Ingredients 
  
1L (4 cups) chicken stock  
1 tbs olive oil  
1 brown onion, finely chopped  
  2 garlic cloves, crushed  
  330g (1 1/2 cup) arborio rice  
 40g (1/2 cup) shredded parmesan  
 4 eggs  
  180g (2 cups) dried (packaged) breadcrumbs  
 150g (1 cup) plain flour  
  100g mozzarella, cut into 1.5cm pieces  
  Vegetable oil, to deep-fry  
  Tomato relish or chutney, to serve  
  Bought marinated olives, to serve  
  Bought marinated feta, to serve

Method

Place the stock in a medium saucepan over high
     heat and bring just to the boil. Cover and reduce heat to low. Hold at a
     gentle simmer. 
Meanwhile, heat the oil in a large saucepan over
     medium heat. Add the onion and garlic and cook, covered, stirring
     occasionally, for 5 minutes or until the onion is soft. 
Add the rice to the onion mixture and cook,
     stirring, until the grains appear slightly glassy. Add a ladleful (about
     125ml/1/2 cup) of the simmering stock to the rice mixture and stir
     constantly with a wooden spoon until the liquid is completely absorbed.
     Continue to add the stock, 1 ladleful at a time, stirring constantly and
     allowing the liquid to be absorbed before adding the next ladleful, for 20
     minutes or until the rice is tender yet firm to the bite and the risotto
     is creamy. Stir in the parmesan. Set aside for 2-3 hours to cool
     completely. Add 2 eggs and stir until well combined. 
Place the breadcrumbs on a large plate. Place the
     flour in a bowl. Crack the remaining eggs into a separate bowl and use a
     fork to lightly whisk. Use wet hands to shape 2 tablespoons of the risotto
     mixture into a ball. Press your thumbs into the centre of the ball to make
     an indent. Place a piece of mozzarella in the indent, then mould the
     risotto mixture around the mozzarella to enclose. Repeat with the
     remaining risotto mixture and mozzarella to make 28 balls. 
Roll the risotto balls in the flour and shake off
     any excess. Dip in the egg, then in the breadcrumbs, pressing to coat.
     Place on a large plate. Place in the fridge for 30 minutes to chill. 
Add enough oil in a large saucepan to reach a
     depth of 5cm. Heat to 190°C over medium-high heat (when the oil is ready a
     cube of bread will turn golden in 10 seconds). Add 7 risotto balls to the
     oil and cook, turning occasionally, for 4-5 minutes or until golden. Use a
     slotted spoon to transfer to a plate lined with paper towel. Repeat, in 3
     more batches, with the remaining risotto balls, reheating the oil between
     batches. 
Place the risotto balls on a serving plate and
     serve with tomato chutney and marinated olives and feta.

Directions

Ingredients



    1/4 cup kosher salt

    1/4 cup sugar

    2 tablespoons garlic powder

    2 tablespoons onion powder

    2 tablespoons Spanish paprika

    2 tablespoons chili powder

    1 tablespoon celery salt

    1 tablespoon lemon pepper

    1 tablespoon freshly ground black pepper

    1 teaspoon freshly ground white pepper

    1 teaspoon cayenne pepper

    1 (5 to 8 pound) beef brisket (flat cut)

    4 cups oak or hickory wood chips, soaked in water for 30 minutes, drained

    1 cup apple juice

    1 1/2 cups your favorite BBQ sauce, for serving



Directions



Special equipment: spray bottle for apple juice

Combine all the spices in a bowl, mix well. Pat the spice rub onto the 
meat, making sure to heavily season the entire surface area of the 
brisket. Cover or wrap the brisket and let it sit at room temperature 
while getting the smoker or charcoal grill fired up. Do not leave at 
room temperature for longer than 1 hour.

The grill is ready when the charcoal has burned to a white ash. If using
 a grill instead of a smoker, arrange the coals on 1 side of the grill, 
leaving an area large enough for the brisket to cook indirectly with no 
coals directly underneath the meat.

When the grill has reached 200 to 225 degrees F, scatter 1/4 of the wood
 chips over the coals, close the grate, put the brisket on the grill and
 close the lid.

Maintain a 200 to 225 degree F cooking temperature inside the grill, 
adding coals every 2 hours or as necessary. Add wood chips and spray the
 brisket with apple juice every time you add new coals. Try not to lift 
the lid of the grill at any other time.

When the brisket reaches an internal temperature of 165 to 170 degrees F
 on an instant read meat thermometer (after about 4 to 5 hours), remove 
it from the grill and double wrap in aluminum foil to keep the juices 
from leaking out. Return the brisket to the grill (or smoker) The 
brisket is finished cooking when it is very tender and reaches an 
internal temperature of 190 degrees F, about another 1 to 2 hours. Let 
rest for 45 minutes, then unwrap and slice. Serve with BBQ sauce on the 
side.

Ingredients 

    1 handful fresh mint leaves (about 1 large sprig) plus more for garnish

    1 1/2 ounces aged rum

    1/2 ounce freshly-squeezed lime juice (1 lime)

    1 to 1 1/2 teaspoons superfine sugar or 1/2 ounce Simple Syrup, recipe follows

    2 dashes bitters, (recommended: Angostura)

    Ice cubes

    1 1/2 to 2 ounces dry Champagne, Prosecco or other sparkling wine

Directions

Muddle
 the mint leaves with the rum, lime juice, Simple Syrup, and bitters in a
 cocktail shaker. Add ice, cover, and shake vigorously, or stir, until 
combined and chilled, about 30 seconds. (In general, the drink is ready 
when the shaker mists up.) Pour the muddled liquid into a chilled 
champagne flute, holding back the ice, but letting some of the mint 
leaves fall into the glass. Add enough Champagne to almost fill the 
glass to the top. Garnish with a sprig of mint. Drink.

Simple Syrup:

1 cup sugar

1 cup water

Put
 the sugar and water in a small saucepan. Cook over low heat, stirring, 
until the sugar dissolves. (Alternatively, heat in the microwave.) Store
 in a sealed container in the refrigerator.

Yield: about 1 1/2 cups

1 cup chicken broth
2 medium slices onion
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
1/2 teaspoon salt
1 pound cooked and cubed lobster meat
1/2 teaspoon Worcestershire sauce
1 pinch ground cayenne pepper
Directions
In a small frying pan place 1/4 cup chicken broth and the onion. Cook over a low heat for 5 to 7 minutes.
In a medium size pot over medium heat melt the butter. Slowly whisk in flour. Whisk until a creamy mixture is created.
Gradually pour in broth, whisking constantly. Whisk in milk, salt, onion, lobster meat, Worcestershire sauce and cayenne pepper. Heat until soup is almost boiling. Do not boil the soup as the milk will curdle when boiled.

40 small shrimp, peeled and deveined
1 (12 ounce) package linguine pasta
1/4 cup butter, melted
4 tablespoons diced onion
4 teaspoons minced garlic
1 cup half-and-half
2 teaspoons ground black pepper
6 tablespoons grated Parmesan cheese
4 sprigs fresh parsley
4 slices lemon, for garnish
Directions: 

Cook pasta in a large pot of boiling water until al dente. Drain. 
Meanwhile, melt butter in a large saucepan. Saute onion and garlic over medium heat until tender. Add shrimp and saute over high heat for 1 minute, stirring constantly. 
Stir in half-and-half. Cook, stirring constantly, until sauce thickens. 
Place pasta in a serving dish, and cover with shrimp sauce. Sprinkle with black pepper and Parmesan cheese. Garnish with parsley and lemon slices.

 Oz Tequila 

 1 Oz Orange liqueur (always prefer cointreau, but a simple triple sec is good enough) 

Juice of 1 lime or lemon (we always prefer limes!)

 0.5 Oz of simple syrup or Lime Cordial

   8 Ice cubes or crushed ice
Directions:

     Step 1: Pour all ingredients into the shaker.

     Step 2: Add 8 ice cubes 

     Step 3: Add the fresh lime juice or just squeeze a whole lime inside 

     Step 4: Shake it hard! 12 times at least

     Step 5: Strain the cocktail into your chilled glass or strain over ice (margarita on the rocks) 

     Step 6: Place a lime peel on the rim of the glass or put salt on the rim of the glass. If you want to "salt your rim" check out our cocktail guru tip at the bottom of this page.

     Step 7: Drink or serve it, your Perfect Margarita is ready to drink!
    You can also use:

“Burger”

A burger is a sandwich consisting of a cooked patty of ground meat (usually beef, but occasionally pork or a combination of meats) usually placed inside a sliced bread roll. Hamburgers are often served with lettuce, bacon, tomato, onion, pickles, cheese and condiments such as mustard, mayonnaise, ketchup and relish.

Method

Place the beef in a large bowl and add the remaining ingredients. Mix it all together until just combined. This is best done by hand but don't over-work the mixture or you'll get a tough burger.

Wet you hands then shape the mixture into burgers by flattening the mixture in your hand about 2cm or 1 inch thick and smoothing he edges.

The burgers can now be cooked either on a griddle pan, non-stick frying pan with a bit of oil, or even a barbeque. Make sure you pre-heat the fying pan, griddle pan or barbeque to a medium heat.

Cook the burgers for about 5 minutes on each side, turning them once only.

And that is the Classic Burger Recipe. You can serve the burgers in buns with salad. Enjoy...

1kg minced beef (it is best not to use the lean mince as fat will help to keep the burgers moist)
1small onion, finely chopped
4tbsp fine bread crumbs

2 cloves garlic, crushed

"Meatballs and Pasta"

Meatballs are fantastic! They’re perfect like this, with a one-minute homemade tomato sauce and spaghetti, but you could also try polenta or simple chunks of fresh crust bread. I like to make meatballs with a mixture of beef and pork, as I think it gives a really wonderful flavour and texture.

To make your meatballs
• Pick the rosemary leaves off the woody stalks and finely chop them
• Wrap the crackers in a tea towel and smash up until fine, breaking up any big bits with your hands
• Add to a mixing bowl with the mustard, minced meat, chopped rosemary and oregano
• Crack in the egg and add a good pinch of salt and pepper
• With clean hands scrunch and mix up well
• Divide into 4 large balls
• With wet hands, divide each ball into 6 and roll into little meatballs – you should end up with 24
• Drizzle them with olive oil and jiggle them about so they all get coated
• Put them on a plate, cover and place in the fridge until needed

To cook your pasta, meatballs and sauce
• Pick the basil leaves, keeping any smaller ones to one side for later
• Peel and finely chop the onion and the garlic
• Finely slice the chilli
• Put a large pan of salted water on to boil
• Next, heat a large frying pan on a medium heat and add 2 lugs of olive oil
• Add your onion to the frying pan and stir for around 7 minutes or until softened and lightly golden
• Then add your garlic and chilli, and as soon as they start to get some colour add the large basil leaves
• Add the tomatoes and the balsamic vinegar
• Bring to the boil and season to taste
• Meanwhile, heat another large frying pan and add a lug of olive oil and your meatballs
• Stir them around and cook for 8–10 minutes until golden (check they’re cooked by opening one up – there should be no sign of pink)
• Add the meatballs to the sauce and simmer until the pasta is ready, then remove from the heat
• Add the pasta to the boiling water and cook according to the packet instructions

To serve your meatballs
• Saving some of the cooking water, drain the pasta in a colander
• Return the pasta to the pan
• Spoon half the tomato sauce into the pasta, adding a little splash of your reserved water to loosen
• Serve on a large platter, or in separate bowls, with the rest of the sauce and meatballs on top
• Sprinkle over the small basil leaves and some grated Parmesan

Greece is one of the oldest wine-producing regions in the world. The earliest evidence of Greek wine has been dated to 6,500 years ago where wine was produced on a household or communal basis. In ancient times, as trade in wine became extensive, it was transported from end to end of the Mediterranean; Greek wine had especially high prestige in Italy under the Roman Empire. In the medieval period, wines exported from Crete, Monemvasia and other Greek ports fetched high prices in northern Europe.

The main wine growing regions of contemporary Greece are:

Red Wine
    Agiorghitiko ("St. George's [grape]") is a variety native to Nemea that grows mainly in the Peloponnese area, producing a soft, fruity red in many styles. Its sensory attributes are similar to Beaujolais Nouveau but, unlike its French counterpart, the St. George ages well for about 5 years.
    Xinomavro ("sour black") is the predominant grape variety in Macedonia, centered around the town of Naousa. This variety has great aging potential with a palate reminiscent of tomatoes and olives, and a rich tannic character. It is often compared to Nebbiolo.
    Mandilaria, also known as amorgiano, is mainly cultivated on the islands of Rhodes and Crete. Wine from this grape is often very tannic and frequently blended with other grapes to soften the mouthfeel.
    Mavrodaphne, or "black laurel", is a variety that grows in the Peloponnese and the Ionian Islands. It is blended with the Black Corinth currant grape to produce a prized fortified dessert wine made in the Solera style.
    Kotsifali is a variety mainly grown on Crete. It is blended with Mandilaria or Syrah to enhance its color.
White Wine
    Assyrtiko is a multi-purpose variety which maintains its acidity as it ripens. It is similar in character to Riesling, and is mostly island-based, being a native variety of the island of Santorini, whose old vines have been resistant to Phylloxera.
    Athiri is a lower acid variety and one of the most ancient. Originally from Santorini, it is now planted in Macedonia, Attica, and Rhodes.
    Debina is a white Greek wine grape grape primarily in the Zitsa region of Epirus. The grape's high acidity lends itself to sparkling wine production.
    Lagorthi is a variety mainly cultivated on high slopes (850 meters) in the Peloponnese. The grape produces a very malic and fruity wine.
    Malagousia is a grape growing mainly in Macedonia, with a special aroma leading to elegant full bodied wines, with medium-plus acidity and exciting perfumed aromas.
    Moschofilero is a Blanc de gris variety from the AOC region of Mantineia, in Arcadia in the Peloponnese. Its wines offer a crisp and floral character in both still and sparkling styles.
    Robola is most grown in the mountainous vineyards of the Ionian Island of Cephalonia. It has a smokey mineral and lemony character, excellently complementing seafood.
    Roditis (the "pink" or "rose" grape) is a grape that is very popular in Attica, Macedonia, Thessaly, and the Peloponnese. This variety produces elegant, light white wines with citrus flavors.
    Savatiano (the "Saturday" grape) is the predominant white grape in the region of Attica, where it displays excellent heat resistance and shows a distinct floral and fruity aroma when cold fermentation is practised.[14] When fermented without cooling, it makes retsina or rustic unresinated wines that complement Mediterranean dishes well.

Moussaka is an eggplant based dish of the Balkans, Eastern Mediterranean, and the Middle East. The best known variation outside the region is the Greek one.

Ingredients for 9×11 pan/Pyrex dish of mousakas

½ kg of lean ground beef,

2 large eggplants,

2 large potatoes,

1 large red onion,

1 tablespoon of dried up parsley or 3 sprigs of fresh parsley,

1 tablespoon of salt, pepper,

1 garlic clove,

4 large fresh ripe tomatoes or 1 medium can,

½ cup of grated parmesan cheese or any other kind of hard salted cheese.

In order to make mousakas you should start by chopping the onions the tomatoes, the parsley and the garlic finely. Sauté these ingredients for a few minutes in a pan and then add the meat. After you add the meat for your mousakas add the some salt and pepper. Bring the mousakas mix to a boil and then simmer it for about half an hour until the sauce is thick. Set it aside and let it cool down. Slice the eggplants crosswise to create half inch thick circles and submerge them in a large mixing bowl with plenty of salt (2 tablespoons). Then let them sit for about half an hour. Afterwards we drain the water and wash the eggplants thoroughly with cold water. This process with salt water eliminates the bitterness of the eggplant. Take a plain cooking sheet and sprinkle some olive oil onto it and place the eggplant slices on it. You might need more than one cooking sheet depending on how big your eggplants are. After you place them on the sheet sprinkle them again with some oil. Place the eggplant sheet or sheets in a preheated oven at 400F until they soften on both sitde. You might have to turn them around mid way. Clean the potatoes and wash them well. Slice them in round slices and fry them with very little oil on a non stick pan. Let them cool down. Use some olive oil to brush a Pyrex dish with oil and place the sliced slightly fried potatoes crosswise. This will be the base for our mousakas. Over the potatoes arrange one layer of baked eggplants slices and then add the meat mix or sauce by spreading it over the eggplants. Sprinkle our moussaka with some parmesan cheese we add another and final layer of baked eggplant slices. Our dish is now ready for the Greek béchamel sauce. Add and bake at 370F until our mousakas becomes golden/brown. And there you have it freshly baked mousakas. You can either refer to this dish as mousakas or moussaka, either way it is an absolutely delicious Greek Recipe. Make sure you browse our site for many more Greek Recipes.

Kofte ingredients:

500 gr lean ground lamb or beef

1 small onion, grated

1 egg

1 garlic clove, mashed with salt

2 day old slice of Turkish (French, Italian bread) without the crust; soak into
water and squeeze

1/2 bunch of parsley, finely chopped

1 tsp. red pepper

1/2 tsp. cumin

1/2 tsp. crushed pepper

Salt

Pepper

Tomato Sauce:

1 cup crushed tomato, in can

1 tbsp. extra virgin olive oil

Salt

Pepper

Yogurt Sauce:

1 cup yogurt, plain, room temperature

1-2 garlic cloves, smashed with salt

Garnish:

1 tbsp. butter

Red pepper

Cayenne pepper

4 pides, cut in bite size

Mix all the kofte ingredients together with your hands. Take a fist-sized ball
and skewer it, starting from the tip of the skewer. Squeeze and flatten it on
the skewer going back slowly, so that it is thin and flat to acquire the shape
shown in the picture.

Preheat your barbecue or oven (grill). Place the skewers on the rack. Make sure
to turn the skewers so that all sides of the meat cook equally.

Cook the tomato sauce for a few minutes, put aside. Whisk the yogurt sauce
ingredients, put aside.

Place pide pieces on service plates and arrange the kebabs on them. Pour tomato
and yogurt sauce all over. Melt the butter in a small pan and add in the
pepper. When the butter starts bubbling, pour over the Yogurtlu Kebab.

mainland, chiefly consumed during the winter as a warm drink. A similar drink
is baked raki, which is a regional drink of the island of Amorgos that is made
from raki, sugar and spices and is served at room temperature. Baked raki
contains more spices than rakomelo which usually only contains cinnamon.
Rakomelo can be found as a bottled mixed drink in liquor stores, ready to be
warmed and served. Baked raki is also available mixed and bottled, ready for
consumption (served at room temperature). A general recipe for rakomelo is 1-2
teaspoons of honey for every 4 shots of raki, along with one clove and about 1
teaspoon of cinnamon, modified to suit different tastes. The ingredients are
best warmed in a special pot called 'briki' (cezve) or on a gass stove, as with
Greek coffee.

8 skinless, boneless chicken breast halves - cut into 1 inch cubes

2 1/4 cups self-rising flour

2 tablespoons vegetable oil

2 tablespoons cornstarch

1/2 teaspoon salt

1/4 teaspoon ground white pepper

1 egg

1 1/2 cups water

1 quart vegetable oil for frying

2 green bell pepper, cut into 1 inch pieces

Directions

In a saucepan, combine 1 1/2 cups water, sugar, vinegar, reserved pineapple juice, and orange food coloring. Heat to boiling. Turn off heat. Combine 1/4 cup cornstarch and 1/4 cup water; slowly stir into saucepan. Continue stirring until mixture thickens.

Combine flour, 2 tablespoons oil, 2 tablespoons cornstarch, salt, white pepper, and egg. Add 1 1/2 cups water gradually to make a thick batter. Stir to blend thoroughly. Add chicken pieces, and stir until chicken is well coated. Heat oil in skillet or wok to 360 degrees F (180 degrees C). Fry chicken pieces in hot oil 10 minutes, or until golden. Remove chicken, and drain on paper

towels. When ready to serve, layer green peppers, pineapple chunks, and cooked chicken pieces on a platter. Pour hot sweet and sour sauce over top..

You will need:

Yield: 4 Servings Spaghetti al Pesto

Ingredients:

• 45 leaves freshly picked basil (about a packed cup)

• 1/4 cup grated aged pecorino (Tuscan or Sardinian, because Romano is too sharp)

• 1/3 cup grated Parmigiano (increase this to 3/4 cup if you cannot find the pecorino)

• 2 cloves of garlic

• 2/3 cup the best olive oil

• 1/2 teaspoon salt

• 1/2 cup pine nuts (technically optional though almost everybody includes them)

• 1/3 cup walnut meats (optional)

• 1 pound (500 g) spaghetti

Preparation:

If you have a marble mortar and wish to use it (purists say neither brass nor wood mortars will work), put the salt, garlic, nutmeats and basil in it and grind the mixture, firmly crushing the ingredients against the sides of the mortar, rather than striking sharp blows with the pestle. When the mixture is ground, add the cheese, a bit at a time, continuing to grind, and when it is all worked in, add the oil in a slow stream, stirring with a wooden spatula. The resulting pesto should be smooth and creamy.

If you are using a food processor instead, chop the garlic, basil, nutmeats, and salt, being careful not to let the mixture liquefy, then transfer it to a bowl and stir in the grated cheese and the oil.

Cook a pound of pasta in lightly salted water, and just before you drain it stir two tablespoons of hot water into the sauce. Pour the sauce over the pasta and serve. The wine? The bitter sea tang of a good Vermentino would offset the garlic perfectly.

This sauce is also perfect for making lasagne al pesto, which is amazingly refreshing on a hot day, perhaps even more so when served cool.

War and Peace was first published from 1865 to 1869 in Russkii Vestnik, which tells the story of Russian society during the Napoleonic Era. It is usually described as one of Tolstoy’s two major masterpieces (the other being Anna Karenina) as well as one of the world’s greatest novels.

5.Mark Twain - The Adventures of Huckleberry Finn (1884)

It is good to see such a great book for the younger generation on the list. Huckleberry Finn is commonly accounted as one of the first Great American Novels. It is also one of the first major American novels ever written using Local Color Regionalism, or vernacular, told in the first person by the eponymous Huckleberry “Huck” Finn, best friend of Tom Sawyer (hero of three other Mark Twain books).

6.William Shakespeare - Hamlet(1599)

It is no surprise that Mr Shakespeare is on the list. I am not sure that I would have picked Hamlet as his best book, but who am I to debate 125 brilliant authors? Hamlet is a tragedy by William Shakespeare, probably written between 1599 and 1601. The play, set in Denmark, recounts how Prince Hamlet exacts revenge on his uncle for murdering Hamlet’s father, the King, gaining the throne through this treachery, and subsequently marrying his mother.

7.F. Scott Fitzgerald - The Great Gatsby (1925)

I agree with the inclusion of this book – it is one of my favorites and one of the best examples of Fitzgerald’s writing. The Great Gatsby is a tale from the Jazz age of Gatsby – a wealthy man whose life is surrounded by mystery. A brilliant read.

8.Marcel Proust - In Search of Lost Time (1922)

I appreciate the great artistic merit in Proust’s writing, but I have to be honest and say that I have never managed to get more than half way through the first book of this multiple-book novel. I found it extremely slow paced and boring. This is Proust’s most prominent work, it is popularly known for its extended length and the notion of involuntary memory, the most famous example being the “episode of the madeleine” in which he describes in great (boring) detail, eating a madeleine dipped in tea.

9.Anton Chekhov - The Stories of Anton Chekhov (1988)

Anton Chekhov was a Russian short story writer and playwright. He was born in Taganrog, southern Russia, on 29 January 1860. His originality consists in an early use of the stream-of-consciousness technique, later employed by Virginia Woolf and other modernists, combined with a disavowal of the moral finality of traditional story structure.

10.Middlemarch George Eliot (1871)

Middlemarch is considered by many scholars to be one of the most important novels of the Victorian era. It was written by George Eliot (pen name of Mary Anne Evans) and was first published in 1871 to 1872. It is set in the 1830s in Middlemarch, a fictional provincial town in England, based on Coventry.
