil. Toss tenders in honey-chipotle sauce, coating each one, and top off with a few shakes of dried ghost pepper

If you haven't tried it they are AMAZING!!!

For the Appetizers we went with things that you could spread or put on bread - I've been on a bit of a dip kick lately so this was right up my alley and for the potatoes I've been wanting to try out a crock-pot mashed potato recipe for a while and thanksgiving seems to be the prefect time for that

THE APPETIZERS

Bread - Pretzels - and Crackers

Cheese Ball Spread

Bacon Jam

Spicy Cannellini Dip

Meat and Cheese Plate

THE POTATOES

Crock Pot Loaded Mashed Potatoes

NOTES:

1) The Bacon Jam was a total bust and I will not be sharing that recipe . . . From what sounds like would be amazing was really just a bunch of onions cooked for hours in bacon fat and tasted only like onion and had NO bacon flavor at all --- plus it made the house smell like onions all night YUCK!!!

2) I went easy with the Meat and Cheese Plate buying a pre made one from Hormel that came with a few different kinds of meats and cheese - ironically this was the first appetizer to go lol (doesn't that always happen? but on a side note because it was so popular I WILL buy it again)

3) I've made the Spicy Cannellini Dip several times and it is always amazing!! Recipe can be found here: Spicy White Bean Hummus

The other day I went to make up a batch when I noticed I didn't have any eggs - I had already beaten the butter and sugar together so I just went for it substituting the egg for milk and baking soda and they surprising turned out pretty good - without the eggs the cookies really spread thin but still had a nice flavor and bite to them
