This is such a filling and wonderful meal. It can be made with corn starch to make it Gluten Free and you don't lose any flavor at all.

The cilantro is a wow factor in this chowder. It really brings it all together.

The recipe makes a mild heat version. However, I always leave the Frank's Red Hot Sauce out on the table for those, my husband, who want to kick it up a notch or ten.

It goes great with the low-carb Garlic Cheese Biscuits or just toss some tortilla chip strips on top. Either way is yummy!

My grandkids love this one too, and they aren't so easy to please.

The fresher and riper the ingredients the better the flavor! Since the peppers, tomatoes, cilantro and corn are in season, it is the perfect time of year for this Salsa Salad.

This is a crowd pleaser and disappears from the serving bowl quickly. I prefer serving it with blue corn chips. I really like their flavor. With all things add more or less salt/pepper/garlic and lime juice to your taste preferences. This is a really good starting point but I have had to add more or less based on the ripeness and flavor of all the other ingredients.

This is a family favorite, except for my husband who hates corn in anything. So, I sometimes just omit the corn ingredient.

It is best to let this salad sit in the refrigerator for an hour before serving to let all the flavors bloom together. Enjoy the Yum!

Salsa Salad Recipe
In a bowl mix the following:

1 Can Black Beans, drained
1 Cup of Fresh or Frozen Corn
1/2 Bunch of Cilantro, chopped
4 Roma Tomatoes, Seeded and Diced
4 Green Onions, Diced
1 Med/Lg Jalapeno Minced
2 Limes, Juiced
1 Teaspoon Salt
1/2 Teaspoon Black Pepper
2 cloves of garlic minced
1 Avocado, Diced

Serve with Tortilla Chips, if desired.
My husband loves lemon bars. He likes them to have a lot of pucker. So being on Low-Carb diet makes it a little difficult to satisfy that sweet tooth. It usually takes quit a bit of sugar to take the extreme sour out of lemons. This recipe does the trick nicely.

If you love lemon flavored treats than you should try this one out.

I found it on Pinterest, here is the link to the recipe site: AllRecipes.com

I did make one variation to the recipe, I only used Stevia sweetener. The powdered version for sprinkling on top.

It's good to note that this recipe is also Gluten Free, BONUS for Me!

Make sure to refrigerate at least two hours before serving, They don't taste as good if you skip this step and the texture isn't quite right.

I actually prefer them to the original high carb, gluten filled version.

Enjoy the Lemony Yum!

I guess for him and most other husbands (men), it isn't a big deal. Most of the men I see at the store are buying milk, diapers or have some cut of meat in their hands. Most don't even have a cart. They can carry what they came to pick up in their arms, or if it's a big list, a basket.

Don't get me wrong, I really appreciate when my husband calls on his way home and asks if there is anything I need him to pick up. I also appreciate all the cooking, well I should say, smoking, BBQ and grilling he does, it is yummy. This isn't to bash my husband or men in general, it is just a realization of one more way in which we think differently.

Boy, do we think differently.

My mother trained me at a young age on how to create a shopping list and go shopping. If I had planned right, I went only once a week, in order to curb spending, create a menu from the sales and stock the pantry with sale items, so that I could shop my pantry, instead of having to run to the store every other day. This last one is a challenge now that I am a Condo dweller. In my previous home, I had an upstairs pantry, lots of kitchen cabinets and a downstairs food storage room. If you ran out of flour making cookies all you had to do was go downstairs and get another bag, which I had purchased on sale, with a coupon. In fact, about a year before we moved I started to use everything in the two freezers, and all the pantries. I started only buying things as we ran out. (Against my nature, by the way.) It took all that time to empty the cupboards, okay they weren't empty. However, they were bare by my standards.

Even that taught me where I was buying a little to much and where I wasn't buying nearly enough to last a whole year. Feeding a family takes a lot of planning. Feeding them on a budget takes strategy too.

So by the time I and many other women I know get to the store we have already done a lot of preparation. We have:

Gone through the cupboards, pantry, freezer and refrigerator to make a list of things we need to buy or which supplies are getting low.

We usually have read the sale adds of at least two different stores, comparing prices and seeing what is on sale.

We have made a list of recipes or actually done a complete menu for the week, two weeks or month depending on our own preferences. So that we can make sure that we have all of the ingredients available to make the meals that we are planning on cooking. Most of us don't have every spice on hand for every recipe. I use an phone app called Outofmilk. It organizes my shopping list into categories with quantities and makes shopping easier and quicker.

Now that we have a list we see if there are any coupons for any of the items we are actually buying. In addition, I have been using a little app on my phone called Ibotta, my referral code is fxbbuhn, if you want to sign up, it's free. I have been using it for 3 months and have $21.50 in rebates(coupons) that I used without buying anything different than what I was already buying, like lettuce, tomatoes, bread, olives etc. The best part is that you can save it up and put it on a cash gift card. I am using mine for Christmas.

Then we decide where we are going. Now, most of us have regular things that we buy at a big box store like Costco, because it is better quality for the price than the sales. However, this stuff comes in bulk, so you better be able to store it. Then we usually decide that this store has more of what I want on sale than that one. I'll go there first, and if there is a large difference in price on the other things I may go to a second store, to pick up those items. However, most stores today will price match if you ask the cashier, you just need to know the price of the EXACT same thing.

Now we get to actually go shopping with a cart, the biggest one they have.

Then we get to come home and unload the car. This is where I really miss my kids being home. Although, hauling everything up stairs is good for me, right?

All the frozen stuff goes in the freezer first.

Next we get to clean out the refrigerator so that all the new stuff will fit in it and all the "what is that growing in that container?", stuff is tossed out. And because we have everything out of the fridge, we actually clean it.

After that we reorganize the pantry and kitchen cupboards to put all the rest of the haul away.

Finally, after I recoup a little from hiking up the stairs numerous times, this is where I use my phone to take pictures of my receipts for my Ibotta app and scan any UPC symbols required.

By the time that I have gotten to this point I have touched every item purchased at least 4 times. More depending on where you shop and if you have help at home to put things away.

From the Store shelf and into your shopping cart.

Out of the cart onto the conveyor belt at checkout.

Off the belt into a sack, if you are shopping at a Winco or Food4Less type store, where you bag it yourself.

From the shopping cart into the car.

From the Car into the house or in my case, up the stairs into the condo.

Out of the bags and into the fridge, freezer, cupboard or pantry.

If you buy one 50lb bag of dog food you have done 6 reps of 50 pound lifts. I'm impressed.

Now, if my husband for example were to take on the shopping. He would go to the store, buy stuff he needs to make a few things that sound good, all chosen while in the store. Then go home and when he didn't have everything he needed to make the next thing, he would just run down to the store and buy it plus a couple of other things that looked good to him at the time, and a snack, he needs a snack because dinner isn't ready yet.

From his perspective, I guess shopping is "No Big Deal" but his way can be very, very expensive. The average trip to the grocery store is a minimum of $35 dollars. If you go to the store just 1 extra time a week to pick something up that is approximately $1,820 a year you will probably spend. That is a car or a vacation. Impulse buys are the culprit. No plan = $$$$$ out of pocket. We all are guilty of the impulse buy. However by going to the store less often and sticking to a list it becomes ineffectual to overall spending.

The funny thing is that my husband will spend 9 - 12 hours smoking dinner, but thinks spending 45 minutes actually shopping for groceries is too much, "Just pick me up in the magazine isle when your finished."

It's okay that I don't want to slow cook a pork butt roast in a smoker for 9 hours, checking the temperature, moisture, smoke etc every hour or so and it's okay that he doesn't like or want to actually do the grocery shopping. We are different and that is good. We can compliment each other that way. He is the meat man and I am the house manager. He makes a mess and I clean it up.

Just like everything else in life it comes down to PERSPECTIVE and ours are very different on grocery shopping, he is spontaneous and laissez-faire. While I am strategically planning a successful mission, like Glenn on "The Walking Dead", for the survival of our family.

Almond Flour Pancakes

Here is the picture I saw on Pinterest.

Isn't it pretty! To bad it tastes gritty and disgusting. The flavor was
bad, the texture was bad. Total Fail!

They fell apart when I tried to flip them in the pan. Just look at that picture on the right.

Seriously, there wasn't one redeeming aspect to this recipe. Oh wait they are gluten free and low-carb. This is by far the worst thing I have ever tasted that was either one of those.

Personally, I would rather eat dirt! Okay, maybe not dirt but you know what I am saying. Not worth the time it took to make them.

To top it off Almond flour is not exactly cheap, it's about $7.40 / lb. I ate about three bites of one before I realized even fresh peaches couldn't redeem this catastrophe of a pancake.

So basically the whole batch got tossed. Hopefully, I can save someone from making the mistake of making this recipe on the following site:

Don't Bother! There are a lot of other Gluten Free and Low-Carb recipes out there that are fantastic. Try one of them instead.

I can't tell you how skeptical I was that this was going to work. When I told Guy, the hubby, he said "what your telling me is you'll have a Failed post to write today." I said "probably but you never know it could be good, it has a couple of good reviews". I am naturally optimistic, a glass half full kind a gal. So I was willing to give it a try, because Pizza is one of the four food groups. One that I have been doing without. Do you know what it's like to eat just the toppings off a pizza? It is less than satisfying, kind of depressing even.

This Cauliflower Pizza Crust Recipe is mmmm mmmm good. It is tasty, crispy around the edges and delicious. Just look at that picture.

I found the recipe on Pinterest, of course, looking for a Low-Carb and Gluten Free substitute for pizza dough. Pinterest Nailed it!

It is so easy to make, just a few minutes. I didn't have my food processor, so I used my KitchenAid grater attachment. Worked great for "Ricing" the cauliflower. The texture of the "dough" was looser than I expected but the cheese held it together after baking. Mine stuck a little to the pan, even though I used Pam. However, a nice metal spatula was able to pull it all up with no problems, cracks or tears. I cut mine with scissors instead of using a pizza cutter. I find it easier.

The original link to the recipe is located here:

To the left is her picture of the crust and finished product:

We added for toppings Pizza sauce, shredded cheese, fresh thinly sliced red onions, olives, pepperoni and little more cheese on the top in that order. Makes me want another slice just looking at it.

Mine turned out pretty close to hers. Here is mine below.

It was a hit, my daughter, husband and I LOVED IT! This will be a "go to" staple for the pizza cravings. I just want to thank dearcrissy.com for this wonderful recipe. It is a keeper.

We all thought it would be great with a ranch dressing sauce, cooked chicken, spinach and artichoke hearts. We'll try that next time. Have fun putting your favorite sauce and toppings on this new pizza crust. If you don't tell them it's made from Cauliflower they will NEVER know!

I can't eat them because I am gluten sensitive. So I went looking for a new recipe to try that was Gluten Free and Low-Carb. This is a fantastic substitute. Very close in taste and look at the texture in the below picture.

They were light and melt in your mouth good. I was surprised to say the least. Most Gluten Free or Low-Carb bread recipes I have tried tend to be dry and/or gummy in the middle, yuck. These were by far the best I have ever tried. They only have 2 carbs per biscuit.

I cooked them in my standard muffin pan and it worked great. The recipe made 12 servings total.

So a few of my girls asked me to make this video at the end of the last peach season, when I was making a final FRESH PEACH PIE. They wanted the recipe and the instructions easy to access. I still haven't posted it and here we are in peach season again. So no time like the present.

We were in the middle of a family party, so every once in awhile you can hear one of my grandkids. What can I say, when were all together it gets a little noisy. Families are Forever, pie doesn't even last the night!

I hope you actually try this pie it is fantastic! I fashioned it after the Maddox Ranch fresh peach pie that you can get in Perry, Utah. It is the first place I tasted a fresh peach pie, after I moved here. Which is strange, since I grew up in the Central Valley of California, and my mother made an awesome peach pie with peaches she picked off her own trees, but it was cooked. Therefore it was completely different.

So I decided to figure out how to make one. This is better than the original I copied. Maybe it's that personal touch or the flaky crust. My mom always said the best thing about cooking things yourself is that you can cater to your own taste buds. My families taste buds are very happy with this pie. If you love cooked peach pie, this one will make you drool.

Once you taste this you may never go back to a cooked peach pie again. I haven't made one, since I created this over 10 years ago. Make sure you use ripe freestone peaches, makes for much easier slicing. You can view my video on how to peel and slice peaches. It also lets you know how to tell if the peaches are ripe. Hard peaches = NOT RIPE.

Try it and let me know how you like it!

Just follow the instructions in the video below:
However the finished project is more like baby socks than actual booties. Now as a sock pattern I think they are fast, easy, warm and fuzzy. Just not a real bootie pattern, so kind of misleading. The instructions were simple and easy to follow. It took 15 minutes to make one bootie, 30 for a set. They would be nice to have on hand in winter for an infant. However there was only one size and I would say after 6 months they would no longer fit. If you are good at crochet, then enlarging them shouldn't be a problem for you just add a couple of extra stitches to each row to add about 1/4 inch to the width and maybe an extra row or two to make them longer.

This pattern is Bev's Very Easy Booties - Copyright 1997-2013 Beverly A. Mine looked exactly like this except in light purple. They were a hit at the baby shower I took them to with a matching Tulip Hat I made as shown on:

http://kzgoodstuff.blogspot.com/2015/07/pinterest-nailed-tulip-baby-beanie.html

These are easy and you could make a bunch to have on hand for new babies as they arrive.

Happy Crocheting!

I love bandanas, I love the bright colors and the design. Jeans and a Bandana = Country. I love that they are already hemmed and that they are $1 each at the DOLLAR STORE. So for $2 total, I made a dress for my granddaughter, Hannah. I recycled a used set of jean overalls. This made an adorable country dress and only took about 20 minutes to make. Watch the video below to see how EASY it was!

What to have for dinner, a question we all wrestle with daily. However, today when I got a call from my son saying he and his dad were going out to BBQ, I decided to try something new. Something I had been thinking about trying for a couple of weeks. Let's just say this was inspired and enjoyable success. It is also low-carb and gluten free. Crepes have always been a big deal at our house. A Christmas Eve morning specialty. My husband's grandparents taught him to make them and he makes them for our family. Unfortunately, I have a gluten issue and crepes became a source for actual headaches if I ate them. I was on a specific diet about a year ago and found a recipe that used ricotta cheese, eggs and chia seeds to make a pancake. Then I found one similar to this one, however I didn't like the way it tasted so I played with it and altered it to make my own version, which I of course prefer. I hope you enjoy them.

These Cream Cheese Crepes are easy peasy to make. In a blender add:

4 ounces of cream cheese

4 eggs

1/2 teaspoon vanilla extract

1 packet of Stevia-check the kind you buy to make sure it doesn't have other additives or other artificial sweeteners)

Blend until smooth.

Pour some into a small buttered skillet on medium high heat, leaving enough room to turn easily. Cook till golden. You can refrigerate any leftover batter. Make sure to leave it out for 15 minutes and blend again before using next time.

The Whipped Chocolate Coconut Milk is so easy and yummy you may never go back to Heavy whipping cream again! Seriously, it is delicious and adding chocolate to it makes it like Coconut Chocolate Mousse.

Take a can of coconut milk and refrigerate it overnight. After trying this I am going to just keep one in the fridge all the time!

Open the can and the solids have separated from the water. Scoop out most of the solids and place them in the mixing bowl. When you get to the water at the bottom of the can pour it out into something else to use in a smoothie later. Then use a spatula to scoop out the remaining solids from the can.

Add a 1/4 teaspoon of vanilla

Add 2 tablespoons Unsweetened Organic Cocoa Powder

Add Stevia to taste

Use the Whipping attachment and whip till thickened.

Yes, I licked the beater, wouldn't you?

Store in covered container in fridge, it should remain solid. I don't know how long it will be good for but my guess is at least a week. The rule at my house is "When in doubt, throw it out"!

Now, slice up some fresh yummy strawberries and assemble. Crepes, Strawberries, then a bit of the Topping and Enjoy!

Let me know if you like them!

The directions were very easy to follow. This project was a preemie size, so I just did an extra expansion round to make it a newborn size. It was a quick little project. Start to finish it took about 45 minutes.

I didn't like the stem, so I skipped that step and just made the tulip shaped hat. It turned out really cute! Here it is :
I liked the way it turned out so much I made two, one in purple. Hope you find time to try this one, it was a keeper!

PINTEREST NAILED - CROCHETED BABY BOOTIES

So the whole world is having a baby girl this summer! Okay not really, but 6 women I know are, so I thought I would crochet some cute baby booties. Of course, I went looking on Pinterest to find baby bootie patterns. My first, second and third choices all turned out to be bad links or booties for sale. However the fourth time was a charm and after a little extra clicking to get to the actual pattern post, I was able to make these cute adorable lime green mary jane style booties:

They were fast and easy, I think it took an hour to make the pair. I bought cute little flower buttons to sew on to the straps instead of making crocheted flowers for the bootie. I like the fact when you are crocheting and creating something, you can alter it just a little and make it your own, an original. I made the newborn size 0-3 months, however, there are 3-6 month and 6-12 month sizes patterns available.

Here is the link to the original pattern I found posted on Pinterest:

http://tampabaycrochet.blogspot.com

Watch for my matching baby hat post.

So, I decided last Easter to try 4 Pinterest recipes for our Easter Brunch to go along with our Spiral Cut Hickory Smoked Ham and a Potato Cheesy Casserole.

The pictures on Pinterest always look so good and I had good success with the few recipes I had tried so far so I was ALL IN, as they say in poker.

I had quite the spread. Out of all the things that I made I would say only ONE was a total hit and therefore a real keeper. The rest were, at best. mediocre.

Undaunted by the failure fluke, or so I thought, I kept pinning. I have made quite a few recipes now from my Foods to Try and the results have been mostly underwhelming. I would say 30% are keepers, 20% are just plain awful either in flavor or direction and 50% are I wouldn't waste my time making something so; boring, flavorless, difficult, time consuming or just blah.

I also found that with some of my projects, the directions were less than spot on. For instance, I was in the middle of crocheting a hat for Christmas and the directions were less than clear, they were downright wrong. I had to ad lib to make it all work and only a week til the big day. A novice would have cried.

Lately, I find that I am asking does no one actually test these recipes, projects, crafts etc. I have started looking at the original posts to see if they have comments on them, most I find don't have anything helpful. I hate wasting my time on something that doesn't turn out. I am sure you do to, Life is full of good stuff, but time is precious. So I have decided that I am going to test Pinterest posts, ones I have collected and of course the popular ones and give you my opinion. (My husband always says an opinion is worth what you pay for it.)

I know my way around a kitchen and am not intimidated by difficult recipes. I enjoy baking and cooking, just not the cleaning up part! I also am a pretty descent seamstress, I make 20 pairs of pajamas every year for family, and I've done a little quilting too. I know how to crochet I have made, hats, booties, gloves, scarves, sweaters, doilies, doll clothes, toys etc. Knitting, however, is not my thing. Never got the hang of it, except the arm kind. I like organizing and like things in their proper place. I am a couponing, good deal finding, make every penny count kind of gal. I also know alot about gardening and health, thanks mom.

I will try different pins so that you don't have to bother trying the ones Failed and can add the Nailed to your own Pinterest Boards, to use later. In addition maybe the original post writer will see how to fix what's wrong with their offering to the Pinterest world.
I am going to start with Easter. I don't have pics of my NAILED or FAILED Pinterest trys for this one. So let's look at the lovely Pinterest pictures that I aspired to duplicate and I will tell you what I and my family thought of how they turned out.

1. Strawberry Mini Carrots- NAILED. These were easy and cute! The Grandkids especially liked them.

The flavor isn't as good as actual chocolate, since this is essentially white chocolate with orange coloring. However, mine turned out exactly like this picture from the original post. The instructions were extremely brief but understandable, all in all I would do this again.

Here is the link to the original post:

2. Frosted Sugar Cookie Bars - FAILED! Easy and blah- nothing special here. The little kids each had one but no one really ate seconds.

Original Post Link:

http://www.thebakerupstairs.com/2014/02/frosted-sugar-cookie-bars.html

I would not bother to make these again. The instructions were descent and easy to understand but the end result was underwhelming to say the least. When you have a spectacular sugar cookie recipe these just don't stack up.

3. Maple Bacon Bites - FAILED! LOOK GOOD but BORING! However, with a little recipe adjusting and some experimentation, these have potential.

Here is the link to the original post:

http://www.vixenskitchen.com/maple-bacon-pancake-bites/

Here is what I would change: First, the icing was to thin and needed more maple flavor so I would increase the cream cheese to 2/3 cup and add a 1/4 to 1/2 teaspoon of maple flavoring. Next, I would reduce the milk to 2 cups and and 1/2 cup of maple syrup to the batter. That should make the maple flavor come out and stand up to the bacon and batter flavors.

4. Blueberry Croissant Puff - NAILED!! This was the hit of the brunch. Light and fluffy! It looks exactly like the picture too.

Here is the link to the original post:

http://www.the-girl-who-ate-everything.com/2013/02/blueberry-croissant-puff.html

I made a fresh Raspberry Croissant Puff also, but because I only had one 9X9 pan I used a muffin tin. They liked the texture of this even better. It got a little crispy on the outside. So you get creamy, cheesy, flaky, crispy berry goodness. Give it a try you will love it!
